History
The Chateau Chizay is a true country estate surrounded by vineyards. It was this French concept and its aesthetics that inspired us when creating Chateau Chizay, located near the ancient town of Berehove.
Transcarpathia is a historical wine region. The slopes of the volcanic Carpathian Mountains, plenty of sunlight, and sufficient water have fostered winemaking in these lands since ancient times. Zakarpattia (Transcarpathian) wines were supplied to the courts of medieval kings and nobles, and even to the presidents of modern states.
The culture of Transcarpathian winemaking is unique because it has combined Hungarian, Italian, and Austrian traditions throughout historical vicissitudes. It was this cultural fusion that yielded such an interesting and colorful product – Transcarpathian wine.
And at Chateau Chizay, we make it exclusively from our own Zakarpattia grapes. 272 hectares of vineyards in perfect Zakarpattia terroirs. Production
The white chalky soils of the hills South of Montilla (Sierra de Montilla) and surrounding Moriles (Moriles Altos) are ideal for the cultivation of Pedro Ximénez grapes which produce the traditional wines for which Andalucía is well known among wine lovers. The Montilla-Moriles appellation, located in the province of Córdoba some 200 km away from Jerez, have produced for centuries these traditional wines.

Equipo Navazos was born out of a group of friend’s passion to share the authentic, traditional wines of Jerez de la Frontera, Sanlúcar de Barrameda, El Puerto de Santa Maria and Montilla … legitimately some of the greatest wines of the world!
These wines come from soleras and individual casks that remain, relatively neglected by the market in corners of many of Andalusia’s most prestigious bodegas. These unexpected yet fortunate findings have been made available to wine lovers around the world in limited quantities under the La Bota series (consecutively numbered editions, with the date of each saca or withdrawl date on the label) … in doing so respecting generations of expertise and care for these rare and beautiful wines. Today their efforts are increasingly focused on producing their own exceptional wines, such as Florpower, that truly express the character of Sanlúcar and its unique terroir. Outside of Andalusia, Equipo Navazos have collaborated with winemakers including Dirk Niepoort and Sergi Colet to develop authentic and individual wines that never fail to impress.

Bodegas Rey Fernando de Castilla is located in the historic centre of Jerez. Its story began with the aristocratic Andrada-Vanderwilde family, who for two centuries provided grapes and wine for the production of sherry in the area. In 1972 Fernando Andrada-Vanderwilde took over some old sherry cellars and brandy soleras from a couple of local bodegas, and changed the name of the company from Fernando III to Fernando de Castilla.
In 1999 Jan Pettersen, a Norwegian with 15 years experience at Osborne, bought the company and also acquired a neighbouring almacenista, José Bustamente. He also formed a partnership with a local grape grower – to ensure consistent supply of high quality grapes – unusual for the smaller bodegas, who usually have to rely on co-operatives. He decided to focus entirely on high-end, complex sherries - in the process upgrading the bodega to one of the most interesting and highly regarded of the small independent sherry houses in Jerez.
Whilst the company also produces Sherry Vinegar, and their own range of brandies, the Sherries produced here are amongst the finest in Jerez - from the pale, dry and elegant fino to the most unique antique wines.
There are two ranges: Classic, and the premium Antique range. It is the excellence of the Antique range of intensely pure and complex single solera Sherries that has largely driven Fernando de Castilla's reputation as masters in the production and ageing of fine, unblended, untreated Sherries (they do not fine, clarify or aggressively filter any of their wines).

Tasting Notes
Light pale straw in colour, showcasing pure aromas of summer fruit and citrus, leaning more towards Kumquat and orange. Spicy undertones from light oaking. The fine tannin underpins the fresh acidity. To be enjoyed in its purist and natural form without the restrictions of alcohol.

Winemaking
Careful winemaking practices were followed to retain all the beautiful aromatics. Crushed, lightly pressed and settled overnight. Fermentation was done with a selected yeast strain at 14- 16°C. Left on lees for 2 months prior to racking to the second phase of production.
Producer
Reg Holder started his career with vintages in France, Australia and the USA before returning to South Africa. He then spent 11 years as the winemaker at both Neil Ellis and Delheim. In 2015, while his wife was pregnant with their first child, he started experimenting with de-alcoholised wine for her. When they were expecting their second, in 2017, Reg decided that he was going to move full time into the Lautus de-alcoholised project.
Reg uses his traditional winemaking expertise to craft an outstanding base wine. He then removes the alcohol using a state of the art piece of machinery before carbonating (the traditional Champagne method cannot be used as it will create alcohol in the bottle) the de-alcoholised wine.
He then uses a state of the art piece of machinery that combines centrifugal force and a vacuum in order to extract the alcohol while leaving the wines’ volatile flavour and aromatic essence intact.
So how do they do it?! Remove the alcohol?
The alcohol is removed via spinning cone technology at low temperature under vacuum. The initial phase is to first remove the flavour, and set aside. The alcohol is then removed and once completed the flavour is added back to the de-alcoholised wine. Because there is significant volume loss during this process, a portion of the alcohol water is then again put through the process to extract the water, and added back. This helps to fill out the palate and balance acidity. Normal winemaking practices are followed from here in preparation for bottling. Alc: < 0,5% RS: 26g/L TA: 6.2 PH: 3.3

Winemaking
Gentle winemaking practices were followed to minimise the extraction of harsh tannins. Fermentation took place in upright fermenters with one to two pump overs per day. 26 – 28°C. Aged in oak for 9 -12 months prior to racking to the second phase of production.

Tasting Notes
Straw yellow in colour, this wine has vibrant tropical and citrus fruit aromas and flavours. On the palate it is refreshing and perfectly balanced, with a clean, crisp finish.

Production
The grapes are destemmed and very gently pressed in a pneumatic press. Prior to fermentation the juice is chilled and racked after settling. Selected yeasts are added to initiate the alcoholic fermentation, which takes place in temperature-controlled stainless steel tanks at 8°C. Vacuum distillation at around 30°C to preserve primary aromas.

This Primitivo is rich and ripe, with an abundance of dark berry fruit on the nose, and a plush, smooth texture on the well-balanced palate.

Production
Primitivo grapes are transported in small containers and softly destemmed, taking care to keep the skins intact. Temperature controlled fermentation around 22°C with frequent pumping over of the must achieves optimal extraction of colour, a fruity bouquet and soft tannins in the finished wine. Vacuum distillation at around 30°C to preserve primary aromas.
