2023 Cicada Rouge by Chante Cigale

Tasting Notes
Fresh, ripe red berries with a bit of forest floor. Yummy, ripe red and black cherries, a pinch of spice and some softly, boisterous tannins. Lovely balancing acidity completes the picture.

Producer
Domaine Chante Cigale is located within the village of Châteauneuf-du-Pape and has been owned by the Sabon Favier family for several generations. Consisting of 41 hectares, the domaine benefits from old vines, some of which are veritably ancient at over 100 years old. Alexandre Favier took over from his father, Christian, and is part of a new wave of producers in Châteauneuf-du-Pape, combining modern technical expertise with time-honoured winemaking practices.
Alexandre is lauded by notable journalists including Steve Danzier and Jancis Robinson for his deftly-made and reasonably-priced wines. Domaine Chante Cigale has also built a reputation for specialising in white wines, of which they produce more than any other estate in the appellation.
Production
Alex Favier sources the grapes for his IGPs from land the family owns in the Vaucluse; grapes for this come from 2 lieu-dits in Travaillan to the west of Gigondas – La Marteillère with clay soil for the Grenache & L’Hers on limestone for the Carignan, vines are 30 years old. Hand-harvested and de-stemmed, short maceration in concrete for the Grenache plus aging in 5 yr old Burgundy barrels for the Carignan to round out the tannins.
Sustainability
As you might expect from someone born and raised on an estate named after singing cicadas, Alexandre Favier keenly promotes the biodiversity of his vineyards. He is very conscious of his role as guardian of his land for future generations and Chante Cigale is currently in conversion to full organic status.

2023 Uva Non Grata Gamay

Some vignerons rebelled, hiding forbidden Gamay vines amongst ‘noble’ Pinot Noir. In their honour we ‘release’ the deliberately disruptive Gamay, bottled without appellation and without rules!
Tasting Notes
Bouncy, crunchy Gamay, this is an irresistible fruit bomb packed with fresh, primary fruit aromas and the delicious soft red berry flavours of gorgeous Gamay at its best.

Production Method
Gamay loves the granite/siliceous soils of the vineyards in the hills to the northwest of Lyon in eastern France. Grapes were hand-picked deliberately early to maintain freshness. In the cellar, they are vinified using traditional carbonic maceration techniques (where fermentation is started by the weight of berries in the vat, crushing those below) followed by a short cuvasion to maintain the up-front, juicy fruit character.
Producer
Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade we had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Julien Dugas in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality.
Today, Boutinot’s French office has recently relocated to Macon, and has over 20 employees who take care of production across the whole of France, covering fresh whites and rosés from Gascony, mineral wines from Burgundy, and joyful varietal wines from Languedoc among others. We don’t use any single model to source our wines; instead, a combination of sources are used, from large-scale, high-quality co-ops to small, family growers and single domaines, as well as our own vineyards in Cairanne and Saint-Vérand. Drawing on the expertise of our four winemakers and a network of partner growers, we seek to deliver the highest quality-to-price ratio possible for every wine.

2022 Cape Heights Shiraz

Nose
A vibrant juicy style of Shiraz with ripe bramble and black cherry on the nose.
Palate
Fresh summer pudding fruits and gentle spice on the palate lead to a mellow and satisfyingly rich finish.

Production
The vineyards for this Shiraz clamber up the foothills of the Swartland mountains which are comprised of sandstone and alluvial soils. This region is hot and dry which forces these unirrigated vines to work hard to produce low yields and small berries. Produced from only free-run juice and fermented on skins in stainless steel tanks, a portion of the grapes are whole bunch fermented as the ripe stems add to the overall tannin quality of the wine. The remainder of the grapes are destemmed and pressed. After a third of the sugar has fermented, delestage is done once per day. The wine is drawn off at the bottom of the tank and transferred into a separate tank. Once complete, it is then transferred back into the fermentation tank onto the skins and stems. This method ensures more air is incorporated into the wine which helps to release the fresh, fruity, and spicy aromas known so well in this wine. When the final blend has been made, it is aged on fine lees for an extended period in French oak barrels along with around 15% from the previous vintage. This ensures a more complex wine with greater palate weight and mouthfeel.

It was the simple love of Loire Chenin Blanc that first led us to South Africa in 1994, where we pioneered the wild ferment style that has now been adopted by many producers in this region.
Since then we have been exploring the country's amazing vineyards to make fabulous wines from specific sites and plots that scream location, location, and terroir. Our home-grown South African winemaking team of JD Rossouw and Ryno Booysen drive the energy and enthusiasm for expressing the loveliest wines from their country, along with Samantha Bailey's expertise in finesse. 2023 False Bay Bush Vine Pinotage

Production
The grapes for False Bay Bush Vine Pinotage stem from a single vineyard of unirrigated bush vines in Stellenbosch. The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly wine. Producer
An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.
False Bay Vineyards is proud to be a WWF (World Wildlife Fund) Biodiversity Champion and certified by WIETA (Wine and Agricultural Ethical Trade Association). All of their wines are Vegan friendly.

2021 Castel del Lupo Limes Barbera (Organic)

Production
The Barbera vines grow in silt, clay and chalk soils on south and south-west-facing slopes at 250 metres altitude. The Barbera grapes are hand-harvested and undergo selection, before a 6-7 day maceration on the skins. After fermentation, the wine spends over 9 months in stainless steel before bottling
Producer
Castel del Lupo, in the heart of Oltrepograve; Pavese, dates back centuries - and includes the eighteenth-century Palazzo Pegazzera. In 1974 three entrepreneurs took over this historic estate and began a regeneration process. Giovanni Doglio, whose father and grandfather were both Piemontese winemakers, has over 40 years experience managing wineries. Recently joined by his daughter Federica, he has worked tirelessly to develop the estate. They have purchased more vineyards (to cover 100ha at around 300m altitude), planted new vines and built a new cellar. The vineyards are now certified organic. The winery's main focus is high-quality bottle-fermented sparkling wine, and much of the vineyard is planted with Pinot Noir for this purpose. However, these vines are also the source of fine still red wines.
A Note on Sustainability
Led by Giovanni Doglio since 1974, the team at Castel del Lupo is very keen to honour the long heritage of its estate which existed even before its inclusion on a map of the region in 1301. All of Castel del Lupos grapes are estate grown and the 100-hectare property is now fully certified organic to maintain the integrity of the environment, the ecosystem and soil fertility without resorting to artificial substances at any stage of the production processes.

Estate
Château de Rochemorin belonged in the 18th century to the philosopher, Charles Louis de Secondat, Baron de Montesquieu, author of the famous Persian Letters. The latter willingly became the ambassador of Rochemorin red wines to his friends, men of letters and other notables, during his numerous trips to Europe, never forgetting to praise the beautiful complexity and the mineral notes on the nose and on the palate balanced and fine, their melted and fine tannins in the finish make them a sure value of the appellation.
The vines of Château de Rochemorin which give rise to this Pessac-Léognan red occupy no less than 87 hectares on a gravel terroir typical of the appellation. Two grape varieties are represented: Cabernet Sauvignon and Merlot, from vines with an average age of 20 years. The result is a very fruity, velvety, rich wine, with well-balanced tannins.
This vast vineyard is harvested by hand and machine with mechanical sorting for plot vinification in thermoregulated stainless steel vats, before aging for 12 months in barrels comprising 30 to 40% new wood.

Winery
Oldenburg; a hot topic from a cool climate. Anyone who knows anything about South African wine should have Oldenburg fully on their radar – they are producing outrageously good wine and have, very arguably, the most beautiful tasting room to visit in the Cape. Oldenburg, situated in the Banghoek Valley of Stellenbosch, has one of the coolest microclimates in the region. A combination of a mountain amphitheatre, high altitude and cooling winds result in growing conditions about 5 degrees cooler than the rest of Stellenbosch.
The Rondekop Series wines represent a small selection of the best barrels – either single cultivar or a blend – from our iconic Rondekop hill. We believe there are 8 Natural Elements which uniquely impact our vineyards, creating quintessential wine producing conditions. Several stone axes have been found on Rondekop itself. These stone axes are from an early Stone Age, estimated to be at least 100,000 years old. Knowing that early humans lived and hunted on Rondekop adds to the mystical nature of our valley. In this special place, we planted our Syrah vineyard blocks.
Vintage Conditions
Moderate weather throughout the 2021 season, and specifically during harvest time, resulted in grapes ripening slower, while developing exceptional colour and flavour. Harvesting began roughly two weeks later than usual due to unusually cool weather conditions throughout the season, which persisted through to harvest. Notably, water resources were also replenished following the recent drought, which contributed to fantastic vine growth, bunch numbers and exceptional berry sizes at Oldenburg Vineyards.
Winemaking & Maturation
Grapes were harvested from a single high-altitude vineyard on Rondekop. The grapes were hand-picked in lugboxes and stored in a coolroom overnight. 10% of grapes were whole bunch fermented and 90% were fermented as whole berries. The whole clusters were footstomped and naturally fermented. 1-3 soft punch downs were done per day and the wine was racked 3 times during fermentation. The wine was aged for 18 months in a combination of a 2500L Austrian foudre as well as 300L and 500L French oak barrels.

Nose
The slopes of Rondekop provide the ideal terroir for our spectacular Cabernet Sauvignon. This wine has a deep ruby core and a depth of black fruits on the nose. Black cherries, black plums and blackcurrant are present, along with spicier notes of baking spice, cigar box and lavender.
Palate
A beautifully defined palate with long-grained tannins and a mouth-watering acidity carries the fruit and the spices to an emphatic finish.
A bold, yet elegant, Cabernet Sauvignon brimming with black fruit and cassis. In addition to the black fruit there is a bouquet of spice, ranging from tobacco to cedar. Grippy long-grained tannin and beautiful mouth-watering acidity carry the wine on the palate to a long finish. An exceptional wine to be enjoyed now, or in the next 8–10 years.

Vintage Conditions
While winter had a late start, it was characterised by good rainfall, leading to an even budbreak. A turbulent start to flowering season improved towards the onset of summer. Warmer weather in November contributed to even vineyard growth. A moderate January and February was followed by an initially hot February, while cool and wet conditions dominated from the end of February through March, creating challenging harvest conditions. Despite the wetter conditions, our microclimate allowed the grapes to achieve ideal ripeness.
Winemaking & Maturation
Grapes were hand-picked and meticulously hand-sorted before destemming and crushing. After 5 days of cold soaking fermentation began, using on wild yeast. 1 to 3 pumpovers, at the expense of punchdowns, were done per day for optimal extraction. Post fermentation wine completed malolactic conversion and spent 18 months maturing in French oak barrels (27% new).

Nose
Both red and black fruit jump out of the glass along with the tell-tale signs of Cab Franc – tea leaf and dried herbs. These mingle perfectly with a hint of baking spice and violet, adding to the allure of the wine.
Palate
On the palate, it is weighty and savoury with some grip from the fine grained tannin. The finish is seemingly endless. Built to last. World class.
The Story
Oldenburg’s ultra-premium Rondekop Series draws its name from; you guessed it… Rondekop, the iconic hill situated in the middle of the Oldenburg property. Whether it’s the single varietal Stone Axe Syrah, Per Se Cabernet Sauvignon or the Rhodium Bordeaux Blend – they are all a small selection of the best barrels coming off Rondekop.
Oldenburg’s proprietor – Adrian Van der Spuy – spent a large portion of his life working in the world of precious metals and the name of this wine is a homage to that. Rhodium is one of the world’s most expensive metals and is frequently used in top end jewellery manufacture – and 80% of the world’s supply is mined in South Africa. Fitting name.

2020 was another exceptional harvest. The winter months saw good rainfall – only slightly less compared to the previous year. Spring brought ideal conditions, leading to even bud-break and homogenous shoot growth. The summer ripening period was consistent and moderate, and without heat spikes, bringing about uniform flavour development and phenolic ripeness in the grapes.
Winemaking & Maturation
Grapes were hand-picked and meticulously hand-sorted before destemming. Prior to fermentation, the Cabernet Sauvignon was crushed, while the Cabernet Franc and Merlot were fermented as whole berries. After 5 days of cold soak, fermentation using wild yeast began. During fermentation 1 to 3 punchdowns were done per day for optimal extraction. Post-fermentation, the wine underwent 18 months of maturation as well as malolactic conversion in French oak barrels (28% new).

Nose
A traditional Rioja Reserva from vineyards in Rioja Alta with a nose of warm black fruit, spice and vanilla notes.
Palate
The palate has ripe plum and damson characters balanced by well-integrated oak, supple tannins and gentle cedary spice on the finish.

Production Method
This wine is produced from selected Tempranillo, Mazuelo and Graciano grapes sourced from 30 to 40-year-old Rioja Alta vineyards whose distinctive stony soils are ideal for the long, even ripening of quality grapes. The fruit is hand harvested in mid-October. Each variety is fermented separately in small tanks using natural yeasts at 28-30° C. After 20 days on the skins the wine is gently pressed and racked to stainless steel tanks for malolactic fermentation. The clear wine is then racked to 2nd and 3rd year American and Russian oak barrels for 24 months maturation before blending and bottling.

Winemaking & Maturation
A ‘right bank’ Bordeaux Blend – Merlot (54%) dominant with Cabernet Sauvignon (39%) and a splash of Cabernet Franc (7%)The Cabernet Sauvignon, Merlot and Cabernet Franc grapes were harvested from a North-Easterly facing vineyard on Rondekop. All grapes were stored in a cold-room overnight and then destemmed and sorted by hand, spending five days in a tank to cold soak. The Cabernet Sauvignon and Cabernet Franc berries were crushed and the Merlot berries kept whole. All grape cultivars underwent pump overs 1-3 times per day and were gently basket pressed once dry. Finally, the juice was returned to tanks for malolactic fermentation and then transferred to French oak barrels, of which 26% were new barrels, to mature for 16 months.

The wine was bottled unfiltered and unfined.

Producer
De Toren proprietors Emil and Sonette den Dulk left Johannesburg in 1991 to establish their vineyards in the Polkadraai Hills of Stellenbosch. Situated on southern-facing slopes overlooking False Bay De Toren enjoys the cooling effect of constant ocean breezes. Taking a holistic approach to keeping vineyard soils healthy and balanced viticulturalist Ernest Manuel employs sustainable farming practices throughout the property. Infrared Aerial Imaging is used extensively in order to monitor ripeness in various vineyard blocks and determine optimal picking times although actual harvesting and production are done almost entirely by hand. The winery is operated on gravity flow principles; a 4000 liter pressure tank in an elevator shaft (the Tower from which the winery takes its name) is cleverly used to exploit gravity in transporting wine between tanks and barrels without the use of mechanical pumps. As a result of De Toren’s innovative minimal intervention production methods their wines were among the first South African bottlings to qualify for IP (Integrated Production) certification by the Wine and Spirit Board.
The Den Dulks and winemaker Albie Koch seem to have found the key to success with their simple winemaking philosophy: gentle handling no pumps and minimum manipulation. Armed with this winning formula the boutique farm has quickly risen to the ranks of South Africa’s winemaking elite with their duo of dazzling stylish and complex five-varietal Bordeaux blends: the flagship Fusion V (which debuted in the 1999 vintage and has been hailed by Wine Spectator as a consistently polished outstanding Cabernet Sauvignon-based blend) and the Merlot-based Z introduced with the 2004 vintage.
Barrel Maturation
Aged in a climatized barrel/ maturation room (16 degrees Celsius at 80% humidity) for 12 months in approximately 50% new and 50% second fill, 225 Litre Oak barrels. French Oak is predominantly used during maturation, with a portion of the Malbec receiving the benefit of American Oak.

Casa Santos Lima is a 4th generation family-owned winery based 45km north of Lisbon and they produce around 40% of all certified Lisboa wines.
Most of Casa Santos Lima's estates are located in Alenquer, 45km north of Lisbon, in a region where wine production is centuries old and the typical rural landscapes are gifted with enormous beauty. The vineyards are planted in gentle slopes with altitudes between 100 and 220 meters benefiting from an excellent sun exposition and a climate slightly tempered by the nearby Atlantic Ocean, 25 km away from the property.

Vinification

The palate reveals cherry and cranberry, supported by a spicy core that is further embellished by fine silky tannins imparted by the subtle use of Burgundian oak barriques. Finishes with a lovely, lingering aftertaste so typical of Elgin's cool climate Pinot Noirs.
Winery
Paul Wallace Wines is a small family-run business with the farm located in Elgin, previously best known for its apples and pears, which is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.
Vinification
The 2019 Paul Wallace Brave Heart Pinot Noir is our seventh vintage. The name is a tribute to William Wallace, a man of great principle and heart, who we would like to believe is one of our ancestors. It is also a play on the Pinot Noir cultivar’s nickname – the Heart Break grape. Fortunately, our 2019 Pinot Noir offering has once again captured our hearts and is anything but a disappointment. Production was very limited – only 10 barrels / 2400 liters of this vintage were vinified.
Pristine grapes (Clone PN115, Guyot pruned) selected from three different slopes on our farm Wallovale Vineyards, were vinified with much love and gentle attention at the Almenkerk Wine Estate. Whole berry fermented in open fermenters, basket pressed and taken to barrel where it completes malolactic fermentation. After 10 months on wood (20% new wood, 45% second fill, 35% third and fourth fill), the wine was prepared for bottling. Bottling date: 7th February 2020.

2022 Paolo Leo Mora Mora Malvasia Nera

Malvasia nera is one of the oldest indigenous grape varieties in Puglia and it is likely that it arrived in southern Italy starting from the Dalmatian coasts beyond the Adriatic Sea. The aromatic black grape variety, is distinguished by a high sugar concentration and the almost total absence of tannin in the skins, a characteristic that makes it unique and unexpected especially when sipped even slightly cool in the sunny Salento summers.

On the nose, it offers small red fruits such as blackberries and mulberries in full ripeness. Then there are hints of dried plums and sweet spices such as cinnamon and cloves that give an enveloping tertiary perception.
Palate
In the mouth, it is warm, juicy, fresh with a slightly hinted acidity. Final with a very light sweetish aftertaste given by the typical fruit of black malvasia.
Vinification
The harvest is carried out in the second decade of September with a manual harvest of the grapes completed in the early hours of the morning, in the coolest hours of the day. After harvesting, the grapes are destemmed and the crushed grapes ferments in stainless steel at a controlled temperature of 22-24 ° C for 8-10 days. The must is subjected to various pumping over and delestage that offer a technological extraction of color and tannins. Subsequently the wine is drawn off in a soft press. After the first racking, again in stainless steel, the malolactic fermentation takes place. Finally, the wine finishes its maturation for 3 months in second and third passage French oak barriques and is already ready to be drunk very young.

Vintage
2022 was a long and dry growing season of outstanding quality. Veering on the cooler side of average temperatures, yields were still plentiful, and grapes achieved ideal ripeness throughout a very long cycle. Rainfall was limited, but abundant glacial water and sporadic showers were timed perfectly to help the vine’s balance. After cooler autumn and ideal growing conditions in February and March, we were able to produce wines with remarkable quality.
History
It was the year 2002 when a group of friends decided to invest in Argentina. They knew little about wine production, but all were passionate wine lovers and excited about the vision of bringing Argentine wines to the world stage. They bought the land that would become Finca Ambrosia and set about turning their idea into reality. At this time, the Gualtallary district began to attract the interest of wine producers, primarily because of its outstanding soil and climate characteristics. Encouraged by the positive forecasts, the friends bought 3 more plots over the years, from which the current winery emerged. Today, Gualtallary is considered the best terroir for producing premium wines in the province of Mendoza.

Nose
A ripe and pure nose, offering creamy red and black fruit with some dark roast coffee.
Palate
Tannins are firm, and the palate is concentrated and already well-knit, if still a little youthful. Packed with intense black, mulberry-flavoured fruit, coffee and a twist of toast from the barrel, the ripeness makes this very drinkable now and it will continue to develop more complexity over the next 5 years.

Producer
History, family, and wine go hand in hand in Bordeaux and Château Mayne-Vieil's history can be traced back across three influential families to the 1500s. Descended from the original owners, the Equerry de Paty, Lord of Mayne-Vieil, built the large cellars in the 17th century. Libournais vintners, the Fontemoings, established a new Fronsac vineyard to rival Saint-Emilion, while the Sèze family, owners for the last 100 years, restored and expanded the estate after World War I. The Merlot vines of their Fronsac vineyard can be seen from the house in its entirety as it rolls across the beautiful hill overlooking the Dordogne River. The single-block vineyard covers 47 hectares (32 of which are in the Fronsac AOC) and is planted with 70% Merlot and 30% Cabernet Franc.
Production
The vineyard is planted on fairly steep slopes of clay and silt soil. The 35-year-old Merlot vines are trained low and planted close together. Permanent grass cover and green harvesting keep yields low. 85% of the wine is matured in concrete vats and 15% in barrel for at least three years.
Sustainability
Château Mayne-Vieil uses permanent grass cover between the rows of vines to reduce the need for herbicide sprays and also to reduce the compaction of the soil as fewer passes by tractor are required. The increased competition for water and nutrients also reduces the vigour of the vines, thus reducing the need for green harvesting, reducing yields and increasing the concentration of the grapes. The château achieved HVE 3 accreditation at the end of 2022. This certification recognises a high level of commitment to protecting and enriching the environment with a focus on biodiversity conservation, plant protection strategy, management of fertiliser use and management of water.

2019 Paul Wallace Crackerjack Bordeaux Blend

Together Paul and Nicky Wallace have put together a "cracker" of a wine, blending and showcasing the versatility of Elgin.
Tasting Notes
The alluring bright colour immediately invites one to explore this wine further. Merlot driven (think Bordeaux Right Bank) and power packed with fresh fruits encompassing both the red and black fruit spectrums, with a savoury core.
Notes of fresh cherry, cranberry, plum and blackcurrant on the palate, with chocolate and vanilla on the finish. Rich and opulent, yet bright and feminine, this little “cracker” is the perfect example of how the whole sum is better than the parts and of how the individual components support and enhance one another.
Winery
Paul Wallace Wines is a small family-run business with the farm located in Elgin, previously best known for its apples and pears, which is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.
Vinification
The grapes all originate for the Elgin region, a high-lying basin surrounded by mountain ranges. Naturally the Malbec hails from Paul and Nicky’s farm, Wallovale Vineyards, whilst the other three grape varieties were bought in from Elgin grape producers with whom Paul has a direct involvement. A Cabernet Franc vineyard has been planted on Paul and Nicky’s farm but the first commercial harvest is only expected in 2020.
Each parcel of grapes was harvested at its own optimum ripeness and vinified separately at Eikendal Winery, Somerset West. Each wine was inoculated with Zymalore Xpure, a yeast recommended for wines with high aromatic purity, enhanced expression of black fruit notes and a great smoothness of mouthfeel. Post fermentation the wine was left for 14 days on the skins. Thereafter each wine was transferred to barrel where they completed Malolactic fermentation. The wines spent a minimum of 24 months in 225 lit French oak barriques prior to blending. The wine received a light filtration before bottling on 8th July 2021.

Production
28 year old, dry grown bush vine Cinsault from organically farmed blocks, brought to Wildeberg where roughly 30% of the fruit is carbonically macerated due to some whole bunch material in the press. The juice is then allowed to ferment naturally in older French oak. A naturally produced wine with no fining or filtration and low sulphur levels.

2022 Painted Wolf The Den Pinotage

The bulk of the Pinotage was destalked and fermented in tanks with various staves. Malolactic and maturation was completed on staves. Approximately 25% of the wine was fermented in small open fermenters and matured in small French and American oak barrels. The wine was finished by blending 15% of a Shiraz, Grenache, and Mourvedre blend.
Background
In 2005, Emma and Jeremy Borg's vinous adventure began when they were approached to make their own wine. Despite Jeremy's two decades of experience in the world of winemaking and Emma's expertise with wine photography, the couple was thrown into the deep end and had to bottle and cork the bounty of their friend's surplus grapes by hand.
The endeavor sparked their dreams of creating their own brand and so Painted Wolf was born. The inspiration came from the endangered African wild dog - highly social, organised, persistent and efficient hunters true to Emma and Jeremy's own vineyard hunts for their expanding range of wines.
Consequently, a percentage of profits from each bottle is donated to support charities dedicated to the conservation of the species, and the painted wolf proudly graces each of their labels. Background
The Vineyards
The grapes are from Kasteelsig vineyard, owned by Billy (Guillermo) Hughes, and are organically certified. Soil is red Glenrosa with some Oakleaf – shale-rich duplex soils. The vineyards are not irrigated.
Winemaking
The grapes were fermented with natural yeast in open tanks and a small, manually-rotating steel tank (20% whole-bunches). Malolactic conversion and maturation took place in small French and American oak barrels (20% new) for 8 months. Total production 2,800 bottles.

The release of the Villages tier represents a huge step in the broader understanding of the wonderfully diverse Yarra Valley. For years, the Yarra has been represented by both single vineyard wines and broader blends across the whole region. Mac has long held the view that with experience and curiosity, numerous sub-regions will grow in clarity and distinction. 2019 is our first release of the Villages wines and reflects our growing love and understanding of such an exceptional region.
Tasting Notes
Mac has chosen not to provide traditional tasting notes for any of his wines. His aim is that his wines hopefully capture vineyard life and vitality. As such the wines are constantly evolving. He believes that the only tasting notes that matter are yours!
The Vineyard
Sitting behind the Waramate hills, this area encompasses both red volcanic and grey loam soils making it slightly more complicated to pinpoint a clear identity of this subregion. The undulating hills provide protection from the drier winds, the rainfall is slightly higher and the perfume, weight and structure appears more dense and effortless, pulling through seamlessly to the back palate.
The Vintage
The 2019 growing season was warm and dry. Below average rainfall and warmer conditions placed huge demands on the plants. Thankfully, in early February the vines welcomed two weeks of cool days and nights returning freshness and vigour. Overall small bunches and small berries characterised the season with above average structure and fruit weight.
The Wine
The Woori Yallock epitomises Mac's passion for exploring the sub-regions and special sites of the Yarra Valley. To Mac, Pinot Noir is just a vehicle with which to express the vineyard, not the other way around.
As he said to us, "we as Aussie producers tend to get sucked into trying to emulate great French Pinot." He believes that "if you don’t care what it ends up as, but rather just expressing that site and the season", you're going to make better, more expressive wines.
Of all the vineyards he works with, this is the one Mac speaks of the most. The wines are richly fruited but highly structural, and very long lived.
In terms of characterful, story-telling Yarra Valley Pinot Noir, it really doesn't get much better.

2023 Melea Organic Tempranillo

The creation of Melea Organic was a labour of love for us all. William Long spent years searching for the right winery to supply the organic, vegan-certified and wild-fermented wines, his son Freddie handled the launch and the label features an original bee motif created by his wife, artist Barbara Long, from recycled threads.
Named after a rare species of bee, everything about the range is created with sustainability in mind, from the lightweight bottles to the stone paper labels, made from a by-product of the quarrying process using a lot less water than normal paper. Melea was also the first Spanish wine brand to become a member of 1% for the Planet. Melea has donated thousands of dollars to bee conservation charities since its launch in 2020. Melea Organic also has an Instagram page to share information on the brand’s sustainable values.
The Vineyards
Fruit comes from organically certified, bush-trained, dry-farmed vines in the Cuenca area of La Mancha. The vineyards were planted in 1999 and are at an altitude of 660m with sandy-clay soils, low in organic matter and high in chalk and limestone. This suppresses yields to just 3-4kg per plant, giving greater quality grapes and red wines with the structure to age well. The extreme continental climate means there is a high diurnal temperature range conserving freshness and increasing aromatic intensity. The lack of rainfall reduces the risk of fungal diseases.
Production
Fermented with native yeasts, the wine underwent malolactic fermentation in tank. Fined using vegan-friendly pea protein.

The family winery is located in Alicante and is a leader in the production of high-quality, organic wines. They are IFS-certified and produce wines with organic and vegan certification.

This is a brand new single varietal from this co-operative, located in the heart of the Valpolicella Classico area, just a few kilometres from Verona. Corvina is usually blended with Molinara and Rondinella, but an increasing number of producers are making 100% Corvina wines. The result is light and fragrant with floral notes and some blackcurrant. It has an elegant structure.

The Cantina di Negrar brand is the soul of Cantina Valpolicella Negrar and pays homage to the philosophy of cooperative production while also recalling the territory’s historical vestiges: the effigy of St. Mark’s Lion standing tall on a column in the centre of Negrar is testimony of the Venetian Republic’s domination in the sixteenth century.
The Cantina di Negrar wines are rooted in the wine-making tradition of Valpolicella and the Veronese wine-growing areas, with a modern reinterpretation to guarantee the best price/quality ratio.
