2021 Domaine Félix Bourgogne Aligoté
Regular price £16.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%An underrated French vinous gem worth rediscovering.
Tasting Notes
Soft citrus and mineral notes are followed by riper citrus on the palate, with good body and some chalky textural elements coming through. Very moreish on the finish with refreshing acidity to the end.

Method of Production
Produced from grapes grown on clay-limestone and Kimmeridgian Portlandian soils, Aligoté is an early-ripening and high-acid grape variety. Traditional winemaking methods are employed to produce a fresh and delicately fragrant white.
Producer
Energetic and charismatic, Hérve Félix has a small estate where he passionately produces a range of artisan wines. Founded by his ancestors in 1690, the estate remained in its 11 hectare form for three hundred years. In 1991, new plots of vines were purchased and the family now owns a total of 32 hectares mainly in Saint Bris Le Vineux, 8km south of Auxerre and 16km west of Chablis. A series of further investments in cellar equipment over the subsequent years has shown that, in winemaking, tradition does not exclude dynamism or modernism.
"This place may look a little chaotic, but the whites go into bottle young and fresh... This is one of Saint-Bris's oldest families, Nicolas Félix having been second alderman in the revolutionary year 1789". Burgundy, Anthony Hanson.
A Note on Sustainability
Although an advocate of reasoned agriculture since 1996, Domaine Félix is not as yet officially accredited.

2025 Tohu Awatere Valley Sauvignon Blanc
Regular price £16.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Sourced entirely from vineyards located in Marlborough’s stunning Awatere Valley, this vibrant wine displays aromas of ripe tropical fruit and passionfruit with lifted notes of currant and tomato leaf.
The concentrated palate is layered with flavours of sweet juicy pineapple, pink grapefruit, fresh green apple and hints of black olive. With herbal notes and a zesty minerality, this wine leads to a pure, lively and focused dry finish that has both freshness and length.

Viticulture
Grapes for this wine are sourced from blocks located in the upper, mid, and lower areas of the Awatere Valley. The Awatere Valley is cooler, drier and windier overall than other sub-regions of Marlborough, with a longer and cooler growing season. These climatic factors combined with vineyards located on young, fertile river terraces result in distinctive wines with a mineral drive and fruit-forward flavours. The 2018/2019 growing season in the Awatere began with unsettled weather resulting in lower yields overall, however a warm and dry summer with perfect growing conditions. grapes were able to be picked at optimal ripeness over harvest resulting in a wine with outstanding aromatics, palate weight and texture.
Vinification
Select blocks from the Awatere Valley are harvested using modern machine harvesters allowing ultimate extraction of flavour and aroma compounds from the skins of the grapes. Once at the winery the grapes are pressed into stainless steel tanks for cold settling, before being gently racked and inoculated with select yeasts chosen to naturally enhance the aromatic and flavour profiles of the wine.
Fermentation is carried out at cool temperatures allowing the wine to retain its bright aromas; with each batch fermentation typically lasting around 21 days. After fermentation is complete the wines are left to settle on their yeast lees for a short period before being racked again into stainless steel tanks for maturation. Meticulous classification of each batch results in a final blend that truly captures the exceptional characteristics of the vineyards. Once blended the resulting wine is stabilised and filtered without the need for fining, ready for bottling in mid-July 2019.
Producer
Tohu produces award-winning New Zealand wine crafted from grapes grown in our breathtakingly beautiful, Awatere Valley vineyard. When Tohu launched in 1998 we were the world's first Maori-owned wine company. Since then we’ve grown a reputation for producing premium wine in a range of varieties, winning awards for our Sauvignon Blanc, Chardonnay, Riesling, Pinot Noir and Méthode Traditionnelle.
Alan's Tasting Notes
"I haven’t tasted this since it came in last year - and boy has it changed! Last year it was all fresh, clean, refreshing acidity and subdued fruit - but with some time in bottle all that citric acidity has died down and really lets the passion fruit and pineapple flavours we associate with Marlborough Sauvignon shine through - absolutely delicious.
I think this is now our best value New Zealand Sauvignon Blanc. Vegan & vegetarian too is a bonus!" March 2022

2022 Gymnasium Fritz Willi Riesling
Regular price £16.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Chill out, put your feet up, and welcome Fritz Willi - a deliciously irreverent modern Riesling.
Tasting Notes
Nose
Fragrant aromas of ripe apricots, citrus and apple.
Palate
Minerality and ripe, rounded stone fruit flavours are balanced by zesty lemon sherbert characters - giving an appealing off-dry style that retains a surprisingly crisp finish.

Producer
The Friedrich Wilhelm Gymnasium name originates from the Jesuit school founded in Trier in 1561. Through the centuries, wine production from the estate's vineyards helped to support the school. Today the estate consists of around 25 hectares on the steep slopes of the Middle Mosel and Saar - all exclusively dedicated to Riesling.
The cellars lie deep under the city of Trier - where a stone in the foundations bears the date 1593. Here fermentation takes place in stainless steel or in traditional Mosel 'Fuder' (1000 litre barrels.
The school itself changed names a number of times following its foundation, but an interesting note is that one of its more famous pupils was Trier-born Karl Marx!
Production Method
The Riesling grapes are sourced from the steep slatey soils of the Saar and Mosel. After careful picking and selection, the grapes are fermented in 100 litre oak Fuder and stainless steel - both parts blended later to add complexity. The wine rests on its fine lees before bottling.

2023 Salvaje Syrah
Regular price £16.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Tasting Notes
Colour
Deep violet-red.
Nose
The nose is very fruity with a predominance of black fruits such as blackberries and blueberries on the forefront followed by light notes of blackcurrants and violets.
Palate
The fruity intensity is present at all times and pairs with the very velvety, elegant palate to make this wine very easy to drink.

Production
The Syrah and Rousanne grapes were picked into bins, transported to the winery and immediately chilled. The reception process begins with a double selection system on conveyor belts both before and after being destemmed. The grapes are then crushed and deposited into stainless steel tanks, where they undergo a 3-day cold maceration at 6º–8ºC. The temperature was then raised for the alcoholic fermentation with native yeasts at temperatures controlled to 24º–27ºC with a pump over program managed according to enological criteria. The new wine remained on its skins for an additional 6–7-day post-fermentation maceration and a total vinification of approximately 20 days. Malolactic fermentation took placed naturally in stainless steel tanks, where the wine was aged for 12 months. The wine was the stabilized naturally without treatments. It was filtered with a 1-micron cartridge filter prior to bottling. The wine is aged for 5 months in stainless steel tanks.

Nose
Bright ruby to dark purple in colour, it promises plenty of power. The nose is complex with powerful aromas of blackberry and blueberry with, rose, rosemary, violets and floral notes as well as a hint of spice.
Palate
The palate is nicely concentrated and with fine tannis. The flavours of blueberry, plum and blackberry are big, with hints of bittersweet cocoa and a subtle stimulating flavour of mint and violet, dark cherry, blackberry, red plum, earth, espresso, tobacco, dark chocolate, black pepper, black tea, violet. Very complex.

Producer
Owner & winemaker, Rosalia Molina, makes organic wines in one of Spain's highest altitude wineries. Her mission is to make wines that express the typicity of DO Manchuela: the vineyard, the altitude and the varieties planted.
This is a climate on the edge of what is possible: at 1,100 metres above sea level, the grapes experience a large diurnal range that encourages even ripening and helps to retain natural acidity. Rosalia's vineyards are certified organic, she uses only natural fertilisers, promoting biodiversity by welcoming chickens, sheep and pigs from local farms to roam the vineyards freely. Grapes are hand harvested and vinified as naturally as possible with native yeasts and little other intervention. The wines are then aged in clay amphora and some in French oak to give texture and complexity.
Winemaking
Never harvested before the 12th October and always by hand. The colour is extracted in 6000 litre inox tank. Skin contact for 2 to 3 weeks at a controlled temperature before an alcoholic fermentation which is spontaneous, with gentle pumping over for 5 weeks. Pressed directly to 3rd use, 225 Litre French oak barrels, where the malolactic fermentation takes place, also in a natural and spontaneous way for about 4 months. Aged for 4 months in 50% oak barrel and 50% in clay amphoras. Stabilisation is also natural and during the coldest months, temperatures can go to minus 15º C.

NV Cave de Turckheim Mayerling Brut, AOP Crémant d’Alsace
Regular price £16.79 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%The Crémant d'Alsace appellation denotes sparkling wines made in the traditional method. Effervescent and refreshing, this is the perfect wine for celebrations.
Tasting Notes
Nose
Gently aromatic with fresh apple scented fruit.
Palate
Flavours of apples and white flowers. A fine mousse and soft, creamy texture from extended lees aging. Elegant and well-balanced finish with a calming zing of acidity to refresh and entice.

Producer
Grapes are selected from vineyards with diverse soils - limestone, granite, gravel, marl and sandstone - which impart different characters and styles to the overall blend, and harvested by hand and machine, depending on site. This gently sparkling wine is made using the 'méthode traditionnelle' with a secondary fermentation in bottle and a dosage is approximately 9g/l. Cave de Turckheim looks to create a lightly sparkling style with a fine mousse and delicate fruit flavours. Its crémants are therefore aged on lees for longer than the appellation regulations require; for 24 months rather than 12 in this case.
Production
Widely regarded as one of the best co-operatives in the world, Cave de Turckheim lies at the mouth of the Munster Valley. Working closely with 180 partners, its vineyards span the full breadth of Alsatian terroir and grape varieties. Cave de Turckheim only produces wine from the grapes of its member growers, it is a récoltant not a négociant.
Substantial investment in the winery has enabled the team to vinify many parcels of grapes separately, offering Michel Lihrmann (senior winemaker for 25 years) the chance to highlight each wine's nuances in his signature dry, yet fruit forward, style.
Committed to producing the highest quality wines, growers are encouraged to keep yields low - for example, Cave de Turckheim voluntarily caps yields for its Grands Crus vineyards at 45hl/ha rather than the permitted 55hl/ha - and to pick the grapes by hand. This is part of a long term and innovative strategy of sustainability that includes developing the largest holdings of organic vineyards in Alsace, using natural alternatives to chemical treatments, and a green overview of all vineyard practices. Alongside some great organic wines, the extensive range runs from the excellent value Tradition wines right through to individual Grand Cru bottlings, plus fantastic Crémants d’Alsace and Vendange Tardive dessert wines.
Sustainability
An awareness of social and environmental concerns has always been high on the agenda for the Cave de Turckheim’s growers. They were among the first in France to practice integrated agriculture, an approach which combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification then went on to achieve the highest HVE Level 3 certification in 2019.
In 2008, a number of growers decided to commit to the rigorous standards of organic viticulture. As part of Alliance Alsace, approximately 70 hectares of vines are now cultivated organically, having obtained organic certification in 2011, with a further 30 hectares in transition. These vignerons have revived ancestral practices, tilling the soil and undertaking work that facilitates the elimination of weeds and the combat against the two major diseases: powdery mildew which is tackled with sulphur and mildew which is treated with copper sulphate. Natural fertilisers are also used (nettle, horsetail, comfrey and dandelion), fortifying the vines and increasing their natural resistance. Organic winegrowers meticulously observe their vines, enabling them to intervene in the right place and at the right time, rather than treating the plants systematically.
Turckheim’s commitment to the environment extends to the winery where it strives to conserve natural resources. Sorting waste for recycling, reducing its carbon footprint, using solar panels, and preventing pollution are just some examples of how environmental considerations are present in every aspect of its daily work. Committed to both the environment and its customers, Cave de Turckheim also plays an important role in the local economy.
To celebrate its 65th anniversary, Cave de Turckheim planted 65 trees in February 2022 to contribute to the reconstruction and maintenance of their vines and terroirs, as well as to the preservation and enhancement of wider landscapes. Local and ancient varieties were specially selected to contribute to the safeguarding of their genetic heritage.

2023 Smalltown Vineyards The Black Craft Shiraz
Regular price £16.69 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Germans were the first free immigrants into Australia in the 1850s onwards. They planted Shiraz in Barossa. Germans also invented letterpress in the 1500s. The suspicion around the “magick” of a printing press coupled with the inky hands of the printers meant that the art became known as the Black Craft. The wine is an homage to both the German influence of the oldest wine-making in Australia, as well as the letterpress.
Tasting Notes
A compelling, dark and rich chocolately beast. A classic Barossa Shiraz with intense savoury flavours of thick blackberry compote, black pepper and typical iron-rich beefy flavours. Not a hint of jam here, no sweetness, this is serious Shiraz for grown-ups with balanced acidity, a touch of cocao powder in the finish and tremendous length.

Production Method
This Shiraz is sourced from the finest available vineyard sites across the premium Northern Barossa Valley including for the most part Greenock, Western Ridge and Ebenezer. Aged 11 months in a variety of oaks, all American and French, new and old, around 35% new. All oaks were AP John, Barossa coopered. As usual withSmalltown, it was fermented in open fermenters. They don’t set the blades too close together during crushing so a fair bit of whole berry in the ferment which gives the wine generous fruit and soft tannins.

NV Krohn Ruby Port, DOC Porto
Regular price £16.59 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Rich and full Ruby Port, with a smooth, soft finish. Krohn's 'entry-level' is in a different category to most Ruby Ports - mature and versatile.
Tasting Notes
Colour
Deep red colour.
Nose
Fresh, plummy fruit aromas with a hint of spice.
Palate
The palate has plenty of lively cherry and curranty black fruit - rich and full with a soft finish

Production
Traditional grape varieties are sourced from Krohn's own vineyards, and supplemented by fruit from neighbouring farms working in partnership with Krohn. Here old vines are planted in schistous soils. Fermentation in temperature-controlled stainless steel vats, which is interrupted by the addition of grape spirit to preserve a certain degree of natural sweetness. This wine is a blend of different grapes, vineyards and vintages. Maturation - aged for 2 to 3 years in large, old oak barrels.
Producers
Wiese & Krohn was founded in 1865 by two Norwegians - Theodor Wiese and Dankert Krohn - shipping initially to Scandinavia and Germany. In the century and a half since its foundation, Krohn has built up an outstanding reputation. Long renowned for the quality of their sublime Colheitas (single vintage tawnies), they produce a remarkably complete range for a small house, and each wine excels in its category. Much of the secret lies in the high quality of their vineyards - the magical combination of terroir, locality, aspect, incline and low-yielding vines. Their Quinta do Retiro Novo estate in Sarzedinho, in the Rio Torto valley (where vinification takes place), is an grade vineyard. Indeed Krohn only work with grapes from A-graded vineyards across all of their ports, and their top wines are still trodden by foot. Since 2013 Krohn has been part of the Fladgate Partnership - alongside Taylor's, Fonseca and Croft.
Sustainability
The Krohn estate - which is part of the Taylor Fladgate portfolio has long been committed to the ecological well-being of their vineyards and the Douro valley. To this aim they have developed a model for sustainable vineyard cultivation designed for the steep hillsides of the Douro, where 28,000ha of vineyard (62% of the vineyard area of the region) is planted on hillsides with a gradient over 30%. This involves the construction of narrow terraces inclined at 3º to the horizontal – to allow the perfect balance between rainwater run-off and its penetration of the soil. This avoids top soil erosion which is a key challenge in mountain viticulture.
These terraces each support just one row of vines, and alongside the vines a temporary carpet of selected plant species is sown. This flourishes between November and late spring, preventing invasive plants from taking hold, and eliminating the need for herbicides to control unwanted vegetation.
The cover crop dies back naturally with the onset of summer, when the vines are active. The terrace system leaves tracks between the single row of vines and the foot of the bank, allowing access for machinery to mow any unwanted vegetation into a natural mulch. The mulch reduces water loss and restores natural organic matter to the soil. The absence of herbicides means that vegetation can regenerate easily and naturally each year. They also work hard to ensure the correct selection of vine varieties and their distribution within the vineyard, so that varieties can thrive naturally in each location, developing their own unassisted natural resistance to drought, disease and vineyard pests.
Alongside this Sustainable viticulture model the estate produces renewable energy with photovoltaic panels and has robust energy, water and waste management policies.
This vineyard model earned the Partnership the prestigious BES Biodiversity prize in 2009 (recognising achievement in the fields of conservation and environmental sustainability).

2021 Castel del Lupo Pinot Nero ‘Della Quercia’ Organic
Regular price £16.49 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Tasting Notes
This spectacular Pinot captures all the vigour and character of the small plot of organically-grown 15 year old vines in the La Quercia vineyard where it is sourced. A correct and pure Pinot Noir with real soul and expression.
Nose
Pronounced, warm, ripe, black-fruited, spicy and complex aromas.
Palate
Lively acidity offsets the ripe wild plum and bramble fruit and the palate combines concentration, delicacy and structure.

Production
The Pinot Noir vines are organically-grown in a combination of chalk, clay and silt soils on the rolling hills of Oltrepo Pavese. They are Guyot-trained at approximately 250m altitude, south / south-east facing. The grapes are harvested by hand and undergo careful selection. The grapes are macerated on skins for 8-10 days, then undergo malolactic fermentation in stainless steel. The wine is bottled in spring.
Producer
Castel del Lupo, in the heart of Oltrepò Pavese, dates back centuries - and includes the eighteenth-century Palazzo Pegazzera. In 1974 three entrepreneurs took over this historic estate and began a regeneration process. Giovanni Doglio, whose father and grandfather were both Piemontese winemakers, has over 40 years of experience managing wineries. Recently joined by his daughter Federica, he has worked tirelessly to develop the estate. They have purchased more vineyards (to cover 100ha at around 300m altitude), planted new vines and built a new cellar. The vineyards are now certified organic. The winery's main focus is high-quality bottle-fermented sparkling wine, and much of the vineyard is planted with Pinot Noir for this purpose. However, these vines are also the source of fine still red wines.
A Note on Sustainability
A proportion of the cantina’s vineyards are in conversion from sustainable to organic cultivation and will be certified as organic from 2020.

Producer
The Sepp Moser Estate was founded by the famous Austrian wine producing pioneer, Lenz Moser. Lenz Moser's son, Sepp Moser, began operating under his own name in 1987, and handed over the direction of this family-owned estate to his own son Nikolaus in the year 2000.
The Sepp Moser Estate comprises of 50 acres of vineyards in two prominent wine regions; Kremstal (22 ha) and Neusiedlersee (28 ha). In the Kremstal, Nikolaus produces an international range of varieties as well as the ever more important local varieties of Gruner Veltliner and Riesling. The reds are produced on the gravelly soils of the warm southern Neusiederslee village of Apetlon. All Sepp Moser wines have been organic (and all estate wines biodynamic) since 2007.
Production Method
The majority of the Gruner Veltliner grapes for this dry white were grown on the steep, rocky terraces of Rohrendorf in Kremstal and the surrounding area. The löss soil on these steep terraces is rich in lime and sediments from the last ice age, and can be up to 35 metres thick! Vines are trained on high trellises, with grapes organically produced and hand harvested. Grapes are destemmed and crushed and the must left to settle for 3-4 hours before pressing. Fermented and aged in stainless steel.
A Note on Sustainability
The Sepp Moser estate produces a wide range of wines every year thanks to its vineyards in two diverse regions. There is one main aim in the cellar: the quality of the grapes shall be brought with as little influence as possible to the bottle. The grapes in the Sepp Moser vineyards are harvested by hand and at the cellar of the Atrium House Nikolaus Moser emphasises gentle vinification and tries to interfere as little as possible with the process so that each wine can develop its own individual style. The fermentation starts spontaneously, and the maturing of the wine takes place on its own.
In 2006, Nikolaus officially moved the estate to biodynamic viticulture – one of the first to do so in Austria – and became Demeter certified. 2009 saw the release of Sepp Moser’s first certified organic wines. Nikolaus is very keen to reduce the amount of copper and sulphur used in the vineyards, and this year saw a reduction of two thirds over what was sprayed previously. He composts all the estates pomace and vine trimmings, and there is an ongoing effort to plant trees around the vineyards.

2023 Paolo Leo Passo del Cardinale Primitivo di Manduria
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Primitivo grapes ripen very early, which is how they got their name. Interestingly, just 20 days after the harvest, Primitivo vines produce new grapes, traditionally called "second harvest." These younger bunches are used by the winemaker to enhance the freshness and acidity of these bold wines, creating a wonderful balance with the rich berry fruit and spice character.
Tasting Notes
Deep ruby red with refined garnet reflections. A rich bouquet of blackcurrant, ripe cherries, and forest fruits, interwoven with hints of licorice, coffee, and sweet spice. The palate is silky and enveloping, featuring dried fruit, damson, and red plum, harmonized by fresh acidity and polished tannins. Long and enduring finish highlighted by notes of berry jam and warm spice.

Vinification
The grapes are destemmed and fermented at a controlled temperature of 25 °C for 8-10days. A maceration on the skins follows, during 15-18 days, to improve the delicate extraction of tannin sand flavors. Matured for 3 months in American oak barriques and 6 months in steel.
Producer
Now in its fifth generation, Paolo Leo is based in the Salento wine village of San Donaci. The story of this beautiful estate began at the turn of the twentieth century, when Antonio Leo started to vinify the grapes grown in the vineyards of “Masseria Monticello”.The winery has enjoyed constant investment over the years and is today a thoroughly modern winery, with a capacity of 120,000 hl of wine and a barrel room housing 1000 French and American oak barriques. The company is certified BRCGS/IFS, BRCGS Ethical ICEA Organic, EQUALITAS .

2022 Lurton Chateau Bonnet Sauvignon Blanc Semillion
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Production
The process of winemaking is both an art and a science, meticulously detailed through each step. After the initial skin-contact and settling, the must undergoes fermentation in temperature-controlled stainless steel tanks, ideally between 18 to 20°C, to preserve the wine's delicate aromas and flavors. Omitting malolactic fermentation retains the wine's natural acidity, providing a fresher taste. The wine matures on lees for four months in tanks, enhancing its complexity, followed by a further two months in the bottle, resulting in a wine with a maturing potential of two to three years. This careful balance of conditions and time frames is crucial for developing the wine's character.

2023 Brotte Côtes du Rhône Villages Laudun 'Bord Elegance'
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Tasting Notes
Colour
This wine is a luminous golden yellow, it is complex, with a viognier signature.
Nose
Apricot first dominates and evolves towards green apple and sweet almond. Ripe mango and floral rose hints give it an elegant and exotic character.
Palate
The initial freshness is followed by harmonious smoothness and elegance. The wine has a good aromatic complexity, with long lasting citrus and white peach aromas.

Vinification
The grapes are harvested by hand at maturity early in the morning. . After a strict cold settling (10-12°C), Grenache is vinified with the aim to extract most of their freshness (very low fermentation temperatures, numerous rackings …). The cuvée is aged on fine lees to bring smoothness and elegance, which are in perfect harmony with the aromatic freshness.
History
Since 1880, five generations of the Brotte family have been making wines with passion and authenticity. The fruit for this wine comes from selected small wine producers in the Rhône Valley, all of whom have been partners of Maison Brotte for several decades. The vines are planted on a very beautiful clay-silt terroir and which benefit from a lot of sunshine. The hot and dry climate therefore favours the ripening of the grapes and the good health of the vineyard.

2021 Cave de Turckheim Baron D'Alsace Gewurztraminer
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%A great introduction to the heady delights of Gewurztraminer.
Tasting Notes
Intensly perfumed Gewurztraminer with a rich palate of honeyed and rose-scented flavours.

Production
Produced in the traditional manner by winemaker Jean Michel Lihrmann in Cave de Turckheim's gravity fed cellar - pneumatic pressing, temperature controlled fermentation, no finings and light filtration before bottling - all to preserve fruit and aromatic qualities and elegance. His philosophy is to make wines with good acidity and fruit balance, based on the belief that all the qualities of the wine are already present in the grapes.
Producer
They were among the first in France to practice integrated agriculture, an approach that combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification. The growers are aiming for HVE Level 3 certification in late 2019.
Natural fertilisers are also used (nettle, horsetail, comfrey, and dandelion), fortifying the vines and increasing their natural resistance.

2024 Doña Paula Estate High Altitude Malbec
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Doña Paula is a winery that produces Premium wines, established in 1997 in Mendoza, Argentina. They own 100% of the vineyards used for the production of all their wines, planted in the best areas of the country, looking for the most faithful expression of each terroir.
Tasting Notes
Colour
Intense violet color.
Nose
Lovely notes of blackberry and plum along with a hint of violet and spice.
Palate
This follows through into the palate which has a lovely play between the concentrated black fruit and the spices, along with a hint of minerality that really rounds out the palate. It is wonderfully balanced with a nice freshness that makes the wine seem not quite as heavy as it should be with an ABV of 14.5%.

Vinification
The grapes are hand-picked the first week of April. In the winery, they are destemmed gently, without breaking the berries. Then, a cold pre-fermentative maceration is carried out to preserve the primary aromas. Fermentation takes place at low temperatures, and a post-fermentation maceration is later performed for 15 to 20 days. The wine is aged in first, second and third-use French oak barrels for 12 months.
The Estate Vineyards
90% of these grapes are sourced from our best vineyards in Alluvia, Gualtallary, at 1,350 meters (4,430 feet) above sea level and 10% from Los Indios, El Cepillo, at 1,100 meters (3,610 feet) above sea level. The soils are stony in the first location and sandy loam in the second one, and both have high calcareous content.
Doña Paula Estate Malbec displays the unique characteristics of the Uco Valley, a terroir where the climate is cold, with an average temperature variation of 16 °C (60.8°F) in Los Indios and 12.5 °C (54.5°F) in Alluvia, and an average annual rainfall of 280 mm (11 in) in El Cepillo and 300 mm (11.8 in) in Gualtallary. The vines yield an average of 8 tons per hectare, and they are grown in espaliers, using drip irrigation. At Doña Paula, our vineyards have always been managed using sustainable agricultural practices.

"As I thought - this is absolutely stunning. Lots of fresh black fruits with some spice. It’s big, full-bodied, complex, and long, but there’s a freshness to the fruit and silky tannins that can only come from high altitude, cool climate fruit. Drinking exceptionally well now but it's got the power to last a few years yet. Certainly over-delivers at £10.99!!" 14 Dec 2023

2023 Menade Organic Verdejo
Regular price £15.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Wild ferment' organic and high altitude Verdejo - another beautiful example from Menade.
Tasting Notes
Nose
Fresh stone fruit aromas with notes of fennel and thyme.
Palate
The palate is ripe and textural with white peach and herbal characters, balanced by crisp acidity and minerality.

Production
The Verdejo grapes are selected from parcels of vines, 20-25 years old, grown in pebbly, clay and chalky soils at between 700 and 800m altitude. Harvesting takes place by 3 different processes: part green daytime harvest by hand, part mechanised and part night-time harvest. Each parcel is vinified separately using wild yeasts in stainless steel. Fermentation takes place at a controlled temperature of 18-22ºC, and the wine remains on lees for a short period.
Producer
Bodegas Menade was established in 2005 by Alejandra, Marco and Richard Sanz - the 6th generation of this wine-producing family - just a kilometre west of the village of Rueda. Their winery incorporates a cellar hewn out of the solid rock of La Seca at the beginning of the 19th century. Richard is the winemaker at the estate, whilst his brother Marco is the viticulturalist, and sister Alejandra looks after exports and communications.
Their philosophy is grounded in nature, and respect for the vineyards and terroir. All wines are certified organic, no sulphur or copper sulphate is used in their vineyards, and fermentation is with only natural yeasts present on the grape skins. This is a producer of seriously interesting and innovative Rueda wines; their portfolio focuses predominantly on Verdejo and includes the stunning 'La Mision', which is part fermented in tinajas (traditional clay fermenting vessels) made from clay from their own vineyards, and a (non-Jerez) Palomino Verdejo flor aged wine.
Sustainability
Menade’s by-line is ‘Made by Nature’ – the winery doesn’t use chemical treatments, opting instead for a natural approach using plant-based infusions (for example using nettles, cinnamon) which are kinder on the soil, plants and naturally occurring yeasts. All wines are certified organic, and no sulphur or copper sulphate is used in their vineyards. They use green harvesting to control yields.
Their ecosystem includes mobile trees and bushes – to allow them to understand which are the most beneficial across their different vineyard parcels. They also have a garden boasting more than 40 species, many of the plants indigenous to Castilla y Leon, and pollination gardens with aromatic plants. These micro-systems, together with insect ‘hotels’, have created ideal habitats for insects and other wildlife - increasing biodiversity in their vineyards.
Alan's Personal Tasting Notes

Domaine de la Vieille Tour is a 22-hectare estate in the Côtes de Provence, situated between Pierrefeu and Cuers and not far from Château Gairoird. The Domaine's vineyards benefit from lying in a slight geographical depression which has a particular microclimate, encouraging the long and even ripening of the grapes. Grapes for the rosé, Grenache, Syrah and Cinsault, are cultivated on sandstone clay soils and harvested by hand, before being transported to a very modern, gravity-fed winery.
A Note on Sustainability
As a négociant, Gilardi is very keen to minimize its own environmental impact and to work with sustainably-minded growers. For example, on its bottling line, Gilardi has switched from a traditional sediment filtration system to a more efficient cross-flow filtration system and chooses eco-friendly dry goods such as Normacorc’s carbon neutral "Select Green" corks which are made from plant-based polymers from renewable resources and which are recyclable. Gilardi is expanding its collaboration with HVE Level 3 certified winemakers and currently, two of the wines it offers are organic.

2023 Cave de Turckheim Tradition Gewurztraminer
Regular price £15.59 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Textbook Alsace Gewurztraminer - elegant and harmonious.
Tasting Notes
A fantastic balance of ripeness, varietal character and finesse, with a fragrant rose water and lychee nose, lemon aromas and a slight steely character. The palate is the ideal balance of richness and freshness, with notes of rose petal, honey and faint hints of lemon.

Production
Produced traditionally by winemaker Michel Lihrmann - pneumatic pressing, temperature controlled fermentation, no fining and light filtration before bottling - to preserve the fruit, aroma and elegance of the grapes. His philosophy is to make wines with good acidity and fruit balance whilst retaining freshness and harmony.
Producer
Natural fertilisers are also used (nettle, horsetail, comfrey, and dandelion), fortifying the vines and increasing their natural resistance.

2022 The Tea Leaf
Regular price £15.49 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%A naturally fermented old bush vine brew, Tea Leaf hails from vineyards where the vines grow amongst South Africa’s native rooibos (red tea) plants that grow wild alongside the vines.
Tasting Notes
Aromas of ripe citrus and peach with savoury, gently nutty notes. The palate combines firm, high-key fruit with a gentle, sandy texture true to the source vineyards’ soil leading to a long, lightly honeyed finish. A deeply satisfying wine, taut and concentrated, from a blend of high quality bush vine fruit.

Production
From selected coastal vineyards of Chenin, Grenache Gris and Marsanne where the indigenous rooibos tea plant grows wild. Grapes are harvested in the early hours and then a further selection is made by hand at the winery to select the best fruit. The wine is naturally fermented and aged a few months in older 600 litre French oak barrels. No fining and coarse filtered (above 1 micron).

2022 Passitivo Primitivo 'Organic' Appassimento
Regular price £15.49 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%A bold, rich organic Primitivo!
Tasting Notes
Deep ruby red; pronounced ripe cherry and black cherry, with spicy notes and hints of coconut and chocolate. Well structured body, with smooth tannins and a lingering finish of ripe forest fruits.

Producer
The cellars occupy a total area of about 24,000 square meters. The first is located in the heart of the Salice Salentino DOC (San donaci) the second, inaugurated in August 2020, is located at the gates of the Primitivo di Manduria DOC (Monteparano).
They are equipped with a state-of-the-art winemaking plant, a large barrel cellar and a modern cutting-edge bottling line capable of reaching 7000 bottles per hour. The winery is flanked by the farm Masseria Carritelli that is surrounded by vineyards.
Viticulture
In mid-August, when the grapes have reached perfect ripeness, a pre-harvest withering technique called "Il giro del Picciolo" is applied. It consists in choking the stem of the bunches in order to prevent the nutrition of the berries, thus inducing a natural drying in the plant. The bunches are left to dry for about 12 days, losing about 25-30% of their weight in liquids, and concentrating aromas and flavors before harvesting. After destemming, the grapes are gently crushed, allowing the skins to remain intact for a better extraction of colour. Fermentation takes place at a controlled temperature of 22-25 °Cfor 8-10 days. In order to obtain greater aromas and soft tannins, frequent pumping over and délestage are carried out. After racking takes place the malolactic fermentation. 6 months in 2°passage American oak barrels, 6 months in stainless steel tanks.

2023 Rag and Bone Riesling
Regular price £15.29 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%The rationale behind this label is a quirky one! Our product manager found out that due to the tiny production of a particular wine, half the vineyard fruit was to be discarded....so he stepped in to say we would be interested to play with this other half given the quality of the wine over previous years. This lead to thinking about up-cycling the near-discarded, how one man’s trash is another man’s treasure etc and whilst humming over a potential moniker for the wine, God’s honest truth, a rag & bone van parked up outside his house calling for any old iron etc. Albeit a man in a white van, rather than horse & cart, the name stuck. The label reflects a collection of discarded items that together make up an eclectic assortment greater than the sum of its parts.
Tasting Notes
Nose
The nose classically expresses the vineyard... it's like having a fresh lime in your hand that you crush gently over minerals... literally lime on the rocks!!
Palate
The palate is bright, zingy, singing with natural acidity and really textural. It reflects the vineyard with its fine sandy texture with really bright, white pithy fruit. Just a cracking Eden Valley Riesling!

Production
Eden Valley Riesling is prized for its vibrancy, purity and longevity and has produced many of Australia’s greatest Rieslings. The fruit for Rag & Bone is sourced from Binder’s single-vineyard, high up on the Eastern side of Eden Valley. Warm days and cool nights ensure that the grapes develop ripe, intense fruit flavours whilst retaining appealing zing and acidity. The fruit was delivered to the winery immediately after harvesting in the cool hours of the morning, then processed very gently through our tank press. Free run and pressing portions were determined by Christa, using her vast experience with this variety. A Ratafia style wine was made from the pressings and the free-run juice was used to make this wine. The juice was cold settled and 3 days later the clear juice was transferred into fermentation tanks. Bottling took place in the middle of June.

2021 Montresor ‘Urban Park’ Appassimento
Regular price £15.19 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%An appealing appassimento style red from the Veneto - produced from classic Amarone and Valpolicella grapes.
Tasting Notes
Nose
Bright berry and black cherry aromas, and a touch of spice.
Palate
The palate has all of Valpolicella's appealing fresh cherry and ripe bramble fruit, along with added weight and complexity from maturation in oak. Supple tannins lead to a finish of delicate sweetness, offset by fresh acidity.

Producer
The illustrious Montresor family moved from France to Italy at the start of the 19th Century and settled in the Veneto region near Lake Garda. In 1892 Cantina Giacomo Montresor was established in Verona, and remains family-owned to this day.
Giorgio Montresor produces a portfolio of wines which increasingly rival the offerings of the region's more fashionable names - harnessing modern technology to craft the best wines from each site, across their 100ha of vineyard, in Valpolicella and Garda.
Production Method
Produced from Corvina, Corvinone and Rondinella grapes harvested from hillside vineyards north of Verona. 'Appassimento' refers to the process by which the grapes are dried for a few months before being pressed and vinified - this technique is more common in the Veneto than elsewhere in Italy. In this instance the grapes are dried for 30 days before vinification, and the wine spends 6 months in oak. The resulting red is rich with some residual sweetness.
A Note on Sustainability
At the end of 2019, Montresor received its organic certification. Some of its wines are already bottled in a lighter weight glass bottle (less than 420g) to reduce carbon dioxide emissions during transport, with the added benefit of reducing the amount of glass to be manufactured.
Over the next two years, solar panels will be installed at the winery to provide some of the electricity required in the production process. Alongside this, Montresor is about to install a water purification system to recover and recycle the water used at the winery.

2022 The Cloud Factory Pinot Noir
Regular price £14.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%When the first Western explorers arrived in New Zealand, they described the land as rising from thick banks of cloud. These clouds shape the country’s climate, inspire its Maori name, and play a crucial role in ripening the flavours of its signature grape varieties: Sauvignon Blanc and Pinot Noir.
Tasting Notes
This coastal fruit captures a breezy finesse over the classic cranberry and red current aromas giving us a wine with enough bite and texture to be foody but with enough generosity of fruit to be a delicious glass on its own. A touch of oak in the winemaking lends a little soothing creaminess.

Production
From maritime vineyards in Marlborough’s south easterly extremes in the Blind River Valley. Our Pinot Noir came from 2 vineyards - 87% Rapaura Gravels and 13% Omaka Valley clay soils which included a number of clones, 667,777,115, Abel and Clone 5. Both vineyards were pruned to 2 cane VSP and yields were naturally around the 7T/Ha mark. After green thinning on the vine the fruit was harvested over a period of 10 days from late March through to early April . Each parcel was kept separate and fermented in small open top tanks and hand plunged up to 4 times daily. Post pressing, wine was sent to a mixture of stainless steel and French oak for malolactic fermentation and ageing.
Producer
Boutinot's New Zealand wines are sourced from vineyards in each sub-regions of Marlborough - the Awatere, Waihopai and Wairau Valleys, as well as the breezier region of Waipara. These valleys have their own micro-climates and terroir which give a unique personality to the vineyards, grapes and finished wines.
Samantha Bailey brings her blending expertise and experienced palate to the fore in expressing the loveliest Boutinot wines from The Land of the Long White Cloud.
Sustainability
Wines made by Boutinot New Zealand are certified sustainable under the "Sustainable Winegrowing New Zealand" programme (SWNZ), an industry-wide certification programme led by New Zealand Winegrowers. This means that these wines are made from grapes grown in 100% SWNZ-certified vineyards and produced in 100% SWNZ-certified winemaking facilities. To be SWNZ certified, all members must complete annual submissions and undergo regular on-site audits conducted by an independent verification company. Annual submissions are made through an online questionnaire covering off impacts across the industry's six focus areas, which are Soil, Water, Plant Protection, Waste, People and more recently Climate Change. Vineyard members must also submit a full spray diary annually, which documents all agrichemical applications made to the vineyard that season. Spray diaries are processed for compliance to ensure that only approved products have been used and specific rules of use have been adhered to. New Zealand is at the forefront of Sustainability in wine with a roadmap to Net Zero by 2050 in place.

2023 Waterkloof 'Circumstance' Sauvignon Blanc
Regular price £14.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Tasting Notes
Nose
Crushed laurel on the nose with more than a nuance of residual seaside salt.
Palate
This has a big and textured palate with stone fruit and fennel hints – it is rich and minerally, showing even a slight rocky quality about it. As bracing as the wind through the vines at Waterkloof.

Production
Living soils and a natural approach to winemaking means that each of the single-varietal wines in the Circumstance range is truly defined by the circumstances influencing the chosen varietal and vineyard blocks, including soil, aspect, altitude, and vintage. These factors combine to produce low yields, balanced grapes, and wines with a true sense of place. The Sauvignon Blanc is from three windswept, south-facing (less sun exposure) blocks 270-300m above and a mere 2 miles from The Atlantic. The vines are 20 years old and production was a miserly 4 tons per hectare. Waterkloof follows a traditional, minimalistic approach in their gravitational cellar which means interfering as little as possible with the winemaking process. This allows the flavours prevalent in that specific vineyard to ultimately express themselves in the wine. To achieve this goal, all grapes are whole-bunch pressed, which ensures that juice is extracted in the gentlest way. The juice is then settled naturally for 24 hours. Naturally present wild yeast is employed to ferment the juice, mainly in old 600litre barrels (90%). This leads to a longer fermentation process with a slow release of aromas and a more structured palate. The natural fermentation process took 7-8 months to complete, after which the wine was left on the gross less for another 6 months. There are no added acid or enzymes during the winemaking process, with only a light filtration and a small addition of sulphur added as a preservative prior to bottling.

2023 Waterkloof 'Circle of Life' Red
Regular price £14.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%A rewarding and satisfyingly juicy mix of Cab Franc, Petit Verdot and Syrah. Circle of Life tells the story of Waterkloof: a once conventionally farmed property transformed into a living, breathing organic and regenerative vineyard by Farm Manager Christiaan Loots and his team.
Tasting notes
A harmonious blend that combines the spiciness of Syrah, the ripe, youthful fruits of Petit Verdot and the juiciness from Cabernet Franc. The beginning is fresh and full of fruit with good acidity, evolving into riper flavours with lightly spicy notes. Elegant tannins and fine, bright acid on the finish.

Production
Circle of Life Red is neither defined by grape varietals, nor indeed a specific block within the vineyard, but instead encapsulates the myriad soils, aspects, altitudes and grape varieties found on this windswept, biodynamic farm. The windswept vineyard blocks are all south facing (less sun exposure), 200-350m above sea-level and a mere 2 miles from The Atlantic. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Production is a miserly 4 tons/hectare. Grapes are hand-harvested and brought to the cellar by horses for hand-sorting. Bordeaux varietals are de-stemmed, whilst Rhone varietals are whole bunch pressed. Fermentation takes place spontaneously with wild yeast in large, open-top wooden fermenters with foot-pressing or manual punch-downs 1-2 times per day. The wine is left on skins for 30 days before going through malolactic fermentation in mainly old barrels, then ageing for 20 months in the same vessels. The components are then blended and the wine ages futher in large wooden foudre. No fining, just a light filtration. No additons other than sulphur. Vegan friendly, biodynamic wine.
Producer
Founded by Paul Boutinot in 2004, Waterkloof is a family-owned farm using organic practices. The farm is perched high up on the windswept Schapenberg, overlooking False Bay and The Atlantic Ocean. Living soils, naturally low yields and a long growing season help provide talented Cellarmaster Nadia Barnard with naturally balanced grapes that are imbued with a truly defining sense of origin. Those grapes are then transformed into wine with a minimum of intervention. The resulting wines are fine, inimitable and best enjoyed with food.
Sustainability
As well as being ECOCERT certified as organic, and working biodynamically, Waterkloof goes much further than many in its efforts to be a highly sustainable winery. A member of The Integrated Production of Wine Scheme, a voluntary environmental sustainability scheme established by the South African wine industry in 1998, and of The Wine and Agricultural Ethical Trading Association, a multi-stakeholder, non-profit voluntary organisation which actively promotes ethical trade in the wine industry, it is has also been a member of the World Wildlife Fund’s Biodiversity & Wine Initiative from its inception. Through a partnership between the IPW and the BWI, Waterkloof is a WWF Conservation Champion and has in place a formal nature conservation plan that includes: clearing approximately 55 hectares of land from alien invader species and restoring the Cape’s precious indigenous flora and fauna; re-establishing natural vegetation in previously disturbed areas; introducing preventive erosion control measures; providing migration corridors for species between isolated areas of natural vegetation; mulching of winter cover crops to create a healthy environment for the natural predators of vine pests and installing perches for birds of prey for natural rodent control measures. In the vineyards, drip irrigation is used only on young vines as a more efficient system to conserve water. Most of Waterkloof is dry-farmed; the biological control of pests is employed as an alternative to chemical spraying; annual legume cover crops are sown to add nitrogen to the soil and annual grain cover crops are sown in alternate rows as a carbon source and to return nutrients to the soil; earthworms are farmed and their casts are used to make a tea, which is used on the cover crops and soil as a living fertiliser; 380-400 tons of compost a year are made each year to boost carbon matter in the soil, to enhance its water holding capacity, and to boost the level of microbes in the soil keeping it fertile and alive; and, as part of the estate’s biodynamic regime, various foliar feeds are made. No damaging herbicides, pesticides or fungicide are used, only natural predatory fungi and metabolites to control mildew and to build the plants’ immunity. Six Percheron horses are used to plough, compost, spray and harvest the vineyards to reduce damage to the soil and vines and to reduce carbon emissions. Using the horses also teaches the handlers the rare skill of training these horses. A flock of chickens reduces the number of pests in the vineyard and returns nitrogen to the soil and compost, as well as providing fresh, free-range eggs for the restaurant. A small herd of cows is kept, which is key to producing biodynamic composts and teas, and a flock of sheep and a herd of goats are allowed to graze in the vineyards in winter to naturally reduce the level of weeds and vegetation between vine rows, as well as to put nitrogen back into the soil.
In the cellar, waste water gets pumped through a stainless-steel filter into a bioreactor where it is combined with the rest of the waste water from the building. Aerobic bacteria remove most of the contaminants before the water is pumped into a sand bed to remove any solids. From there, it runs into a reed bed for a final clean up and it is then used to irrigate the young vines. Peroxide is used a cleaning agent in the cellar as it breaks down in water after 15 minutes, leaving no residue. The cellar itself is built into the hillside to maintain a stable temperature, to avoid pumping the wines and hence reducing energy usage. Used boxes, dividers, bottles, screwcaps, plastics, paper and labels are recycled with an external company that take everything away for recycling. Old, unused bottles are sold to bottle recyclers who wash and resell them.

This harmonious combination of 3 classic grape varieties captures the essence of Waterkloof's biodynamic viticultural amphitheatre. 94 points, Decanter July 2023.
Tasting notes
A fine and seamless blend of 3 classic white grapes. Sauvignon Blanc aromas are prominent on the nose, with lime and prickly pear notes. A tight mineral core and creamy mid palate from the Chenin Blanc gives complexity and a persistent finish while a small proportion of Semillon adds texture and depth.

Production
Circle of Life White is neither defined by grape varietals, nor indeed a specific block within the vineyard, but instead encapsulates the myriad soils, aspects, altitudes and grape varieties found on this windswept, biodynamic farm. The windswept vineyard blocks are all, south facing (less sun exposure), 200-350m above sea-level and a mere 2 miles from The Atlantic. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Production is a miserly 4 tons per hectare. Bunches are picked early in the mornings, when they are still cool, which helps to preserve the flavours. Extracting juice from the grapes is achieved through whole-bunch pressing in our modern basket press. This is the most delicate way to extract the juice. No additions of enzymes or settling agents were made to the juice. After a settling period of 24 hours, a large proportion of the juice was destined for co-fermentation. We determined a blend of Sauvignon Blanc and Chenin Blanc prior to fermentation which went into old 600-liter barrels where it fermented for four months. After the fermentation was completed the blend was racked to a stainless-steel tank to which they added the rest of the Sauvignon Blanc, Chenin Blanc and Semillon. To have the varietals integrate the wine was left in barrel on the fine lees until its bottling date six months later. This helped to add more complexity and weight to the palate. The wine is produced as naturally as possible, with no additions of acids or enzymes.

Producer
At 420m above sea-level, set high above the picturesque Elgin Valley Andrew Gunn founded Iona. It is here overlooking the Atlantic ocean that he has secured some of the coolest vineyards in the Cape. In a country where cool climate vineyards are like gold dust, these vineyards are veritable nuggets. There is an extremely long growing season, allowing Andrew to create wines with complex flavours and a fresh, elegant style. The approach is hands off and the land is farmed according to organic and biodynamic practices with a particular focus on ensuring the health of the soils whilst pests are kept under control by the resident flock of geese that roam the vineyards.
Production
Grapes were hand harvested at optimal ripeness during the season. Grapes are crushed and pressed immediately. Juice was settled overnight before being inoculated with a variety of selected yeast. After fermentation, wines are racked and spend 4 months on the fine lees before blending and bottling.

Only 15ha are currently dedicated to vineyards - of average age 15 years - although they have recently added a further 1.5 hectares to bring this total nearer to 17ha. Here they produce five red grape varieties: Sangiovese, Ciliegiolo, Alicante, Merlot and Petit Verdot; plus white varieties Vermentino and Chardonnay.
The area was an old Etruscan settlement and site of ancient winemaking, and several mementos of the Etruscan era are still visible.
