Production Method
We work closely with our long-time growers to develop balanced sugar and acidity in the grapes when it comes to harvest. The harvest takes place at the optimum point of maturity during the last week of August. After harvesting, the grapes are preserved in the cellar where a destemming and crushing process is performed.
The winemaking process is carried out in an inert atmosphere. Pellicular maceration from 2 to 4 hours in stainless steel tanks. Alcoholic fermentation occurs at a controlled temperature in order to preserve the aromatic complexity of the variety. There is no malolactic fermentation nor pressing involved.
Clarification is made based on elements of mineral origin, which makes them vegan-friendly. Several filtrations and microfiltrations up to 0.45 microns are carried out to avoid any suspended particles.
