Domaines Bonfils is a family business, that has been growing grapes since 1870. Now in the 6th generation, the business comprises 19 Domaines and Chateaux, 17 of which are in the Languedoc with 1800 hectares of vineyards, making them one of the largest independent grape-grower/wine producers in France. Chateau Capitoul at the southernmost point of the Cru La Clape area, and closest to the sea has a strong maritime influence; cooling sea breezes and mists help to make the wines unique. At 62 hectares it represents 10% of the entire appellation. The estate was purchased by the Bonfils Family in 2011.
Deep ruby red, powerful aromas of black fruits and spices. An elegant wine showing toasty notes, black cherries, black olives and cigar box, silky tannins and a complex finish.
Vineyard and Viticulture
This wine is from La Clape appellation where the grapes come from one site, the sloping vineyard faces South/South West. The vines average 24 years old and are planted on clay and limestone stony soils. 4400 vines are planted per hectare, conventional viticulture using VSP trellis and sustainable and organic practices produce average yields of 40 hl/ha. The grapes were hand-harvested during the month of October.
The grapes ripen at different times so they were fermented separately and blended after malolactic fermentation. The grapes were destemmed, crushed, fermentation was initiated using cultured yeast in stainless steel tanks and large oak vats and it lasted 14 days at 22-24°C. The wine was matured in cement vats for 12 months then filtered and bottled.
