Production
The vineyards, situated in the southern reaches of Troyes achieve greater ripeness which leads to a richer fruit and classic baked biscuit flavours mixed with characteristic toasty yeast overtones. Only the first, lightest pressings are used, as is usual for fine Champagne. Classic slow second fermentation in bottle followed by maturing on the lees for at least 18 months before being disgorged and released for sale.
Producer
The Gremillet estate was founded by Jean-Michel Gremillet in 1979 when he inherited a plot of vines from his mother, Lulu. Today, the house possesses over 40 hectares of vineyards and is situated in a small village 45 kilometres from Troyes - the historic capital of Champagne - and 180 kilometres south of Reims. The vines lie on steep, sun-drenched hillsides in Kimmeridgian clay-limestone soils. Pinot Noir is king here, and constitutes around 94% of Gremillet’s plantings, with the remainder dedicated to Chardonnay, ideal for creating a classic, baked biscuit, rich, fruit-flavoured Champagne.
A Note on Sustainability
This family-owned and run Champagne house is HVE 3 certified, and as much as possible it restricts its use of chemicals in the vineyards. One of its cuvées is certified organic by ECOCERT and hopefully, this is the start of a bigger process.

For over five centuries, Maison Antech has tamed the magical terroir of Limoux to make fine sparkling wines.
The secret of their character lies in the combination of Limoux's three terroirs, which form the backbone of the cuvées: freshness from the Pyrenees, vinousness from the ocean, and roundness from the Mediterranean. From these terroirs, Mauzac and other grapes are cultivated, each bringing their own complexity and purity to the wines. This Cuvee, named after Francoise, daughter of the family and a member of the sixth generation celebrates her strong character and the part she plays in guarding her heritage and shaping their future.
Production
Grapes are handpicked and go directly into the press. The first fermentation takes place in stainless steel vats. The various parcels are then blended and the wine goes into bottle for secondary fermentation, where it ages on the lees for at least 30 months. Finally, a dosage is added using reserve wine to balance the wine.

Production
Grapes for this cuvée are grown in the lieu-dit of "Auche" around the village of Janvry which lies just to the west of Reims. Firstly they are pressed in small stainless steel vats, before being transferred to ceramic vats for 12 hours to allow for natural clarification of the juice. Next, the clarified juice is moved to large steel containers where it remains from September to March, during which time fermentation takes place before finally being bottled for the secondary fermentation and lees ageing. Dosage is between 9g and 10g per litre to give a richness of profile and this Brut Sélection is comprised of 60% wine from 2017 with 40% reserve wines from 2014-2016.

The Cave Co-opérative de Germigny was created in the early '60s by a handful of winegrowers who wanted to pool their resources and craft their own Champagne. They aimed to celebrate the local terroir - the western slopes of the Montagne de Reims. Today the Co-operative works 115 hectares of vineyards covering 40 different crus, of which 5 are classified as Premier Cru. The Co-op members remain passionate about their shared values of respect for nature, protecting their heritage and working together.

Producer
Grapes are selected from vineyards with diverse soils - limestone, granite, gravel, marl and sandstone - which impart different characters and styles to the overall blend, and harvested by hand and machine, depending on site. This gently sparkling wine is made using the 'méthode traditionnelle' with a secondary fermentation in bottle and a dosage is approximately 9g/l. Cave de Turckheim looks to create a lightly sparkling style with a fine mousse and delicate fruit flavours. Its crémants are therefore aged on lees for longer than the appellation regulations require; for 24 months rather than 12 in this case.
Production
Widely regarded as one of the best co-operatives in the world, Cave de Turckheim lies at the mouth of the Munster Valley. Working closely with 180 partners, its vineyards span the full breadth of Alsatian terroir and grape varieties. Cave de Turckheim only produces wine from the grapes of its member growers, it is a récoltant not a négociant.
Substantial investment in the winery has enabled the team to vinify many parcels of grapes separately, offering Michel Lihrmann (senior winemaker for 25 years) the chance to highlight each wine's nuances in his signature dry, yet fruit forward, style.
Committed to producing the highest quality wines, growers are encouraged to keep yields low - for example, Cave de Turckheim voluntarily caps yields for its Grands Crus vineyards at 45hl/ha rather than the permitted 55hl/ha - and to pick the grapes by hand. This is part of a long term and innovative strategy of sustainability that includes developing the largest holdings of organic vineyards in Alsace, using natural alternatives to chemical treatments, and a green overview of all vineyard practices. Alongside some great organic wines, the extensive range runs from the excellent value Tradition wines right through to individual Grand Cru bottlings, plus fantastic Crémants d’Alsace and Vendange Tardive dessert wines.
Sustainability
An awareness of social and environmental concerns has always been high on the agenda for the Cave de Turckheim’s growers. They were among the first in France to practice integrated agriculture, an approach which combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification then went on to achieve the highest HVE Level 3 certification in 2019.
In 2008, a number of growers decided to commit to the rigorous standards of organic viticulture. As part of Alliance Alsace, approximately 70 hectares of vines are now cultivated organically, having obtained organic certification in 2011, with a further 30 hectares in transition. These vignerons have revived ancestral practices, tilling the soil and undertaking work that facilitates the elimination of weeds and the combat against the two major diseases: powdery mildew which is tackled with sulphur and mildew which is treated with copper sulphate. Natural fertilisers are also used (nettle, horsetail, comfrey and dandelion), fortifying the vines and increasing their natural resistance. Organic winegrowers meticulously observe their vines, enabling them to intervene in the right place and at the right time, rather than treating the plants systematically.
Turckheim’s commitment to the environment extends to the winery where it strives to conserve natural resources. Sorting waste for recycling, reducing its carbon footprint, using solar panels, and preventing pollution are just some examples of how environmental considerations are present in every aspect of its daily work. Committed to both the environment and its customers, Cave de Turckheim also plays an important role in the local economy.
To celebrate its 65th anniversary, Cave de Turckheim planted 65 trees in February 2022 to contribute to the reconstruction and maintenance of their vines and terroirs, as well as to the preservation and enhancement of wider landscapes. Local and ancient varieties were specially selected to contribute to the safeguarding of their genetic heritage.

Claude Mandois believes firmly in the use of barrels for making top-notch Champagne, and his whole range of wines are produced in oak. The Origine is a brand new cuvee from the family that is tank fermented and then aged in old barrels for 6 months before being aged an additional three years on the lees.

Victor 2012 is marked by freshness, delivering whites and citrus fruits. The aerial structure of this champagne persists in the mouth and brings a saline and mineral finish.

This “symphonic” Champagne is essentially composed of grapes from old vines of over 50 years of age growing in Mandois vineyards in Chouilly and Vertus. The low yields produced by these old vines provide both the structure and the balance between concentration and finesse essential to the creation of a fine Champagne.
In addition, in order to develop smoothness and complexity, a proportion of the harvest is vinified in oak barrels in the traditional method used by Victor Mandois over a century ago.
History of Mandois
The “birth certificate“ of the Mandois vineyards dates back to 1735 when the family decided to acquire some vineyards in Champagne. At that time, Jean Mandois, a contemporary of Brother Oudart, possessed and worked a few plots of vines on the hillsides of Epernay. 1860 was a revolutionary year in the long family history. This was the year when Jean Mandois' great-grandson, Victor Mandois, a visionary and trailblazer, took the decision that he would vinify and sell the wines of Champagne in Epernay.
Thanks to Victor's passion for his craft, shared by the ensuing generations inspired by his work, Champagne Mandois is now available around the world and is reputed to be among the great Champagne Houses.

Producer
The Florensac terroir is one of the oldest planted vineyards on the Mediterranean coast and unusually for the South of France, it specialises in producing white wines that rely on cooling sea breezes to moderate the summer heat.
The vineyards are on high ground consisting of clay and limestone soils and the vines are harvested at night to preserve the aromas and freshness of the fruit. Once fermented, the wine is aged on fine lees with regular stirring to bring out its characteristic richness and roundness.
Production
Grown on high ground in vineyards that are planted on clay and limestone soils, with sustainable agricultural practices rather than chemical intervention is at the heart of everything the Vignerons de Florensac do. Day time temperatures can be harsh, so a machine harvest is carried out at night to avoid any oxidation of the grapes and to keep them cool. An eco-friendly producer, Oenologist Roques Stephane employs green techniques to control pests in the vineyard, and the Vignerons de Florensac reduce carbon emissions by drawing energy from their vast bank of solar panels. These are used to power the refrigeration units required to keep the grapes and juice cool for maceration and fermentation. After maceration the grapes are gently pressed in a pneumatic press, and the juice fermented in stainless steel at low temperatures using cultured yeasts.

The nose is precise and clearly dominated by the freshness of peach enhanced by raspberry. A surprising alliance, with the Chenin bringing a welcome freshness to the depth of the Cabernet.

Production
The grapes are hand-harvested and processed using a pneumatic press in whole bunches, followed by juice fractionation. The pure cuvée is then selected, and cold static sludge removal is carried out. Selected yeasts are used for alcoholic fermentation at low temperatures, with grape varieties fermented separately. The wine is grown on full lees until December, when the first racking is done without sulfites. Blend tasting takes place in December, and bottling occurs from January to June.

Colour
The pale golden yellow colour is flecked with a stream of persistent bubbles with a creamy foam developing on the surface.
Nose
Clean and fresh, the nose is distinguished by its delicate aromas of warm brioche which give way to a generous fruit basket with mingling peach and pear.
Palate
The smoothness of the foam gives a lovely mouthfeel. The pure freshness of the attack is a lovely contrast to a full, vinous and generous finish of gingerbread, brioche and hazelnut. On the mid-palate, a silky, full body delicately coats the taste buds. Superb harmony.

This sparkling Chenin Blanc has a pale yellow hue with fine, persistent bubbles. The nose offers attractive aromas of brioche, green apple, linden (tilleul) blossom, and a hint of flint. On the palate, it is fresh and mineral-driven, with crisp acidity and a persistent, clean finish .

Producer
Fourth generation Gilles took over the family domaine in 1993.
Composed of 50 separate small parcels of vineyard, the estate is planted on limestone-clay soils spread over 27ha. Still aided by his father Sylvain, Gilles Gaudron produces top quality, traditional Vouvrays with pure a fruit character and a striking expression of terroir.
Production
Third generation Gilles took over the family Domaine in 1993, which is composed of 50 little parcels of vineyards planted on limestone-clay soils spread over 24 hectares. Produced from a blend of 5 to 25 year old Chenin vines. Gently pressed pneumatically, the juice is decanted for up to 24 hours. After a month of cool fermentation (peaking at around 16 °C) using indigenous yeasts, the base wine is bottled and undergoes a traditional second fermentation in the bottle. It then matures on the lees for a minimum of 18 months, followed by riddling and disgorgement. The wine is then matured in bottle for a further 3 months before release.

'Aged on the lees for 3-to-5 years in cellars dug out of ancient Gallo-Roman chalk pits, this rosé Champagne is serious, and seriously delicious. Displaying a medium ‘vieux rose’ hue and narrow cordon, the wine exudes summer pudding fruits and fresh bread notes. On the palate, the wine shows finesse in its light body, zippy acidity and ‘crackling’ mousse texture. Nicely balanced with good length. Tasting Notes
This champagne has a special place in the history of the House. It is from a family plot of Pinot Noir in Cumières that this precious red wine comes, giving our blend a unique personality.
Colour
An elegant light pink colour with shards of gold. Extremely delicate, lively and regular bubbles.
Nose
The first aroma reveals gourmet aromas of cherries and red currents, followed by notes of blood orange after aeration.
Palate
Delicately straightforward in the mouth. Flavours of wild strawberries enhanced by notes of mint produce a freshness combined with a very pleasant sweetness.

History
Founded in 1825, Joseph Perrier has been owned and run by the same family since 1888. Current director Benjamin Fourmon represents the 6th generation. Champagne Joseph Perrier owns 21 hectares of vineyards, situated in the heart of the region on the right bank of the River Marne, around Hautvillers and Cumières – two villages classed 93% in the ‘échelle des crus’.
They are mostly planted with Pinot Noir but include 2 hectares of Chardonnay. The cellars stretch over three kilometers and date back to the Gallo-Roman period. The chosen name for these cuvées is no accident, nor any false claim to grandeur - ‘Cuvée Royale’ alludes to the historic relationship between Joseph Perrier and Queen Victoria and King Edward VII, as the royals’ Champagne of choice - probably the highest honour any Champagne House can hope to earn.
All the wines are made with a keen focus on freshness and purity, a theme which runs right through the range and really shows its worth in the vintage cuvées which show impressive energy and poise and remarkable ageing potential. Aside from the royal connection, Joseph Perrier has been associated with some pivotal events, which represent great human achievements, from the celebrations around Concorde’s inauguration in 1976 to, more recently, the Noble Prize in Medicine.
Aged for 3 years, the Cuvée Royale Brut of Maison Joseph Perrier brings together more than 20 different vintages with great terroirs such as Cumières, Damery, Hautvillers and Verneuil.

For over five centuries, Maison Antech has tamed the magical terroir of Limoux to make fine sparkling wines.
The secret of their character lies in the combination of Limoux's three terroirs, which form the backbone of the cuvées: freshness from the Pyrenees, vinousness from the ocean, and roundness from the Mediterranean. From these terroirs, Mauzac and other grapes are cultivated, each bringing their own complexity and purity to the wines. This Cuvee, named after Francoise, daughter of the family and a member of the sixth generation celebrates her strong character and the part she plays in guarding her heritage and shaping their future.
Production
Antech produce high-quality, authentic sparkling wines under the sustainability philosophy of Terra Vitis since 2013. Adopting the most sympathetic approach to viticulture, they also work to recover any waste, reduce energy consumption and work with like-minded sustainable suppliers across all aspects of production. Exclusively hand-harvested grapes are immediately pressed and the finest juice is fermented in temperature-controlled stainless steel vats. After blending and second fermentation, the wine is stored sur lattes for 18 months to develop additional complexity and character.
