Tasting Notes
A delicious red with plenty of ripe and juicy berry fruit, but all balanced by well-judged oak, pleasant tannic structure, enough acidity to keep things fresh and some bottle age for added complexity.

Vinification
The harvest is at dawn. Stemming and soft pressing of the grapes. Fermentation at a controlled temperature of 25 ° C. 12 months in French oak barrels, 6 months in large oak barrels, 4 months in stainless steel tanks and 4 months in bottle.

Now in its fifth generation, Paolo Leo is based in the Salento wine village of San Donaci. The story of this beautiful estate began at the turn of the twentieth century, when Antonio Leo started to vinify the grapes grown in the vineyards of “Masseria Monticello”.The winery has enjoyed constant investment over the years and is today a thoroughly modern winery, with a capacity of 120,000 hl of wine and a barrel room housing 1000 French and American oak barriques.The company is certified BRCGS/IFS, BRCGS Ethical ICEA Organic, EQUALITAS .

Full-bodied and well balanced, whilst displaying elegance in a glass!
Tasting Notes
Deep ruby color with garnet tinges; pronounced spicy bouquet, with aromas of black cherry, blackcurrant and blueberry, spicy notes of black pepper and licorice and nuances of vanilla and chocolate; full-bodied, with smooth and lingering tannins perfectly balanced by a good freshness. Long and persistent finish of black fruits and spices.

Vinification
The grapes are destemmed and fermented at a controlled temperature of 25 °C for 8-10 days. Follows a maceration on the skins that lasts 12-15 days, with repeated pumping overs and finally soft pressing of the marc. Matured for 3 months in steel, 12 months in American and French oak barrels.

Bold, ripe, and beautifully balanced—Negroamaro at its finest!
Tasting Notes
Deep ruby red with violet tinges; pronounced aromas of ripe red fruit, currant jam and raspberries with hints of plum and black pepper; full-bodied, well balanced and fresh. Medium long finish, with a fruity and spicy after taste.

Vinification
The grapes are destemmed and fermented at a controlled temperature of 22-24 °C for 8-10 days; fermentation with selected yeasts and malolactic fermentation. Matured for 3 months in stainless steel vessels.
