Tasting Notes
Colour
This wine is garnet-red in colour with a few carmine highlights.
Nose
Its bouquet is wonderfully intense. On aeration, it releases black-berry fruit (blackberry, black cherry, plum) aromas, with hints of cake spices.
Palate
On the palate, this wine is very rich and well-balanced. The aftertaste is long, with slight tarry overtones. The tannin is not yet fully resolved. These characteristics are indicative of its good ageing potential: it would be best to wait two or three years to appreciate its full complexity.
Production
Deep Gravel terroir 26 year old vines, pruned by double guyot with debudding. Grapes are harvested by hand with small deep crates.

TASTING NOTES
Expressive and very appealing sandalwood spice on the nose, the palate is ripe and concentrated with pithy citrus notes and a pleasant twist of acidity on the finish.
Production
The Vallets source only the best quality Chardonnay grapes from Auxey-Duresses in the Côte de Beaune. Traditional practices remain in both in the vineyard and cellar. Grapes are hand-harvested, no artificial yeasts are used and the wine is fermented and aged in barrel for at least 12 months with regular batonnage to stir the fine lees. The wine is racked a month before bottling.
Producer
Founded in 1864 by Pierre Bourée, Vallet Frères is now in the hands of the fourth generation of the family, Jean-Christophe Vallet. The family owns vineyards in Gevrey-Chambertin including the entire monopole of Clos de la Justice and in the Grand Cru of Charmes-Chambertin. Vallet Frères also act as a négociant sourcing the best grapes from growers in other parts of Burgundy, with whom it has worked closely for decades.
The wines it produces are complex, fine and authentic examples of Burgundian Pinot Noir and Chardonnay. The Vallet family’s wines have been imported by Boutinot for over 40 years and are distributed to top independent wine merchants and Michelin-starred restaurants throughout the UK.
A Note on Sustainability
Vallet Frères is keen to work in an as environmentally friendly method as possible, using techniques such as regular maintenance of the soil by ploughing, applying the minimum of phytosanitary treatments and the controlling of vine vigour and yields through careful pruning. The Vallets tend their vines very traditionally and advancements in the vineyards have been limited: for example, only manure has been used as fertiliser for the last half a century which has encouraged wild asparagus to grow amongst the vines. Harvesting is manual, as the family is opposed to the use of mechanical techniques.

Tasting Notes
Concentrated strength and a great heritage have made Puligny-Montrachet. With complete balance and great aromatic complexity combined with refined style, this works with delicate but also rich dishes.
Production
Puligny-Montrachet shares with Chassagne Montrachet the most perfect expression of Chardonnay. Only a few meters from the Grands Crus, the Appellation d'Origine Contrôlée was established in 1937. It offers a white wine with a strong personality and a high reputation.
Sorted grapes are subjected to slow pneumatic pressing followed by settling and then pouring into oak barrels in which alcoholic and malolactic fermentation and ageing will take place. This wine matures in 228l barrels for fifteen to sixteen months and then one month of ageing in stainless steel vats before bottling.
Producer
Maison Chanzy is a highly respected Burgundian producer, their wines are a classical demonstration of premium vineyard sites in Côte Chalonnaise, Côte de Beaune and Côte de Nuits.
Their range has been carefully engineered by winemaker Max Blondelle, whose primary task is to create wines that eloquently communicate their respective terroir, whilst remaining hands-off in his approach. As such, Chanzy are one of the few Burgundy producers to achieve Haute Valeur Environnementale level 3; the most highly regarded certification for agriculture in France.

Tasting Notes
Colour
A youthful bright appearance with a core of ruby leading to a just fading rim.
Nose
Aromas of primary red berry fruits including dark cherry and plums, plenty of barrel spice and bottle development complexities. The beginnings of secondary aromas with a whisper of date and toasty spices layer in complexity and depth.
Palate
Still youthful and firm on the palate with textures from tannins and acidy leading the mouthfeel. Core fruit flavours mirror the bouquet with equal impressions of plums and cherry. An excellent example, just a little bit dry though easily marries with gently salty earthy food.
The Season
A mild spring was followed by a sunny summer and a lingering dry autumn. It was a perfect growing season with enough warmth to produce optimal ripeness but it was not too hot to destroy varietal purity or freshness.
The Vineyard & The Vines
We have about a dozen different clones of pinot noir and often these grow intermingled throughout our various blocks. The vines, many of which are nearly 30 years old and on their own roots, grow on a series of north facing, gradually descending terraces. While the site is warm during the day it is cool at night. This allows the fruit to ripen fully but slowly and to retain good acid levels of natural acidity. The drainage is helped by stones intermingled with the soil.
Harvest & Wine Making
We use traditional Burgundian winemaking methods. We picked the various blocks at different stages during late April and early May, depending on their maturity. Most of the grapes were destemed and put into small fermenting vats, retaining as many whole berries as possible. Ten percent of whole bunches were also added to these vats. They were kept cool over the next few days to help extract the soft, silky tannins from the pinot noir skins.
After this time the grapes warmed enough to start fermenting. During fermentation the floating cap of grape skins was twice daily gently pushed back under the wine by hand to keep it moist and healthy. When the fermentation finished the vats were sealed and the grape remnants were left to steep in the wine for up to a week to help extract a different range of tannins that add structure and depth. The duration of this period was determined by daily tasting. Subsequently the wine was gently pressed off and put into oak barriques (30% new) from selected artisan Burgundian coopers. In the summer after harvest, when the weather warmed, the wine underwent malo-lactic (secondary) fermentation. Both this and the original fermentation phase were completely natural and without added micro-organisms. After maturing for 18 months in these barriques the batches made from the many different plots of pinot were carefully blended in varying portions to produce this wine.

I don't really know what I was expecting from this wine, but I must say I was shocked to learn how concentrated, intense, perfectly alive, and dizzying complex this wine was. With style and grace not really at the forefront, this wine was a powerhouse of intense flavours of raisins and prunes, mixed in the brown sugar. Yet, this wine was not diluted marmalade, it was structured and firm at the skeleton and perfectly mature for drinking with crème brulee. Wonderful". (97 Points).
1966 Climatic Conditions
Weather was mediocre in summer, but improved in autumn. The harvest was very long: 48 days' work out of 55 to bring in a very worthwhile and slightly above average crop in terms of volume. A very rich vintage.
