History
Dornier is a family owned winery situated in The Golden Triangle area of the upper Blaauwklippen Valley Stellenbosch. The primary focus at Dornier lies in the production of premium quality wines with minimal intervention which are expressive of the unique terroir of The Golden Triangle whilst showcasing the complexity and finesse of the noble grape varieties planted at Dornier. Reverence for tradition is salient at Dornier as is difference where it leads to improvement.
Dornier Wine Estate is located on 3 different farms in the Upper Blaauwklippen Valley namely Groenkloof, Heldemeer and Stellenrust (Homestead) the latter of which includes a historic Sir Herbert Baker designed homestead and one of the first wine cellars ever built in Stellenbosch in the late 1600s.
Dornier proudly boasts an A rating with IPW (Integrity and Sustainability) given its ongoing efforts incorporated and devotion towards sustainable farming practises with integrity.

Fermentation & Aging
All components of this blend were fermented separately in vineyard specific batches with pump-overs for colour and tannin extraction being performed five times daily. The wine was barrel matured for 12 months in French oak barrels and a small un-oaked component was used to provide a fresh and lively character.
Vintage Conditions
The vines are planted on our Groenkloof farm on the slopes of the Stellenbosch Mountain. The soil is composed of coffee coloured decomposed granite. The vines get full sun which allows for optimum development of rich berry characters in the grapes.

Nose
An inviting nose of newly-turned earth, black plums, maraschino cherries, rosemary and fennel.
Palate
The palate is refreshing, with a balanced acidity and plushy tannins. Flavours of vibrant dark chocolate and mocha can be found, in addition to rhubarb and star anise. The wine is complex and inviting with a bitter grapefruit and tobacco finish. A delightful wine that is bound to be a conversation starter and should be a staple on all dinner tables.
Winemaking & Maturation
A ‘right bank’ Bordeaux Blend – Merlot (54%) dominant with Cabernet Sauvignon (39%) and a splash of Cabernet Franc (7%)The Cabernet Sauvignon, Merlot and Cabernet Franc grapes were harvested from a North-Easterly facing vineyard on Rondekop. All grapes were stored in a cold-room overnight and then destemmed and sorted by hand, spending five days in a tank to cold soak. The Cabernet Sauvignon and Cabernet Franc berries were crushed and the Merlot berries kept whole. All grape cultivars underwent pump overs 1-3 times per day and were gently basket pressed once dry. Finally, the juice was returned to tanks for malolactic fermentation and then transferred to French oak barrels, of which 26% were new barrels, to mature for 16 months.
Winery
Oldenburg; a hot topic from a cool climate. Anyone who knows anything about South African wine should have Oldenburg fully on their radar – they are producing outrageously good wine and have, very arguably, the most beautiful tasting room to visit in the Cape. Oldenburg, situated in the Banghoek Valley of Stellenbosch, has one of the coolest microclimates in the region. A combination of a mountain amphitheatre, high altitude and cooling winds result in growing conditions about 5 degrees cooler than the rest of Stellenbosch.

Summer pudding reaches from the glass, there is an abundance of blackberry and cassis fruit with a naughty creaminess of oak that marries on the palate for a bold pastiche of old vine Barossa Cabernet.
Production
The Smalltown block was purchased in 2016, 40 hectares of 28-year-old Shiraz and Cabernet in the premium Ebenezer District of the Barossa Valley. This wine was aged in new and tertiary French oak for 24 months. The oak lends a subtle texture and structure to the fruit leaving the palate fresh so this is a bright, varietal Cab that wears its oak lightly as a structural veil rather than anything more monstrous.

Smalltown Vineyards express many of the Barossa’s prized districts form Gomersal, Kalimna as well as the Eden Valley and beyond. We work with exceptional vineyards simply expressed using minimal intervention, basket press where relevant, natural ferments in open-top fermenters to best capture the Barossa’s magical flavours. Nose

Palate
The palate is concentrated and smooth with vibrant plum, red fruit and a delicate herbal note. Tannins are ripe and provide welcome grip and structure.
Production
The Central Valley vitivinicultural zone extends from the Maipo Valley in the north to the Maule Valley in the south. The entire zone has good drainage, high fertility, and tremendous agricultural aptitude, especially for red grape varieties such as Cabernet Sauvignon, Carmenère, and others. The Mediterranean climate has warm summers with broad daily oscillations between daytime and night time temperatures, and cold, rainy winters that allow for good vine development. The soils are of alluvial origin with moderate depth. The grapes were hand picked in mid-April and undergo a week-long pre-fermentation cold soak at 8ºC (46ºF) to extract fresh fruit characteristics. Alcoholic fermentation took place at 25º–28ºC with daily pumpovers. The wine remained on its skins for a period, after which the free run wine was separated from its skins and allowed to undergo malolactic fermentation naturally. 20% of this wine was aged in oak barrels for 6 months and later reblended to achieve a more complex character.

2022 Cape Heights Cabernet Sauvignon

Tasting Notes
Nicely expressive Cabernet from the Western Cape with good concentration of cassis and red berry fruit. Taut and leafy but also brambly, ripe and succulent with ripe tannins.
Production
The grapes for this Cabernet Sauvignon are sourced from vineyards that border the warm Swartland/Wellington area and also the Breede Rivier Valley. The vast variety of soils gives the final wine an interesting complexity. As the vines are over 25+ years old, lower yields of 6-8 tonnes/ha help to deliver flavoursome, concentrated fruit, and the berries are picked when fully phenologically ripe. The grapes are destemmed and crushed, with a slow start to fermentation at a low-temperature 17C then gradually increasing after three days to 22 - 24C for full fermentation. Pump-over takes place twice daily to wet the cap and aerate the fermenting wine. Wine is fermented down to 5 g/litre residual sugar and pressed before being pumped back into stainless steel tanks. This ensures soft tannins and no-over extraction of any harsh tannins. Malolactic fermentation follows and the wine is kept on the lees until bottling.

Vintage
2022 was a long and dry growing season of outstanding quality. Veering on the cooler side of average temperatures, yields were still plentiful, and grapes achieved ideal ripeness throughout a very long cycle. Rainfall was limited, but abundant glacial water and sporadic showers were timed perfectly to help the vine’s balance. After cooler autumn and ideal growing conditions in February and March, we were able to produce wines with remarkable quality.
History
It was the year 2002 when a group of friends decided to invest in Argentina. They knew little about wine production, but all were passionate wine lovers and excited about the vision of bringing Argentine wines to the world stage. They bought the land that would become Finca Ambrosia and set about turning their idea into reality. At this time, the Gualtallary district began to attract the interest of wine producers, primarily because of its outstanding soil and climate characteristics. Encouraged by the positive forecasts, the friends bought 3 more plots over the years, from which the current winery emerged. Today, Gualtallary is considered the best terroir for producing premium wines in the province of Mendoza.

Producer
For over a decade Boutinot has been in partnership with leading Bordeaux négociant Ginestet, to offer high quality wines from a selection of châteaux in key appellations as well as consistently fine, benchmark Bordeaux wines.
Production
Lussac is a village to the North West of Saint-Émilion, granted appellation status in 1936. Predominately Merlot vines averaging 25 years of age grown on gravelly/clay soil. Grapes are carefully harvested before being destemmed and crushed and transfered to temperature controlled stainless steel tanks. Fermentation last around 10-15 days, with 7 days maceration.
Sustainability
As both a négociant and a producer of its own wines, Maison Ginestet has long been convinced of the need to work the land in a viable manner and it places substantial emphasis on partnerships with sustainable agriculture-accredited winegrowing estates. Some growers are fully organic, and Ginestet is certified to bottle wines made from organically grown grapes.
In 2006, Maison Ginestet set up an international wine school at its Carignan-de-Bordeaux site. Through the Ginestet Wine Academy, Maison Ginestet shares with its commercial partners the expertise it has gained over more than a century of producing and marketing Bordeaux wines.

Oldenburg aims to best reflect their remarkable terroir through the Oldenburg Vineyards (OV) range of wines – a range of single cultivar wines. There is minimal intervention in the vineyards and the wines are made in an uncompromising manner.
Vintage Conditions
Stellenbosch, in general, played host to a perfect winter, with steady cold units being accumulated through to the end of August with even rainfall throughout the winter. The good winter cold led to a particularly even bud break. Spring was cool and dry, which favoured the flowering and fruit set for the vintage. Good summer rainfall meant the vigour needed to be kept in check. Despite a relatively hot and dry ripening period, temperatures were kept moderate due to our higher altitude and ultimately led to an exceptionally good harvest with great sugar accumulation
Winemaking & Maturation
Grapes were picked by hand from 15-year-old bush vines on granitic soil at 410m above sea level. Bunches and berries were meticulously sorted. 1/3rd whole bunch and 2/3rd whole berry fermentation. Wild fermented in a stainless-steel tank with punch-downs and pump-overs 1-2 times per day. The wine was basket pressed and malolactic
conversion took place in barrels. The wine was then matured for 14 months in old 300L French oak barrels.

Production

Individual Cabernet blocks are vinified separately and then blended to produce a wine that reflects the right balance between fruit and structure. The wine then spends 6 months in oak to provide a broad frame for this rich wine.

Boutinot has been working with growers in California for over 10 years, finessing our offering from vintage to vintage, increasingly with specific estates sourcing old vine material and site-specific fruit.
The current range of wines are sourced from the warm region of Lodi in Central California, to which Samantha Bailey brings her esteemed palate and decades experience to hone these elements into the brightest wines of The Sunshine State.

Tasting Notes
Bursting with red and blackcurrant fruits, this is a really soft and pure Cabernet with gentle tannins and a hint of green pepper on the finish. Cool herby flavours mingle with red fruits and a nice touch of acidity.
Production
Sourced from selected areas of the Central Valley. Relatively cool short fermentation to preserve fruit aroma with maceration on the skins for only a few days to extract a nice colour but minimal tannins. Early bottling to keep the wine's youthful style.

Our winemaking team have been building relationships across Chile over the past two decades, sourcing fruit and wine from across the Central Valleys. We work with a number of small family growers who pay particular attention to quality and ensure that our winemaking team has the best possible fruit to work with . Freshness and purity are the preferred hallmarks of Boutinot's Chilean wines.
Each vintage Boutinot winemaker Guillaume Letang travels the vineyards of our grower partners, blending that year's truest expression's of Chile's unique terroirs.

Notes of juicy red fruit dominate on this wine, with some freeze-dried strawberries and raspberries and a touch of rose. Medium-bodied, velvety tannins and deliciously drinkable.
Behind the Wine
An innovative reimagining of red wine, the French-inspired De Toren Délicate is a fresh and light cépage that reveals its best assets when served slightly chilled. While it displays intense red undertones, this limited-production wine is soft and delicate on the palate, making it the perfect culinary consort, not to mention the reason a number of the world’s top dining establishments choose it specifically for their dedicated tasting menus.
Maturation
The Merlot and Cabernet Sauvignon are carefully matured in third fill French oak barrels for twelve months. The Malbec is fermented and aged in stainless steel tanks to retain the primary fruit aromas and freshness of the wine.
