Tasting Notes 

This wine has a soft, salmon pink colour and is bursting with aromas of strawberries and rose petals. The palate is vibrant with a good balance between the bright acidity and flavours of Turkish delight, strawberries and red cherries. The finish is juicy and dry and the wine has a pleasant length.

A fresh, dry and vibrant Rosé made via direct pressing of Cabernet Sauvignon providing a wine with an alluring salmon colour and appealing drinkability.

Vintage Conditions

2022 was an excellent vintage for the Rosé on Dornier. The ripening season was cooler than the previous vintage. The result of this cooler season was that the grapes ripened at lower sugar levels and with a fresher natural acidity and more delicate flavours. 

Fermentation and Ageing

The Cabernet Sauvignon ripened in late February. The grapes were handpicked and pressed directly after destemming in order to obtain light pink juice. The resultant light pink juice fermented for 14 days at 12 degrees Celsius and spent a further four months on full lees to provide fullness and body to the wine. 

History

Dornier is a family owned winery situated in The Golden Triangle area of the upper Blaauwklippen Valley Stellenbosch. The primary focus at Dornier lies in the production of premium quality wines with minimal intervention which are expressive of the unique terroir of The Golden Triangle whilst showcasing the complexity and finesse of the noble grape varieties planted at Dornier. Reverence for tradition is salient at Dornier as is difference where it leads to improvement.

Dornier Wine Estate is located on 3 different farms in the Upper Blaauwklippen Valley namely Groenkloof, Heldemeer and Stellenrust (Homestead) the latter of which includes a historic Sir Herbert Baker designed homestead and one of the first wine cellars ever built in Stellenbosch in the late 1600s.

Made in the oxidative style, citrus compote with touch of botrytis and fine oak nuances. 

Palate

Complex wine with a serious mid palate and length. 

Vintage

A better crop compared to 2019, owing to favourable post-harvest conditions and moderate temperatures during ripening.

Vinification

Grapes were picked at 20°C, gentle crushed and was cold macerated on the skins for 8 hours before pressing. The juice was left to settle for two days and racked to barrel. Using only wild yeast, fermentation occurred over an 8-day period. The wine spent 36 months in a 3rd fill 500L French oak barrel.

Tasting Notes 

Megan van der Merwe, the brilliant young winemaker at Beau Constantia, set out to make the Stella with ‘the absolute intention to preserve the site that grew the fruit’. The Syrah and Viognier for this wine grow side by side on one of the farm’s lower lying slopes – both varietals are picked together, when the Syrah is ripe, meaning that the Viognier hangs on the vine until it is a little raisined, adding a rich honey-like component to the wine. 18 months in French oak (only 28% new) adds complexity to the wine.

Floral notes of violet, spicy black pepper, dried herbs and fresh red fruit – cherry and pomegranate – are held together by savoury fine tannin. Epic! 

Winery

Some two decades ago, raging wildfires swept through an area of forest high up on Constantia Nek, leaving the slopes scorched and bare. When the fire had subsided, what was left was a brilliant and unique spot for planting a vineyard; 350 metres above sea level, with cooling ocean breezes and steep sun-bathed hills and so, like a phoenix, Beau Constantia rose from the ashes.

Sensing opportunity, Pierre and Cecily Du Preez acquired the 22-hectare property in 2002. With thorough soil analysis guiding their efforts, the inaugural vineyards were planted in 2003 under the careful guidance of farm manager, Japie Bronn.

The journey to establish vineyards on these challenging slopes demanded patience and unwavering commitment. Today, Beau Constantia proudly boasts 11.47 hectares under vine, a testament to the perseverance and dedication of all involved. Within these vineyards thrive a diverse range of varietals, including Viognier, Sauvignon Blanc, Semillon, Cabernet Franc, Merlot, Cabernet Sauvignon, Malbec, Shiraz, and Petit Verdot, each meticulously nurtured to capture the unique essence of this extraordinary landscape.

This boutique wine farm with just over 11 hectares under vine has utterly spectacular views over the peninsula. Megan van der Merwe is the Head Winemaker, having taken over from Justin Van Wyk in 2021, after serving as Assistant Winemaker during his successful tenure. Megan believes in 'farming to perfection - just don't stuff it up in the cellar!'. This very talented winemaker is certainly one to watch.

Each of their releases is a tribute to a member of the family.

Since that first vineyard flourished, Gaspare’s children, grandchildren and great-grandchildren have honored his legacy through dedication to his steadfast values of family, hard work and integrity.

Tasting Notes

Our 2013 Transcendent Cabernet Sauvignon is a wine of true depth and sophistication. It exhibits pronounced aromas of tobacco, black currant and violet. Flavors of mocha, cassis and allspice intermingle perfectly on the palate. The 2013 Transcendent is a full-bodied wine with the perfect oak to fruit balance, elegant tannins and a long rich finish.

Cabernet Sauvignon from the higher altitude mountain AVAs brings an incredible complexity and elegance to the palate. Atlas Peak has rocky, volcanic soil which allows the grapevines to focus on producing concentrated and flavorful grapes. The grapes sourced from Diamond Mountain’s volcanic soil results in fruit with great structure, texture and black fruit flavors. Howell Mountain has soils that are lean which naturally limits the vigor of the grapevines, concentrating the flavors and contributing to the intensity of the grapes. Mt. Veeder Cabernet adds an ethereal violet note to the blend that lifts and elevates the rich and ripe aromas.

Producer

More than a century ago, Gaspare and Caterina Indelicato immigrated from Sicily to the United States. With little to draw on but a long family history of grapegrowing and an entreprenuer’s gift for seizing opportunity, Gaspare entered the wine trade by planting a single vineyard in Manteca, California, where the climate reminded the couple of their homeland.

Occupying a privileged position at the southern foot of the trail, the winery grounds eventually became the site of the Silverado Western Center, a major equestrian center that opened in September 1963.

The original riding area now houses prized wines, instead of prize-winning horses. However Black Stallion Estate Winery carries its heritage forward. The estate’s legacy honors the world-class terroir of Napa Valley, the pioneering spirit of the Silverado Trail, and the Indelicato family’s warm hospitality and generations of wine expertise.

Winemaking Philosophy

To make great wine, a winemaker must have a deep familiarity with each lot of freshly pressed juice. At Black Stallion, the search for greatness means boots in the vineyard, checking on vine growth and grape development all year long. It means tasting grapes rather than looking at lab reports to determine the perfect moment to pick. It means harvesting and sorting fruit by hand. Black Stallion Winery’s small scale means that each lot of grapes that arrives at harvest is treated individually, and receives a unique upbringing to bring out its full potential for excellence.

Once crushed at the winery, micro-lots may be fermented in small tanks made of wood, concrete or steel. These choices of aging vessel give winemaker Ralf Holdenried exceptional flexibility to match a batch of grapes with the material best suited to bring out its greatness—key in a region as diverse as Napa Valley.
 
After fermentation, wine is drained using gravity (not pumps) and aged in the finest oak barrels. The gentle handling of the wine prevents the extraction of harsh components that could impart bitterness.

There’s no set recipe for a Black Stallion blend, just the finely honed palates of winemaker Ralf Holdenried and his team. It’s not uncommon for Holdenried to try dozens of trial blends before deciding on a final cuvée. The goal is always the same: To create a seamless, harmonious wine that captures the varietal’s best expression of that vintage in Napa Valley.

Tasting Notes

Bright, zesty and wonderfully refreshing. This Chilean Sauvignon Blanc bursts with lime, grapefruit and crisp green apple, lifted by subtle herbal notes and a clean mineral edge. The palate is light, vibrant and mouth‑watering, with a streak of citrus acidity that keeps everything lively and super drinkable. Finishes fresh, pure and perfect for summer sipping.

Vinification

The must was protected from contact with the air throughout the process which began 
with a cold maceration for 6 to 12 hours to increase the aromatic potential. Next came a 
slow fermentation at a constant temperature of between 13°C and 15°C, which enabled 
the fruit aromas typical of the variety to be drawn out.

Ventisquero has the only wines in the world from the Atacama desert, making wines 
further north than any other winery in Chile. Ventisquero makes wines in all other 
cardinal points, the west, east and south making them a winery of diversity and

When the first Western explorers arrived in New Zealand, they described the land as rising from thick banks of cloud. These clouds shape the country’s climate, inspire its Maori name, and play a crucial role in ripening the flavours of its signature grape varieties: Sauvignon Blanc and Pinot Noir.

Tasting Notes 

This coastal fruit captures a breezy finesse over the classic cranberry and red current aromas giving us a wine with enough bite and texture to be foody but with enough generosity of fruit to be a delicious glass on its own. A touch of oak in the winemaking lends a little soothing creaminess.

Production

From maritime vineyards in Marlborough’s south easterly extremes in the Blind River Valley. Our Pinot Noir came from 2 vineyards - 87% Rapaura Gravels and 13% Omaka Valley clay soils which included a number of clones, 667,777,115, Abel and Clone 5. Both vineyards were pruned to 2 cane VSP and yields were naturally around the 7T/Ha mark. After green thinning on the vine the fruit was harvested over a period of 10 days from late March through to early April . Each parcel was kept separate and fermented in small open top tanks and hand plunged up to 4 times daily. Post pressing, wine was sent to a mixture of stainless steel and French oak for malolactic fermentation and ageing.

Boutinot's New Zealand wines are sourced from vineyards in each sub-regions of Marlborough - the Awatere, Waihopai and Wairau Valleys, as well as the breezier region of Waipara. These valleys have their own micro-climates and terroir which give a unique personality to the vineyards, grapes and finished wines.

Sustainability

Wines made by Boutinot New Zealand are certified sustainable under the "Sustainable Winegrowing New Zealand" programme (SWNZ), an industry-wide certification programme led by New Zealand Winegrowers. This means that these wines are made from grapes grown in 100% SWNZ-certified vineyards and produced in 100% SWNZ-certified winemaking facilities. To be SWNZ certified, all members must complete annual submissions and undergo regular on-site audits conducted by an independent verification company. Annual submissions are made through an online questionnaire covering off impacts across the industry's six focus areas, which are Soil, Water, Plant Protection, Waste, People and more recently Climate Change. Vineyard members must also submit a full spray diary annually, which documents all agrichemical applications made to the vineyard that season. Spray diaries are processed for compliance to ensure that only approved products have been used and specific rules of use have been adhered to. New Zealand is at the forefront of Sustainability in wine with a roadmap to Net Zero by 2050 in place.

Tasting Notes

It offers a vibrant, youthful aroma of plum, cherry, and cassis with a touch of spice. The palate is smooth and well-balanced, with silky tannins that beautifully blend the fruit and oak.

Vinification

The selected clusters were transported to the winery, where they underwent a 
low-temperature pre-fermentative maceration o bring out the maximum colour and 
aromas. Then the must was fermented in stainless steel tanks at a controlled 
temperature of between 24°C and 26°C.

Production

Joel Mattschoss' Eden Valley vineyard provides the majority of the fruit. This spectacular vineyard is planted on some of the most difficult, meagre soils of any we have seen. Littered with boulders composed of ironstone and pink quartz, it is a truly challenging site. Vineyards are trellised, cordon trained and spur pruned.  This wine is all about great fruit, picked at the right time. Frequent vineyard walks determines exactly the right time, the fruit full of energy. Wild fermented, using some whole bunch inclusion play their role in ensuring that this wine is full of bright, fleshy fruit with great texture and spice. Aged in French oak for 6 to 8 months prior to bottling.

Thistledown was founded by Master of Wine, Giles Cooke who had a vision for a more elegant, textural interpretation of Australian wine.

Initial explorations resulted in access to many of the best vineyards, many of which were the previously unloved Old Vine Grenache. Incredible, historic fruit sources coupled with Giles’ increasingly adept efforts has quickly resulted in a reputation for being amongst the best in the country. Bin 707 is Penfolds Cabernet Sauvignon Grange equivalent: ripe, intensely-flavoured fruit; completing fermentation and matured in new American oak; and expressing the Penfolds' policy of multi-vineyard, multi-region fruit-sourcing.

Named by an exQantas marketing man, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when the focus shifted to Bin 389) nor in 1981, 1995 or 2000 (when fruit of the required style and quality was not available). Full bodied and with good cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest Cabernets. Packaged in laser-etched bottles from the 1997 vintage.

Tasting Notes

Colour 

Deep red with a dense core.

Nose

An immediate, intense lift of pure ripe blackcurrant fruit, laced with mint and the faintest suggestion of violet. Cigar box and fresh tobacco oak notes showcase the sheer fruit quality. Although youthful, the nose already shows true 707 character.

Palate

Powerful and complete. Saturated fruits have soaked up the new oak culminating in a rich, sweet mid-palate and long stylish finish. The depth of fruit and defined structure, coupled with obvious muscular tannins, suggest that this wine is built for the long haul.

Vintage Conditions

Good winter rains gave South Australian regions a solid start to the growing season. Fruit set was excellent and careful vineyard management to reduce crop loads ensured the vines were in good shape to continue ripening throughout the season. Summer rains brought relief and the ensuing fine conditions towards vintage resulted in fruit reaching full ripeness and was picked in optimal condition.

Tasting Notes

Colour 

Dense, deep-red, with a dark purple / black core.

Nose

Brooding, with a selective & slow aromatic release - firstly wafts of black olive (tapenade), then the faintest suggestion of sardine/anchovy - or maybe soy / Worcestershire - or could it be...? More confidently, familial barrel-ferment, cedary oak, and formic notes share the stage with blackcurrant & blackberry fruits. Inviting, tempting.

Palate

Cassis/blackcurrant varietal fruits and savoury oak stake an immediate (style) claim. Sarsaparilla and choco-mint flavours mould together to create the next layer, followed by a more savoury (Chinese mushroom/oyster sauce mix) immersion structurally impregnating any layering. Gripping tannins complete the offer.
