"It’s good, in fact, it’s very good and very moreish. On entry, it’s more like a Loire Sauv Blanc than a Marlborough SB - good acidity and with a flinty/mineral streak running through it - so I presume early picking cool climate terroir with maritime influence? The only thing that gives it away as Southern Hemisphere is a sweet, almost sherbet edge to the finish. Very well-balanced, elegant, classy, and moreish. It’s certainly got complexity and a few layers to delve into." January 2023.

The Vineyards

Winemaking
The grapes for this wine were hand-picked, hand-sorted and whole-bunch pressed. Fermented in large French oak barrels and an ‘egg’ using wild yeast only. The wine also went through malolactic conversion.

"Just amazing! One of these multi-layered wines that just keeps on giving. There’s a layer of fresh citric fruit alongside a different layer of riper fruit salad fruit - then a layer of deeper flavours probably due to some lees stirring or maybe a dollop of Semillon in the blend? Then comes a layer of creamy toast probably due to some oak maturation - and also a seamless layer of acidity running through it. Flavoursome, complex and well balanced. Drinks very well on its own - fresh enough for shellfish and seafood and creamy enough for a saucy chicken pasta dish - a real delight which shows winemaker Jeremy Borg as a genius in my palate." Nose
This complex and indulgent MCC shows rich secondary aromas with orange blossom and lemon zest on the nose.
Palate
On the palate there are hints of lime, accompanied by aromas of toasted bread and macadamias. The mousse is fine, elegant and ensures a rich, creamy and textured palate with an explosive acidity and lasting, elegant finish.
In the Cellar
The grapes were whole bunch pressed and only free run juice was used for the final blend. A Selected yeast was used for primary fermentation. A 20% portion of the Chardonnay was allowed to undergo malolactic fermentation. The wine was blended, bottled and underwent a secondary fermentation in the bottle. This was followed by bottle maturation of approximately 36 months. Only then it was disgorged, corked and labelled.

Nose
Aromas of ripe white peach and blackcurrant leaf, with hints of super-ripe fruit and lime notes.
Palate
The palate has lots of refreshing citrus zest, nettle and grassy characters, lovely minerality and a slightly creamy, honeyed finish. Refreshing acidity and good balance.
Production
The grapes are sourced from seven different parcels of vines in the commune of Morogues, all planted in Kimmeridgian limestone-clay marl soil which imparts elegant mineral tones. The vineyards face south-west, south or south-east and gain the maximum benefit of the morning sun to fully ripen the grapes. The individual parcels of grapes are vinified separately to allow the fullest expression of their unique terroirs and each parcel adds a different dimension to the whole. The wines are left on their fine lees until bottling to enhance complex flavours and regularly stirred to gain richness.

Straddling the Loire appellations of Sancerre and Menetou-Salon, Domaine Pellé produces world-renowned, terroir-expressive wines from its family-owned vineyards. A Note on Sustainability
Domaine Henry Pellé began its sustainable approach to viticulture in 2007, by using no weed killers, chemical insecticides nor anti-rot products. The 10-hectare domaine is cultivated using methods that maintain natural balance and that work the soil in the traditional way, for example weeding, clearing and grape thinning by hand. This year, the company is taking a further leap towards sustainability, aiming to become carbon neutral and seeking to develop geothermal and solar panel projects. As of 2020, the domaine will be certified as organic by ECOCERT.

The soft formed hills around Langenlois are an entrance to the Waldviertel. Loess is a sandy soil – brought to the region by winds ten thousand years ago from the Alpine regions. This limy soil gives the Grüner Veltliner its classical structure of elegance and its unique character.

SCHLOSS GOBELSBURG, a Cistercian monastic estate, is one of the oldest wineries in the Austrian Danube area with a documented history that dates back to 1171. All the vineyards are located on slopes and terraces around the valley of the river Kamp near the town of Langenlois and the village of Gobelsburg. Schloss Gobelsburg specialises in Grüner Veltliner and Riesling and produces authentic and noble wines from different single vineyards, villages, and regional appellations. The winery is a member of the association 'Österreichische Traditionsweingüter', which is working on a vineyard classification project for the Danube area.

2022 Tohu Awatere Valley Pinot Gris

Viticulture
The grapes from this wine are sourced from two vineyards located in the cool southern Awatere Valley region of Marlborough. The majority of the grapes come from a vineyard near the coastal planes of the Awatere, with a smaller portion of the grapes sourced from a vineyard located further inland on young fertile river terraces.
The 2018/2019 growing season in the Awatere began with some unsettled weather over the flowering period which resulted in lower yields throughout the vineyards. However, the warm and dry summer that followed provided a dream run for both the vineyard and winemaking teams. With no disease pressure in the vineyard and ideal weather over the harvest period, grapes were able to be picked at optimal ripeness, resulting in a wine with outstanding aromatics, palate weight and texture
Vinification
Grapes sourced from a number of prime sites in the Awatere Valley are gently pressed once at the winery to obtain beautifully clear free-run juice, with the harder pressings keep separate and allowed to oxidise and soften phenolics before being re-combined with the free-run. The juice is then settled and racked into stainless steel tanks for warming and inoculation with carefully selected yeasts.
Fermentation is carried out at cool temperatures of around 10-13°C to help preserve the fruity characters and lasts around 21 days until the balance of residual sugar and acidity/phenolics has reached the ideal point. Post-ferment the wine is held in tank and matured for a short period of time before being stabilised ready for bottling. With no additional finings judged necessary, this wine was ready for bottling in early July 2019.

Production
The grapes are biodynamically produced, and come mainly from the Wolfsgraben vineyard, with its south-exposed terraces and cool micro-climate. Wolfsgraben means 'canyon of the wolves'. The grapes were harvested in late September. The grapes are de-stemmed, crushed and pressed after 3 to 4 hours of skin contact - and fermented in stainless steel.
Producer
The Sepp Moser Estate was founded by the famous Austrian wine producing pioneer, Lenz Moser. Lenz Moser's son, Sepp Moser, began operating under his own name in 1987 and handed over the direction of this family-owned estate to his own son Nikolaus in the year 2000.
The Sepp Moser Estate comprises of 50 acres of vineyards in two prominent wine regions; Kremstal (22 ha) and Neusiedlersee (28 ha). In the Kremstal, Nikolaus produces an international range of varieties as well as the ever more important local varieties of Gruner Veltliner and Riesling. The reds are produced on the gravelly soils of the warm southern Neusiederslee village of Apetlon. All Sepp Moser wines have been organic (and all estate wines biodynamic) since 2007.
Sustainability
The Sepp Moser estate produces a wide range of wines every year thanks to its vineyards in two diverse regions. There is one main aim in the cellar: the quality of the grapes shall be brought with as little influence as possible to the bottle. The grapes in the Sepp Moser vineyards are harvested by hand and at the cellar of the Atrium House Nikolaus Moser emphasizes gentle vinification and tries to interfere as little as possible with the process so that each wine can develop its own individual style. The fermentation starts spontaneously, and the maturing of the wine takes place on its own.
In 2006, Nikolaus officially moved the estate to biodynamic viticulture – one of the first to do so in Austria – and became Demeter certified. 2009 saw the release of Sepp Moser’s first certified organic wines. Nikolaus is very keen to reduce the amount of copper and sulphur used in the vineyards, and this year saw a reduction of two thirds over what was sprayed previously. He composts all the estates' pomace and vine trimmings, and there is an ongoing effort to plant trees around the vineyards.

Weingut Weszeli, in Langenlois, a now-famous wine village located on the river Kamp where it wends its way down to the Danube at Krems. There is a crazy patchwork of Burgundy-like Cru vineyards which have helped put Austria on the map as a source of world-class whites. The story of this winery echoes that of many others. A former city-slicker, Davis Weszeli struck out in search of something new, with one clear goal: to feel closer to nature. He discovered his calling in the form of a traditional Kamptal winery in 2011, and from then on he has been on a mission to create authentic, unique wines whilst always prioritising sustainability in organic viticulture, and a principle coined by Davis himself: Terrafactum, the importance of the unique nature of the earth and terroir of Kamptal.
Davis makes charming and impressive Grüner Veltliner and Riesling, the two grapes he feels best suits the climate and soils of Kamptal.

Nose
Oatmeal, macadamia nuts and creamy stone fruit on the nose.
Palate
The palate echoes those flavours with its richness and breadth. Peach pip, nectarine and stone fruit are fresh and lively while the oak supports it in a well-defined cradle. Again oatmeal and nutty flavours are apparent but not overwhelming. The wine is powerful yet refined and structured. Nothing is superfluous and its perfectly proportioned with a long tail of flavour that ends with a delightfully pithy citrus twist.
The Riebeeksrivier farm is situated on the slopes of the Kasteelberg, overlooking the Swartland. Its unique terroir, especially the shale soils, expresses itself strongly in the wine with unique varietal characteristics. The bush vine Chenin Blanc vineyards, planted in 1988, yield fruit of great intensity and richness balanced by bright acidity and length.

About the Harvest
Fermentation occurred in both stainless steel tanks (65%) and French Oak barrels (17% new) and the wine spent 8 months on the lees before being blended and bottled.
In the Cellar
The grapes were picked at optimal ripeness and transported to the cellar in refrigerated trucks. Whole bunches were pressed and the juice settled overnight.
History
Anthonij Rupert Wyne was founded on the farm, L`Ormarins in Franschhoek. Originally owned by the late Anthonij Rupert, who passed away in 2001, the farm was eventually taken over by his brother Johann Rupert in 2003 and the brand named after him. It was Johann Rupert who constructed a state-of-the-art winemaking facility, catapulting the farm into a prestigious wine estate and the beginnings of what is now a sprawling enterprise.
The focus is on terroir specific wines and therefore it would seem obvious that the brand is made up of an impressive portfolio of farms representing the best in grape producing locations. The portfolio is made up of L`Ormarins situated in Franschhoek, Rooderust in Darling, Riebeeksrivier in the Swartland and Altima in isolated Elandskloof. Individually each site offers optimum varietal specific growing conditions, allowing Anthonij Rupert Wyne to adhere to the requirements of their different brands.

Constantia Glen's Sauvignon is a complex, elegant, cool-climate style with great fruit weight, minerality and vibrant acidity. The 2020 vintage was yet another excellent one at Constantia Glen that saw cool temperatures and a long ripening season, which produced a classic Constantia wine, exemplifying elegance, texture and freshness.
History of the Cellar
Ideally located below Constantia Nek, just moments from the bustling Cape Town city centre, Constantia Glen is a picturesque wine estate producing ultra-premium, cool climate white and red wines. The 60-hectare property, situated 103-2790 meters above sea level, has a mere 29 hectares under vine with product of wines limited to 120, 000 bottles per annum. Although winemaking began in 1685, recent history begins with the Waibel family, who purchased the land in 1960. Although this land is difficult to farm - as evident by rapid change of ownership from 1813-1960 - the dedication, patience and passion of the Waibel family has proven reward.
Having used the land predominantly as a stud farm, it was in 2000 that the Waibel family planted their first grapes and they now produce four wines. Perhaps most unique about Constantia Glen is its location. Although this region is predominantly known for its white wines, Constantia Glen is situated between the mountains, providing red grapes with the conditions needed to mature. Dryland cultivation under these cool climatic conditions results in slow ripening, low yields with exceptional grape quality and flavour concentration, thereby producing elegant Bordeaux blends. Colour
Lovely pale yellow colour with green tints.
Nose
Citrus pith and florals on the nose with a clear Sauvignon Blanc lift.
Palate
Initial flavours of citrus and melon, light cool palate at 11.5% alcohol. Grapefruit, finger lime and a zesty acidity adds to the structure.
Vinification
Fruit outside the Hunter Valley is processed to the primary juice stage before transport to the winery in the Hunter Valley for fermentation and blending. This ensures the delicate grape and fruit aromas are preserved. A small percentage (approximately 5%) of this wine was fermented in barrel.
Winemaker Comments
We’re quite proud to introduce this wine as it is the 26th vintage of the blend. The label didn’t get the full Cricket Pitch livery until the 1995 vintage, although the Cabernet Sauvignon/Merlot was labelled as Cricket Pitch for the 1991 wine released in 1993. This wine is a blend of 60% Sauvignon Blanc and 40% Semillon, one of the highest proportions of Sauvignon Blanc we’ve bottled. Four regions make up the blend being Cowra 85%, Hunter Valley 5%, Orange 3% and McLaren Vale 7%. This wine also highlights our desire for lower alcohol and weighs in at 12.0% and with plenty of zesty fruit lift.
About Brokenwood Wines
Founded in 1970 as a hobby venture by three Sydney-based solicitors - Tony Albert, John Beeston and Australian wine critic James Halliday - Brokenwood is perhaps best known for their Cricket Pitch label, which was first sourced from a 4-hectare block at the foothills of the Hunter Valley’s Brokenback Ranges. The block was originally earmarked as the local cricket ground before they decided to plant a vineyard instead.
Similarly, Brokenwood purchased their neighbouring block, which was intended to be the local cemetery, and instead planted Shiraz and Cabernet Sauvignon, becoming their critically acclaimed flagship wine, the Graveyard Vineyard Shiraz. Chief Winemaker and Managing Director Iain Riggs joined Brokenwood in 1982 and introduced new winery equipment and facilities specifically for premium white wine production.
Since 1983, white wine makes up a significant part of total production and their Semillon is widely recognized as one of the finest in the world. Iain has also been the driving force behind Brokenwood’s expansion into the McLaren Vale in South Australia, Beechworth in Victoria, Margaret River in Western Australia, and Orange in New South Wales. Despite their expansion, they have managed to remain fiercely committed to producing unique and high-quality expressions of Australian terroir.

Tasting Notes
Aromas of white peach and melon, along with the more traditional nuances of citrus and tropical. There is also an intriguing 'funk' and lanolin note that brings all the aromas together and provides a wonderful transition through to the palate.
A fantastic lean yet supple long mid-palate with chewy white blossom and a richness of character, almost salty. The wine is understated and has length and a mouth-watering succulence with wonderful persistence to it.
Producer
When it comes to professional wine people, Ben Glover is about as top-of the-tree as it gets. Ben’s role call includes almost too many accolades: previously a Wine Marlborough committee member, chair of the Bragato Wine Show (New Zealand’s only single vineyard wine show) and was chair of Pinot Noir 2017 New Zealand, the world’s largest and most prestigious Pinot Noir event. He was an inaugural Len Evans scholar in 2001 and has over 25 years of experience as a national and international wine judge. This is all to say that, when you open a bottle of Bob/short for Kate, you are in safe hands.
Nicknamed ‘Bob’ by her family (some of you may recognize the Blackadder reference), Bob /short for Kate is a tribute to Kate Glover, an amazing young drama teacher and Ben’s sister, who heartbreakingly passed away in 2018. Ben explains that he has looked to produce a wine that characterises the honesty, purity and confidence of Kate. These are organic, Marlborough wines, small-batch Pinot Noir and Sauvignon Blanc, reliant on selected block from the family’s vines and exceptional fruit selection. Not to mention the skill of one of the region’s most well-regarded winemakers.
Vinification Notes
Both vineyards were kept separate during the winemaking fermentation process with the Kennedys Rd parcel treated traditionally with 100% machine harvested, stainless steel fermentation with cool temperatures to retain supple pure Sauvignon Blanc characters. Once fermentation finished we left the wine on light lees to gain some mouthfeel while holding onto the brights of this variety. The Brink parcel, though, was handpicked and split into a further two parcels, and was a co-fermentation with Semillon and Sauvignon Blanc with 10% spending fermentation in old French barriques. This enhanced the mouthfeel and drew in the Semillon to provide interest and intrigue to the resulting final blend.

History
The first settlers to cultivate the virgin land of the estate now known as Hartenberg were friends Cunraad Boin and Christoffel Esterhuizzen who were granted permission to work 60 morgen (20 ha) of the land in 1692. In 1704, Christoffel Esterhuizzen was granted the title deed to "Het Hartenberg" by Governer (Willem Adriaan van der Stel) and by 1718, he had 10 000 vines on his property.
The well-known elephant hunter, Paulus Keyser, bought Hartenberg in 1721 and continued the practice of vineyard cultivation and winemaking on the farm until he sold it to Jacob van Bochen in 1725. Van Bochen, a former accountant of the Dutch East India Company butchery and holder of the liquor retail monopoly, also bought Weltevrede adjoining Hartenberg.
For about one hundred years after van Bochen, the farm passed through the hands of various owners. Some with colourful names like Arrie Lekkerwyn (delicious wine), and Aaron van Ceylon (a freed slave) and in 1838 it became the property of the brothers Jacobus and Johannes Bosman.
An important period in the farm's development was ushered in by the Hampf family when they bought Hartenberg in 1928. Mrs Hampf extended the vineyards and planted the many beautiful trees still to be seen around the farm and cellar, while her husband became the first officially recorded winemaker on the estate.
In 1948, Hartenberg was bought by the late Dr Maurice Finlayson (a well-known Cape Town pathologist) and his wife, Eleanor. Discovering the true potential of the estate, they soon began marketing their wines under the label "Montagne". Besides good wine, the Finlaysons also produced two sons, Peter and Walter, who were to become renowned South African winemakers. Uncompromising and sophisticated, Eleanor Finlayson's presence is still felt on Hartenberg today.
Gilbeys were the next owners of the estate, purchasing it from the Finlaysons in 1977. They eventually released the present Hartenberg range as their flagship brand in 1985. On 1 January 1987, Ken Mackenzie, purchased Hartenberg, having seen the potential that the perennial under-achiever offered.
His daughters continue a program of investment in the farm, focusing on three key areas: the replanting to specific sites of premium varietals, the development of production facilities, and upliftment, through knowledge and skills for employees.
The Mackenzie vision, though extremely ambitious, remains simple: to do whatever it takes to produce wines of outstanding quality.

"The first surprise here was that this had a natural cork when I was expecting a screwcap (obviously a quality statement). The second surprise was that the aromas didn’t show the normal oil/ kerosene notes you sometimes get with Riesling - much more orange zest than anything offensive.
Although the Riesling characters show up more on the palate. Extremely well made, perfect poise and balance and shows quality all through from the front to the back palate. Super enjoyable on its own but will stand up to food as well. Now one of my favourite’ GO TO’ drinking whites - at an easily affordable price so great value." Tasted Jan 2022

Vineyard
The estate is located in the rich and flourishing countryside in the north of Treviso, and the vineyards are situated on the plains and hillsides near Piave river. The Terroir is pebbly with permeable soil which allows for good drainage.
Vinification
The wine is vinified off the skins and fermentation is completed in stainless steel tanks at controlled temperatures.
History
If you love authentic and organic Italian wines, you have to taste the ones from the brand of La Cantina Pizzolato. Ever since 1991, all the wines crafted here have been certified as 100% organic. Settimo Pizzolato, who currently owns the winery, is not only an expert winemaker but also an enthusiast of organic farming.
Today, at the Pizzolato winery, no sulphates or preservatives are used in the winemaking process, to ensure that the wines are as natural and organic as possible. The winemaking team here is fully aware of the importance of protecting the natural system; therefore, it doesn’t use any pesticides or artificial methods for crafting the wines.
The new winery, set up as part of the Sustainable Winery Project, in Treviso, makes use of green energy and innovative techniques such as organic purifiers and automatic lighting to reduce wastage as much as possible and protect the environment of the winery. Photovoltaic solar panels, organic water purifier, use of Cansiglio beech, water recycling, use of reusable materials and sustainable architecture are some of the methods employed by the Pizzolato family to create world-class organic wines. These efforts haven’t gone unrecognized in the wine world, because the Pizzolato organic winery has been the recipient of many awards in the recent past.
Today, there are only a handful of wine brands that do complete justice to the project of sustainable wine production and La Cantina Pizzolato is one of them. The best part about this brand is that it continues to upgrade its winery and winemaking techniques to make the process more organic than ever. Fresh and great volume, this is a wine structured in the palate and high in acidity that gives tension with a minerality in the mouth, granting a clean and persistent final where is left to feel slight saline touches, making this, a wine with high complexity in the mouth.

Vinification
The must first underwent a cold maceration for a period of between 6 and 8 hours. The must was protected from contact with the air throughout the process, the fermentation took place slowly at a constant low temperature of 120C to 150C so that the yeast activity could draw out the maximum varietal aromas and the expression of the northern Chile desert. After fermentation, the wine was aged over its lees for ten months and battonage was used to gently move it so as to maximize the contribution made by the wine coming into contact with the fine sediment.
Winemaker
Tosso’s winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval (ex Penfolds) in the production of icon wines Pangea and Vertice, a partnership which continues to this day.

Tasting Notes
Complex and elegant, blend aromas of ripe tropical fruits such as pineapple, mango and papaya with soft mineral and citrus notes. The barrel brings soft notes of vanilla and nuts. Of good structure, it maintains the freshness from a crisp acidity giving a wide end of good persistence. In the aftertaste, you will feel the nuts and vanilla again.

Vinification
Initially, a cold maceration was carried out for a period between 12 to 14 hours. Throughout the process the wort was protected from contact with air. The fermentation was carried out slowly, maintaining a Constant control at low temperature between 13 and 16°C, which allowed to obtain a large number of aromas typical of the variety.
80% of the wine was fermented in French barrels with 10% new cask. The remaining 20% of the wine was fermented in stainless steel barrels to maintain a fruity component in the blend. Once the fermentation was finished, it was allowed to stand for 12 months on its lees, making smooth movements (bâtonnage) to maximize the contact and supply of fine lees to the wine and in this way increase the aromatic complexity.

It’s thought the Romans took Viognier to the Rhône 1700 years ago yet incredibly, as recently as the 1980’s, there were thought to be only 32 ha planted in the entire world. Now, Viognier, with its full-bodied richness and gentle acidity is an international superstar again. Fred Cline specializes in growing Rhône cultivars and giving them a modern twist whilst maintaining their original character... and this one is a beauty!
Nose
Wonderfully fragrant with notes of pithy stone fruits, bright jasmine and honeysuckle.
Palate
The palate follows through with a richness of fruit including ripe peach and apricot. The finish is given finesse by the refreshing acidity.

Producer
Cline Cellars is a family-owned vineyard and winery in Sonoma’s Carneros Valley. Established in 1982 by Fred Cline, a descendant of Italian US settlers, he originally founded the winery in Oakley, Contra Costa County, cultivating Rhône varieties and Zinfandel on vines dating back to 1906.
In the 1990s, the family moved their winemaking operation to a 350-acre ranch in Carneros Valley, adopting sustainable farming in 2000, and building the largest solar paneled winery in California. While others in California were focusing on Cabernet Sauvignon and Chardonnay, Fred Cline saw the potential of Rhône varieties and Zinfandel in his vineyards and continues to produce focussed terroir-driven wines.
A Note on Sustainability
Cline is proud to be a Certified California Sustainable Vineyard and Winery. The program acknowledges a long-term commitment to continual improvement in the field of sustainable winegrowing and business practices, from grape to glass. It is located in Sonoma County, which is committed to becoming the first 100% sustainable wine region in the US by 2019.
Fred Cline and Bob Cannard founded Green String Farm and the Green String method of sustainable farming in 2003. Green String Farm is a 57-hectare natural process, sustainable farm near Petaluma, California. The Green String method meets the highest standard of environmental sustainability practices, which is different from certified organic. The methods reduce soil erosion, pesticide dependency, and loss of biodiversity; and increase resistance to natural predators.
In 2005, Cline was one of the first wineries to fully adopt solar energy. In 2018 it upgraded the original array with the latest technology, designed to offset 100% of its winery’s electrical consumption.
Instead of herbicides, Cline has 1,500 sheep and 500 goats that roam its vineyards, tasked with removing invasive weeds and instead of harmful pesticides, Cline provides owl boxes and raptor perches in the vineyard. These birds of prey are the predators of gophers and mice and help to maintain ecological control.
Cline composts and re-uses all digestible organic waste and materials from its winery, including 3,000 tons of grape pomace per year, prunings from trees and vines, plus chipped materials from the landscape. This waste is turned into a biological stimulant and food for the soils. Cline also grinds its own volcanic rock and then spreads the crushed cinder onto the soil. Having a wide spectrum of mineralogy, these cinders provide the vineyards with a complex array of nutrients and trace minerals, ensuring that the vines have all the necessary components to build fullness of character in the wine.
Production Method
Viognier is a tricky grape to grow in that it buds out early and is susceptible to frost. Also, it's thick skins require patience to get the full flavour potential of the grape. The vines basked in the sun during the day and were cooled at night which contributes to this Viognier's full-body weight and nice acidity. This varietal comes from the Northern Rhône Valley in France. Presumed to have arrived from Dalmatia and transported to the Rhone 1,700 years ago by Romans. There are only 2,000 acres of this variety in California at this time. The grapes were handpicked and de-stemmed without being crushed then immediately pumped to the tank press where the juice was gently squeezed from the grapes. Juice was pumped to a stainless steel fermenting tank and the wine was chilled and settled overnight. The juice was then racked (decanted) off the grape solids and inoculated with a pure strain of wine yeast. Fermentation proceeded at a cool 50 degrees F to preserve the lovely fruit character and kept in temperature controlled stainless steel tanks.

2023 Domaine de la Motte Chablis

Tasting Notes
From a warmer vintage, this shows riper yet still mineral fruit with added depth from a small (around 10%) addition of oak-aged wine into the blend. This is very typical of the Motte style and gives richness and balance to the wine. A deliciously precise expression of classic chalky Chablis terroir.
Production Method
Grapes are machine harvested to preserve the freshness and purity of flavour. Pneumatic pressing immediately after harvest is then followed by a gravity settling period of 24 hours in stainless steel vats. Fermentation takes place in thermo-regulating stainless steel tanks for approximately 15 days at 21 degrees Celcius. The wine then undergoes malolactic fermentation in stainless for approximately 5 weeks at 20 degrees. Following this, the wine is racked between December to January, and it is fined between February and March. Cold stabilization at -3 degrees for 5 days before filtration and finally bottling.
Producer
Domaine de la Motte is a 25-hectare, family-run winery handed down from father to son since 1950. Now under the stewardship of Bernard Michaut, an ex-chef, who works with his son Adrien. Their winemaking is meticulous and the wines are benchmarks for the region. They are fastidious about producing concentrated, mineral and very precise wines that reflect the particular terroirs of Chablis, with vines on both Portlandian and Kimmeridgian soils. Motte's wines are regularly chosen for the Tastevinage label, a rigorous selection by the Confrérie des Chevaliers de Tastevin of wines they regard as offering the best of the region in terms of quality and style.

Tasting Notes
A classic botrytis nose; rich in honey and sweet floral tones with hints of citrus marmalade. The palate is rich and smooth with similar sweet floral and honeyed apricot flavours but with a faintly citrus note in the finish which makes it very moreish.
Production
Grapes are sourced from vineyards within the Graves district of Bordeaux. Botrytis (noble rot) is allowed to affect the grapes, concentrating their sweetness and flavour. The grapes are hand-picked late in the vintage and, on average, it takes 3 passes through the vineyard to ensure that the maximum quantity of grapes has been beneficially affected by botrytis. The grapes are treated very carefully during pressing so as not to damage them and to maintain their delicate characteristics.
Producer
For over a decade Boutinot has been in partnership with leading Bordeaux négociant Ginestet, to offer high-quality wines from a selection of châteaux in key appellations as well as consistently fine, benchmark Bordeaux wines.
Sustainability
As both a négociant and a producer of its own wines, Maison Ginestet has long been convinced of the need to work the land in a viable manner and it places substantial emphasis on partnerships with sustainable agriculture-accredited winegrowing estates. Some growers are fully organic, and Ginestet is certified to bottle wines made from organically grown grapes.
In 2006, Maison Ginestet set up an international wine school at its Carignan-de-Bordeaux site. Through the Ginestet Wine Academy, Maison Ginestet shares with its commercial partners the expertise it has gained over more than a century of producing and marketing Bordeaux wines.
