

Sicily has a history of winemaking that dates back to ancient times. Blessed with consistently bright sunshine and reliably moderate rainfall, Sicily's classic Mediterranean climate is ideally suited to the production of organic wine grapes. With its perfect environment, Sicily is considered the best region for production of Organic grapes in the whole of Italy.

Tasting Notes
Colour
Straw-yellow, pretty bright, with golden shades.
Nose
The nose reveals a nice bouquet of ripe white fruits.
Straw yellow in colour with some copper reflections that revoke the typical colour of its grapes. An intense bouquet of fruits such as apple, melon and citrus, matched well with more delicate mineral aromas.

Vinification
The grapes are de-stemmed to eliminate any vegetal hints, then softly pressed. A static decantation of the must takes place at 9/10°C after which selected yeasts are added to initiate fermentation. This process lasts about 12-13 days at a controlled temperature, never exceeding 18°C. After racking, the wine is left on the fine lees for a few months to add structure and complexity.
