Vinification

A wine designed for everyday enjoyment with a focus to be approachable and accessible. The wine is predominantly a blend of Malbec and Merlot to create a fruit-forward rosé aimed to please all palates. A small percentage of the wine ferments in contact with French oak to broaden the palate without compromising the refreshing sensation of this wine. Our aim is to create a wine that showcases fresh red fruit (strawberries) and floral notes, with a creamy finish.

On the palate this wine presents the perfect balance between freshness and texture, with effortless weight and length. This wine was not made with the intention to age, but rather to be enjoyed immediately.

History

You’ve probably heard of the quaint beach town of Hermanus, situated on South Africa’s famous Whale Coast. Between 1855 and 1902, it was called Hermanuspietersfontein. In 1902, the local postmaster decided to shorten the name of the town to make addressing letters to the locals easier.

150 years later, the wine farm Hermanuspietersfontein, or HPF for short, craft outstanding wines with a serious sense of place. Their grapes come from Sondagskloof, which competes with Elgin and the Ceres Plateau for South Africa’s coolest wine growing region.

Nose

A mineral nose of crushed granite, peach kernel and petrichor.

Palate

On the palate, the sandy seam underpins ripe, juicy stonefruit flesh. The wine finishes tight and bright with a clean, lightly floral finish.

Production

Of the last blocks of Fernao left in the Cape this is the oldest at 30-something years old. Originally grown for yield and brandy this Portuguese immigrant certainly found its feet but fell out of favour. Which is where we all come in.. Before we lose ‘em let’s use ‘em. All the rock-stars are sniffing around this block now which is good for its future but here is an accessibly-priced expression of the loveliness of the Found before it gets Lost. In Portugal the variety is also known as Maria Gomes, which is strangely sexy in itself. Best drunk in its youth this wine is not for later, it’s definitely Fernao.

This Sauvignon Blanc is made from grapes from the Stellenbosch and Elgin area. The wine has an attractive green tinge in the glass with intense aromas of gooseberry, ripe passion fruit and lime. The mouthfeel is lively with tastes of green melon and lemon with a lingering aftertaste.

Fermentation & Aging

Grapes were harvested between 19° and 23° Balling to ensure fresh acidity and riper flavours in the wine. Fermentation was at 14° Celsius with further time on the lees to add to complexity and texture.

In the Vineyard

Growing conditions during the 2022 season were almost hassle-free. The cold and wet winter season was followed by a cool spring and early summer that led to excellent flavour development in the grapes.

Tasting Notes 

This wine has a soft, salmon pink colour and is bursting with aromas of strawberries and rose petals. The palate is vibrant with a good balance between the bright acidity and flavours of Turkish delight, strawberries and red cherries. The finish is juicy and dry and the wine has a pleasant length.

A fresh, dry and vibrant Rosé made via direct pressing of Cabernet Sauvignon providing a wine with an alluring salmon colour and appealing drinkability.

Vintage Conditions

2022 was an excellent vintage for the Rosé on Dornier. The ripening season was cooler than the previous vintage. The result of this cooler season was that the grapes ripened at lower sugar levels and with a fresher natural acidity and more delicate flavours. 

Fermentation and Ageing

The Cabernet Sauvignon ripened in late February. The grapes were handpicked and pressed directly after destemming in order to obtain light pink juice. The resultant light pink juice fermented for 14 days at 12 degrees Celsius and spent a further four months on full lees to provide fullness and body to the wine.

Nose

The nose is both savoury with stone fruits, pear,  notes of the local fynbos and a distinct note of oregano. 

Palate

On the palate it is delightful to find notes of wild honey often true to naturally fermented Chenin Blanc.

Production

The grapes for Peacock Wild Ferment Chenin Blanc are sourced from The Helderberg Ward on the coastal outreaches of Stellenbosch. Old bushvine vineyards (20 - 50 years old), planted in Chenin-friendly soils, have over time found their natural balance and it definitely shows in the wine. The Helderberg and Schapenberg are also known for the large expanses of indigenous flora (fynbos and proteas) and fauna such as caracal, bat-eared foxes, leopards and of course, peacocks.

In fact, four of South Africa's twenty WWF Biodiversity & Wine Initiative Champions (which includes Waterkloof amongst their number) are located on the Schapenberg and Helderberg alone. In addition to sourcing fruit from neighbouring vineyards, there is also a portion of wine from Waterkloof's biodynamic vineyard used in the Peacock Wild Ferment range.

Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand-harvested, then whole-bunch pressed in a horizontal basket press for only the finest juice. Fermentation takes place spontaneously with wild yeast in a combination of old 600litre barrels and concrete eggs. The wine then spends a minimum of 6 months on lees before bottling. No additions other than sulphur. Vegan friendly wine.

The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly wine. Tasting Notes

Fresh, tangy stone fruit and pineapple on the nose. The fruit follows through on the palate with a ripe, juicy mouthfeel and crisp acidity. There is breadth and character in this wine that follows through to a refreshing finish.

Production

The Chardonnay grapes for this unoaked wine are sourced from long-established vineyards on the Wellington/Swartland borders of the Western Cape. This area receives little rainfall and the soil is a mixture of alluvial riverbed stones, decomposed granite, and shale. The vines are low-trellised and the grapes are picked by hand in the early hours of the morning to retain their freshness. On arrival at the winery, grapes are chilled and the juice settled in tank prior to fermentation. A proportion of the grapes are full bunch pressed, the rest are destemmed and cold fermented. We keep the wine on its fine lees in stainless steel tanks for as long as possible prior to bottling.

Nose

A vibrant juicy style of Shiraz with ripe bramble and black cherry on the nose.

Palate

Fresh summer pudding fruits and gentle spice on the palate lead to a mellow and satisfyingly rich finish.

Production

The vineyards for this Shiraz clamber up the foothills of the Swartland mountains which are comprised of sandstone and alluvial soils. This region is hot and dry which forces these unirrigated vines to work hard to produce low yields and small berries. Produced from only free-run juice and fermented on skins in stainless steel tanks, a portion of the grapes are whole bunch fermented as the ripe stems add to the overall tannin quality of the wine. The remainder of the grapes are destemmed and pressed. After a third of the sugar has fermented, delestage is done once per day. The wine is drawn off at the bottom of the tank and transferred into a separate tank. Once complete, it is then transferred back into the fermentation tank onto the skins and stems. This method ensures more air is incorporated into the wine which helps to release the fresh, fruity, and spicy aromas known so well in this wine. When the final blend has been made, it is aged on fine lees for an extended period in French oak barrels along with around 15% from the previous vintage. This ensures a more complex wine with greater palate weight and mouthfeel.

An attractively ripe, red berry nose.

Palate

A rounded spicy palate with generous plum and hedgerow fruit flavours leading to a fresh, gently spicy finish.

Production

Merlot grapes are sourced from long-standing vineyards on the Swartland/Wellington borders and also the Breede River Valley. Low rainfall, warm weather, mainly decomposed granite soils, and low trellised vines all add really interesting complexity to the final wine. Grapes are picked in mid-March, destemmed and placed in open-top fermenters. Pigeage is carried out four times daily (whilst up to half of the sugar is fermented), then only twice daily to the end of fermentation - this is a soft delicate way of wetting the cap and aerating the wine. Malolactic fermentation follows before the wine is left on its lees to extract extra depth and soft tannins. A touch of elegance is achieved by using a modest amount (10%) of oak.

Tasting Notes

A vibrant cool climate style of Sauvignon with intense citrus and crushed nettle aromas. Ripe, concentrated fruit is offset by a grapefruit tang and leafy characters. Taut and mineral with a long, textural finish.

This wine displays classic baked apple and zippy citrus aromas with soft, delicate apple fruit on the palate balanced by crisp acidity. Extended lees contact gives this great value wine some real weight and character, the barrel-fermented component adds texture and finesse too.

Production

This Chenin Blanc is sourced from vines grown on sandy loams over granite bedrock, the classic Cape soils type. No irrigation is used in the vineyards and very little crop control is needed due to the age of the vines naturally restricting yield. Part of the blend is wild yeast fermented and a tiny percentage in old barrels. The wine is left on fine lees for an extended period for greater palate weight and mouthfeel.

Tasting Notes

This Sauvignon Blanc from the Western Cape displays fresh, ripe yellow fruit flavours with a hint of waxy lime, as well as some leafy herbal notes which make for a zippy, racy and deeply quaffable drop.

Production

Boutinot has been refining and redefining its Sauvignon Blanc vineyards over many years and works with numerous Coastal growers to best express the specific terroirs of this region that is influenced by that cooling Atlantic Ocean breeze. The soil type is a variety of decomposed granite, shale, and limestone and the plots are all unirrigated. The winery receives the grapes before midday. They are destemmed and crushed and go into strainers where the free-run is pumped gently to tank. The Sauvignon Blanc is fermented in temperature-controlled stainless steel tanks between 11C and 13C. The ferment is likely to last around 10 days. The wine is racked after ferment and then kept on fine lees right up until bottling.

Nose

Crushed for flavour not colour, this 40 year old unirrigated bush vine wine sucks only from the rocks underground. Bright, expressive and gently savoury on the nose. 

Palate

Along with its blushing hue, the palate rewards with fresh pomegranate flavour and acidity, savoury gamey notes, and a bright, beating heart of cherry ripe fruit. Slightly chilled with pink duck, pink lamb or carpaccio of beef, this is a beautifully defined expression of South Africa’s most achingly fashionable varietal.

From cool, windswept, coastal vineyards which yield naturally balanced grapes giving a wine with pure varietal charters and vibrant acidity.

Fresh and zesty with grassy and dry bay leaf aromatics, mineral notes, with hints of richness. This is a restrained Sauvignon Blanc with a palate that has lots of minerality and citrus with lightly herbal notes. The finish is ripe and gently honeyed with crisp green apple fruit and fresh acidity.

These vineyards allow for low yields, slower ripening, natural acidity and a greater concentration of flavours. If one wants to make sauvignon blanc naturally, these are just the type of grapes required. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, then a portion of the juice is fermented spontaneously with wild yeast and the rest is inocculated. The wine spends a minimum of 6 months on lees before bottling. Chenin crafted the wild way – old vine fruit, fermented with yeast found naturally on the grapes. Up to six months lees ageing after fermentation gives a slow and natural evolution and a harmonious and balanced wine.

Tasting Notes

Ripe citrus and green plum fruit on the nose, with lightly bready aromas and notes of dried herbs including fennel and aniseed. Good concentration of zesty fruit with a creamy lemon character offset by taught acidity. The finish is long with great textural complexity, attributable to the long, slow, wild yeast fermentation.

The grapes for False Bay Slow Chenin Blanc stem from old bush vines in the coastal region. Old vines are key to making stand-out chenin and although The Swartland is not as coastal as most of the vineyards used for the False Bay wines, it is an area where, quite frankly, grapes from old vines are available at the required prices. Thankfully, the area's old vines produce naturally low yields and retain good acidity despite being warmer and less windswept than Stellenbosch, so cooler, coastal Atlantic winds are less of a necessity for these gnarly old vines. Tasting Notes

A pale, spicy and textural Rosé mostly sourced from bush-vine Cinsault with summer fruits on the palate and a clean, savoury, dry finish. A subtle and delicate style makes this a versatile and food friendly wine.

Production

The grapes for False Bay Whole Bunch Cinsault Mourvedre stem from bush-vine Cinsault (mostly old vines) from Stellenbosch and Swartland, along with a small proportion of Mourvedre from Stellenbosch which adds a savoury depth to the wine. These old vines produce naturally low yields and retain good acidity. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, whole-bunch pressed and fermented spontaneously with wild yeast in stainless steel and wooden foudre. The wine is left on lees for a minimum of three months before bottling. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly wine. Producer

An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.

False Bay Vineyards is proud to be a WWF (World Wildlife Fund) Biodiversity Champion and certified by WIETA (Wine and Agricultural Ethical Trade Association). All of their wines are Vegan friendly.

A twinkling in the mind’s eye, this cultured concoction of the Western Cape's brightest cultivars is alive with firm, fleshy fruit. On the nose, it has notes of jasmine and white stone fruit. It has a nuanced citrusy palate and tangy finish. It's the Natural Selection.

Production

100% old bush vines from Swartland's sandy, granitic soils, the powerful Southern sunshine makes sure the grapes reach their optimum ripeness. No irrigation is used in the vineyards and very little crop control is needed due to the age of the vines naturally restricting yield. All grapes are harvested by hand. Produced from only free run juice, part of the blend is naturally fermented and a tiny percentage in old barrels. The wine is left on fine lees for an extended period for greater palate weight and mouthfeel.

At the Western Cape’s Pinnacle Point, evidence remains in maritime caves of our earliest known ancestors - a primitive culture that combed the beaches and fished in the same rock-pools from whence they came. Our aim with Primordial Soup is to introduce South African wine in its most accessible form, red and white familial twins made up of multiple classical cultivars, named without variety. The design inspiration is from the illustration’s of Ernst Haeckel, German naturalist, who identified then drew some of the simplest forms of life on Earth. We then use these to relate to Darwinism and the subject of Creation and evolution as a whole. It’s the story of everything.
