The grapes are carefully pressed in a pneumatic press. After the juice is allowed to settle down completely, the alcoholic fermentation happens at 14°C. The wines are aged3 to 6 months on fine lees without malolactic fermentation. The ageing on fine lees smoothes the finish on the palate and brings roundness.
The soil is mainly calcareous marl. There are traces of ancient lagoons with their batch of fossilized mussels and oysters. These light soils allow deep rooting of vines that promote fulfilment and balance
