2023 Château Ka Source Blanche, Bekaa Valley, Lebanon

Production
The vineyard is located at 1000m above sea level at the Eastern end of the Bekaa valley. There is very little annual rainfall so drip irrigation is used as necessary. The vineyard was planted in 2006/2010 with all harvesting done by hand in the cool of the morning into 20KG boxes. Upon reception grapes are destemmed and crushed, then pressed in a pneumatic press. Fermentation is carried out at 18 degrees. The wine is then stored on lees in stainless steel vats. Filtered and bottled.

Akram Kassatly built his winery in the Bekaa Valley in 1973, but shortly after the first wines were made, Lebanon was engulfed by war. The winery was subsequently forced to close and Akram turned his attention to other businesses, but in 2005 he resolved to try again. Today, Château Ka is the only winery in Lebanon to produce wine entirely from its own vineyards. Akram creates both rich, concentrated reds and beautifully fresh, fruity and crisp whites that rank among the finest in the country.

2024 Pasquiers Sauvignon Rolle, IGP Pays d’Oc

A deliciously refreshing change from straight Sauvignon Blanc. Luscious exotic fruit aromas from the Rolle are balanced by the clean, zingy fruit of Sauvignon, resulting in a wonderfully aromatic smooth dry white.

Production Method
For this wine two parcels of Sauvignon Blanc and Rolle (the traditional French name for Vermentino) were selected from the sun-drenched vineyards of southern France. Their position, on alluvial sand and silt, encourages the vines to root deep into the soil, finding the water they need to sustain them during the long, hot summers. Each plot is harvested in the cooler early mornings and the Sauvignon Blanc is always harvested a few weeks before the later ripening Rolle. Both varieties then undergo cold maceration in stainless steel tanks, followed by gentle pressing and alcoholic fermentation on fine lees (at a temperature of 16-18°C) to bring out the creamy texture of the Rolle, which perfectly balances the freshness of the Sauvignon Blanc.

Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand, and deliver the crates of wines to customers himself. But good things grow and by the end of the decade we had become a bigger and better company. A company that not only sought out great wines but made them too. Ten years later, Boutinot France was founded in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Mâcon regions on the quest to make beautiful wines. Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Nicolas Rager in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Nicolas looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality. Today, Boutinot’s French office is located in Mâcon, and has over 20 employees who take care of production across the whole of France, covering fresh whites and rosés from Gascony, mineral wines from Burgundy, and joyful varietal wines from Languedoc among others. We don’t use any single model to source our wines; instead, a combination of sources are used, from large-scale, high-quality co-ops to small, family growers and single domaines, as well as our own vineyards in Cairanne. "On first opening I wasn’t that impressed by this. Fresh, dry n crisp make it adequate, but I thought it lacked a bit of character and seemed a bit dilute. However, with a bit of food and oxidation it came to life and developed more weight, riper fruit and a lovely creamy complexity. This is what I was expecting from the later ripening Rolle ( Vermentino). This definitely gives it an edge, one of these wines that just needs a wee bit of time to show it’s best." August 2025

Viticulture

Refreshing like a white wine, with the complexity of red wine. This orange wine is made by leaving the grape skins and seeds in contact with the pressed juice, creating a deep orange-hued finish. The wine ferments naturally without the addition of yeasts, sulphur or any other additions. The different varieties are then blended and before a natural cold stabilisation, and bottled unfiltered and unfined.

Viticulture
Gascony is both wild and beautiful all at the same time... With its rolling countryside dotted with maritime pine and cypress trees, its luxurious vineyards and medieval hilltop towns, the area is one of the most preserved French treasures. Home to viticulture since Roman times, the IGP Côtes de Gascogne shares the same area of production as the Armagnac appellation. Gascony is also famous for its rich gastronomy and its “douceur de vivre” or easy-living atmosphere. The Colombard and Sauvignon Blanc grapes are predominantly produced in the Côte de Gascogne area of the South-West of France. The region has a fantastic reputation for fresh white wines. Capable of adapting to the hot climate, it provides nice acidity with lovely flavours. The resulting wines are crisp and fresh, with very intense aromas of lime, nectarine and grapefruit.
Production
The winemaking process is designed to preserve freshness and to enhance the aromatic potential of the wine. The berries are harvested at night, when temperatures are low, as soon as they have reached optimal maturity. The crop is then pneumatically pressed in order to extract only the premium juices. The fermentation process is carried out at a low temperature to preserve aromatic intensity. All these steps create a fragrant and refreshing white wine!

Tasting Notes
The 2023 is a blend of Muscat, Vermentino, Marsanne & Sauvignon Blanc. Light yellowcolour with some green reflections. The nose has young citrus fruit notes, and fresh white flowers. Dry with lovely freshness to it, the lemon citrus notes open out with fresh mint sensations and beautiful acidity on the finish.

Production
From approximately 20 year old vines from vines planted at around 4,000 vines per ha on selected plots on clay and limestone soils in the area of Comté Tolosan around Toulouse in Gascony. This area benefits hugely from the influence of the Atlantic, giving freshness and acidity and making it perfect for white wine production.
The grapes are picked at night and undergo a six hours skin-contact extracting as much of as possible of the precious components. After a gentle pressing, the fermentation is carried out at cold temperature enhancing the subtle fruit flavors. Finally, a three months ageing on its fine lees.

At 420m above sea-level, set high above the picturesque Elgin Valley Andrew Gunn founded Iona. It is here overlooking the Atlantic ocean that he has secured some of the coolest vineyards in the Cape. In a country where cool climate vineyards are like gold dust, these vineyards are veritable nuggets. There is an extremely long growing season, allowing Andrew to create wines with complex flavours and a fresh, elegant style. The approach is hands off and the land is farmed according to organic and biodynamic practices with a particular focus on ensuring the health of the soils whilst pests are kept under control by the resident flock of geese that roam the vineyards.
Production
"We aim for elegance, balance and to express the unique terroir of the Elgin Highlands. Grapes were hand-picked into crates early in the morning to ensure that the grapes stayed cool. Each of the 9 blocks are harvested and vinified separately. After gentle pressing, the must was settled, maintaining a temperature of 6-8°C. Fermentation occurred at 14-16°C, using different commercial yeast strains particularly suited to Sauvignon Blanc. The wine was kept on the gross lees for 5 months and stirred regularly to enhance the richness of the mid-palate. The Sémillon component was fermented naturally in 2nd and 3rd fill 500L French oak barrels to enhance the mid palate weight and to add complexity to the wine. A selection of different Sauvignon Blanc vineyard sites were naturally fermented in 500L French oak barrels. The barrel fermentation component made up 4% of the final blend.

The vineyard spans 88.50 hectares with clay-limestone and clay-siliceous soil types. Grapes are harvested manually or through a pre-machine sorting process. The rootstock used includes Riparia Gloire, 3309C, Fercal, and 101.14. Traditional plant nutrition is applied sparingly, and the vine density ranges from 3,000 to 5,000 vines per hectare. The average vine age is 17 years, predominantly Merlot and Cabernet Sauvignon varieties. Pruning is conducted using the Double Guyot method. Fermentation occurs in stainless steel tanks equipped with a patented cap-breaking system, at temperatures between 28 to 30°C. Malolactic fermentation is conducted, and the wine matures in both tanks and barrels, with a potential for aging between three to seven years.

A pleasant aromatic and pithy blend of gooseberry, white flowers and citrus on the nose.
Palate

Production
Grown on flint, clay and limestone soils, the Sauvignon Blanc grapes are destemmed and crushed in an pneumatic press. After controlled settling, the juice undergoes alcoholic fermentation at about 18-19°C with selected yeasts. Ageing then takes place on the fine lees with no malolactic fermentation.
Producer
Formed in 1973, Pierre Chainier is both a négociant and the owner of some 250 hectares of vines in the heart of Touraine, from which it sources classic Loire varieties. Its eight Touraine estates include Domaine de la Bruyère in the newly established appellation of Touraine-Chenonceaux. Conversely, Clos de Nouys, its 25 acre Vouvray estate, is one of the oldest in the appellation. Here, vines average 35 years of age in vineyards that were already listed amongst the best sites on geological maps dating from 1907.
Sustainability
For both its négociant arm and its own vineyards, Pierre Chainier seamlessly blends the principles of reasoned agriculture with the most modern winemaking techniques. It encourages sustainable development and official certification for its growers, it uses sugar cane-derived biodegradable “corks”, and it has a comprehensive waste recycling programme. Lighting is changed to LED and they are currently calculating their carbon footprint.

The process of winemaking is both an art and a science, meticulously detailed through each step. Tasting Notes
This Sauvignon Blanc is made from grapes from the Stellenbosch and Elgin area. The wine has an attractive green tinge in the glass with intense aromas of gooseberry, ripe passion fruit and lime. The mouthfeel is lively with tastes of green melon and lemon with a lingering aftertaste.

History
Dornier is a family owned winery situated in The Golden Triangle area of the upper Blaauwklippen Valley Stellenbosch. The primary focus at Dornier lies in the production of premium quality wines with minimal intervention which are expressive of the unique terroir of The Golden Triangle whilst showcasing the complexity and finesse of the noble grape varieties planted at Dornier. Reverence for tradition is salient at Dornier as is difference where it leads to improvement.
Dornier Wine Estate is located on 3 different farms in the Upper Blaauwklippen Valley namely Groenkloof, Heldemeer and Stellenrust (Homestead) the latter of which includes a historic Sir Herbert Baker designed homestead and one of the first wine cellars ever built in Stellenbosch in the late 1600s.

Fermentation & Aging
Grapes were harvested between 19° and 23° Balling to ensure fresh acidity and riper flavours in the wine. Fermentation was at 14° Celsius with further time on the lees to add to complexity and texture.
In the Vineyard
Growing conditions during the 2022 season were almost hassle-free. The cold and wet winter season was followed by a cool spring and early summer that led to excellent flavour development in the grapes.

Production
Hand harvested grapes from Elgin, supplemented by small parcels from cooler sites in Paarl and Franschhoek, were gently pressed and the juice settled for 48 hours. Naturally fermented in stainless steel tanks, with no additions other than a small dose of sulphur, and kept on the gross lees for 5 months.

2023 Coterie by Wildeberg Semillon Sauvignon Blanc

Wildeberg’s rationale is to source the finest vineyards available to us across Franschhoek and the Coastal Region, from which cuvées the eyes are plucked to make Wildeberg and the Terroir Series releases. In doing so there remains a small yet definitive expression of all the vineyards we worked with, and its these cuvées that are go into Coterie by Wildeberg. Semillon from Franschhoek is barrel fermented in 600 litre French and Austrian oak then aged for 10 months in barrel. Sauvignon Blanc is fermented in stainless steel and kept on the gross lees for 10 months. Once the blend is decided the wine is allowed to marry in tank for 6 weeks prior to coarse filtration and bottling. Semillon is aged in 36% new barrels, 44% 2nd fill, 20% stainless steel.

The Earth’s mantle thrusts up above the gentle town of Franschhoek, a wild slice of untamed mountain on which sits a farm named Wildeberg. An established wine region for some 350 years, sensible generations never thought to plant a vine here until a happy band of idealists recently craned their necks up at this hillside and, dizzy with hope, decided to give it a go. Franschhoek is on the very edge of the south-eastern corner of the Cape’s venerable Coastal Region, indeed Wildeberg’s property border runs over the top of the mountain where the Coastal Region gives way to the baboon-strewn road to Grabouw and the wider Western Cape.
The Wildeberg wines express the most captivating Franschhoek Valley fruit. In our Wildeberg Terroirs bottlings we look beyond our home to a clutch of exceptional sites of other origin.
A mountain rich in metaphor with the visual heft to flatter any wine, releases of Wildeberg and Terroirs express our continued purpose – exceptional wines of place, however humble the origin. If the abiding memory of our wines remains a textural sense of place then we are portraying the Cape as hoped.
Sustainability
Wildeberg is a 144ha wine farm set against the backdrop of the dramatic Franschhoek mountains, on the very edge of viticultural possibilities. To farm here you have to be in tune with nature, respecting the earth and the elements, creating wines which truly express the terroir with minimal intervention.
This special area is home to 4 endangered Fynbos species, and a key mission of Wildeberg is to conserve this vegetation type as they are critical to the biodiversity of the Western Cape. This work entails clearing invasive alien trees which can overwhelm the Fynbos and contribute to the threat of forest fires. Fynbos covered mountains like those at Wildeberg are thought to be responsible for delivering one glass of water in five in South Africa, due to the plants allowing up to 80% of rainwater to run off into rivers and reservoirs rather than being absorbed into the soil.
Water is precious in South Africa, and waste water from the winery passes through a natural wetland with indigenous reeds and plants before being pumped into our irrigation dam. We then use this water to irrigate the vines.

Tasting notes
A fine and seamless blend of 3 classic white grapes. Sauvignon Blanc aromas are prominent on the nose, with lime and prickly pear notes. A tight mineral core and creamy mid palate from the Chenin Blanc gives complexity and a persistent finish while a small proportion of Semillon adds texture and depth.

Production
Circle of Life White is neither defined by grape varietals, nor indeed a specific block within the vineyard, but instead encapsulates the myriad soils, aspects, altitudes and grape varieties found on this windswept, biodynamic farm. The windswept vineyard blocks are all, south facing (less sun exposure), 200-350m above sea-level and a mere 2 miles from The Atlantic. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Production is a miserly 4 tons per hectare. Bunches are picked early in the mornings, when they are still cool, which helps to preserve the flavours. Extracting juice from the grapes is achieved through whole-bunch pressing in our modern basket press. This is the most delicate way to extract the juice. No additions of enzymes or settling agents were made to the juice. After a settling period of 24 hours, a large proportion of the juice was destined for co-fermentation. We determined a blend of Sauvignon Blanc and Chenin Blanc prior to fermentation which went into old 600-liter barrels where it fermented for four months. After the fermentation was completed the blend was racked to a stainless-steel tank to which they added the rest of the Sauvignon Blanc, Chenin Blanc and Semillon. To have the varietals integrate the wine was left in barrel on the fine lees until its bottling date six months later. This helped to add more complexity and weight to the palate. The wine is produced as naturally as possible, with no additions of acids or enzymes.
Producer
Founded by Paul Boutinot in 2004, Waterkloof is a family-owned farm using organic practices. The farm is perched high up on the windswept Schapenberg, overlooking False Bay and The Atlantic Ocean. Living soils, naturally low yields and a long growing season help provide talented Cellarmaster Nadia Barnard with naturally balanced grapes that are imbued with a truly defining sense of origin. Those grapes are then transformed into wine with a minimum of intervention. The resulting wines are fine, inimitable and best enjoyed with food.
Sustainability
As well as being ECOCERT certified as organic, and working biodynamically, Waterkloof goes much further than many in its efforts to be a highly sustainable winery. A member of The Integrated Production of Wine Scheme, a voluntary environmental sustainability scheme established by the South African wine industry in 1998, and of The Wine and Agricultural Ethical Trading Association, a multi-stakeholder, non-profit voluntary organisation which actively promotes ethical trade in the wine industry, it is has also been a member of the World Wildlife Fund’s Biodiversity & Wine Initiative from its inception. Through a partnership between the IPW and the BWI, Waterkloof is a WWF Conservation Champion and has in place a formal nature conservation plan that includes: clearing approximately 55 hectares of land from alien invader species and restoring the Cape’s precious indigenous flora and fauna; re-establishing natural vegetation in previously disturbed areas; introducing preventive erosion control measures; providing migration corridors for species between isolated areas of natural vegetation; mulching of winter cover crops to create a healthy environment for the natural predators of vine pests and installing perches for birds of prey for natural rodent control measures.In the vineyards, drip irrigation is used only on young vines as a more efficient system to conserve water. Most of Waterkloof is dry-farmed; the biological control of pests is employed as an alternative to chemical spraying; annual legume cover crops are sown to add nitrogen to the soil and annual grain cover crops are sown in alternate rows as a carbon source and to return nutrients to the soil; earthworms are farmed and their casts are used to make a tea, which is used on the cover crops and soil as a living fertiliser; 380-400 tons of compost a year are made each year to boost carbon matter in the soil, to enhance its water holding capacity, and to boost the level of microbes in the soil keeping it fertile and alive; and, as part of the estate’s biodynamic regime, various foliar feeds are made. No damaging herbicides, pesticides or fungicide are used, only natural predatory fungi and metabolites to control mildew and to build the plants’ immunity. Six Percheron horses are used to plough, compost, spray and harvest the vineyards to reduce damage to the soil and vines and to reduce carbon emissions. Using the horses also teaches the handlers the rare skill of training these horses. A flock of chickens reduces the number of pests in the vineyard and returns nitrogen to the soil and compost, as well as providing fresh, free-range eggs for the restaurant. A small herd of cows is kept, which is key to producing biodynamic composts and teas, and a flock of sheep and a herd of goats are allowed to graze in the vineyards in winter to naturally reduce the level of weeds and vegetation between vine rows, as well as to put nitrogen back into the soil.
In the cellar, waste water gets pumped through a stainless-steel filter into a bioreactor where it is combined with the rest of the waste water from the building. Aerobic bacteria remove most of the contaminants before the water is pumped into a sand bed to remove any solids. From there, it runs into a reed bed for a final clean up and it is then used to irrigate the young vines. Peroxide is used a cleaning agent in the cellar as it breaks down in water after 15 minutes, leaving no residue. The cellar itself is built into the hillside to maintain a stable temperature, to avoid pumping the wines and hence reducing energy usage. Used boxes, dividers, bottles, screwcaps, plastics, paper and labels are recycled with an external company that take everything away for recycling. Old, unused bottles are sold to bottle recyclers who wash and resell them.

Vinification
A fuller style Sauvignon blanc that ferments and ages in oak for 10-12 months depending on the vintage. We use old (75%) and new (25%) French oak pigeons (500L). Certain leaner vintages might contain a smidgeon of Sémillon to broaden the texture and palate.
The earlier vintages (2012-2017) are more in a linear style and will start to showcase some tertiary flavours, where the younger vintages (2018-2022) will have elegant aromas of exotic fruit (starfruit, dragon fruit), undertones of tropical aromas (passionfruit and ripe pineapple) and yellow fruit (peaches). On the palate we strive to create a fine balance between elegant and a well-rounded wine, supported by crisp freshness, good length and minerality at the end. These wines will age for 7 years and beyond, provided stored under optimum conditions
History
You’ve probably heard of the quaint beach town of Hermanus, situated on South Africa’s famous Whale Coast. Between 1855 and 1902, it was called Hermanuspietersfontein. In 1902, the local postmaster decided to shorten the name of the town to make addressing letters to the locals easier.

Fresh and zesty with grassy and dry bay leaf aromatics, mineral notes, with hints of richness. This is a restrained Sauvignon Blanc with a palate that has lots of minerality and citrus with lightly herbal notes. The finish is ripe and gently honeyed with crisp green apple fruit and fresh acidity.

Production
False Bay Windswept Sauvignon Blanc stems from vineyards in Stellenbosch, some of which are a mere 3 miles from The Atlantic Ocean. These vineyards allow for low yields, slower ripening, natural acidity and a greater concentration of flavours. If one wants to make sauvignon blanc naturally, these are just the type of grapes required. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, then a portion of the juice is fermented spontaneously with wild yeast and the rest is inocculated. The wine spends a minimum of 6 months on lees before bottling. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly, sustainably farmed and naturally crafted

An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.

Production
Domaine de Vedilhan (pronounced 'Domaine de Ved-ee-ohn') is the estate of the Fayet family based in the village of Moussan, close to Narbonne. Uniquely, a brook runs around the estate which provides much needed water in this very hot climate, giving the wines their freshness and appeal. Vines are managed using the 'lutte raisonnée' method and terroir is a combination of limestone, sand and sea shale, meaning the vines dig deep for their nutrients and thus produce excellent quality grapes. 50% of the production from this Domaine is used for Boutinot wines. Since 1999, our winemakers have been working closely with the Fayets on all aspects of the production, from when to harvest to the exact blend or style of wines.
Producer
Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade we had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Julien Dugas in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality.

2022 Beau Constantia 'Pierre' Sauvignon Blanc

Tasting Notes
A true reflection of a ‘sense of place’, this wine highlights the incredibly close proximity of Beau Constantia to the cold Atlantic Ocean with its profound minerality. The minerality serves to add flesh to the nervy acidity (high-altitude Sauv Blanc vines and cooling winds) and fine tannin structure (from skin contact and lees contact).
Notes of blackcurrant, ripe granadilla and buchu are complimented by the minerality, lively acid profile and tannin structure.

The Vintage by Winemaker Megan van der Merwe

Winery
Some two decades ago, raging wildfires swept through an area of forest high up on Constantia Nek, leaving the slopes scorched and bare. When the fire had subsided, what was left was a brilliant and unique spot for planting a vineyard; 350 metres above sea level, with cooling ocean breezes and steep sun-bathed hills and so, like a phoenix, Beau Constantia rose from the ashes.
Sensing opportunity, Pierre and Cecily Du Preez acquired the 22-hectare property in 2002. With thorough soil analysis guiding their efforts, the inaugural vineyards were planted in 2003 under the careful guidance of farm manager, Japie Bronn.
The journey to establish vineyards on these challenging slopes demanded patience and unwavering commitment. Today, Beau Constantia proudly boasts 11.47 hectares under vine, a testament to the perseverance and dedication of all involved. Within these vineyards thrive a diverse range of varietals, including Viognier, Sauvignon Blanc, Semillon, Cabernet Franc, Merlot, Cabernet Sauvignon, Malbec, Shiraz, and Petit Verdot, each meticulously nurtured to capture the unique essence of this extraordinary landscape.
This boutique wine farm with just over 11 hectares under vine has utterly spectacular views over the peninsula. Megan van der Merwe is the Head Winemaker, having taken over from Justin Van Wyk in 2021, after serving as Assistant Winemaker during his successful tenure. Megan believes in 'farming to perfection - just don't stuff it up in the cellar!'. This very talented winemaker is certainly one to watch.
Each of their releases is a tribute to a member of the family.

2024 The Myth of Motu Nui Sauvignon Blanc

This label celebrates Chile’s farthest-flung outpost, Motu Nui, the tiny islet (or motu) just off the coast of Easter Island.
Adrift in the middle of the Pacific Ocean, and rich in Polynesian mythology, Motu Nui was the essential location for Easter Island’s legendary bird-man cult Tangata manu. Representatives from each island clan would wait for the visiting sooty terns to lay their first egg on Motu Nui, then swim across the shark-infested bay bearing that egg and climb the mainland cliffs of the Orongo volcano to claim rights of power and privilege for their clan for the following year. Many of the protagonists were devoured by sharks or fell to their deaths in this visceral trial of courage. These rituals have long since passed but their history is imprinted in the island’s history and archaeology. Today the sooty tern, depicted on our label, is protected and thrives peacefully on the island’s shore.
Tasting Notes
The wine is sourced from grapes equally shaped by the Pacific Ocean that grow in the Aconcagua region’s coastal Leyda Valley, grapes that achieve a pungency and aromatic profile redolent of New Zealand’s Marlborough region on the other side of the Pacific Rim. Bright, aromatic and crisply textural. The Myth of Motu Nui is a delightfully aromatic Sauvignon Blanc as rich as the myths that inspire the name.

Production
The Sauvignon Blanc grapes are grown in three excellent sites across the Leyda and San Antonio D.O. The proximity of the vineyards to the Pacific Ocean (only 10km’s away) and its fresh coastal breezes ensures grapes ripen slowly. This allows the grapes to retain their natural citrus flavours and freshness but also to develop great aromatics. Sauvignon Blanc grapes in Leyda are some of the first to be harvested in Chile, and winemaking is simple to preserve this crunchy, bright fruit. Cool fermentation in stainless steel is followed by a couple of months on their fine lees which adds texture and depth. We bottle early to retain the primary characteristics, flavours and freshness of this enchanting fruit.

Our winemaking team has been building relationships across Chile over the past two decades, sourcing fruit and wine from across the Central Valleys. We work with a number of small family growers who pay particular attention to quality and ensure that our winemaking team has the best possible fruit to work with. Freshness and purity are the preferred hallmarks of Boutinot's Chilean wines.
Each vintage Boutinot winemaker Guillaume Letang travels the vineyards of our grower partners, blending that year's truest expression's of Chile's unique terroirs.

Vintage
The La Niña weather pattern was the dominating influence of our 2023 growing season, which brought less hot North-westerly winds, normally a mainstay of our season, and replaced them with regular cooling Easterly winds. The start to spring was cool with temperatures below average. Despite that, as the season progressed, temperatures picked up and we experienced good flowering conditions, resulting in a healthy and balanced crop. Summer saw us experience 30+ degree days mixed in with considerably colder spells. Over Autumn we experienced more of the same, with temperatures fluctuating between spells of beautiful warm sunny days, followed regularly by cold southerlies.
These weather patterns, while presenting a challenge, meant the team started picking later allowing for sugar levels to rise. Minimal rain over this time meant the fruit could be held on the vine allowing it to reach our desired levels of ripeness.
Winemaking
The fruit was harvested at maximum flavour as assessed through frequent tasting in the vineyard by the winemaker. We picked across the vineyard at different times and degrees of ripeness to allow the individual cuvees a range of site expression. Extended skin contact time was used prior to crushing to enhance extraction of the aromatic compounds. The fruit was then very gently pressed to avoid harsh phenolic extraction and the juice allowed to cold settle. The clear juice was fermented at low temperatures using a range of yeast renowned for their ability to enhance the Sauvignon Blanc aromas. A balanced amount of residual sugar was left in the wine to complement the acidity and to add palate weight and structure.

Colour
The Paul Wallace Little Flirt Sauvignon Blanc 2021 is bright and appealing with prominent gooseberry, pear, and golden delicious apple on the nose.
Palate
An explosion of fruit on the palate reveals a medley of tropical fruits, fennel, and some grapefruit coupled with a prominent mineral core. The full mouthfeel captures the purity of Elgin’s fruit, resulting in a well-balanced white wine with good length.

Delightful while young but is expected to show her pedigree and mature with stylish grace and aplomb with further time in the bottle.
Vintage
Paul Wallace Wines is a small family-run business with the farm located in Elgin, previously best known for its apples and pears, which is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.

2023 Melea Verdejo Sauvignon Blanc

The creation of Melea Organic was a labour of love for us all. William Long spent years searching for the right winery to supply the organic, vegan-certified and wild-fermented wines, his son Freddie handled the launch and the label features an original bee motif created by his wife, artist Barbara Long, from recycled threads.
Named after a rare species of bee, everything about the range is created with sustainability in mind, from the lightweight bottles to the stone paper labels, made from a by-product of the quarrying process using a lot less water than normal paper. Melea was also the first Spanish wine brand to become a member of 1% for the Planet. Melea has donated thousands of dollars to bee conservation charities since its launch in 2020. Melea Organic also has an Instagram page to share information on the brand’s sustainable values.
The Vineyards
Fruit comes from organically certified, traditionally managed, dry-farmed vines in the Cuenca area of La Mancha. The vineyards were planted in 1999 and are at an altitude of 660m with sandy-clay soils, low in organic matter and high in chalk and limestone. This suppresses yields to just 3kg per plant, giving greater quality grapes. The extreme continental climate means there is a high diurnal temperature range conserving acidity and increasing aromatic intensity. The lack of rainfall reduces the risk of fungal diseases.
Production
Grapes were harvested after the second half of September, later than average to ensure full ripeness. Wild yeast fermented at a controlled temperature of 15ºC with clean musts. Fined with vegan-friendly pea protein.
Producer
The family winery is located in Alicante and is a leader in the production of high-quality, organic wines. They are IFS certified and produce wines with organic and vegan certification.

2024 Cicada Blanc by Chante Cigale

Producer
Domaine Chante Cigale is located within the village of Châteauneuf-du-Pape and has been owned by the Sabon Favier family for several generations. Consisting of 41 hectares, the domaine benefits from old vines, some of which are veritably ancient at over 100 years old. Alexandre Favier took over from his father, Christian, and is part of a new wave of producers in Châteauneuf-du-Pape, combining modern technical expertise with time-honoured winemaking practices.
Alexandre is lauded by notable journalists including Steve Danzier and Jancis Robinson for his deftly-made and reasonably-priced wines. Domaine Chante Cigale has also built a reputation for specialising in white wines, of which they produce more than any other estate in the appellation.
Production
An unusual blend of Viognier (30%), Picpoul Blanc (30%) and Grenache Blanc (40%). Sourced from clay limestone soils in Richerenes in the Vaucluse for the Grenache Blanc and Picpoul, with the Viognier sourced in the Northern Rhône (so the wine is classified as Vin de France). Vinified in stainless steel, with a short maceration of one week. Alex Favier then puts the final blend together.
Sustainability
As you might expect from someone born and raised on an estate named after singing cicadas, Alexandre Favier keenly promotes the biodiversity of his vineyards. He is very conscious of his role as guardian of his land for future generations and Chante Cigale is currently in conversion to full organic status.

Tasting Notes
Pale, greenish gold. Reflecting classic aromas of elderberry flower and green fig on the nose.
Lovely juicy, tropical fruits such as litchi, forrel pear and a hint of sea mist. The lush balanced palate entertains with granadilla, guava and a Prickly pear.

Winemaking Philosophy
Making Sauvignon Blanc one is often faced with the temptation of making something frivolous, upfront and flirty which results in very upfront wines that lack a sense of place. With Baleia, they have chosen to take the road less travelled by choosing texture and minerality from the site to portray the beauty of the terroir.
Vineyard Philosophy
Baleia believes that living soils = strong roots = healthy vines = perfectly ripened fruit. They believe that through science and meticulous farming with attention to the details, they can produce grapes that truly reflect the terroir in which they are grown.
Vintage Notes
The 2022 vintage was characterised by heavy winter rains and a wet Spring which resulted in optimum reserve build-up. A drier flowering and ripening period ensured for a decent crop size.

Producer
Boutinot's New Zealand wines are sourced from vineyards in each sub-regions of Marlborough - the Awatere, Waihopai and Wairau Valleys, as well as the breezier region of Waipara. These valleys have their own micro-climates and terroir which give a unique personality to the vineyards, grapes and finished wines.
Samantha Bailey brings her blending expertise and experienced palate to the fore in expressing the loveliest Boutinot wines from The Land of the Long White Cloud.

Zesty citrus with white stone fruits.
Palate
Luscious, abundant gooseberry aromas follow through onto the palate where it explodes with a full on citrus zing that is balanced by fantastic texture. The finish is clean, crisp and refreshing.

Production
The wine is dominated by 50% Awatere Valley fruit, with vineyards located on both sides of the river in three sub-regions. Soils on the south bank are deep silt loams and fertile, while the north bank sites are stony, shallow silt loams, and lighter in structure.
A dry and windy climate in this valley leads to small, thick-skinned berries with an emphasis on herbal intensity. Wairau Valley sites in the Rapaura district and the Southern Valleys make up much of the rest of the blend. These are warmer areas, and the soils vary between deep fertile loams, gravelly alluvium and clays. Fruit from these sites is often more tropical, with some ripe citrus characters.
Vines are all managed with vertical shoot positioning, and pruned to leave balanced bud numbers and crop levels consistent with individual site capacity. Picking decisions are made entirely on flavour, skin-contact is minimised and cool fermentations with neutral yeast in stainless steel tanks preserve the crisp, fresh varietal nature of the fruit.

Production
This Sauvignon Blanc comes from a premium single vineyard located in Oliver, in the south end of the Okanagan Valley. A small portion of the blend is barrelaged Semillon also from Oliver. Michael Bartier and Eric Monnin set out to create wines that are Boutinot France in style, but honouring and respecting the land, viticulture, climate and vineyard sites of the Okanagan Valley. This cuvée Sauvignon Blanc is sourced from a premium single vineyard. For a little extra magic it is blended with a thimble of barrel-aged Semillon for texture and finesse.
Producer
Boutinot’s Head Winemaker, Eric Monnin, has made it his mission to explore exciting New World regions and vineyards, from South Africa to Chile and Argentina. While exploring sites in Okanagan Valley he had an immediate connection with British Columbian Winemaker, Michael Bartier, and his deep understanding of the region’s strengths and potential.
Michael and Eric set out to create a wine that is Boutinot France in style, whilst honouring the land, viticulture and climate of the Okanagan Valley.
The first cuvée, Project B Sauvignon Blanc is sourced from a premium single vineyard in Oliver and is blended with a thimble of barrel-aged Semillon from the same site for texture and finesse. A classically French, New World wine.
The name is in reference to the fact that the letter ‘B‘ surfaced as a constant in this partnership: a Boutinot-Bartier team, our first harvest from Plot B and as a special nod to the Boutinot Rhone symbol of quality, the worker Bee… a common thread that connects all elements of this project.

"There’s no doubt that this is a serious quality Sauvignon blanc - well made, multi-layered with good complexity. Stylistically it sits in the middle of the mineral, citric styles of France and the riper, tropical fruit styles of the southern hemisphere. Will make me explore Canada further.
