From selected parcels of Glera grapes grown northeast of Treviso. Hand harvested at optimum ripeness to give the required balance between aromatics and good acidity. Gentle pneumatic pressing followed by slow, cool fermentation in stainless steel. Second fermentation in pressure tanks, lasting 4 weeks.

Nuviana is part of the iconic Codorniu group of wine companies who are still today a family business (albeit with dozens of family shareholders). They own some of the oldest vineyards in Spain and a handful of the best wineries in the world including Bodega Septima in Argentina, Bodegas Bilbainas in Rioja and Raimat and Nuviana in Northern Spain.
Nuviana is based in Aragon and is located in an important conservation area for migrating birds, the word Nuviana deriving from the Latin Novelliam which means a nest of newly-born birds. The winery is a new concept using advanced technology which incorporates the comprehensive management of production from the beginning. A twinkling in the mind’s eye, this cultured concoction of the Western Cape's brightest cultivars is alive with firm, fleshy fruit. On the nose, it has notes of jasmine and white stone fruit. It has a nuanced citrusy palate and tangy finish. It's the Natural Selection.
Production
100% old bush vines from Swartland's sandy, granitic soils, the powerful Southern sunshine makes sure the grapes reach their optimum ripeness. No irrigation is used in the vineyards and very little crop control is needed due to the age of the vines naturally restricting yield. All grapes are harvested by hand. Produced from only free run juice, part of the blend is naturally fermented and a tiny percentage in old barrels. The wine is left on fine lees for an extended period for greater palate weight and mouthfeel.

Tasting Notes
Straw yellow in colour, this wine has vibrant tropical and citrus fruit aromas and flavours. On the palate it is refreshing and perfectly balanced, with a clean, crisp finish.

Production
The grapes are destemmed and very gently pressed in a pneumatic press. Prior to fermentation the juice is chilled and racked after settling. Selected yeasts are added to initiate the alcoholic fermentation, which takes place in temperature-controlled stainless steel tanks at 8°C. Vacuum distillation at around 30°C to preserve primary aromas.

Tasting Notes
This Primitivo is rich and ripe, with an abundance of dark berry fruit on the nose, and a plush, smooth texture on the well-balanced palate.

Production
Primitivo grapes are transported in small containers and softly destemmed, taking care to keep the skins intact. Temperature controlled fermentation around 22°C with frequent pumping over of the must achieves optimal extraction of colour, a fruity bouquet and soft tannins in the finished wine. Vacuum distillation at around 30°C to preserve primary aromas.
