Tasting Notes
Freshly zested lemon on the nose, intertwined with botanical aromas. On the palate: a vibrant symphony of fresh lemon juice zest and zing, with tart bitter lemon notes balanced perfectly with luscious velvety sweetness. This is less like traditional limoncello and more akin to the best cloudy lemonade you can remember.
Perfect Serve
Serve your Limongino cold from the fridge in a chilled glass, add a measure to your bubbly or mix with your tonic of choice over ice, and twist lemon peel.
Production
Unlike its Italian counterpart Limongino is a gin liqueur, not vodka based. Dr John uses a three-step process of infusing, distilling and sous vide (slow cooking) the spirit to capture all the zesty flavours of the lemons, before blending together with a sprinkle of sugar.
Producer
Like all good stories, English Spirit’s story started with discovering a loophole in an archaic law, that prevented craft distilling. That's where Dr John Walters comes in: a former Oxford scholar, with a background in biochemistry and the pharmaceutical industry, who was looking for a new challenge. After listening to a Radio 4 feature about French eau de vie, Dr John was left inspired to try his hand at distilling and set about defiantly setting up a four litre still for personal use which launched him onto a new epicurean adventure.
Using his ingenuity, he picked some grapes off the side of his house, which he set about fermenting and distilling to produce his first spirit, a brandy, which was surprisingly much tastier than a nice bottle he had recently bought. Encouraged by the results, he tried his hand at more spirits, being continuously delighted with the delicious outcome, soon enough he had an epiphany. Imagine if more spirits could be enjoyed neat, tasting this superb without the burning sensation?
In 2011, English Spirit was officially born, when John opened Cambridgeshire’s first distillery at the Old Salt Depot in Dullingham. At the time there were only four small-batch distilleries within the UK. Five years later, English Spirit Distillery expanded to a new site at Great Yeldham in Essex, adding twenty 200 litre stills to the operation, designed and custom built to John’s specifications. By then the variety of spirits distilled included the UK’s first rum, as well as vodka, gin, and sambuca. To which John applied his simple quality standard that a good spirit shouldn’t burn if you drink it neat.

Reposado Agave - El Presidente
Loved by presidents, leaders, and captains of industry, and now sitting as the pinnacle in the Lost Mexican range. The Reposado is a fitting epitaph to the life’s work of one of the early Cornish miners to venture to Mexico.
By 1870, Stanley Kiernan, the son of a Penzance distiller, was the last of a ragtag bunch of miners who had set sail from Cornwall and made their home in Central Mexico. He had spent decades playing with local flavours to create the world’s first range of Cornish-made Mezcal.
Now an old man and as much a Mexican as he ever was a Cornishman, he would take a bottle of his best Reposado up to the Panteón Inglés, where his compatriots lay.
With a wry smile on his weathered face as the memories of their exploits stirred in his mind, he would sit among their tombstones, all facing towards Kernow, and raise a glass to his old friends and their transatlantic adventures.
Café Agave - Mezcal Barrel Coffee Kick
By 1846, Cornish miners had been working in the silver mines of Mexico for twenty years. Knit-frocks and flat caps had been replaced with ponchos and sombreros, whilst sea shanties rang out from the tavernas each evening.
Penzance-born distiller Stanley Kiernan was now famous for his succulent alchemy. His most celebrated concoction, locally known as El Café Del Monte, used agave with vanilla and coffee beans.
Each day, a pasty now spiced with chilli and a ration of El Café was sent down the mineshaft to be met with cries of ¡Yeghes Da Amigos!
The Best Shot in Cornwall - Blanco Agave
In early 1825, Stanley Kiernan, the son of a Penzance distiller, set sail from Falmouth with around 60 of his fellow Cornishmen and 1500 tons of mining machinery. They arrived in Mineral del Monte, Mexico, in May 1826, where they immediately set to work resurrecting the region’s derelict silver mines.
Before too long, the mines were up and running, the pasty was the new staple in town, and Stanley fashions a basic still out of damaged mining equipment. With the help of the locals and their succulent botanicals, he starts to experiment, and on that windswept hill in central Mexico, the world’s first Cornish-made mezcal is born – a recipe lost in time until now…

Dr Squid Gin has been lovingly made by Pocketful of Stones Distillery down at Long Rock, Penzance.
Squid Ink is such a powerful ingredient that only a minimal amount is needed both for the distilling and colour or infusion of the gin. Vanilla was added to the base of the recipe to give a well-rounded mouthfeel and perceived sweetness, coupled with sea buckthorn for a tart, fresh fruit finish.
The gin is a savoury Mediterranean-style gin, from coriander, sea buckthorn and squid ink, with a smooth full mouthfeel from vanilla and a slight spice of pepper. Dr Squid Gin opens up when tonic is added releasing floral and citrus notes of meadow sweet and lemon.
Dr Squid pours black and when mixed with tonic turns a vivid pink. It also makes for a great Gin Mule when poured over crushed ice and ginger beer.

Bringing together 11 botanicals including traditional, locally foraged and world ingredients, make this gin really special. To ensure vibrancy, all of the five basic tastes are hit with elements of sweet (Mango), sour (Orange), bitter (Noble Fir from our forests) salt & umami (Bladderwrack seaweed from our shore). We also create sensation by hitting the nerves with subtle numbing Green Sichuan Pepper & tangy Bay leaf. The traditions of gin are respected with classic ingredients at the base making our gin complex but balanced and extremely moreish.
It took over 14 months and more than 90 different recipes to get close to our special blend of botanicals. As the final twist, we also wanted to involve the most important element of all - the public! 400 members of the general public received 3x variations on which they fed back to help craft a gin for the people. The end result is a gin that is entirely appealing to you all. Balanced and versatile so you can serve any way you like.

Cocktail Suggestions
Add 50ml of Hills & Harbour Gin, 25ml of Elderflower Cordial, and a dash of Grapefruit Oleo (made with molasses sugar) to an ice-filled shaker. Add a sprig of Noble Fir and shake. Strain into a glass over ice and top with soda. Garnish with a sprig of Noble Fir and a slice of grapefruit.

DANDELION & BURDOCK GIN 50ml ... The Darling of the North. Dandelion and Burdock is a tried and tested flavour combination. Pocketful Of Stones whisky-making process starts with creating the best possible craft beer, a beer that you would love to drink and that would not be out of place on tap at the best craft beer bars in the world.
Next using Jackson, their handmade copper pot still. Finally, the young whisky is aged in used oak barrels in the shadow of St Michael’s Mount. The evaporation during the aging process is poetically referred to as the angel's share – in this case, with our supernatural neighbour watching over the barrels, it is hard to argue that he hasn't earned it!. So what name would be more fitting than one associated with the legend of the dragon and the archangel?
The Legend
Legend tells of the devil's ambition to take Cornwall for himself. One day while looking out to the East the archangel St Michael caught sight of a fire-breathing dragon flying directly towards Cornwall possessed by the devil himself. The dragon carried a red hot boulder in its claws right from the fires of hell, a legendary aerial battle ensued. armed with a sword of pure fire St Michael struck the dragon a mighty blow. Through the sky, the stone tumbled and the place where it fell became known as Hell's Stone or Helston. To this day the locals celebrate the story of their patron saint and it holds a special place in local folklore.

They have taken the earthy flavours of the roots of these botanicals and distilled them with locally foraged heather, honeybush to add a floral lift and cola nut and almond to bind the flavours with orris root to add length.

This is the quintessential drink of the summer throughout the British Isles - think picnics in the park, Wimbledon, and strawberries and cream.
Tasting Notes
The Pocketful of Stone Distillery only make their Pens Sans Summer Cup when the Cornish weather starts to warm, and the first of the soft fruits start to appear. Strawberries are always the first, around April, making the first few batches very strawberry heavy.
Next, gooseberries and raspberries start to ripen, and they get included in the recipe. Towards the end of the summer, it is the blueberries and blackberries that are at their best, so they, too, are embraced.
The distillate stays the same, but the ingredients they use reflect the changing British summer and therefore make every bottle unique.
Perfect served over ice with Ginger Ale on a warm summer's evening.

The folks at a Pocketful of Stone Distillery in Cornwall have taken their Caspyn Cornish Dry and infused it with fresh English cucumbers. The Midsummer Gin has a slight green hint to it from the natural ingredients being used (no sign of essences being used here!), yet still has all the hall-marks of the Cornish Dry Gin but with added extra earthy notes.
It is a mellow, refreshing drink. Perfectly served with good tonic water and slice of cucumber and / or mint for an extra fresh zing.

Dr Squid Gin has been lovingly made by Pocketful of Stones Distillery down at Long Rock, Penzance. Let's start with saying the obvious; It is so good looking that it can be categorised as sexy!
Squid Ink is such a powerful ingredient that only a minimal amount is needed both for the distilling and colour or infusion of the gin. Vanilla was added to the base of the recipe to give a well-rounded mouthfeel and perceived sweetness, coupled with sea buckthorn for a tart, fresh fruit finish.
The gin is a savoury Mediterranean style gin, from coriander, sea buckthorn and squid ink, a smooth full mouth feel from vanilla and a slight spice, pepper. Dr Squid Gin opens up when tonic is added releasing floral and citrus notes of meadow sweet and lemon.
Dr Squid pours black and when mixed with tonic turns a vivid pink. It also makes for a great Gin Mule when poured over crushed ice and ginger beer.
A little tip here - pour it with the hole at the top - if you pour it with the hole at the bottom it can glub and spill (gasp!) - keep it at the top and its a perfect pour!

Tasting Notes
A classic dry gin, with loads of floral (hibiscus flowers) and citrus notes (lemon and orange peel, lemon grass, lemon verbena), a freshness (Japanese tea), length and long sherbety finish (gorse and orris).
"We like to compare it to those early Cornish spring mornings. When it’s still a wee bit cold, the sea is that crystal clear blue but you know it’s still too cold to jump in to. You’re probably wrapped up, but you feel warm and it’s crisp, invigorating. You know those mornings."
Serving Suggestion
The Cornish Dry is perfect served with premium tonic, garnished with a twist of orange. Keep the garnish simple so that the flavours and aromas of the gin stand out. Delisious in a classic negroni or a dry martini but two of our favourite cocktails at the minute are a Dirty Gibson and a Marmalade Cocktail.
Dirty Gibson
- 2.75 oz Caspyn Cornish Dry Gin
- 3/4 oz Dry Vermouth
- 1 tsp cocktail onion brine
Stir well in a shaker with ice, then strain into a chilled martini glass. Garnish & serve!
Marmalade Cocktail
- 2 oz Caspyn Cornish Dry Gin
- 1 1/2 oz fresh squeezed lemon juice
- 2 tablespoons Orange Marmalade
Make the 1 1/12 oz of fresh squeezed lemon juice, using about 1 small lemon or half of a larger one.
Fill a martini shaker half way full with ice. Add a few ice cubes to an 8 oz glass.
Combine all the ingredients into the martini shaker and shake for 30 seconds. Strain the contents of the shaker over the 8 oz glass.

We’ve taken the archetypal flavour of the Seville orange and distilled it with a gorgeous combination of botanicals, infused more Seville Orange peel and then added a slight sweetness to create a citrus- forward, contemporary gin built on the backbone of British tradition.
Old Tom Gin, as a style, is a little sweeter than a London Dry. This is no exception, but not too sweet to put off the gin purists out there. We have upped the ante on our dry gin with added seville orange peel, a little star anise and some liquorice root at the point of distillation; we’ve then infused the gin with traditional marmalade for two weeks and brought the ABV down to 40% with hand squeezed orange juice.
The result is a smooth, citrus forward gin with mouthfeel well rounded enough to drink by itself, with tonic, in a Negroni or, in the cold of winter, a Marmalade Hot Toddy.

Morveren Absinthe Original Small Batch

Tasting Notes
This handcrafted Absinthe has a stunning pale green colour, enhanced by the unique use of Cornish seaweed for both the colour and for a background unami flavour. It fills your glass with aromas of aniseed and delicious herbal undertones.
We source our wormwood from Josh at Wild St Ives who grows it himself on the cliffs near Zennor (just above Pendour Cove - the exact location of the Morveren legend).
Despite the 66% Alc/Vol, the finish is very smooth and long, with a fresh zing and precious little burn.

The Cornish Legend
In Cornwall the cove of Pendour is located close to the village of Zennor. A local legend tells of the story of Morveren the mermaid who lived at Pendour Cove. She was attracted to Mathew Trewella a handsome young local man and was captivated by his beautiful voice. Morveren would visit the church at Zennor just to hear him singing hymns and look upon his fine features.
Eventually Mathew began to notice the beautiful woman who had disguised her mermaid form. They fell in love, but Morveren knew that she could not survive for long away from her home in the sea. She felt compelled to tell Mathew the truth about herself and that as a mermaid she could not settle down to life on land. Sadly Morveren had to say to Mathew that she would have to go. Mathew was distraught and told her that he could not live without her.
Mathew told Morveren that wherever she went he would follow. He went with her to Pendour Cove and as she plunged into the waves he followed her. They live together now in the seas surrounding the beautiful Cornish coast. Local people living close to Pendour Cove will tell you that on calm still nights the sweet voice of Mathew can be heard carrying across the waves as he sings of his undying love for Morveren, The Mermaid of Zennor.
In the church of Saint Senara in Zennor, which is dedicated to the Cornish Saint Senara, there is a carved seat known as the Mermaid Chair. On the end of the pew, which is over 600 years old, there is a carving of a mermaid holding a mirror and combing her hair.

Nose
Henners Rosé NV is made from Pinot Noir and Pinot Meunier, using the saignée method to draw colour from the grapes at the pressing stage.
Palate
This sparkling rosé delivers classic English red berry fruit flavours including raspberries, redcurrants and rhubarb. A minimum of 18 month ageing on the lees brings a delicate creaminess to the wine.
Producer
When it comes to English wine there’s a lot to shout about, not least the stunning sparkling wines from Henners. Based just 4 miles from the sea in Herstmonceux, East Sussex, the 7 acre vineyard was created in 2007 by ex-Formula One engineer, Lawrence Warr. The winery was named in honour of Larry's French ancestor, Henners Dubois, who was forced to flee Paris for England during the French Revolution in the in the late 18th Century.
Boutinot was the sole distributor of Henners from this time and developed strong ties with the winery and its wines… so when the opportunity arose 10 years later to buy the estate, they jumped at the chance. Planted with traditional Champagne varieties of Chardonnay, Pinot Noir and Pinot Meunier, the vines thrive in an idyllic microclimate created by the vineyard’s proximity to the sea, low altitude (only 24 metres above sea level) and steep, sunny, south facing slopes.
All Henners wines are hand-crafted from start to finish; with separate fermenting of varietals and their vine clones to allow a broader range of wines for final blending; extended lees ageing for added complexity; and holding back of all bottles for at least 3 years prior to release to add depth and richness to every wine. Hand-crafted with every attention to detail, our winemakers create award winning wines of depth, complexity and elegance that are perfect for any occasion.
Production Method
Henners Rosé is produced solely from grapes grown on our outstanding estate in Herstmonceux, East Sussex. We found the unique combination of warm well drained sandstone soils, a southerly aspect slope coupled with low altitude, three miles from the sea and at just 24m above sea level. Harvest usually takes place in late September. The result is perhaps the finest vineyard microclimate in the country. We take a non-interventionist approach in the winery, made possible by the quality of the fruit. Vine clones and varieties are fermented separately to allow a broad palette of wines for final blending. This wine will have spent a minimum of 18 months on lees at time of release, and a minimum of 5 months in cellar post-disgorgement to create a deliberately vibrant and fresh sparkling Rosé. Dosage of 7.5g/l.
A Note on Sustainability
Already a founder member of WineGB’s Sustainability Programme Henners Vineyard can now announce it is one of just 18 accredited members to have been certified as sustainable by Wine GB. This is an endorsement to Henners’ commitment to winemaking and winery management that have minimal environmental impact, as well as the ongoing promotion of biodiversity in the vineyards and protection of soils. This is no easy task to attain, requiring annual review for accreditation and ongoing improvement in methodology.

Tasting Notes
Achroous is carefully designed to be different while maintaining the distinct character of gin. Juniper and coriander, as well as orris, liquorice and angelica roots, make up the gin's backbone, with fennel seed and Sichuan peppercorn rounding out the short bill. The result is a gin with a resinous juniper base, and earthy floral aroma and a rich, spiced sweetness on the palate.
Not only is it tasty, but the Electric Spirit Co. has also gone to great effort to make the packaging for Achroous Gin be infinitely recyclable or biodegradable!

Made using 100% fresh fruit, we put days of graft and craft into every batch. To capture the fresh flavours we hand-smoke, torch, macerate, press and then distil to create a full-strength cocktail.
Not only do we have our grain to glass Hills & Harbour Gin as the base, we use literally an overflowing wheelbarrow load of fresh fruit in every batch. This creates big flavours through pure distillation.
After several days of process, many skills, techniques and craft we achieved something truly special - the world’s first Distilled Gin Cocktail. 100% Distilled Fruit. 0% Artificial Nonsense.
Serving this Special Cocktail
It took us over 18 months to sneakily gain feedback from our Taste & Mix sessions at our home, Crafty Distillery. A smooth and vibrant gin that leads with juniper, delivers hints of the forest, tropical fruit, citrus spice, tangy sherbet and a subtle scent of the shore.
Bringing together 11 botanicals including traditional, locally foraged and world ingredients, make this gin really special. To ensure vibrancy, all of the five basic tastes are hit with elements of sweet (Mango), sour (Orange), bitter (Noble Fir from our forests) salt & umami (Bladderwrack seaweed from our shore). We also create sensation by hitting the nerves with subtle numbing Green Sichuan Pepper & tangy Bay leaf. The traditions of gin are respected with classic ingredients at the base making our gin complex but balanced and extremely moreish.
It took over 14 months and more than 90 different recipes to get close to our special blend of botanicals. As the final twist, we also wanted to involve the most important element of all - the public! 400 members of the general public received 3x variations on which they fed back to help craft a gin for the people. The end result is a gin that is entirely appealing to you all. Balanced and versatile so you can serve any way you like.

Cocktail Suggestions
Add 50ml of Hills & Harbour Gin, 25ml of Elderflower Cordial and a dash of Grapefruit Oleo (made with molasses sugar) to an ice-filled shaker. Add a sprig of Noble Fir and shake. Strain into a glass over ice and top with soda. Garnish with a sprig of Noble Fir and a slice of grapefruit.

One of our trio of gin liqueurs, Edinburgh Gin’s Elderflower Liqueur is distilled using the best native ingredients, locally sourced from the rural landscapes which surround Edinburgh. Subtle yet complex, this floral liqueur is made with freshly-picked elderflowers.
Elderflowers have a distinctive floral aroma and flavour that marry beautifully with gin botanicals. The summer’s elderflowers are handpicked in full bloom and then infused with our classic Edinburgh Gin. The flowers are then left to macerate for a month for full flavour extraction.
Tasting Notes
Nose - Highly aromatic with floral aromas.
Palate - Sweet but delicately so, with a hint of lemon.
Finish - Lingering hints of pear, peach and grapefruit zest.

INGREDIENTS
- 40ml Edinburgh Gin
- 20ml Edinburgh Gin's Elderflower Liqueur
- 20ml freshly squeezed orange juice
- 20ml lemon juice
- 10ml sugar syrup
METHOD
- Add all the ingredients to a tall glass and stir.
- Fill the glass with ice.
- Add a splash of tonic water.
- Garnish with an orange twist.

A classic pairing, our Rhubarb & Ginger is a sweet, fruity liqueur balanced by a delicate warmth and spicy finish. A mainstay of kitchen gardens across Scotland and intensely flavoured, rhubarb is the ideal ingredient for a sweet gin liqueur. Freshly picked spring-crop rhubarb is spiked with Oriental ginger and infused with our classic Edinburgh Gin. The rhubarb and spice are left to steep for four weeks, allowing for the complex flavours to marry together.

A sweet, highly perfumed, rhubarb-filled aroma.
Palate
Bright sweetness and a sharp tang, balanced with a pop of citrus.

Lind & Lime Gin is the very first spirit produced by The Port of Leith Distillery Co at our Tower Street Stillhouse. It’s still a couple of years before we’ll be distilling whisky, so we’ve thrown our full and unbridled energy into creating a gin forged entirely from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith.
In everything that we produce, our watchword is ‘balance’. We take a base spirit at 96% ABV and re-distill it with a carefully curated recipe of 7 botanicals to ensure that each of them is working in delicate harmony.

The Dr. James Lind
The marriage between lime and gin was consummated most famously with the birth of the Gimlet, a classic cocktail that first emerged in the early 20th century. However, having established ourselves in Edinburgh’s historic Port of Leith, our inspiration to distill our gin with lime came from much further back in time.
Born in Edinburgh in 1716, James Lind is a relatively unsung hero of the Scottish Enlightenment; a period traversing the 18th and 19th centuries when Scotland became a centre of intellectual and scientific accomplishments.
After some informal medical training at Edinburgh University, he joined the Royal Navy in 1738 as a Surgeons’ Mate, and by 1747 he had become Surgeon of a ship called HMS Salisbury. It was on this vessel that he conducted what is recognised today as one of the first clinical trials ever recorded, which played a significant part in the story of the prevention of scurvy.
We know now that scurvy is caused by a prolonged deficiency of vitamin C, but in the mid 18th century, little was known about this disease that could overwhelm scores of sailors on any one ship. Lind selected twelve sailors on the Salisbury with scurvy and allocated two men each to six different treatments for a period of fourteen days.
He later recorded in his 1753 book ‘A Treatise of the scurvy’, that the ‘most sudden and visible good effects’ were shown by the sailors eating citrus fruits. While Lind himself missed the significance of this observation, he is recognised for pioneering the concept of a ‘fair trial’, with a preference for observation over theory that set him apart from other practitioners of his era. By the end of the 18th century, the Royal Navy was provisioning its ships with citrus fruit, leading to a remarkable health improvement among the sailors. This gave Britain a significant advantage during an era of regular naval warfare, although competing nations soon caught up.
Lime juice was normally preserved with rum so that it could last for the duration of a voyage. In 1867 Lachlan Rose of Leith devised a new method to preserve citrus fruit, by replacing alcohol with sugar. From his factory on Commercial Street in Leith, he launched Rose’s Lime Juice and achieved huge success, selling his product to vessels departing from the harbour, but also finding an enthusiastic market on dry land.
The Bottle
As the gateway to Scotland’s capital city, records of Leith’s history as a trading centre go back to the 14th Century. One of the most valuable commodities to pass through the harbour was wine from France, later joined by brandy, sherry from Spain and port from Portugal. In the 18th and 19th centuries, whisky merchants gradually began to dominate the shore as Leith became Scotland’s national hub for the maturation and export of the country’s national spirit.
Wines and spirits were shipped in barrels, and would be bottled upon arriving into the harbour. This trade required large quantities of glass bottles. The key raw materials for making glass were locally abundant: sand and kelp (a large sea-weed) and the first records of glass production in Leith emerge from the mid to late 17th century. Foreign competition (cheap imports) and unrelenting tragedies stifled the industry’s development until the mid 18th Century when bottle production was established in earnest and seven cones, housing furnaces, were constructed along the shore.
The business was also supported by increasing demand for glass vessels for Edinburgh’s medical community, and a growing reputation for ‘fine crystal and window glass’ towards the end of the century.
It was this remarkable local industrial heritage that inspired us to choose a wine bottle shape for our gin. We’ve also embossed the words ‘Leith Glass Works’ on the base of our bottle, a name that will feature on all the spirit bottles we produce for years to come. While the industry no longer exists in our historic port, who knows what the future might hold.
