The vineyard spans 88.50 hectares with clay-limestone and clay-siliceous soil types. Grapes are harvested manually or through a pre-machine sorting process. The rootstock used includes Riparia Gloire, 3309C, Fercal, and 101.14. Traditional plant nutrition is applied sparingly, and the vine density ranges from 3,000 to 5,000 vines per hectare. The average vine age is 17 years, predominantly Merlot and Cabernet Sauvignon varieties. Pruning is conducted using the Double Guyot method. Fermentation occurs in stainless steel tanks equipped with a patented cap-breaking system, at temperatures between 28 to 30°C. Malolactic fermentation is conducted, and the wine matures in both tanks and barrels, with a potential for aging between three to seven years.

he looted and pillaged and scavenged from all.
Ben fast became known for being up to no good,

Long Ben would have gazed longingly at the vista of Table Bay
from where our vines grow today, on Cocoa Hill.”

Tasting Notes
This wine has a soft, salmon pink colour and is bursting with aromas of strawberries and rose petals. The palate is vibrant with a good balance between the bright acidity and flavours of Turkish delight, strawberries and red cherries. The finish is juicy and dry and the wine has a pleasant length.

A fresh, dry and vibrant Rosé made via direct pressing of Cabernet Sauvignon providing a wine with an alluring salmon colour and appealing drinkability.
Vintage Conditions
2022 was an excellent vintage for the Rosé on Dornier. The ripening season was cooler than the previous vintage. The result of this cooler season was that the grapes ripened at lower sugar levels and with a fresher natural acidity and more delicate flavours.
Fermentation and Ageing
The Cabernet Sauvignon ripened in late February. The grapes were handpicked and pressed directly after destemming in order to obtain light pink juice. The resultant light pink juice fermented for 14 days at 12 degrees Celsius and spent a further four months on full lees to provide fullness and body to the wine.

2022 Finca Ambrosia Casa Cabernet Sauvignon
Regular price £15.99 Sale price £12.99 Save 19%It is a lively and easy-going red wine, with fine-grained tannins that give it a smooth mouthfeel.
4,800 bottles produced
Tasting Notes
The Casa Cabernet Sauvignon is lively and easy-going on the palate, with fine-grained tannins that give it a smooth mouthfeel. It delivers aromas of delicious juicy red and black fruit notes and an underlayer of grilled green pepper. It offers a clean fruit profile and bright acidity, making it an approachable and enjoyable unoaked red wine for any occasion.
Vintage
2022 was a long and dry growing season of outstanding quality. Veering on the cooler side of average temperatures, yields were still plentiful, and grapes achieved ideal ripeness throughout a very long cycle. Rainfall was limited, but abundant glacial water and sporadic showers were timed perfectly to help the vine’s balance. After cooler autumn and ideal growing conditions in February and March, we were able to produce wines with remarkable quality.
History
It was the year 2002 when a group of friends decided to invest in Argentina. They knew little about wine production, but all were passionate wine lovers and excited about the vision of bringing Argentine wines to the world stage. They bought the land that would become Finca Ambrosia and set about turning their idea into reality. At this time, the Gualtallary district began to attract the interest of wine producers, primarily because of its outstanding soil and climate characteristics. Encouraged by the positive forecasts, the friends bought 3 more plots over the years, from which the current winery emerged. Today, Gualtallary is considered the best terroir for producing premium wines in the province of Mendoza.

2022 Showdown ‘Man with the Ax’ Cabernet Sauvignon
Regular price £12.99 Sale price £11.04 Save 15%The ‘Man with the Ax’ is the nickname for the King of Diamonds in Poker-parlance, and in California, Cabernet is undoubtedly ‘King’. Rich cassis fruit and a good lick of oak make this a plush, easy-drinking example of why it is so highly prized.'.
Tasting Notes
Nose
Ripe blackcurrant and wild berry fruit on the nose complemented sweet vanilla oak.
Palate
Rich cassis and black cherry fruit on the palate with a soft, juicy, yet long finish. Framed by the subtle American oak.

Production
This wine is sourced from vineyards in the northern part of California’s Central Valley. The region around Lodi and Manteca enjoys significant influence from San Joaquin and Sacramento river deltas, which act as a natural cooling system to the often-searing heat. The effect is to provide freshness to the ripe, fruit-charged Cabernet grapes. Individual Cabernet blocks are vinified separately and then blended to produce a wine that reflects the right balance between fruit and structure. The wine then spends 6 months in oak to provide a broad frame for this rich wine.
Producer
Boutinot has been working with growers in California for over 10 years, finessing our offering from vintage to vintage, increasingly with specific estates sourcing old vine material and site-specific fruit.
The current range of wines are sourced from the warm region of Lodi in Central California, to which Samantha Bailey brings her esteemed palate and decades experience to hone these elements into the brightest wines of The Sunshine State.
Alan's Tasting Notes
"Outstanding - really easy on the palate with loads of smoky blackcurrant fruit, a hint of spice and a glug of vanilla from the oak ageing giving a really well balanced, smooth drinking red!"
