After a careful selection of the best grapes and gentle fermentation, the wine is kept in vats for a period of 12 months in order to be fully stabilized before being transferred to oak casks for ageing. Gran Reservas are kept in American oak casks for 36 months. Further bottle ageing for a further 3 years takes place before it is released.
Founded in 1877 the Bodega in Cenicero in the Rioja Alta is now a modern winery, with cellaring facilities housing over 50,000 barrels, and this is where Berberana Gran Reserva is matured for a minimum 3 years in American oak cask and a further 3 years in bottle.
