Tasting Notes
This wine displays good aromatic intensity, with aromas of green apple and fennel combined with notes of white flowers and citrus. The palate is very nice, fresh, tasty, with a good carbonic sensation and good persistence, giving a very long finish.

Production Method
The winemaking process consists of a soft press (bladder press), to extract the must. Then it is continuously stirred for 24 hours or longer, and fermentation by grape varieties is carried out. Once fermented, the blend is made. The wine is pressed, clarified and refrigerated, and the second fermentation in the bottle is carried out for about 12 months. Afterwards, it is disgorged, and the expedition liquor is added depending on the type of cava.
