Tasting Notes
Deep ruby red with violet tinges; pronounced aromas of ripe red fruit, currant jam and raspberries with hints of plum and black pepper; full-bodied, well balanced and fresh. Medium long fnish, with a fruity and spicy aftertaste.

Vinification
The grapes are destemmed and fermented at a controlled temperature of 22-24 °C for 8-10 days; fermentation with selected yeasts and malolactic fermentation. Maturation takes place in stainless steel vessels for 3 months.

The vineyard spans 88.50 hectares with clay-limestone and clay-siliceous soil types. Grapes are harvested manually or through a pre-machine sorting process. The rootstock used includes Riparia Gloire, 3309C, Fercal, and 101.14. Traditional plant nutrition is applied sparingly, and the vine density ranges from 3,000 to 5,000 vines per hectare. The average vine age is 17 years, predominantly Merlot and Cabernet Sauvignon varieties. Pruning is conducted using the Double Guyot method. Fermentation occurs in stainless steel tanks equipped with a patented cap-breaking system, at temperatures between 28 to 30°C. Malolactic fermentation is conducted, and the wine matures in both tanks and barrels, with a potential for aging between three to seven years.

Modest Michael Opitz feels passionately about sustainability and quality and so decided to take the small family winery into being organic and as natural as possible on every level. All the wines are defined by their environment. The Neusiedlersee or Seewinkel is a saltwater lake that, in this flat, warm part of Austria, brings tempering breezes, freshness and protection from disease. The wines as a result are tremendously pure, fresh, fragrant and yet salty.

Producer
The Florensac terroir is one of the oldest planted vineyards on the Mediterranean coast and unusually for the South of France, it specialises in producing white wines that rely on cooling sea breezes to moderate the summer heat.
The vineyards are on high ground consisting of clay and limestone soils and the vines are harvested at night to preserve the aromas and freshness of the fruit. Once fermented, the wine is aged on fine lees with regular stirring to bring out its characteristic richness and roundness.
Production
Grown on high ground in vineyards that are planted on clay and limestone soils, with sustainable agricultural practices rather than chemical intervention is at the heart of everything the Vignerons de Florensac do. Day time temperatures can be harsh, so a machine harvest is carried out at night to avoid any oxidation of the grapes and to keep them cool. An eco-friendly producer, Oenologist Roques Stephane employs green techniques to control pests in the vineyard, and the Vignerons de Florensac reduce carbon emissions by drawing energy from their vast bank of solar panels. These are used to power the refrigeration units required to keep the grapes and juice cool for maceration and fermentation. After maceration the grapes are gently pressed in a pneumatic press, and the juice fermented in stainless steel at low temperatures using cultured yeasts.

Tasting Notes
Salmon pink with a fine and persistent perlage. Intense and aromatic on the nose with hints of red currant, wild strawberry and rose petal. This is elegant, smooth and velvety on the palate with a harmonious dry finish.

Production
All of the grapes come from within the DOC Veneto region. The cultivation density is around 3,500 to 4,000 vines per hectare and grown simple or double espalier. Only traditional pruning methods are carried out. The annual yield is about 100 tons. The Pinot Nero is mostly planted in the extreme eastern part of the Verona province, where it is most suited to the climate and soil conditions to express itself to its full potential.
Harvest is carried out by hand and in order to avoid any skin or acetic fermentation, the grapes are immediately carried to the vinification cellar during the first few hours of the day. Destalking and soft pressing at controlled temperature then the must is kept in small stainless-steel tanks until fermentation is completed. The blend of the two varieties is made before the refermentation process, to increase the intensity of the aroma. Fermentation is partially interrupted trough the cold-process, and transferred into small stainless-steel tanks. Around 4 months after vinification, re-fermentation is allowed following the typical procedure used for spumante (in autoclaves that keep up to 6 atmospheres of pressure).
Producer
The Biscardo Family have been making wine from their base in Soave for over 150 years and are currently led by brothers Maurizio and Martino.
During the course of Maurizio's long and illustrious career, he has consulted for well known wineries around Italy and in doing so he came across the vineyards for their Puglian wines. Both the Pugliese and Veneto wines are characterised by an irresistible drinkability, aromatic purity and exceptional value for money.

The aromas are fresh and fruity with notes of rennet apple and the same sensations are found on the palate where the acidic note makes the sip very pleasant.

Bright straw-yellow colour. Floral scents with notes of acacia and orange blossoms accompanied by tropical fruit, peaches and vanilla. An elegant, full and savory palate, with a well-balanced acidity and a persistent finish.

Producer
The 40 hectare Tenuta Aquilaia estate in Maremma (southern Tuscany), close to Scansano, was acquired by Azienda Uggiano in 2019. Only 15ha are currently dedicated to vineyards - of average age 15 years - although they have recently added a further 1.5 hectares to bring this total nearer to 17ha. Here they produce five red grape varieties: Sangiovese, Ciliegiolo, Alicante, Merlot and Petit Verdot; plus white varieties Vermentino and Chardonnay.
The area was an old Etruscan settlement and site of ancient winemaking, and several mementos of the Etruscan era are still visible.
Production
Cold Maceration of the must for 12-15 hours at a temperature of 10-12 degrees. Soft pressing and fermentation of juice (free-run must) at a temperature of 18-22 degrees. Elevation in French oak barriques for 6 months and subsequent ageing in steel tanks.

Nose
A pleasant aromatic and pithy blend of gooseberry, white flowers and citrus on the nose.
Palate
Complemented by quite a rich peachy and lemon palate that has lovely texture and a moreish, slightly grippy finish.

Production
Grown on flint, clay and limestone soils, the Sauvignon Blanc grapes are destemmed and crushed in an pneumatic press. After controlled settling, the juice undergoes alcoholic fermentation at about 18-19°C with selected yeasts. Ageing then takes place on the fine lees with no malolactic fermentation.
Producer
Formed in 1973, Pierre Chainier is both a négociant and the owner of some 250 hectares of vines in the heart of Touraine, from which it sources classic Loire varieties. Its eight Touraine estates include Domaine de la Bruyère in the newly established appellation of Touraine-Chenonceaux. Conversely, Clos de Nouys, its 25 acre Vouvray estate, is one of the oldest in the appellation. Here, vines average 35 years of age in vineyards that were already listed amongst the best sites on geological maps dating from 1907.
Sustainability
For both its négociant arm and its own vineyards, Pierre Chainier seamlessly blends the principles of reasoned agriculture with the most modern winemaking techniques. It encourages sustainable development and official certification for its growers, it uses sugar cane-derived biodegradable “corks”, and it has a comprehensive waste recycling programme. Lighting is changed to LED and they are currently calculating their carbon footprint.

Tasting Notes.
Duris Selection has an intense ruby color with violet tones. Aromas of red black fruits, slight floral with balsamic. In the mouth, it is a wine with a good volume, lively acidity and round tannins, with a persistent finish.

Production
The grapes were harvested manually at the perfect point of maturation, from different plots and immediately processed in the cellar. After destemming and gentle crushing, the grapes were sent to stainless steel vats, where alcoholic fermentation took place. During this phase, gentle macerations are carried out at a controlled temperature.
Maturation
After fermentation, 30% of the blend aged in French and American oak for 6 months and the remaining 70% aged in stainless steel vats. Before bottling, the wine was slightly stabilized and filtered.
Producer
Founded in 1917 in the Vinho Verde region, Calçada Wines is one of the oldest producers in the region focused especially on the production of still white and rosé wines and sparkling wines and is now the 3rd generation of the family to lead the business. Viticulture
Top category grapes from the Puichéric area from the best qualitative plots and vines averaging 25 years old. 150m above sea level, the vines are protected from wind and receive plenty of sunshine. Grapes mature slowly developing an aromatic profile.
Winemaking
The grapes are selected among the coolest vineyards to ensure good natural acidity. Harvest is during the coolest hours of the day, early morning and the grapes are directly pressed into airbag presses. The juice is cold settled and goes though fermentation at cool temperature for 2 weeks. The wines are then quickly cleared off their gross lees and are kept in stainless steel tanks on fine lees only until bottling, in order to keep maximum fresh fruit and freshness..

The process of winemaking is both an art and a science, meticulously detailed through each step. After the initial skin-contact and settling, the must undergoes fermentation in temperature-controlled stainless steel tanks, ideally between 18 to 20°C, to preserve the wine's delicate aromas and flavors. Tasting Notes.
Duris Reserva has an intense ruby color with violet hues. Aromas of red fruits, with floral and spicy nuances. In the mouth, it is a balanced wine with round tannins and a long and pleasant aftertaste.

Production
The grapes were harvested manually at the perfect point of maturation, from different plots and immediately processed in the cellar. After destemming and gentle crushing, the grapes were sent to stainless steel vats, where alcoholic fermentation took place. During this phase, gentle macerations are carried out at a controlled temperature. After fermentation, it aged in 225L French oak barrels for 9 months. Before bottling, the wine was slightly stabilized and filtered.

Pale orange in color, this drink boasts vibrant aromas of bitter orange, dried flowers, and a hint of nuttiness. It’s fresh and well-balanced, featuring bright acidity on the palate. The finish is long, intricate, and deeply aromatic, leaving a lasting impression.

Production
The grapes were machine-harvested at night to minimize oxidation, then transferred directly into concrete tanks, following a red wine vinification approach. A cold pre-fermentation maceration at 4°C lasted one week, with daily pump-overs to enhance extraction. Alcoholic fermentation began at 18°C, followed by five days of maceration with continued daily pump-overs. After pressing, the press juice was blended with the free-run juice to complete fermentation. The wine was then aged on fine lees until bottling, adding texture and complexity.

2022 Mas Macià Xarel-lo

Nose
Aromas of ripe apple, flint and citrus fruit.

Production Method
Grapes are sourced from 35ha of vines cultivated on the Can Macia estate, near the Anoia river basin, near Odena. These low-yielding bush-trained vines are well suited to the production of still wine. The old vine Xarel-lo undergoes temperature controlled fermentation, and is kept on the lees for 4 months to give added texture.
The Estate
At 450m in altitude, the estate is the second-highest winery in the region and at the very limit of Cava production. Some of their vines are over 50 years old.
Mas Macià’s vineyards are now certified organic and the Bohigas family is planning to produce organic still wines initially before focusing upon organic Cava production.

2023 Domaine de Vedilhan Serica Viognier,

Elaborately textured, full-flavoured Viognier. The wine is aptly named after the Latin name for silk, 'Serica'. Now HVE3 sustainable certified.
Tasting Notes
Bitter-sweet crystalised orange peel aromas with powerful yet retrained flavours on the palate. Barrel-fermentation brings subtle texture and richness rather than a dominant oaky flavour, leaving rich stone fruits to shine through. The finish is complex, satisfying and well-balanced.

Production
All good wine is made as much in the vineyard as it is in the cellar. This is especially true of Serica Viognier, where the grower nurtures his Viognier vines producing healthy grapes at optimum ripeness. Domaine de Vedilhan (pronounced 'Domaine de Ved-ee-ohn') is the estate of the Fayet family based in the village of Moussan, close to Narbonne. Uniquely a brook runs around the estate which provides much needed water in this very hot climate, giving the wines their freshness and appeal. Vines are managed using the 'lutte raisonnée' method and terroir is a combination of limestone, sand and sea shale, meaning the vines dig deep for their nutrients and thus produce excellent quality grapes. 50% of the production from this Domaine is used for Boutinot wines. Since 1999, our winemakers have been working closely with the Fayets on all aspects of the production, from when to harvest to the exact blend or style of wines. For ‘Serica’, Vioginer grapes are picked at optimum ripeness with two-thirds barrel-fermented in mature French oak to bring subtle texture and richness.The wine is aptly named after the Latin name for silk, 'Serica'. In the 14th century, silk production or sericulture was as widespread in this region as viticulture. The wine is grown and vinified sustainably, achieving HVE3 certification.

Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade we had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Julien Dugas in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality.

2023 Paolo Leo Millefiori Appassimento

Tasting Notes
The wine has a lovely and intense ruby-red colour with a bouquet reminiscent of cherries, dried fruit, chocolate and prunes. On the palate it is full-bodied, soft and round, with a pleasant spiciness and an amazingly long and lingering finish.

Producer
The cellars occupy a total area of about 24,000 square meters. The first is located in the heart of the Salice Salentino DOC (San donaci) the second, inaugurated in August 2020, is located at the gates of the Primitivo di Manduria DOC (Monteparano).
They are equipped with a state-of-the-art winemaking plant, a large barrel cellar and a modern cutting-edge bottling line capable of reaching 7000 bottles per hour. The winery is flanked by the farm Masseria Carritelli that is surrounded by vineyards.
Viticulture
The grapes are selected from low-yielding vineyards in province of Verona. The grapes are inter-planted and trained using the typical pergola Veronese and Guyot methods. Plant density is 4.200 vines per hectare with an average yield of no more than 1,4 kg of grapes per plant. The grapes are carefully picked by hand in early October.
Vinification
Approximately 60% of the picked grapes are placed in small wooden crates of 5 kg each. The crates are then placed in the “fruttaio,” a well aerated loft, and are left there to dry at a controlled temperature and humidity until December. During this “appassimento” the grapes will lose up to 50% of their original weight in water, thus concentrating their color, substance and aromas. The grapes which are not dried are immediately vinified. After de-stemming, the grapes are not crushed, allowing them to remain intact, reducing damage to the skins and optimizing color extraction. Fermentation takes place at a controlled temperature of 25-26°C for 8-10 days. Frequent remontage and delestage are carried out in the early stages of fermentation in order to achieve softextraction of aromas and gentle tannins. After racking, malolactic bacteria are added to induce a second fermentation. In late December the dried grapes are vinified. After de-stemming, the grapes are crushed and placed in stainless steel tanks, where selected yeasts are added. A very slow fermentation is initiated which will last approximately 30 days at a controlled temperature of 24°C. Here too frequent remontage and delestage are carried out in the early stages of fermentation in order to achieve soft extraction of aromas and gentle tannins. After racking, malolactic bacteria are added to induce a second fermentation.

Production
The vineyards are located on a mixture of clay, sand and silt on East facing slopes. Cultivated with the Guyot system, average production is never more than 100 quintals per hectare.
The fermentation lasts 15 days in steel tanks at a controlled temperature of 13-14° C. The ageing of the wine is quite lengthy, leaving the wine to rest on the fine lees for about five months in stainless steel tanks.
