Production
Grapes are handpicked and go directly into the press. The first fermentation takes place in stainless steel vats. The various parcels are then blended and the wine goes into bottle for secondary fermentation, where it ages on the lees for at least 30 months. Finally, a dosage is added using reserve wine to balance the wine.

Vintage
Harvest 2023 came early and was challengingyet of great quality. The temperate and very d late led to excellent health and quality of the grapes. It is a year defined by low average of 25% below, a consequence of a frost in the spring of 2022. A deep understanding of each parcel allowed us to precisely define the harvest time for each area, always in search of freshness and expression of our place. This year's wines show great purity and sharpness, vibrant acidity and fantastic complexity of scents.
History
It was the year 2002 when a group of friends decided to invest in Argentina. They knew little about wine production, but all were passionate wine lovers and excited about the vision of bringing Argentine wines to the world stage. They bought the land that would become Finca Ambrosia and set about turning their idea into reality. At this time, the Gualtallary district began to attract the interest of wine producers, primarily because of its outstanding soil and climate characteristics. Encouraged by the positive forecasts, the friends bought 3 more plots over the years, from which the current winery emerged. Today, Gualtallary is considered the best terroir for producing premium wines in the province of Mendoza.

2022 Michel Laroche 821 Blanc de Blancs Chardonnay Pet Nat

Production Method
This stunning wine is produced from 35+ year old Chardonnay vines in the Chablis appellation using the Méthode Ancestrale meaning that the alcoholic fermentation takes place in stainless steel vats and bottled before aging with the CO2 necessary for the long haul already in the bottle.
Aged on its lees for 36 months, it is then disgorged with no added sugar.
821 refers to the minimum total number of days necessary to produce this wine from the beginning of the growing season to the moment the bottle leaves the cellar.
Producer
Laroche is a famous name in Chablis, with family history dating as far back as 1695. Michel Laroche is the patriarch of the family and after decades as the director of Domaine Laroche, he decided in 2010 to sell his stake in the business and set up a smaller domaine, named after his father Henri. Michel had been leasing his private vineyards to the Laroche brand for many years and these vineyards now form the core of the D’Henri range, including the 1er Cru Fourchaume vineyard where the oldest parcel was planted in 1937.The domaine follows organic practices and they have undertaken studies of their vineyards with the help of renowned soil specialist Claude Bourguignon, adapting techniques to different soils to help fully express the qualities of each site. Any new plantings are done using cuttings from the oldest vines in Fourchaume. Vinification is done on a parcel by parcel basis and with minimal intervention, the focus being on expressing the aromatic intensity of each parcel. The grapes are carefully whole-bunch pressed and fermented in stainless steel, followed by long lees ageing. Michel is a fan of freshness with only some of the wines undergoing partial malolactic fermentation, while oak is used sparingly and more as a seasoning. The result is a creamy, round and savoury style with tension and chalky minerality running through.

Following the construction of a new winery, the whites are now fermented and aged in separate cellars which has temperature control to allow for greater precision in the vinification and élevage.

Producer
Finca Ambrosia is the story of Argentinian’s wine revolution over the last 20 years where it has moved from big Malbecs to terroir driven fine wines. This revolution started 100kms south of Mendoza City in the Uco Valley, which is only 70km long and 40kms wide. The Andes give the Uco Valley its 2 critical attributes: alluvial soils with high quality and varied terroir and altitude which is unique to Argentina, enabling good acidity and luxurious tannins.
The friends bought land at 1250m in the sub-district of Gualtallary in the Uco Valley’s northern district of Tupungato. At the time the only neighbours were Moët & Chandon and Zapata Catena’s now world-famous Adrianna vineyard. Gualtallary’s terroir has a limestone concentration giving its wines minerality and is considered one of South America’s top terroirs for premium wines.
Finca Ambrosia produces the highest quality malbec, cabernet sauvignon, chardonnay and cabernet franc gapes from its 59ha and is 1 of only 3 artisanal producers in Gualtallary.
Since first harvest, Finca Ambrosia’s high-quality fruit was in demand from Argentina’s top wineries such as and Trapiche, Altos Los Hormegas and Vina Cobos. In 2010 renowned Argentinian winemaker Daniel Pi was engaged to make wine for the owners, paying him with bottles of the wine. One such bottle came to the attention of Robert Parker in 2012 who awarded it 95 points – an outstanding score for a first vintage!
Daniel Pi remains a key member of the team which has also been supported by Chile’s famous ‘terroirista’ Pedro Parra. Finca Ambrosia now has its own brand and style of interpretation of Gualtallary’s terroir. It has a growing reputation in Argentina and internationally where the soil, natural environment and team’s artisanal work are seen in its wine’s freshness, elegance and fruit purity.
Vintage
2022 was a long and dry growing season of outstanding quality. Veering on the cooler side of average temperatures, yields were still plentiful, and grapes achieved ideal ripeness throughout a very long cycle. Rainfall was limited, but abundant glacial water and sporadic showers were timed perfectly to help the vine’s balance. After cooler autumn and ideal growing conditions in February and March, they were able to produce
wines with remarkable quality.
Viticulture
Soil: Limestone atop quaternary gravels and sand, shaped by wind erosion. Fermentation Vessel: Initial fermentation occurs in stainless steel tanks, succeeded by a traditional secondary fermentation in the bottle. Ageing: Matured on lees for a period of 12 months.

2022 Pierre Bourée Fils Bourgogne Blanc

This beautifully balanced and classic white Burgundy has a savoury, baked peach and biscuity nose with a rich, broad yet vibrant palate that is balanced with moreish acidity. The oak is well-integrated on both the nose and palate adding texture and finesse followed by a long, intense finish.

Production
Chardonnay grapes are sourced from vineyards in Gevrey-Chambertin and Auxey-Duresses. Fermentation in foudre followed by transfer to 1 year old French barriques (Berthiomieu) for 12 months. During this time the barrels are rolled to stir up the lees - this happens 4 times a year after which the wine is left on its lees for a further 3 months. The wine is fined prior to bottling but not filtered.
Producer
In the latter years of the nineteenth century, Pierre Bourée took over a wine business in Gevrey-Chambertin and gave it his name. In 1922, his son, Bernard, succeeded him and renamed the house as Pierre Bourée Fils. In 1945, Bernard Bourée began to train his nephew, Louis Vallet, who eventually became director of the house, assisted by his brother, François. Together, they expanded the cellars and the winery, and developed the business outside Europe. As well as putting their own unique stamp upon the business, each successive generation added to the house's vineyard holdings. Today, Bernard and Jean-Christophe Vallet run the house alongside their sons, Pierre and Louis Henry.
This winery represents everything that we are proud to be associated with: attention to detail, careful selection of the best grapes, and above all a passion for making superb wines. All Pierre Bourée wines are vinified in their cuverie in Chambolle-Musigny, and are then matured in their cellars at Gevrey-Chambertin.

Production
The Vallets source only the best quality Chardonnay grapes from Auxey-Duresses in the Côte de Beaune. Traditional practices remain in both in the vineyard and cellar. Grapes are hand-harvested, no artificial yeasts are used and the wine is fermented and aged in barrel for at least 12 months with regular batonnage to stir the fine lees. The wine is racked a month before bottling.
Producer
Founded in 1864 by Pierre Bourée, Vallet Frères is now in the hands of the fourth generation of the family, Jean-Christophe Vallet. The family owns vineyards in Gevrey-Chambertin including the entire monopole of Clos de la Justice and in the Grand Cru of Charmes-Chambertin. Vallet Frères also act as a négociant sourcing the best grapes from growers in other parts of Burgundy, with whom it has worked closely for decades.
The wines it produces are complex, fine and authentic examples of Burgundian Pinot Noir and Chardonnay. The Vallet family’s wines have been imported by Boutinot for over 40 years and are distributed to top independent wine merchants and Michelin-starred restaurants throughout the UK.

2022 Domaine Les Vieux Murs Pouilly Fuisse

This appellation is often overlooked, a crime! An intense mineral and citrus character with strong hints of complex nutty, buttery flavours. Very well balanced with crisp acidity and good texture, this is a concentrated yet elegant wine.

Production
The Fuissé region in the south of Burgundy is 250-300 metres above sea level. The soil there is predominatly argilo-calcareous. At Fussiacus the average vine age is 25 years so that the plants are in balance and at their peak of production. The techniques are those of organic farming albeit not certified. The harvest here is by hand.
This Pouilly Fuissé is produced in the traditional Burgundy style, with entirely manual grape harvesting. The grapes are gently pressed using a pneumatic press. The must is then fermented in French oak "Foudres" of 25 hectolitres using only natural yeast. The wine goes through malolactic fermentation in oak and is matured for a further 9 months.

Jean-Paul Paquet began to work the vines of Les Vieux Murs in 1978.
The Chardonnay grape thrives on the limestone and clay soils of the Mâconnais vineyards of Burgundy. At Domaine Les Vieux Murs the 30 to 50 year old vines are in perfect balance to produce fruit of optimum ripeness. Jean-Paul has now been joined by his son Yannick in the family business. Yannick has travelled widely to broaden his knowledge and is quickly earning himself a great reputation.

Despite such humble beginnings, Apple Tree Flat wines make big waves in Australia and around the world.
Tasting Notes
Floral honeysuckle, peach and pear make up the aroma, with a smooth palate of lemon, nashi pear and nectarine before a long lingering finish.

Winemaking
After crushing and gentle pressing, the juice was clarified by flotation. The pressings were oxidatively handled as juice while the free run was treated anaerobically. The fermentations were carried out by wild yeasts and took place over 18 days in stainless steel tanks. The wine remained on yeast lees for 8 months
Region
The chardonnay grapes for this dry white were harvested at 12.5° Baumé on the 26th February and 14th March 2019 in Mudgee and Orange, New South Wales. The chardonnay vineyards were 46 and 19 years old respectively.
The 2019 growing season was warm and very dry in the NSW Central Ranges, however enough well-spaced rain events across the season allowed the grapes to progress through to ripeness without suffering undue stress. These conditions resulted in a compact harvest period with clean fruit and yields per vine a little lower than average. Ripeness occurred at low sugar levels resulting in generally low alcohol in the wines.
One vineyard is trained to Geneva Double Curtain Trellis type, with the other being Vertical Shoot Position (VSP).

“ Beautiful sunshine fruit flavours with a complex ‘leesy’ creaminess and enough acidity to keep it fresh & balanced. At this price point and this age many contenporaries would have died before now. Production
The grapes for False Bay Crystalline Chardonnay stem primarily from a single vineyard in Stellenbosch located next door to one of the region's most lauded proponents of this noble cultivar. This coastal vineyard, gives lower yields, smaller berries which maintain their own natural acidity, thus obviating the need to add acid during the winemaking process. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast in stainless steel tanks and then left on lees for a minimum of six months before bottling. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa.

An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.

2022 Domaine de la Motte Petit Chablis

Tasting Notes
Aromatic fruit with the tiniest hint of sandalwood smoke on the nose. The palate has lovely weight with ripe, fleshy cooked lemons, a touch of stone fruit and a good mineral backbone. Far superior than the name "Petit" might suggest.

Production Method
Vineyards are in the Hautes Côtes, at the top of the slopes just above Domaine de la Motte's Chablis classified plots and so achieve good ripeness. The soil is Portlandian, which is less chalky than Kimmeridgian, and typically produces wines which are less mineral and more fruity, well suited to earlier drinking. Having said that, Motte’s wine has real finesse with good fruit character – very much their house style. Cool-fermented in stainless steel, malolactic fermentation is also in stainless steel and the wine is unoaked.
Producer
Domaine de la Motte is a 25 hectare, family-run winery handed down from father to son since 1950. Now under the stewardship of Bernard Michaut, an ex-chef, who works with his son Adrien. Their winemaking is meticulous and the wines are benchmarks for the region. They are fastidious about producing concentrated, mineral and very precise wines which reflect the particular terroirs of Chablis, with vines on both Portlandian and Kimmeridgian soils. Motte's wines are regularly chosen for the Tastevinage label, a rigorous selection by the Confrérie des Chevaliers de Tastevin of wines they regard as offering the best of the region in terms of quality and style.
Sustainability
Having been already committed to sustainable viticulture, Domaine de la Motte are HVE Level 3 certified. This underlines the quality of the work carried out by the teams to support the ripening grapes, whilst protecting the biodiversity of the vineyard.

Tasting Notes
Pale straw yellow hue. A bouquet of white nectarine and pineapple, as well as underlying vanilla oak, complementing the overall freshness of the wine. Soft and creamy palate, with textural notes as well as concentrated stone fruits. Oak is well integrated, as well as gentle acid, overall tying into a round, generous finish.

The Season
Good rains during winter and early spring allowed for good fruitfulness and healthy vines at the beginning of the growing season. A cooler than usual ripening period enabled good varietal flavours. Rain during late spring and summer increased the disease pressure but with good viticultural practices and selective harvesting we were able to begin vintage albeit about 2 weeks later than what has become the norm in recent times.
Winemaking
A large percentage of juice was handled oxidatively. This develops a richer and riper stone fruit spectrum in the resultant wine. Fermentation on oak allows for quicker and greater integration between the fruit and oak for a harmonious balance. Some parcels are left au naturel to go through malolactic fermentation, further softening the acid profile. The wines are left on light primary and secondary lees to add creaminess and weight.

In the Vineyard
Out with the old, in with the new—this is the story of our Chardonnay vineyards on the farm. After more than three decades of service, our Chardonnay vines faced viral challenges, leading to a transformation. Nine years ago, we started replanting Chardonnay, not just for replacement but for enhancement. We carefully chose superior clones and optimal farm locations for this grape variety. These new vineyards exceeded expectations, yielding exceptional grapes, marking the dawn of an extraordinary wine.
In the Cellar
In the cellar, a symphony unfolds as the first and last Chardonnay grapes harvested enjoy a two- to three-week interlude due to diverse microclimates. Grapes are harvested into bins, with only the best undergoing sorting before pressing. We use whole bunch pressing, carefully separating fractions during pressing. The juice settles for three days before fermentation. We ferment Chardonnay in three vessels: fifty percent in stainless steel for a crisp character, thirty percent in French oak for richness, and twenty percent in amphoras for a unique blend. This approach creates a wine with layers of flavour and depth. After fermentation, the wine rests on the lees for six months, allowing it to evolve, refine, and develop remarkable complexity.

Colour
Attractive pale gold and extremely bright, in perfect harmony with the effervescence. A lively stream of exquisitely delicate bubbles in the glass.
Nose
Exquisite primary pastry aromas of brioche and custard. As the wine begins to breathe, new, floral, spicy aromas come to the fore, reminiscent of magnolia and star of anise.
Palate
Initially generous, fresh and thirst-quenching, underpinned by citrus notes of kumquat, accompanied by wisps of hazelnut and even liquorice. Elegant on the finish, with stunning, delicately tangy length recalling Granny Smith apples and pink grapefruit.

The 2017 Vintage
To describe the weather conditions for the 2017 vintage as chaotic would be an understatement. The season began amid icy conditions with the vines covered in frost, recording 24 days of frost 10cm above the ground in January alone.
After a relatively mild start to spring, bone-chilling Polar air hit France mid-April, causing significant, frost across the greater part of its vineyards, in places to devastating effect, particularly in Aube, Aisne and Haute Marne.
By mid-May the situation in the region completely turned around, with heatwave conditions setting in for two months, and temperatures in places nudging 35°C in the shade!
The weather took another dramatic turn in mid-July, with the arrival of rain and frequent storms, sometimes accompanied by hail, prompting the first signs of Botrytis. In August, the Champagne region faced subtropical conditions.
The harvest was early, and shrouded in wet weather, forcing growers to ruthlessly sort the grapes on the vine, and remain constantly on guard. The Chardonnays were less affected given their greater resistance to excess rainfall, and are a total stand-out.
Elaboration
Vinified in temperature-controlled stainless-steel tanks.
Aged at least 5 years in the cellars. The Chief Winemaker adapts dosage levels to each champagne in order to enhance flavours and aromas. The selection process while selecting the blend is paramount and takes a whole range of factors into consideration, including the proportion of cru wines, harvest year, grape varieties and vinification and ageing methods, in order to preserve the intrinsic style of each cuvée.

It reflects the remarkable character of the vintage, having more than proved its resistance and resilience faced with the many uncertainties experienced in the Champagne vineyards in 2017.
Chardonnay grapes are sourced from the prestigious premier and grand cru vineyards in the Côte des Blancs and Montagne de Reims, and more generous Chardonnay from the Vallée de la Marne, not forgetting the crus from Sézannais and Vitryat. It is a fresh, exquisite wine.

Tasting Notes
Light pale straw in colour, showcasing pure aromas of summer fruit and citrus, leaning more towards Kumquat and orange. Spicy undertones from light oaking. The fine tannin underpins the fresh acidity. To be enjoyed in its purist and natural form without the restrictions of alcohol.

Winemaking
Careful winemaking practices were followed to retain all the beautiful aromatics. Crushed, lightly pressed and settled overnight. Fermentation was done with a selected yeast strain at 14- 16°C. Left on lees for 2 months prior to racking to the second phase of production.
Producer
Reg Holder started his career with vintages in France, Australia and the USA before returning to South Africa. He then spent 11 years as the winemaker at both Neil Ellis and Delheim. In 2015, while his wife was pregnant with their first child, he started experimenting with de-alcoholised wine for her. When they were expecting their second, in 2017, Reg decided that he was going to move full time into the Lautus de-alcoholised project.
Reg uses his traditional winemaking expertise to craft an outstanding base wine. He then removes the alcohol using a state of the art piece of machinery before carbonating (the traditional Champagne method cannot be used as it will create alcohol in the bottle) the de-alcoholised wine.
He then uses a state of the art piece of machinery that combines centrifugal force and a vacuum in order to extract the alcohol while leaving the wines’ volatile flavour and aromatic essence intact.
So how do they do it?! Remove the alcohol?
The alcohol is removed via spinning cone technology at low temperature under vacuum. The initial phase is to first remove the flavour, and set aside. The alcohol is then removed and once completed the flavour is added back to the de-alcoholised wine. Because there is significant volume loss during this process, a portion of the alcohol water is then again put through the process to extract the water, and added back. This helps to fill out the palate and balance acidity. Normal winemaking practices are followed from here in preparation for bottling. Alc: < 0,5% RS: 26g/L TA: 6.2 PH: 3.3

Nose

Production
Grapes for this cuvée are grown in the lieu-dit of "Auche" around the village of Janvry which lies just to the west of Reims. Firstly they are pressed in small stainless steel vats, before being transferred to ceramic vats for 12 hours to allow for natural clarification of the juice. Next, the clarified juice is moved to large steel containers where it remains from September to March, during which time fermentation takes place before finally being bottled for the secondary fermentation and lees ageing. Dosage is between 9g and 10g per litre to give a richness of profile and this Brut Sélection is comprised of 60% wine from 2017 with 40% reserve wines from 2014-2016.
Producer
The Cave Co-opérative de Germigny was created in the early '60s by a handful of winegrowers who wanted to pool their resources and craft their own Champagne. They aimed to celebrate the local terroir - the western slopes of the Montagne de Reims. Today the Co-operative works 115 hectares of vineyards covering 40 different crus, of which 5 are classified as Premier Cru. The Co-op members remain passionate about their shared values of respect for nature, protecting their heritage and working together.

Tasting Notes
Nose
Opulent nose with vibrant tropical and floral notes. Aromas of loquat, nectarines, apricots, white peaches and a slight touch of lime invite you to take a sip. As it opens up subtle whiffs of toasted almonds and vanilla come through.
Palate
Fruit forward entry with notes of white peach, apricot and lime shining through. Mid-palate has a creamy rich density to it, with a lovely rich buttery texture.
Finish
A lovely refreshing acidity balances out the richness. Lingering aromas of honeycomb, almonds and lemon zest delightfully tickle the palate.

Winery
At Oldenburg Vineyards we believe that great wines can only come from the best quality grapes. Our intervention in the vineyards is minimal to reflect the full potential of our mountain terroir.
Vinification
Grapes for the Chardonnay 2022 were harvested 14 to 22 February 2022 at 22.6° Balling, hand-picked in the cool hours of the morning from cool climate vineyards. Bunches were sorted by hand and whole-bunch pressed in a pneumatic press on a gentle Champagne cycle. The juice was settled overnight and then racked to 228-litre French oak barrels for spontaneous fermentation. The wild yeast fermentation took 2 months to complete. Partial malolactic conversion was done on some of the batches. The wine was matured for 11 months in barrel, gently fined and filtered before bottling.
Vintage Conditions
Stellenbosch, in general, played host to a perfect winter, with steady cold units being accumulated through to the end of August with even rainfall throughout the winter. The good winter cold led to a particularly even bud break. Spring was cool and dry, which favoured the flowering and fruit set for the vintage. Good summer rainfall meant the vigour needed to be kept in check. Despite a relatively hot and dry ripening period, temperatures were kept moderate due to our higher altitude and ultimately led to an exceptionally good harvest with great sugar accumulation.

Winemaking & Maturation
The Chardonnay and Chenin Blanc in this extraordinary blend is sourced from exclusively cooler climate vineyards that complement the name of the wine. 37% of the wine was matured in concrete eggs, and 67% was matured in older French oak barrels, ranging in sizes from 228L to 300L.
Vintage Conditions
The 2021 post-harvest period had cool and dry weather conditions, disease-free canopies, and an extended hang time for grapes. Adequate irrigation water allowed for reserve build-up. Banghoek experienced a favourable winter with steady cold accumulation and even rainfall, while spring was cool and dry. The growing season was wetter and cooler, slowing down ripening. Summer rainfall resulted in lush canopies, needing vigorous canopy management. Overall, the season maintained a slower pace despite a hot and dry ripening period.

"Equally impressive as the red. The fruit is of the orange, clementine, mandarin style. Amazingly fresh, clean acidity on the front palate, followed by a little minerality, finishing with a soft creaminess from some oak or lees influence. Fairly long palate, medium-bodied with excellent balance - a good pair of well-made wines. A pair that packs a punch at this price!

It is creamily textured on the palate and opens up generously with many layers of apple, pear, and spices. Its very bright acidity makes up for a great Chardonnay expression.
Vintage
Higher and well-distributed rainfall throughout the season was welcomed in 20/21 season after previous years of droughts, yet a hail storm hit hard on our Finca, and our production in volume was reduced significantly. An intensely hot summer was followed by temperatures cooling off slightly just before harvest, allowing the grapes to reach beneficial sugar levels, generous flavour concentration, and a beautifully textured structure. Rains were more intense than average but very well distributed throughout the seasons, providing sufficient water for the vines while keeping moderate yields and excellent health.
History
It was the year 2002 when a group of friends decided to invest in Argentina. They knew little about wine production, but all were passionate wine lovers and excited about the vision of bringing Argentine wines to the world stage. They bought the land that would become Finca Ambrosia and set about turning their idea into reality. At this time, the Gualtallary district began to attract the interest of wine producers, primarily because of its outstanding soil and climate characteristics. Encouraged by the positive forecasts, the friends bought 3 more plots over the years, from which the current winery emerged. Today, Gualtallary is considered the best terroir for producing premium wines in the province of Mendoza.

2021 Domaine de la Motte Chablis Vieilles Vignes

Tasting Notes
More full-bodied, complex, and intense than the regular Chablis from Domaine de la Motte. The nose is very much Chablis with an earthy, chalky element. The palate is rounder, however, with ripe fruit and herbs - the small amount of oak influence in this cuvée gives the wine a rounded aspect with old vines bringing depth and complexity.
Production Method
Low-yielding vines grow on north-facing kimmeridgian and chalky clay soils surrounding the village of Beine. From here Adrien selects parcels from vines approaching a minimum age of 50 years for his Chablis Vieilles Vignes. Harvesting is both by hand and machine 50/50. After a short cold maceration and gentle pneumatic pressing, the wine is racked and fermented in stainless steel for 15 days at 21ºC. Around 10% is fermented in large (600l) oak barrels for 15 days and remains in oak for 8-12 months - the rest in stainless steel. Malo follows the alcoholic fermentation in early January.
Producer
Domaine de la Motte is a 25 hectare, family-run winery handed down from father to son since 1950. Now under the stewardship of Bernard Michaut, an ex-chef, who works with his son Adrien. Their winemaking is meticulous and the wines are benchmarks for the region. They are fastidious about producing concentrated, mineral and very precise wines that reflect the particular terroirs of Chablis, with vines on both Portlandian and Kimmeridgian soils. Motte's wines are regularly chosen for the Tastevinage label, a rigorous selection by the Confrérie des Chevaliers de Tastevin of wines they regard as offering the best of the region in terms of quality and style.

These black and mouldy grapes manage to produce an amazing, sweet, dessert wine at the hands of Helmut. Think pears, apples and Honeydew. A slight butteriness and a hint of spice.
Producer
The Langs have been cultivating around 18 hectares in Illmitz, the heart of the Seewinkel in the Neusiedler See wine-growing region, for three generations. The microclimate of the Seewinkel and the partially pure sandy soils create the best conditions for viticulture in the region.
His son, Helmut Jnr, has caught the wine bug too, and now in his mid-20s, is training to take over eventually from his dad. Helmut’s speciality is sweet wines, both from botrytised but also frozen grapes.
In the past, this area of Austria was consistently blessed, year after year, with ideal conditions for the production of sweet wines – both from botrytis-affected and frozen grapes. But times have changed. In recent years the opportunities for Eiswein, which require a minimum nighttime temperature of minus 8 Celcius, have been very rare. Botrytis has become more difficult too: drier conditions increase phenolics and thickness of skins, so these grapes are much less sensitive to the botrytis fungus so vital for the ‘noble’ sweet wines. So paradoxically, harvest dates for these kinds of wine have become later and later.
But somehow Helmut manages to turn out the same great sweet wines year after year, even if quantities are much reduced. It’s astonishing how apparently filthy grapes, still on the vine in January, looking black and very sorry for themselves can transform from ugly duckling to beautiful princess; perfumed and diaphanous. It is a mystical transformation, but one which Helmut manages with great experience and huge skill. His vineyards are located on the Eastern side of the lake around Illmitz. The vines are immaculately trained and all located in the National Parkland which surrounds the lake.

2023 Glenwood Vigneron's Selection Chardonnay

Vineyards
Vine age:12 years. A low canopy allowed optimal sunlight penetration. Minimal irrigation was used. The fruit ripened slowly allowing the development of small bunches with highly concentrated flavours.
Vinification
This Chardonnay had its fruit picked and whole-bunch pressed. The juice was left to settle for two days and transferred to barrel, where it fermented for nine days, before ageing for a further nine months on its lees in French oak.

2023 Vallet Frères Marsannay Blanc

Tasting Notes
Soft creamy oak notes on the distinctive Vallet nose. Lemons and hints of cloves and vanilla follow with surprisingly but pleasantly taught and savoury notes; the lemon zings through and the acidity is well judged.
Production
Traditional practices have remained relatively unchanged both in the vineyard and cellar since Vallet-Frères formation in 1864. Very low yields are controlled by strict pruning practices. Limestone/clay soils are ploughed, and the grapes are hand harvested. Rigorous grape selection and no destemming (Vallet, like Domaine de la Romanee-Conti are just one of a number of producers who still favour this technique). Grapes undergo immediate pneumatic pressing (to avoid oxidization) and fermentation in oak barrels with "batonnage" every day. Barrels are rolled to gently combine the lees and wine. After 14-16 months in cask the wine is bottled following a light filtration.

"Well well - this was a pleasant surprise! To be honest - I wasn’t expecting too much from this 12 YO burgundy from a very traditional producer - but it’s delicious. Initial high toast aromas (signifying new oak) prevailed but soon gave way to a lovely rich creaminess. The fruit has a lovely savoury element to it and the still high lemony acidity keeps it fresh. Worked perfectly with my fabulous wife’s bacon & tomato risotto. The wine also evolved well in the glass through a little oxidation and developed very well with time. A 2011 vintage could easily have been over the hill but this is still fresh, vibrant and very together - and will still improve in bottle for another 2-5 years." Tasted July 2023.

Producer
Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade,they had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée.
They are proud to also count Guillaume Letang and Julien Dugas in their winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after the property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything the winemakers blend and source is top quality.

The Bellefontaine range has established an international reputation for consistent quality and value. Every year Boutinot winemakers select only quality parcels of wine from different estates and producers, each contributing key components to the finished blend. Bellefontaine wines possess fine aromatics, pure fruit expression, fresh acidity, varietal character and above all a persistent finish. Production
In the south-west of France, Gascony has emerged as a specialist producer of fresh white wines which offer finesse and charm. A mixture of silt, sand and alluvial deposits help the soil to drain - ideal conditions for a healthy crop.
Producer
Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade we had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Julien Dugas in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality.

2021 Vallet Frères Bourgogne Blanc

Tasting Notes
This beautifully balanced and classic white Burgundy has a savoury, salty, baked peach and biscuity nose with a rich and broad palate that is balanced with moreish, acidity. The oak is well-integrated on both the nose and palate giving texture followed by a long, intense finish.
Method of Production
Chardonnay grapes sourced from Gevrey Chambertin and Auxey Duresses. Regular plowing and minimal fertilisers as well as minimal pruning to promote vigour and reduce yield. The grapes are hand picked and transported to the winery in small containers. Fermentation in foudre followed by transfer to 1 year old French barriques (Berthoumieu) for 12 months. During this time the barrels are rolled to stir up the lees - this happens 4 times a year after which the wine is left on its lees for a further 3 months. The wine is fined with bentonite prior to bottling but not filtered.
Producer
Founded in 1864 by Pierre Bourée, Vallet Frères is now in the hands of the fourth generation of the family, Bernard and Jean-Christophe Vallet. The family owns vineyards in Gevrey-Chambertin, in the Beaune Premier Cru of Les Epenottes, and in the Grand Cru of Charmes-Chambertin, as well as the entire monopole vineyard of Clos de la Justice, also in Gevrey-Chambertin. Vallet Frères is also a négociant, and sources the best grapes from growers in other areas, with whom it has worked closely for decades.
The wines it produces are complex, fine and authentic examples of Burgundian Pinot Noir and Chardonnay. The Vallet family’s wines have been imported to the UK by Boutinot for over 30 years and today they’re distributed to top independent wine merchants and Michelin-starred restaurants across the country.
A Note on Sustainability
Vallet Frères is keen to work in an as environmentally friendly method as possible, using techniques such as regular maintenance of the soil by ploughing, applying the minimum of phytosanitary treatments and the controlling of vine vigour and yields through careful pruning. The Vallets tend their vines very traditionally and advancements in the vineyards have been limited: for example, only manure has been used as fertiliser for the last half a century which has encouraged wild asparagus to grow amongst the vines. Harvesting is manual, as the family is opposed to the use of mechanical techniques.

Tasting Notes
Nose
A nose of toasted hazelnuts, cold butter and a slight struck-match lift over classic varietal stone-fruit notes.
Palate
The palate is a delicious combo of hazelnuts, basil leaves, creme-fraiche acidity and the Mendoza-clone's signature clementine tang with a taut, structured finish.
Producer
Soumah of the Yarra Valley is a producer of fine wines from the region. A hidden gem located down a country lane, in the dress circle of the cool Warramate foothills of Gruyere. Soumah set out to make wine with the charm of northern Italy but the provenance of the Yarra Valley. Situated an average of 120 meters above sea level, the vineyard is elevated above the valley floor. The ancient sandy-clay loams with broken sandstone shape the small yield and define the detail in these precise, focused expressions of Chardonnay and Pinot Noir.
Production Method
Chardonnay was early as we can to ensure a fresh line of citrus fruit and crisp natural acidity on the palate. Structure is developed in the wine by predominantly barrel fermenting the juice and allowing it to mature gracefully for eight months before bottling a wine with balanced weight and silky texture.
Alan's Personal Tasting Notes
"This is good. It is cool climate-restrained chardonnay - but we are in Oz so it’s got a lot of ripe peach & apricot fruit for me - not as citric as the 'tasting note led me to believe. The strong oakiness masked it initially but through time the fruit exposes itself. Don’t get the hazelnuts in the tasting note but it is very toasty - I guess from the barrel ferment and maturation. Medium-bodied, medium to high acidity, good length, and altogether well made - but I’m guessing not as classy as the Mac Forbes Chardonnay (which is obviously at a different price point!) - but very good value indeed."
