Traditional, full bodied red wines have been fermented and matured in the cellars of our Ryecroft winery in McLaren Vale since 1888. The intimate knowledge acquired over generations of local viticultural experience contributes to the unique flavour and quality of McLaren Vale and Langhorne Creek grapes. Since purchasing the Ryecroft vineyard and winery in 1991, we have continued to produce a wine which employs the 'Traditional' winemaking techniques of warm fermentation in small, open vats, followed by extended maturation in oak barrels. Drawn from vineyards across McLaren Vale and Langhorne Creek, the fruit is selected for its premium quality and track record. The final blend consists of 75% Cabernet Sauvignon, 15% Merlot and 10% Petit Verdot.
Deep plum red/purple.
The nose is tightly structured but expressive, showing the hallmarks of open vat fermentation. Underlying ripe blackberry, cassis and black olive aromas are highlighted by notes of lifted tobacco leaf and the toasted characters of well-integrated oak.
The densely packed palate demonstrates an ideal balance between fruit richness and varietal character. Pronounced but ripe tannins encase a core of blackcurrant, cassis and chocolate flavours. Oak maturation has aided structure and provided hints of cedar and wood-smoke to a long, complex finish.
Cool conditions in late winter and spring limited flowering and fruit set, eventually contributing to low yields at harvest, before a summer defined by very hot temperatures. Rosemount's balanced, well-established vineyards handled the conditions well and a crop of intensely flavoured fruit with clear varietal character was picked two weeks early in good conditions.
Warm fermentation took place in small wax lined open vats to encourage the extraction of soft, ripe tannins. The separate batches underwent 18 months maturation in American oak.
