2023 Domaine des Tourelles Skin

The average age of the vines are 150 years old! Produced from Merweh, an indigenous Lebanese grape variety, given a dose of skin contact followed by maturation in qvevri, this is something different and with real character.

Colour
Light amber in colour
Nose
The nose rises up out to the glass to greet, with waves of spice, sweet clementine-infused fruit, and what can only be described as a sense of warmth.
Palate
The palate opens up fresh and breezy, with the ripe apple and orange fruit coming through to fill up the mid-palate. While nothing like as grippy as some orange wine there's also a pleasing hit of tannins, helping give the wine real structure and definition.
Production
The grapes were harvested in October. 100% manually with intensive selection in 20kg boxes. Several rounds are needed to obtain perfect ripeness. Fermented with indigenous yeasts in 19th-century made Amphoras for 7 days on skin contact, then followed by malolactic fermentation
Producer
Domaine des Tourelles was founded in 1868 by French adventurer François-Eugène Brun and is one of the most highly acclaimed and oldest wineries still operating in Lebanon. It was also the first commercial cellar in 'modern' Lebanon to produce wines, arak and other spirits. This place has history! The Brun family owned and ran the winery up until the last descendant died in 2003 but luckily two local families - the Issa and Issa el-Khoury families - joined forces to buy the property and continue the fine tradition of winemaking.
Today, this Bekaa Valley estate is run by the three Issa children - twins Faouzi and Johanne and their sister Christiane, alongside Emile Issa-el Khoury, son of one of the co-owners. This young and dynamic combination have introduced a handful of practices in the vineyards and cellar including the use of indigenous natural yeasts, no fining or filtering, and only very small amounts of sulphur. These techniques along with fruit from 40 hectares of ancient, organically cultivated and dry-farmed vineyards (among the oldest in the valley) and a winery perfect for hands-off winemaking, make Domaine des Tourelles one of the finest boutique wineries in the Middle East.

2023 Sierra Grande Sauvignon Blanc

Our long-standing working relationships with growers enable us to source premium fruit, with the ultimate aim of making excellent quality Chilean entry-level wines with true style and character.
For the Sauvignon Blanc, we work with two families in two different locations for a blend with huge appeal. The first is the Martin Family who are nestled into the Andes Mountains in a western corner of Curico. Their vineyards sit around 500 metres above sea level (masl), a far higher altitude than the majority of Curico’s main valley which lies around 250masl. The higher altitude and proximity to the mountains means evening temperatures drop significantly, allowing Sauvignon Blanc grapes to retain crucial acidity as they ripen. This altitude also ensures there is minimal intervention in the vineyards ie. no chemical sprays or irrigation - only pure glacial streams.
Their old established vines planted on steep slopes means grapes can only be harvested by hand. Once the grapes are picked then crushed, cool fermentation is used to preserve the freshness and fruit aromas. We blend this wine from Curico with Sauvignon Blanc from the German Family in Cachapoal. Here, in a warmer location, the variety gains great aromatic expression and typically we see great varietal character thanks to the correct clones being used along with early harvesting. Wines from this warmer spot usually have a little more body, making the blend with the Martin Family wines a great combination of aromatics, fresh acidity and weight. Possibly the biggest strength of this blend is our ability to balance out warmer and cooler vintages with these two different profiles. The wine is settled in tank for a short period before being bottled early to preserve the wines youthful vibrancy.

2022 Première The Loire Vouvray

Tasting Notes
Pale straw in colour, with distinctive stone fruit aromas of apricot and peach with a touch of honey. The fruit flavours follow through on the palate with a touch of minerality, leaving a delicate and lingering finish.
Producer
Formed in 1973, Pierre Chainier is both a négociant and the owner of some 250 hectares of vines in the heart of Touraine, from which it sources classic Loire varieties. Its eight Touraine estates include Domaine de la Bruyère in the newly established appellation of Touraine-Chenonceaux. Conversely, Clos de Nouys, its 25 acre Vouvray estate, is one of the oldest in the appellation. Here, vines average 35 years of age in vineyards that were already listed amongst the best sites on geological maps dating from 1907.
Note on Sustainability
For both its négociant arm and its own vineyards, Pierre Chainier seamlessly blends the principles of reasoned agriculture with the most modern winemaking techniques. It encourages sustainable development and official certification for its growers, it uses sugar cane-derived biodegradable “corks”, and it has a comprehensive waste recycling programme.

2019 Ventisquero 'Grey Glacier' Merlot

After seriously considering alternate careers as a tennis pro and classical guitarist, he elected to enter the wine business, describing it as “one of my big passions because it’s more than work – it’s a lifestyle.”
Tasting Notes
Colour
This wine is deep ruby in colour with violet hues at the rim.
Nose
Very intense nose predominated by red fruit, such as strawberries and subtle notes of ripe plums, intermingled with a touch of oak from the barrel-ageing and notes of chocolate which enhances the final complexity of the wine.
Palate
This is a full-bodied, boldly-structured wine, which fills the mouth thanks to its fine tannins. Smooth and persistent in the finish.
Vinification
A pre-fermentative maceration was carried out at low temperatures to extract more colour and aromas, then the must was fermented in stainless steel tanks at controlled temperatures of between 24°C and 26°C. 100% of this wine matured for 18 months in extra fine-grain French oak barrels, 33% of them first-use, then the wine was aged in the bottle for 8 months.
Winemaker
Tosso’s winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval (ex Penfolds) in the production of icon wines Pangea and Vertice, a partnership that continues to this day.

Tasting Notes
The grapes for this Natural Zweigelt come from two particularly old vineyards in Ried Weisleiten on Vienna`s Nussberg. This bright, polished Zweigelt is quite dark and intense, with aromas of black cherries and plum fruit, as well as a subtle touch of herbs and spices. Fine texture and freshness on the palate with an engaging spiciness that leads to a fruity, cool finish.
In the Cellar
Zweigelt from old vines on the Nussberg forms the basis, maceration and longer storage on the skin (9 weeks) leads to an intense and dark berry fruit, as well as a lively tannin structure.
The wine is then not aged in wood, but in concrete eggs, which can breathe in the same way as wooden barrels, but do not bring those typical oak tones nor toasty aromas. Of course, the wine is neither fined, nor filtered, nor sulfurized, just as we do with the mash-fermented white wines of the NATURAL series. After about 6 months of storage, the wine is put together and bottled, and after several months of aging in the bottle, the NATURAL Zweigelt goes on sale in September immediately before the next harvest.

2019 Domaine de Grange Neuve Monbazillac (500ml)

Tasting Notes
A fabulous dessert wine, sweet and luscious with a great backbone of fine acidity for a clean finish. The nose is fresh with classic botrytis marmalade and ripe nectarine. Flavours on the palate are richer: honey with a finishing twist of bitter orange.
Production
Vineyards are based in the heart of Perigord, near Bergerac along the valley of the Dordogne river. Here, on the river slopes, there is a particular micro-climate which favours the development of the botrytis necessary to make this style of sweet wine. Vines average 25 years of age. Grapes are hand harvested at a very late stage of maturity, in three successive 'triage', to ensure that only the most mature grapes are picked. Grapes are harvested in October and November. Grapes are gently put into a pneumatic press and the juice is transferred to temperature-controlled stainless steel tanks. After fermentation, the wine is matured for 24 months.
Producer
Located in Pomport near Bergerac, in the heart of Périgord, Domaine de Grange Neuve belongs to the Pichon and Castaing families, and it has grown from being a small farm with just 4 hectares of vines in 1898 to a vineyard of 70 hectares today. Dedicated to making wine that respects tradition while not neglecting technological advances, both in the cultivation of vines and in winemaking techniques, today the property is still run by three generations of the same family. The vineyard consists of approximately 26 hectares of red grape vines (Merlot, Cabernet Franc and Cabernet Sauvignon), and 44 hectares of white (Sémillon, Muscadelle and Sauvignon Blanc), the average age of which is 25 years.
Sustainability
Domaine de Grange Neuve is constantly working to implement practices that preserve the environment and have a positive impact on climate change, and sustainable development is one of their major concerns. The estate has been certified HVE Level 3 since 2012, regarding this course of action to be wider reaching and of greater impact than “mere” organic practices as it evaluates their impact upon a broader range of environmental issues.
Grange Neuve goes much further than required by the HVE certification, having its own biological water treatment facility, a machinery hangar with a roof covered in solar panels to generate its own clean electricity and a comprehensive waste management strategy - it is a member of the Adelphe programme, it uses eco-packaging and recycles as much of its waste packaging as possible, it uses a minimum amount of consumables, and it uses eco-friendly cleaning products.

Background
The Vineyards
The grapes are from Kasteelsig vineyard, owned by Billy (Guillermo) Hughes, and are organically certified. Soil is red Glenrosa with some Oakleaf – shale-rich duplex soils. The vineyards are not irrigated.
Winemaking
The grapes were fermented with natural yeast in open tanks and a small, manually-rotating steel tank (20% whole-bunches). Malolactic conversion and maturation took place in small French and American oak barrels (20% new) for 8 months. Total production 2,800 bottles.
Painted Wolf Wines supports the conservation of the highly endangered painted wolf (African wild dog) and the protection of the diminishing wild spaces of Africa, through its donations to the EWT – www.ewt.org.za and Tusk – www.tusk.org.

Tasting Notes
Hartenberg`s self-styled `super premium` Chardonnay earns its title. this wine combines creamy and nutty fruit with refreshing acidity, a sleek minerality and sharp citrus fruit. It spends a whole year in all-new French oak and on the palate, you can tell – rich body, warm vanilla and an enduring round finish.
Nose
An expressive bouquet with lime zest and stone fruit at its core. Elegantly integrated oak shows notes of butterscotch opening up to a roasted nut aroma and a clean, chalky minerality.
Palate
An initial bright acidity on the palate balances the rich and creamy texture of the wine with the peach and lime note following through to a lingering, toasty finish.

History
The first settlers to cultivate the virgin land of the estate now known as Hartenberg were friends Cunraad Boin and Christoffel Esterhuizzen who were granted permission to work 60 morgen (20 ha) of the land in 1692. In 1704, Christoffel Esterhuizzen was granted the title deed to "Het Hartenberg" by Governer (Willem Adriaan van der Stel) and by 1718, he had 10 000 vines on his property.
The well-known elephant hunter, Paulus Keyser, bought Hartenberg in 1721 and continued the practice of vineyard cultivation and winemaking on the farm until he sold it to Jacob van Bochen in 1725. Van Bochen, a former accountant of the Dutch East India Company butchery and holder of the liquor retail monopoly, also bought Weltevrede adjoining Hartenberg.
For about one hundred years after van Bochen, the farm passed through the hands of various owners. Some with colourful names like Arrie Lekkerwyn (delicious wine), and Aaron van Ceylon (a freed slave) and in 1838 it became the property of the brothers Jacobus and Johannes Bosman.
An important period in the farm's development was ushered in by the Hampf family when they bought Hartenberg in 1928. Mrs Hampf extended the vineyards and planted the many beautiful trees still to be seen around the farm and cellar, while her husband became the first officially recorded winemaker on the estate.
In 1948, Hartenberg was bought by the late Dr Maurice Finlayson (a well-known Cape Town pathologist) and his wife, Eleanor. Discovering the true potential of the estate, they soon began marketing their wines under the label "Montagne". Besides good wine, the Finlaysons also produced two sons, Peter and Walter, who were to become renowned South African winemakers. Uncompromising and sophisticated, Eleanor Finlayson's presence is still felt on Hartenberg today.
Gilbeys were the next owners of the estate, purchasing it from the Finlaysons in 1977. They eventually released the present Hartenberg range as their flagship brand in 1985. On 1 January 1987, Ken Mackenzie, purchased Hartenberg, having seen the potential that the perennial under-achiever offered.
His daughters continue a program of investment in the farm, focusing on three key areas: the replanting to specific sites of premium varietals, the development of production facilities, and upliftment, through knowledge and skills for employees.
The Mackenzie vision, though extremely ambitious, remains simple: to do whatever it takes to produce wines of outstanding quality.

2014 Joseph Perrier Cuvée Josephine

For that occasion, he designed the most beautiful hand-painted bottle which was decorated with fine gold. Today’s cuvée, named for Joséphine and celebrating our history, has only been made in the years 1982, 1985, 1989, 1990, 1995, 1998, 2002, 2004, and 2008.

Nose

On the palate one finds an intense and finely fruity vinous expression. The balance is perfect. The flavours of spices, dried fruit and candied citrus dominate within a taut mineral frame.
History
Founded in 1825, Joseph Perrier has been owned and run by the same family since 1888. Current director Benjamin Fourmon represents the 6th generation. Champagne Joseph Perrier owns 21 hectares of vineyards, situated in the heart of the region on the right bank of the River Marne, around Hautvillers and Cumières – two villages classed 93% in the ‘échelle des crus’.
They are mostly planted with Pinot Noir but include 2 hectares of Chardonnay. The cellars stretch over three kilometers and date back to the Gallo-Roman period. The chosen name for these cuvées is no accident, nor any false claim to grandeur - ‘Cuvée Royale’ alludes to the historic relationship between Joseph Perrier and Queen Victoria and King Edward VII, as the royals’ Champagne of choice - probably the highest honour any Champagne House can hope to earn.
All the wines are made with a keen focus on freshness and purity, a theme which runs right through the range and really shows its worth in the vintage cuvées which show impressive energy and poise and remarkable ageing potential. Aside from the royal connection, Joseph Perrier has been associated with some pivotal events, which represent great human achievements, from the celebrations around Concorde’s inauguration in 1976 to, more recently, the Noble Prize in Medicine.

2021 Castel del Lupo Pinot Nero ‘Della Quercia’ Organic

This spectacular Pinot captures all the vigour and character of the small plot of organically-grown 15 year old vines in the La Quercia vineyard where it is sourced. A correct and pure Pinot Noir with real soul and expression.
Nose
Pronounced, warm, ripe, black-fruited, spicy and complex aromas.
Palate
Lively acidity offsets the ripe wild plum and bramble fruit and the palate combines concentration, delicacy and structure.

Production
The Pinot Noir vines are organically-grown in a combination of chalk, clay and silt soils on the rolling hills of Oltrepo Pavese. They are Guyot-trained at approximately 250m altitude, south / south-east facing. The grapes are harvested by hand and undergo careful selection. The grapes are macerated on skins for 8-10 days, then undergo malolactic fermentation in stainless steel. The wine is bottled in spring.
Producer
Castel del Lupo, in the heart of Oltrepò Pavese, dates back centuries - and includes the eighteenth-century Palazzo Pegazzera. In 1974 three entrepreneurs took over this historic estate and began a regeneration process. Giovanni Doglio, whose father and grandfather were both Piemontese winemakers, has over 40 years of experience managing wineries. Recently joined by his daughter Federica, he has worked tirelessly to develop the estate. They have purchased more vineyards (to cover 100ha at around 300m altitude), planted new vines and built a new cellar. The vineyards are now certified organic. The winery's main focus is high-quality bottle-fermented sparkling wine, and much of the vineyard is planted with Pinot Noir for this purpose. However, these vines are also the source of fine still red wines.

A proportion of the cantina’s vineyards are in conversion from sustainable to organic cultivation and will be certified as organic from 2020.

2021 Domaine de Maltaverne Pouilly-Fumé ‘L’Ammonite’

Nose
A honeyed and gently aromatic nose with a savoury, toasted fennel seed note.
Palate
The palate is a rich and ripe reflection of this warm vintage, balanced by smoky, grassy flavours typical of Sauvignon Blanc.
Production
The vineyards are planted on Kimmeridgian soil (fossilised clay-chalk, superb for low yields and mineral content) and face south-southwest, giving increased exposure to the sun. They are fertilised organically. Harvesting is done partly by hand and partly by machine, depending on the vintage. Vinification is old fashioned and hands-off. Fermentation is done by indigenous yeasts and is followed by naturally occurring malolactic fermentation. This helps to soften the wines by converting the harsher acids to more palatable ones. Most unusually for a producer of Loire Sauvignon Blanc, winemaker Gilles Maudry believes in allowing full malolactic fermentation to run its natural course. The wine remains on its fine lees for 15 months after harvest, intensifying and enriching the flavours to balance the incredible freshness.
Producer
Domaine de Maltaverne is one of the few producers in the Loire that allows full malolactic fermentation to run its natural course. The owner, Gilles Maudry, is a former biologist who returned to his family’s Tracy-sur-Loire estate in 1984 when his father retired. Now working with his son Matthieu, who finished his viticultural and oenological studies in 2015, Gilles is a firm believer in minimal intervention: as long as his vineyards produce healthy grapes, picked at optimum maturity and vinified with care, then the wine can be left to determine its own evolution. The beautiful label features an illustration of the fossilised ammonite shells found in the vineyard, sketched by an artistic wine lover following a tasting to represent what he visualised upon tasting this wonderful wine.

Colour
The wine displays fresh green tinges on a pale straw colour.
Nose
The nose exhibits aromas of fresh-cut pear and honeydew melon with some zesty citric notes. There are no overt woody or buttery aromas with the primary fruit characters expressed with clarity and definition.
Palate
The palate is fresh and lively with clean crisp acidity complementing the vibrant fruity flavours. The palate has very good extension and ends clean and bright. This is a restrained style of Australian Chardonnay and highlights how far we have come with this style of wine over the last decade.
Producer
We have worked with Michael Kerrigan for more than 25 years, and we are continually impressed with his talent and capacity for reinvention. Former winemaker at Howard Park and Madfish, Michael struck out on his own when his dream vineyards in the key quality region of Wilyabrup came up for sale. With more than 30 years of winemaking under his belt, and 12 years going solo with Hay Shed Hill, this man is one of the most experienced, respected and revered winemakers in Australia - and rightly so. He is also a strong purveyor of classically blunt Aussie pearls of wisdom: “It’s all in the detail - you quite simply visit the vineyard every day. I’m not interested in being epic, I just want to make wine I like to drink”. He likens Margaret River’s climate to “Bordeaux in a perfect year”, and attributes the region’s success to its maritime climate, meaning a low diurnal range, very important in a country that is known for its extremes in temperature, and pretty much everything else!
Michael produces wines under two labels - the entry-level ‘Pitchfork’ range and the estate, single vineyard ‘Hay Shed Hill’ wines. The Pitchfork range represents unprecedentedly good value considering that all of the grapes are grown in Margaret River – very unusual for a wine at the entry-level from this region, and yet another example of Michael’s commitment to quality over all else.
There are 4 lip smackingly good, everyday wines in this range. Everything under the Hay Shed Hill label is single-vineyard, which Michael explains: “I make single vineyard and single block wines because they express a particular character – otherwise what’s the point?” All of the vines are dry farmed and made from free run juice only. The vineyards are around 20 years old and they are all farmed organically, but without certification. The Chardonnay sees 25% new oak and represents the ‘modern Australian Chardonnay’, in the words of its maker.

2022 Coterie by Wildeberg Semillon Sauvignon Blanc

Wildeberg’s rationale is to source the finest vineyards available to us across Franschhoek and the Coastal Region, from which cuvées the eyes are plucked to make Wildeberg and the Terroir Series releases. In doing so there remains a small yet definitive expression of all the vineyards we worked with, and its these cuvées that are go into Coterie by Wildeberg. Semillon from Franschhoek is barrel fermented in 600 litre French and Austrian oak then aged for 10 months in barrel. Sauvignon Blanc is fermented in stainless steel and kept on the gross lees for 10 months. Once the blend is decided the wine is allowed to marry in tank for 6 weeks prior to coarse filtration and bottling. Semillon is aged in 36% new barrels, 44% 2nd fill, 20% stainless steel.
Producer
The Earth’s mantle thrusts up above the gentle town of Franschhoek, a wild slice of untamed mountain on which sits a farm named Wildeberg. An established wine region for some 350 years, sensible generations never thought to plant a vine here until a happy band of idealists recently craned their necks up at this hillside and, dizzy with hope, decided to give it a go. Franschhoek is on the very edge of the south-eastern corner of the Cape’s venerable Coastal Region, indeed Wildeberg’s property border runs over the top of the mountain where the Coastal Region gives way to the baboon-strewn road to Grabouw and the wider Western Cape.
The Wildeberg wines express the most captivating Franschhoek Valley fruit. In our Wildeberg Terroirs bottlings we look beyond our home to a clutch of exceptional sites of other origin.
A mountain rich in metaphor with the visual heft to flatter any wine, releases of Wildeberg and Terroirs express our continued purpose – exceptional wines of place, however humble the origin. If the abiding memory of our wines remains a textural sense of place then we are portraying the Cape as hoped.
Sustainability
Wildeberg is a 144ha wine farm set against the backdrop of the dramatic Franschhoek mountains, on the very edge of viticultural possibilities. To farm here you have to be in tune with nature, respecting the earth and the elements, creating wines which truly express the terroir with minimal intervention.
This special area is home to 4 endangered Fynbos species, and a key mission of Wildeberg is to conserve this vegetation type as they are critical to the biodiversity of the Western Cape. This work entails clearing invasive alien trees which can overwhelm the Fynbos and contribute to the threat of forest fires. Fynbos covered mountains like those at Wildeberg are thought to be responsible for delivering one glass of water in five in South Africa, due to the plants allowing up to 80% of rainwater to run off into rivers and reservoirs rather than being absorbed into the soil.
Water is precious in South Africa, and waste water from the winery passes through a natural wetland with indigenous reeds and plants before being pumped into our irrigation dam. We then use this water to irrigate the vines.
All Wildeberg wines are certified as part of South Africa’s sustainability accreditation, the ‘Integrated Production of Wine’ (IPW) system. The IPW scheme, started in 1998, consists of a set of audited guidelines specifying agricultural practices, manufacturing practices and bottling activities.
Wildeberg is also a proud member of the Cape’s Old Vine Project (OVP), which preserves blocks of vines which are 35 years and older. The project encourages producers to farm as close to nature as possible whilst raising awareness of the inherent potential of old vines to produce outstanding and expressive wines.

Tasting notes
A fine and seamless blend of 3 classic white grapes. Sauvignon Blanc aromas are prominent on the nose, with lime and prickly pear notes. A tight mineral core and creamy mid palate from the Chenin Blanc gives complexity and a persistent finish while a small proportion of Semillon adds texture and depth.

Production
Circle of Life White is neither defined by grape varietals, nor indeed a specific block within the vineyard, but instead encapsulates the myriad soils, aspects, altitudes and grape varieties found on this windswept, biodynamic farm. The windswept vineyard blocks are all, south facing (less sun exposure), 200-350m above sea-level and a mere 2 miles from The Atlantic. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Production is a miserly 4 tons per hectare. Bunches are picked early in the mornings, when they are still cool, which helps to preserve the flavours. Extracting juice from the grapes is achieved through whole-bunch pressing in our modern basket press. This is the most delicate way to extract the juice. No additions of enzymes or settling agents were made to the juice. After a settling period of 24 hours, a large proportion of the juice was destined for co-fermentation. We determined a blend of Sauvignon Blanc and Chenin Blanc prior to fermentation which went into old 600-liter barrels where it fermented for four months. After the fermentation was completed the blend was racked to a stainless-steel tank to which they added the rest of the Sauvignon Blanc, Chenin Blanc and Semillon. To have the varietals integrate the wine was left in barrel on the fine lees until its bottling date six months later. This helped to add more complexity and weight to the palate. The wine is produced as naturally as possible, with no additions of acids or enzymes.
Producer
Founded by Paul Boutinot in 2004, Waterkloof is a family-owned farm using organic practices. The farm is perched high up on the windswept Schapenberg, overlooking False Bay and The Atlantic Ocean. Living soils, naturally low yields and a long growing season help provide talented Cellarmaster Nadia Barnard with naturally balanced grapes that are imbued with a truly defining sense of origin. Those grapes are then transformed into wine with a minimum of intervention. The resulting wines are fine, inimitable and best enjoyed with food.
Sustainability
As well as being ECOCERT certified as organic, and working biodynamically, Waterkloof goes much further than many in its efforts to be a highly sustainable winery. A member of The Integrated Production of Wine Scheme, a voluntary environmental sustainability scheme established by the South African wine industry in 1998, and of The Wine and Agricultural Ethical Trading Association, a multi-stakeholder, non-profit voluntary organisation which actively promotes ethical trade in the wine industry, it is has also been a member of the World Wildlife Fund’s Biodiversity & Wine Initiative from its inception. Through a partnership between the IPW and the BWI, Waterkloof is a WWF Conservation Champion and has in place a formal nature conservation plan that includes: clearing approximately 55 hectares of land from alien invader species and restoring the Cape’s precious indigenous flora and fauna; re-establishing natural vegetation in previously disturbed areas; introducing preventive erosion control measures; providing migration corridors for species between isolated areas of natural vegetation; mulching of winter cover crops to create a healthy environment for the natural predators of vine pests and installing perches for birds of prey for natural rodent control measures.In the vineyards, drip irrigation is used only on young vines as a more efficient system to conserve water. Most of Waterkloof is dry-farmed; the biological control of pests is employed as an alternative to chemical spraying; annual legume cover crops are sown to add nitrogen to the soil and annual grain cover crops are sown in alternate rows as a carbon source and to return nutrients to the soil; earthworms are farmed and their casts are used to make a tea, which is used on the cover crops and soil as a living fertiliser; 380-400 tons of compost a year are made each year to boost carbon matter in the soil, to enhance its water holding capacity, and to boost the level of microbes in the soil keeping it fertile and alive; and, as part of the estate’s biodynamic regime, various foliar feeds are made. No damaging herbicides, pesticides or fungicide are used, only natural predatory fungi and metabolites to control mildew and to build the plants’ immunity. Six Percheron horses are used to plough, compost, spray and harvest the vineyards to reduce damage to the soil and vines and to reduce carbon emissions. Using the horses also teaches the handlers the rare skill of training these horses. A flock of chickens reduces the number of pests in the vineyard and returns nitrogen to the soil and compost, as well as providing fresh, free-range eggs for the restaurant. A small herd of cows is kept, which is key to producing biodynamic composts and teas, and a flock of sheep and a herd of goats are allowed to graze in the vineyards in winter to naturally reduce the level of weeds and vegetation between vine rows, as well as to put nitrogen back into the soil.
In the cellar, waste water gets pumped through a stainless-steel filter into a bioreactor where it is combined with the rest of the waste water from the building. Aerobic bacteria remove most of the contaminants before the water is pumped into a sand bed to remove any solids. From there, it runs into a reed bed for a final clean up and it is then used to irrigate the young vines. Peroxide is used a cleaning agent in the cellar as it breaks down in water after 15 minutes, leaving no residue. The cellar itself is built into the hillside to maintain a stable temperature, to avoid pumping the wines and hence reducing energy usage. Used boxes, dividers, bottles, screwcaps, plastics, paper and labels are recycled with an external company that take everything away for recycling. Old, unused bottles are sold to bottle recyclers who wash and resell them.

Production
False Bay Windswept Sauvignon Blanc stems from vineyards in Stellenbosch, some of which are a mere 3 miles from The Atlantic Ocean. These vineyards allow for low yields, slower ripening, natural acidity and a greater concentration of flavours. If one wants to make sauvignon blanc naturally, these are just the type of grapes required. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, then a portion of the juice is fermented spontaneously with wild yeast and the rest is inocculated. The wine spends a minimum of 6 months on lees before bottling. An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.

Production
The grapes originate from the steep and slatey soils of the Mosel, Saar and Ruwer. After careful picking and selection, the grapes are fermented in 1000L oak Fuder and stainless steel tanks before blending. The wine rests for a few months on its fine lees to add complexity.
Producer
Bischöfliche Weinguter Trier cultivates approximately 95 hectares of vineyard, among them some of the Mosel, Saar and Ruwer's most legendary sites. Almost 90% of production is Riesling, with grapes crushed and pressed at Scharzhof on the Saar and Duisburger Hoffman on the Ruwer.
Wines are then aged in either traditional fuder or stainless steel in their vast vaulted cellars in the heart of Trier, which date back to Roman times.

2021 Chateau Maucoil Chateauneuf-du-Pape Blanc

Producer
Château Maucoil’s vineyards are primarily located in the sandy-soiled northwest of Châteauneuf-du-Pape appellation, but its white grape varieties are planted in Urgonian limestone soils close to the river in the southwest of the region.
Vineyards have been managed organically (certified in 2014) and yields are kept to around 25 hl/ha. Harvesting is by hand and grapes are sorted before vinification.
After a cold skin maceration and pressing, alcoholic fermentation is maintained at 18°C and malolactic fermentation is prevented in order to preserve the wine’s freshness and acidity. The wine is unfined and aged in vats to bring out the varietal aromas and body, synonymous with white wines from the southern Rhône.
Did you know?
Maucoil is one of the few Châteauneuf-du-Pape estates that has conserved all thirteen of this famous appellation's original grape varieties, and grapes must pass through three rigourous stages of manual sorting before being deemed of high enough quality to be made into wine.
The estate's old vines (the youngest are merely 40 years old; the oldest date back to 1895!)
Château Maucoil (pronounced “moh-kwahl”) originally served as a base for Roman legions who were attracted by the spring that runs through the property!

"This one was labelled 'natural' not orange but still a decent colour extracted. With Sauv Blanc being the lead varietal - it’s certainly the more commercial of the two whites he produces. Equally magnificent but still difficult to recognise any particular fruit aromas or flavours - but again multi-layered, complex, and with great length - and again that saline finish. Just shades it to be my favourite of the two - but Di preferred last night. Definitely a winemaker to watch." January 2022

History
The Moncuit family has been making superb champagne in Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, for more than 100 years. Pierre Moncuit had recognised the intrinsic quality of his terroir and, together with his wife Odile, strove to make the best possible champagnes from his grapes. Nicole Moncuit and her brother Yves, along with her daughter Valérie, are now in charge of the domaine and make sublimely complex, delicate wines from 20 hectares of Grand Cru vineyards. The palate of the Cuvée Pierre Moncuit Delos Grand Cru Blanc de Blancs is delicate and refined with citrus fruit and yeasty notes. It is perfect as an apéritif. The vintage Cuvée Millésimée Grand Cru Blanc de Blancs is an outstanding wine, truly representative of the perfect vintage conditions and expressing the full potential of the terroir and the grapes. 2018 Sepp Moser Zweigelt Reserve

Tasting Notes
Ripe cherry, herbal and cedar wood aromas. The palate has good weight with juicy plum and red berry fruit, bright acidity, supple balancing tannins and a bitter cherry twist on the finish.
Production
Zweigelt Reserve is made from 100% Blauer Zweigelt grapes cultivated in Sepp Moser's Hedwighof vineyard, in the warm southern Neusiedlersee village of Apetlon. The vineyard is around 117 metres above sea level (comparitively low), with deep dark topsoil and gravel beneath, which benefits from plenty of sunshine. The grapes are hand harvested towards the end of September / start of October. The grapes are de-stemmed and crushed, with spontaneous fermentation in stainless steel and 3 weeks spent on the skins. The wine is aged for 18 months in used 225 litre oak barrels.
Producer
The Sepp Moser Estate was founded by the famous Austrian wine producing pioneer, Lenz Moser. Lenz Moser's son, Sepp Moser, began operating under his own name in 1987 and handed over the direction of this family-owned estate to his own son Nikolaus in the year 2000.
The Sepp Moser Estate comprises of 50 acres of vineyards in two prominent wine regions; Kremstal (22 ha) and Neusiedlersee (28 ha). In the Kremstal, Nikolaus produces an international range of varieties as well as the ever more important local varieties of Gruner Veltliner and Riesling. The reds are produced on the gravelly soils of the warm southern Neusiederslee village of Apetlon. All Sepp Moser wines have been organic (and all estate wines biodynamic) since 2007.
Sustainability
The Sepp Moser estate produces a wide range of wines every year thanks to its vineyards in two diverse regions. There is one main aim in the cellar: the quality of the grapes shall be brought with as little influence as possible to the bottle. The grapes in the Sepp Moser vineyards are harvested by hand and at the cellar of the Atrium House Nikolaus Moser emphasizes gentle vinification and tries to interfere as little as possible with the process so that each wine can develop its own individual style. The fermentation starts spontaneously, and the maturing of the wine takes place on its own.
In 2006, Nikolaus officially moved the estate to biodynamic viticulture – one of the first to do so in Austria – and became Demeter certified. 2009 saw the release of Sepp Moser’s first certified organic wines. Nikolaus is very keen to reduce the amount of copper and sulphur used in the vineyards, and this year saw a reduction of two thirds over what was sprayed previously. He composts all the estates' pomace and vine trimmings, and there is an ongoing effort to plant trees around the vineyards.

Ripe citrus and green plum fruit on the nose, with lightly bready aromas and notes of dried herbs including fennel and aniseed. Good concentration of zesty fruit with a creamy lemon character offset by taught acidity. The finish is long with great textural complexity, attributable to the long, slow, wild yeast fermentation.

Production
The grapes for False Bay Slow Chenin Blanc stem from old bush vines in the coastal region. Old vines are key to making stand-out chenin and although The Swartland is not as coastal as most of the vineyards used for the False Bay wines, it is an area where, quite frankly, grapes from old vines are available at the required prices. Thankfully, the area's old vines produce naturally low yields and retain good acidity despite being warmer and less windswept than Stellenbosch, so cooler, coastal Atlantic winds are less of a necessity for these gnarly old vines. Winemaking

Using proprietary technology, the alcohol is gently pulled from a portion of the wine. The result? Palate
Luscious, abundant gooseberry aromas follow through onto the palate where it explodes with a full on citrus zing that is balanced by fantastic texture. The finish is clean, crisp and refreshing.

Production
The wine is dominated by 50% Awatere Valley fruit, with vineyards located on both sides of the river in three sub-regions. Soils on the south bank are deep silt loams and fertile, while the north bank sites are stony, shallow silt loams, and lighter in structure.
A dry and windy climate in this valley leads to small, thick-skinned berries with an emphasis on herbal intensity. Wairau Valley sites in the Rapaura district and the Southern Valleys make up much of the rest of the blend. These are warmer areas, and the soils vary between deep fertile loams, gravelly alluvium and clays. Fruit from these sites is often more tropical, with some ripe citrus characters.
Vines are all managed with vertical shoot positioning, and pruned to leave balanced bud numbers and crop levels consistent with individual site capacity. Picking decisions are made entirely on flavour, skin-contact is minimised and cool fermentations with neutral yeast in stainless steel tanks preserve the crisp, fresh varietal nature of the fruit.

2021 Domaine des Tourelles Vieilles Vignes Cinsault

Nose
The nose has an exotic mix of ripe fig, bright red cherry and plum fruit with star anise spice, it’s lifted and pronounced.
Palate
The palate has beautifully ripe red fruit characters alongside fig and spice notes. The acidity and tannin perfectly balances the generous flavours and leaves a pure, clean finish.
Production
Cinsault has been farmed in the Bekaa Valley since the mid-19th century before ceding the way to new imported varieties. In 2014, Domaine des Tourelles decided to revive this grape by searching out very old Cinsault vines, over 50 years of age and located in Western Bekaa. The grapes are handpicked and fermented with indigenous yeasts in concrete vats for ten days. Malolactic fermentation begins spontaneously. The wine is then aged for 1 year in concrete and then spends a further 6 months in used French oak barrels to round out the tannins. The result is a supple wine that beautifully reflects the terroir of the Bekaa Valley, with an ageing potential of several years.
Producer
Domaine des Tourelles was founded in 1868 by French adventurer François-Eugène Brun and is one of the most highly acclaimed and oldest wineries still operating in Lebanon. It was also the first commercial cellar in 'modern' Lebanon to produce wines, arak and other spirits. This place has history! The Brun family owned and ran the winery up until the last descendant died in 2003 but luckily two local families - the Issa and Issa el-Khoury families - joined forces to buy the property and continue the fine tradition of winemaking.
Today, this Bekaa Valley estate is run by the three Issa children - twins Faouzi and Johanne and their sister Christiane, alongside Emile Issa-el Khoury, son of one of the co-owners. This young and dynamic combination have introduced a handful of practices in the vineyards and cellar including the use of indigenous natural yeasts, no fining or filtering, and only very small amounts of sulphur. These techniques along with fruit from 40 hectares of ancient, organically cultivated and dry-farmed vineyards (among the oldest in the valley) and a winery perfect for hands-off winemaking, make Domaine des Tourelles one of the finest boutique wineries in the Middle East.

Palate
It is expressive and scented on the palate, with a fluid and refreshing touch. It is a graceful, vibrant and direct wine, with distinctive variety characteristics and a persistent nice citric finish.

Winemaking
Harvest, subsequent bunch selection and destemming at the wine cellar. After the grapes are cooled, they go through the pneumatic press for four hours. Subsequently, the grape juice goes to settling tanks, where it remains between 24 and 48 hours, and then ferments in stainless steel tanks at a controlled temperature of 15°C with selected yeasts. Finally, it is stabilized, mildly filtered, and bottled.

Tasting Notes
Nose
Aromas of red berry and cherry, with a touch of eucalyptus and liquorice.
Palate
The palate has bright bramble fruit, soft tannins, minerality and some spice on the finish.
Production
The Primitivo vines grow in red, iron-rich soils. The grapes are harvested at the end of August / start of September. Fermentation is in stainless steel.
Producer
The Felline winery is in Manduria, Puglia, around 10km from the coast above the Gulf of Taranto. It was founded by Gregory Perrucci in 1992, the 3rd generation of a wine family, born and raised in Manduria. He has dedicated his life to one of the classic varieties of the region - the Primitivo grape - perfectly suited to the sunny, dry climate.
The winery has 120 hectares of vineyard across carefully selected plots and with soils ranging from sand, loam, tuff and clay on a base of limestone rock. Grapes sourced from these different soil types are vinified separately to harness their individual characteristics. His aim is to produce ‘real’ wines inspired by the traditions of the region.

Champagne CH de L’Auche Brut Sélection N/V

Tasting Notes
Nose
Aromatic notes of juicy pear and apricot on the nose are underpinned by more mature aromas of hazelnut and fresh bread.
Palate
The texture is creamy and full-bodied with well-balanced acidity and plenty of bubbles!

Production
Grapes for this cuvée are grown in the lieu-dit of "Auche" around the village of Janvry which lies just to the west of Reims. Firstly they are pressed in small stainless steel vats, before being transferred to ceramic vats for 12 hours to allow for natural clarification of the juice. Next, the clarified juice is moved to large steel containers where it remains from September to March, during which time fermentation takes place before finally being bottled for the secondary fermentation and lees ageing. Dosage is between 9g and 10g per litre to give a richness of profile and this Brut Sélection is comprised of 60% wine from 2017 with 40% reserve wines from 2014-2016.
Producer
The Cave Co-opérative de Germigny was created in the early '60s by a handful of winegrowers who wanted to pool their resources and craft their own Champagne. They aimed to celebrate the local terroir - the western slopes of the Montagne de Reims. Today the Co-operative works 115 hectares of vineyards covering 40 different crus, of which 5 are classified as Premier Cru. The Co-op members remain passionate about their shared values of respect for nature, protecting their heritage and working together.

Tasting Notes
Bursting with red and blackcurrant fruits, this is a really soft and pure Cabernet with gentle tannins and a hint of green pepper on the finish. Cool herby flavours mingle with red fruits and a nice touch of acidity.
Production
Sourced from selected areas of the Central Valley. Relatively cool short fermentation to preserve fruit aroma with maceration on the skins for only a few days to extract a nice colour but minimal tannins. Early bottling to keep the wine's youthful style.

Tasting Notes
Nose
The nose is alluringly bright with aromas of fresh cranberry and raspberry.
Palate
The palate reflects these with vibrant, crunchy red berry fruit, tangy acidity and warm, gently spicy notes. An immediately appealing and quaffable style with a serious streak of quality thanks to the low yielding bush vine fruit.

Production
28 year old, dry grown bush vine Cinsault from organically farmed blocks, brought to Wildeberg where roughly 30% of the fruit is carbonically macerated due to some whole bunch material in the press. The juice is then allowed to ferment naturally in older French oak. A naturally produced wine with no fining or filtration and low sulphur levels.

2021 Vallet Frères Bourgogne Blanc

Tasting Notes
This beautifully balanced and classic white Burgundy has a savoury, salty, baked peach and biscuity nose with a rich and broad palate that is balanced with moreish, acidity. The oak is well-integrated on both the nose and palate giving texture followed by a long, intense finish.
Method of Production
Chardonnay grapes sourced from Gevrey Chambertin and Auxey Duresses. Regular plowing and minimal fertilisers as well as minimal pruning to promote vigour and reduce yield. The grapes are hand picked and transported to the winery in small containers. Fermentation in foudre followed by transfer to 1 year old French barriques (Berthoumieu) for 12 months. During this time the barrels are rolled to stir up the lees - this happens 4 times a year after which the wine is left on its lees for a further 3 months. The wine is fined with bentonite prior to bottling but not filtered.
Producer
Founded in 1864 by Pierre Bourée, Vallet Frères is now in the hands of the fourth generation of the family, Bernard and Jean-Christophe Vallet. The family owns vineyards in Gevrey-Chambertin, in the Beaune Premier Cru of Les Epenottes, and in the Grand Cru of Charmes-Chambertin, as well as the entire monopole vineyard of Clos de la Justice, also in Gevrey-Chambertin. Vallet Frères is also a négociant, and sources the best grapes from growers in other areas, with whom it has worked closely for decades.
The wines it produces are complex, fine and authentic examples of Burgundian Pinot Noir and Chardonnay. The Vallet family’s wines have been imported to the UK by Boutinot for over 30 years and today they’re distributed to top independent wine merchants and Michelin-starred restaurants across the country.
A Note on Sustainability
Vallet Frères is keen to work in an as environmentally friendly method as possible, using techniques such as regular maintenance of the soil by ploughing, applying the minimum of phytosanitary treatments and the controlling of vine vigour and yields through careful pruning. The Vallets tend their vines very traditionally and advancements in the vineyards have been limited: for example, only manure has been used as fertiliser for the last half a century which has encouraged wild asparagus to grow amongst the vines. Harvesting is manual, as the family is opposed to the use of mechanical techniques.
