An intense bouquet of fruits such as apple, melon and citrus, matched well with more delicate mineral aromas.
The grapes are de-stemmed to eliminate any vegetal hints, then softly pressed. A static decantation of the must takes place at 9/10°C after which selected yeasts are added to initiate fermentation. This process lasts about 12-13 days at a controlled temperature, never exceeding 18°C. After racking, the wine is left on the fine lees for a few months to add structure and complexity.

With its perfect environment, Sicily is considered the best region for production of Organic grapes in the whole of Italy.
