Nose
Crushed for flavour not colour, this 40 year old unirrigated bush vine wine sucks only from the rocks underground. Bright, expressive and gently savoury on the nose.
Palate
Along with its blushing hue, the palate rewards with fresh pomegranate flavour and acidity, savoury gamey notes, and a bright, beating heart of cherry ripe fruit. Slightly chilled with pink duck, pink lamb or carpaccio of beef, this is a beautifully defined expression of South Africa’s most achingly fashionable varietal.
Production
No irrigation is used on the vineyards and very little crop control is needed due to the age of the vines naturally restricting yield. All grapes are harvested by hand. Cinsault has bewilderingly been overlooked for so long in the Cape but is a grape variety we have proudly been championing for years - so it's great that this voice of the Cape's cool Atlantic vineyards is finally finding favour with wine drinkers.
The vines are mostly 40-year-old bush vines from hidden corners of the Cape. No irrigation is used on the vineyards and very little crop control is needed due to the age of the vines naturally restricted yield. The climate is perfect for viticulture with the low rainfall in summer months, tempered by cool afternoon breezes and the cold winters allowing the vines to rest and to build up reserves. All grapes are picked by hand at optimal phenolic ripeness, followed by a fermentation using delestage in which the juice is oxygenated which brings a lower concentration of tannins and a higher concentration of esters, key compounds that contribute fruitiness. The result is a wine, in which red fruit dominates full off and which is full of juiciness.

2024 Wild House Chenin Blanc

Tasting Notes
Ripe peach and tropical fruit on the nose with fresh citrus notes. Honeyed and textured on the palate with crisp acidity and hints of mandarin and lychee leading to a bright, juicy finish.

Production
Chenin is the backbone grape varietal of South Africa – it’s the most profusely planted variety in our country and is closely associated to our wine-making identity. To capture the true sense of place and terroir, we’ve made this wine a 100% unoaked Chenin Blanc. Fermenting only in stainless steel ensures the freshness, character and liveliness of the wine is maintained. To tame some of this energy and add more complexity and depth to the final wine, I’ve kept it on its fine lees for approximately nine months. This also adds to the lush mouthfeel and keeps the wine fresher for longer.”

2024 Peacock Wild Ferment Chenin Blanc

Tasting Notes
Nose
The nose is both savoury with stone fruits, pear, notes of the local fynbos and a distinct note of oregano.
Palate
On the palate it is delightful to find notes of wild honey often true to naturally fermented Chenin Blanc.
Production
The grapes for Peacock Wild Ferment Chenin Blanc are sourced from The Helderberg Ward on the coastal outreaches of Stellenbosch. Old bushvine vineyards (20 - 50 years old), planted in Chenin-friendly soils, have over time found their natural balance and it definitely shows in the wine. The Helderberg and Schapenberg are also known for the large expanses of indigenous flora (fynbos and proteas) and fauna such as caracal, bat-eared foxes, leopards and of course, peacocks.
In fact, four of South Africa's twenty WWF Biodiversity & Wine Initiative Champions (which includes Waterkloof amongst their number) are located on the Schapenberg and Helderberg alone. In addition to sourcing fruit from neighbouring vineyards, there is also a portion of wine from Waterkloof's biodynamic vineyard used in the Peacock Wild Ferment range.
Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand-harvested, then whole-bunch pressed in a horizontal basket press for only the finest juice. Fermentation takes place spontaneously with wild yeast in a combination of old 600litre barrels and concrete eggs. The wine then spends a minimum of 6 months on lees before bottling. No additions other than sulphur. Vegan friendly wine.

Tasting Notes
Fresh and zesty with grassy and dry bay leaf aromatics, mineral notes, with hints of richness. This is a restrained Sauvignon Blanc with a palate that has lots of minerality and citrus with lightly herbal notes. The finish is ripe and gently honeyed with crisp green apple fruit and fresh acidity.

These vineyards allow for low yields, slower ripening, natural acidity and a greater concentration of flavours. 2023 False Bay Slow Chenin Blanc

Up to six months lees ageing after fermentation gives a slow and natural evolution and a harmonious and balanced wine.
Tasting Notes
Ripe citrus and green plum fruit on the nose, with lightly bready aromas and notes of dried herbs including fennel and aniseed. Good concentration of zesty fruit with a creamy lemon character offset by taught acidity. The finish is long with great textural complexity, attributable to the long, slow, wild yeast fermentation.

Production
The grapes for False Bay Slow Chenin Blanc stem from old bush vines in the coastal region. Old vines are key to making stand-out chenin and although The Swartland is not as coastal as most of the vineyards used for the False Bay wines, it is an area where, quite frankly, grapes from old vines are available at the required prices. Thankfully, the area's old vines produce naturally low yields and retain good acidity despite being warmer and less windswept than Stellenbosch, so cooler, coastal Atlantic winds are less of a necessity for these gnarly old vines. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast in stainless steel tanks and then left on lees for a minimum of ten months before bottling. Tasting Notes
Light pale straw in colour, showcasing pure aromas of summer fruit and citrus, leaning more towards Kumquat and orange. Spicy undertones from light oaking. The fine tannin underpins the fresh acidity. To be enjoyed in its purist and natural form without the restrictions of alcohol.

Winemaking
Careful winemaking practices were followed to retain all the beautiful aromatics. Crushed, lightly pressed and settled overnight. Fermentation was done with a selected yeast strain at 14- 16°C. Left on lees for 2 months prior to racking to the second phase of production.
Producer
Reg Holder started his career with vintages in France, Australia and the USA before returning to South Africa. He then spent 11 years as the winemaker at both Neil Ellis and Delheim. In 2015, while his wife was pregnant with their first child, he started experimenting with de-alcoholised wine for her. When they were expecting their second, in 2017, Reg decided that he was going to move full time into the Lautus de-alcoholised project.
Reg uses his traditional winemaking expertise to craft an outstanding base wine. He then removes the alcohol using a state of the art piece of machinery before carbonating (the traditional Champagne method cannot be used as it will create alcohol in the bottle) the de-alcoholised wine.
He then uses a state of the art piece of machinery that combines centrifugal force and a vacuum in order to extract the alcohol while leaving the wines’ volatile flavour and aromatic essence intact.
So how do they do it?! Remove the alcohol?
The alcohol is removed via spinning cone technology at low temperature under vacuum. The initial phase is to first remove the flavour, and set aside. The alcohol is then removed and once completed the flavour is added back to the de-alcoholised wine. Because there is significant volume loss during this process, a portion of the alcohol water is then again put through the process to extract the water, and added back. This helps to fill out the palate and balance acidity. Normal winemaking practices are followed from here in preparation for bottling. Alc: < 0,5% RS: 26g/L TA: 6.2 PH: 3.3

2022 Cape Heights Shiraz

Tasting Notes
Nose
A vibrant juicy style of Shiraz with ripe bramble and black cherry on the nose.
Palate
Fresh summer pudding fruits and gentle spice on the palate lead to a mellow and satisfyingly rich finish.

Production
The vineyards for this Shiraz clamber up the foothills of the Swartland mountains which are comprised of sandstone and alluvial soils. This region is hot and dry which forces these unirrigated vines to work hard to produce low yields and small berries. Produced from only free-run juice and fermented on skins in stainless steel tanks, a portion of the grapes are whole bunch fermented as the ripe stems add to the overall tannin quality of the wine. The remainder of the grapes are destemmed and pressed. After a third of the sugar has fermented, delestage is done once per day. The wine is drawn off at the bottom of the tank and transferred into a separate tank. Once complete, it is then transferred back into the fermentation tank onto the skins and stems. This method ensures more air is incorporated into the wine which helps to release the fresh, fruity, and spicy aromas known so well in this wine. When the final blend has been made, it is aged on fine lees for an extended period in French oak barrels along with around 15% from the previous vintage. This ensures a more complex wine with greater palate weight and mouthfeel.

An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.
False Bay Vineyards is proud to be a WWF (World Wildlife Fund) Biodiversity Champion and certified by WIETA (Wine and Agricultural Ethical Trade Association). All of their wines are Vegan friendly.
