2021 Ventisquero 'Grey Glacier' Chardonnay

After seriously considering alternate careers as a tennis pro and classical guitarist, he elected to enter the wine business, describing it as “one of my big passions because it’s more than work – it’s a lifestyle.”
Tasting Notes
Complex and elegant, blend aromas of ripe tropical fruits such as pineapple, mango and papaya with soft mineral and citrus notes. The barrel brings soft notes of vanilla and nuts. Of good structure, it maintains the freshness from a crisp acidity giving a wide end of good persistence. In the aftertaste, you will feel the nuts and vanilla again.

Vinification
Initially, a cold maceration was carried out for a period between 12 to 14 hours. Throughout the process the wort was protected from contact with air. The fermentation was carried out slowly, maintaining a Constant control at low temperature between 13 and 16°C, which allowed to obtain a large number of aromas typical of the variety.
80% of the wine was fermented in French barrels with 10% new cask. The remaining 20% of the wine was fermented in stainless steel barrels to maintain a fruity component in the blend. Once the fermentation was finished, it was allowed to stand for 12 months on its lees, making smooth movements (bâtonnage) to maximize the contact and supply of fine lees to the wine and in this way increase the aromatic complexity.
Tosso’s winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval (ex-Penfolds Winemaker) in the production of icon wines Pangea and Vertice, a partnership that continues to this day.

Production
Montsablé Réserve represents the pinnacle of site selection within the Haute Vallée de l’Aude, the coolest of all the Mediterranean regions of France due to altitude and influence of the cool Atlantic wind, the Vent Cers. Altitude, climate and limestone rich soils combine to produce outstanding fruit, with which we create wines of elegance and freshness. The specific Haute Vallée sites are perfect for Chardonnay due to slower ripening and better levels of acidity. The vines are 20-30 years old and grow on Argilo Calcaires soils.
The wine is left on its lees to add complexity of flavour, texture and weight whilst retaining refreshing ripe fruit character. Critically, 30% of the wine is aged in French wood for 6 months adding further creamy complexity.

Tasting Notes
Grown in pure limestone soil with extremely high mineral content, results in a lively wine layered with fine, saline-like structure.
A crisp Chardonnay with elderflower and lime blossom aromas, almond biscotti and light oak flavours on the palate. Natural salts found in the soils present a delicate sensation of minerality in Baleia’s food-driven wines and prepares the palate beautifully.

Winemaking Notes
The 2021 vintage saw a late harvest with great quality fruit. All grapes were taken directly to press as whole clusters, gently pressed into tanks, cold-settled, racked as clean juice, and fermented over a two-month period at very cool temperatures. Once primary fermentation was completed, select lots ofthe wine went through a complete secondary fermentation to add a rich, buttery component.

Nose
A nose of toasted hazelnuts, cold butter and a slight struck-match lift over classic varietal stone-fruit notes.
Palate
The palate is a delicious combo of hazelnuts, basil leaves, creme-fraiche acidity and the Mendoza-clone's signature clementine tang with a taut, structured finish.
Producer
Soumah of the Yarra Valley is a producer of fine wines from the region. A hidden gem located down a country lane, in the dress circle of the cool Warramate foothills of Gruyere. Soumah set out to make wine with the charm of northern Italy but the provenance of the Yarra Valley. Situated an average of 120 meters above sea level, the vineyard is elevated above the valley floor. The ancient sandy-clay loams with broken sandstone shape the small yield and define the detail in these precise, focused expressions of Chardonnay and Pinot Noir.
Production Method
Chardonnay was early as we can to ensure a fresh line of citrus fruit and crisp natural acidity on the palate. Structure is developed in the wine by predominantly barrel fermenting the juice and allowing it to mature gracefully for eight months before bottling a wine with balanced weight and silky texture.

"This is good. It is cool climate-restrained chardonnay - but we are in Oz so it’s got a lot of ripe peach & apricot fruit for me - not as citric as the 'tasting note led me to believe. The strong oakiness masked it initially but through time the fruit exposes itself. Don’t get the hazelnuts in the tasting note but it is very toasty - I guess from the barrel ferment and maturation. Medium-bodied, medium to high acidity, good length, and altogether well made - but I’m guessing not as classy as the Mac Forbes Chardonnay (which is obviously at a different price point!) - but very good value indeed." Tasting Notes
Aromas of lemons and citrus fruit with a hint of stony minerality. Round smooth mouthfeel with apple and lemon flavours. The finish is lively with well balanced acidity. All in all a classy glass of Chardonnay.

Production
The Fuissé region in the south of Burgundy is 250-300 metres above sea level. The soil there is predominantly argilo-calcareous. At Fussiacus the average vine age is 25 years so that the plants are in balance and at their peak of production. The techniques are those of organic farming albeit not certified. The harvest here is by hand.
This Mâcon-Fuissé is made in the traditional Burgundy style, with entirely manual grape harvesting. The grapes are gently pressed using a pneumatic press. The must is then fermented in 100% thermo regulated stainless steel tanks using only natural yeast. The wine goes through malolactic fermentation prior to bottling.
