the tour of our wines."
Tasting Notes
Bright, zesty and wonderfully refreshing. This Chilean Sauvignon Blanc bursts with lime, grapefruit and crisp green apple, lifted by subtle herbal notes and a clean mineral edge. The palate is light, vibrant and mouth‑watering, with a streak of citrus acidity that keeps everything lively and super drinkable. Finishes fresh, pure and perfect for summer sipping.

The must was protected from contact with the air throughout the process which began
with a cold maceration for 6 to 12 hours to increase the aromatic potential. Next came a
slow fermentation at a constant temperature of between 13°C and 15°C, which enabled
the fruit aromas typical of the variety to be drawn out.

Botter cooperates with the most qualified producers in Veneto, Apulia, Molise, Abruzzo and Sicily. A strong relationship that begins in the vineyards and goes through all the production cycles until the bottling. The focus is very much on innovation through environmentally friendly policies

2025 Santa Tresa Rina Russa Frappato Terre Siciliane IGP
Regular price £13.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%If Frappato is Vittoria’s signature grape, then Rina Russa di Santa Tresa perfectly captures its essence. “Rina Russa” means “red sand” in Sicilian dialect. Rina Russa features the black figures found on ancient Greek vases, a tribute to the meeting of peoples and cultures.
Tasting Notes
Rina Russa genuinely has its own unique style, as the Frappato grapes come from ancient clones developed on our own estate. It has a very beautiful light cherry colour, with a fresh and vibrant bouquet, reminiscent of wild strawberries and a beautifully balanced palate, with silky smooth fruit, a real freshness running through it and a surprisingly long finish.

Harvest
The grapes are carefully picked by hand towards the end of September and are carefully put into small containers of 15kg.
Vinification
The grapes are chilled overnight in a refrigerated room to lower the temperature to 6-8°C, in order to preserve the particular qualities of the Frappato. After a very gentle destemming and crushing the grapes are fermented at a temperature of about 18-22°C for 10-12 days. The wine is separated from the skins and malolactic fermentation is allowed to take place naturally.
Ageing
After the malolactic fermentation is completed, the wine is kept on its fine lees for about 4-6 months in stainless steel tanks, with regular stirring, before bottling.

Tasting Notes
Lively and aromatic, with a bright acidity, elegant bubbles and a rounded bittersweet finish. It's made from de-alcoholised wine and flavoured with real bitter orange, herbs and spices.

Producer
ALT. was created from a simple idea, that idea being, whatever someone’s reason for not drinking is, they should be able to have an equally delicious non-alcoholic alternative. In 2020, ALT. set out to create range of non-alcoholic, non-compromising sparkling wines, that would deliver both the flavour and the ritual of their alcoholic counterparts. For this reason, working with real ingredients from the start was important to them.

2021 Thistledown, The Quickening Shiraz
Regular price £24.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%This is the Barossa reimagined. An exuberant outpouring of energy, captured within a sculptured framework that reflects the rugged yet beautiful landscape of its conception.
Tasting Notes
A deliciously vibrant style of Barossa Shiraz with succulent raspberry and blackcurrant fruit, hints of spice and elegant, glossy texture.

Production
Joel Mattschoss' Eden Valley vineyard provides the majority of the fruit. This spectacular vineyard is planted on some of the most difficult, meagre soils of any we have seen. Littered with boulders composed of ironstone and pink quartz, it is a truly challenging site. Vineyards are trellised, cordon trained and spur pruned. This wine is all about great fruit, picked at the right time. Frequent vineyard walks determines exactly the right time, the fruit full of energy. Wild fermented, using some whole bunch inclusion play their role in ensuring that this wine is full of bright, fleshy fruit with great texture and spice. Aged in French oak for 6 to 8 months prior to bottling.
Producer
Thistledown was founded by Master of Wine, Giles Cooke who had a vision for a more elegant, textural interpretation of Australian wine.
Initial explorations resulted in access to many of the best vineyards, many of which were the previously unloved Old Vine Grenache. Incredible, historic fruit sources coupled with Giles’ increasingly adept efforts has quickly resulted in a reputation for being amongst the best in the country. Narrating the stories of these wines to an increasingly attentive global audience is Giles’ heartfelt commitment and mission.
