A specialised yeast strain isolated by Institut Oenologique de Champagne is employed to highlight the varietal characteristics of the Traminer. Completed a healthy 10-14 day ferment in stainless steel. : Wine is de de alcoholised using the newest SIGMATEC technology from Schmidt. The process is a distillation under vacuum. This allows the elimination of alcohol at low temperature (30-35 C) thus with a minimum aroma loss,
