Nose

Palate

Production
South-eastern France is swathed in sunny vineyards and peppered with pretty villages that lend their name to famous appellations. In the bistros of these villages, local vignerons often choose not to drink the wines bearing the village name. Instead, they cannily favour a glass of IGP, aware that, although made to different guidelines, wines from the larger IGP Méditerranée can be made from plots which share very similar characteristics to these more prestigiously classified vineyards. Cuvée Jean-Paul Rouge is now sourced from this wider area, working with specialist growers who own such plots. Grenache and Syrah are selected from individual vineyards, specifically for the profile they will each give to the final wine. Classic vinification techniques continue - temperature-controlled fermentation to gain immediate fruit flavours, with maceration lasting between 5 to 10 days before the wine is pressed. For the final blend, an understanding of how each component will evolve is critical in maintaining the consistent and very drinkable style expected of Cuvée Jean-Paul - a judgement which can only be made with many years’ experience of creating blends.
Producer
Like all good stories, that of Boutinot France is both long and a little bit complicated! Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. But good things grow and by the end of the decade, we had become a bigger and better company. A company that not only sought out great wines but made them too. After 10 years later, Boutinot France started in January 1990. The first office was in the middle of the vines in Julienas; perfectly located to navigate the Beaujolais and Macon regions on the quest to make beautiful wines.
Samantha Bailey, who started as a wine enthusiast, was there at the beginning of this adventure. Since then, she has grown into our Master Blender and has key responsibilities: building long-standing relationships, tasting, understanding the terroir and appellations, and pushing the boundaries. She is at the heart of the whole process from blending to quality assessment, making sure there is always a Boutinot touch in every cuvée. We are proud to also count Guillaume Letang and Julien Dugas in our winemaking team. Guillaume oversees the South of France and Languedoc, whilst Julien looks after our property in Cairanne. Together they have the local knowledge to select and blend the very best wines from throughout. Eric Monnin oversees every aspect of production and makes sure everything our winemakers blend and source is top quality.
Today, Boutinot’s French office has recently relocated to Macon, and has over 20 employees who take care of production across the whole of France, covering fresh whites and rosés from Gascony, mineral wines from Burgundy, and joyful varietal wines from Languedoc among others. We don’t use any single model to source our wines; instead, a combination of sources are used, from large-scale, high-quality co-ops to small, family growers and single domains, as well as our own vineyards in Cairanne and Saint-Vérand. Drawing on the expertise of our four winemakers and a network of partner growers, we seek to deliver the highest quality-to-price ratio possible for every wine

2022 Cape Heights Shiraz
Regular price £9.49 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Deliciously juicy, forward style of Shiraz from cool Coastal vineyards.
Tasting Notes
Nose
A vibrant juicy style of Shiraz with ripe bramble and black cherry on the nose.
Palate
Fresh summer pudding fruits and gentle spice on the palate lead to a mellow and satisfyingly rich finish.
Production
The vineyards for this Shiraz clamber up the foothills of the Swartland mountains which are comprised of sandstone and alluvial soils. This region is hot and dry which forces these unirrigated vines to work hard to produce low yields and small berries. Produced from only free-run juice and fermented on skins in stainless steel tanks, a portion of the grapes are whole bunch fermented as the ripe stems add to the overall tannin quality of the wine. The remainder of the grapes are destemmed and pressed. After a third of the sugar has fermented, delestage is done once per day. The wine is drawn off at the bottom of the tank and transferred into a separate tank. Once complete, it is then transferred back into the fermentation tank onto the skins and stems. This method ensures more air is incorporated into the wine which helps to release the fresh, fruity, and spicy aromas known so well in this wine. When the final blend has been made, it is aged on fine lees for an extended period in French oak barrels along with around 15% from the previous vintage. This ensures a more complex wine with greater palate weight and mouthfeel.
Producer
Boutinot South Africa is driven by our passion for discovery and desire to capture the real essence of South Africa in every bottle. It was the simple love of Loire Chenin Blanc that first led us to South Africa in 1994, where we pioneered the wild ferment style that has now been adopted by many producers in this region.
Since then we have been exploring the country's amazing vineyards to make fabulous wines from specific sites and plots that scream location, location, and terroir. Our home-grown South African winemaking team of JD Rossouw and Ryno Booysen drive the energy and enthusiasm for expressing the loveliest wines from their country, along with Samantha Bailey's expertise in finesse. The key is knowing the characteristics of each plot, understanding the benefits each cultivar can bring, breaking rules, and pushing boundaries. We use a combination of knowledge, a love of nature, and science to create versatile, expressive, and food-friendly wines from a country that has been making wine for 360 years.

2022 Strange Kompanjie Cinsault
Regular price £9.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%From mature, unirrigated bush vines in Paarl, this old dame is remarkably light on her feet. Inestimably life-affirming and a pure joy to drink.
Tasting Notes
Nose
The nose is alluringly bright with aromas of fresh cranberry and raspberry.
Palate
The palate reflects these with vibrant, crunchy red berry fruit, tangy acidity and warm, gently spicy notes. An immediately appealing and quaffable style with a serious streak of quality thanks to the low yielding bush vine fruit.
Production
28 year old, dry grown bush vine Cinsault from organically farmed blocks, brought to Wildeberg where roughly 30% of the fruit is carbonically macerated due to some whole bunch material in the press. The juice is then allowed to ferment naturally in older French oak. A naturally produced wine with no fining or filtration and low sulphur levels.

We will champion the unfashionable, experiment with the known and express the found before it gets lost. Mistakes are likely, fun certain. A mineral nose of crushed granite, peach kernel and petrichor.
Palate
On the palate, the sandy seam underpins ripe, juicy stonefruit flesh. The wine finishes tight and bright with a clean, lightly floral finish.
Production
Of the last blocks of Fernao left in the Cape this is the oldest at 30-something years old. Originally grown for yield and brandy this Portuguese immigrant certainly found its feet but fell out of favour. Which is where we all come in.. Before we lose ‘em let’s use ‘em. All the rock-stars are sniffing around this block now which is good for its future but here is an accessibly-priced expression of the loveliness of the Found before it gets Lost. In Portugal the variety is also known as Maria Gomes, which is strangely sexy in itself. Best drunk in its youth this wine is not for later, it’s definitely Fernao.

2022 Borgia by Borsao Rosado
Regular price £6.50 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Classic Spanish rosado - easy drinking with strawberry notes and fresh acidity. Campo de Borja is often referred to as the 'Kingdom of Garnacha', where this variety reigns supreme.
Tasting Notes
Nose
Deep coral pink colour with aromas of ripe berry fruit and strawberry.
Palate
Dry, approachable and well-balanced, with more appealing juicy strawberry fruit and a creamy mouthfeel.
Production
100% Garnacha grapes grown on alluvial soils in the foothills of the Moncayo mountain. The grapes undergo 6 hours cold maceration for the must to achieve a delicate colour; followed by slow temperature-controlled fermentation at 17ºC in stainless steel tanks.
Producers
The winery was established as a co-operative in 1959. In 2001 it joined with two other progressive, co-operative, cellars in the Campo de Borja region to become the Bodegas Borsao that we know today.
Grapes are sourced from over 375 member growers covering 2,400 hectares - nearly a third of the region's total. Vineyards lie in the undulating foothills of the Moncayo mountain, ranging from around 350m to 800m above sea level. At lower altitudes, vines are younger and may require some irrigation, but higher up the slopes the vines are older, unirrigated bush vines.
The climate is rather severe and arid, with hot dry days, and cool nights - which allow optimum acidity levels to be maintained within the grapes. Garnacha thrives in these conditions and represents 65% of total production. The Cierzo wind from the Moncayo sweeps across the foothills of the mountain. This cold, dry wind reduces humidity levels and allows grapes to be picked a couple of weeks later in the harvest, at full maturity.
Borsao has access to a large number of vineyard plots at different altitudes, and hence to a wide selection of fantastic quality grapes. They are recognised for their entry-level varietals - as outstanding examples of easy-to-drink inexpensive wines - as they are for their premium wines, in particular the iconic, multi-award-winning Tres Picos.
Sustainability
With 2,400 hectares of vineyards, Bodegas Borsao is a substantially sized operation in a warm, dry region and as a result the availability and usage of water is a major issue. Much of its vineyard area is planted with Garnacha which traditionally has been bush trained. Until recently, newer plantings were wire trained for easier harvesting, but because of the greater exposure to sunlight of this training method the vines can require up to 50% more water. As a result, all new plantings have reverted to the traditional style of bush training to preserve water.
Inter-row plantings are used to improve the water-holding capacity of the soil and protect it from erosion; they contribute to a better soil structure, increasing its organic, nutrient and nitrogen content; they improve biodiversity in the vineyard since organic matter is a food source for several macro- and micro-organisms; they often increase the population of earthworms which are good indicators of soil fertility; they improve fauna above the soil, providing habitat and food for beneficial insects; they regulate vine growth, helping to control the yield and quality of grapes and wine; and they reduce the vegetative vigour of vines and thus their susceptibility to grey mould and downy mildew. These cover crops mean that less spraying and tending of the vines is required, thus fewer passes are made by tractors which reduces the compaction of the soil and the consumption of diesel. Pheromone treatments are also employed to sexually confuse predatory insects, reducing their populations significantly.
The new cellar is well insulated to reduce the need for cooling systems and to minimise energy consumption; all the chambers are equipped with automatic LED lighting; all of the bottling lines have been designed to reduce noise and to minimise the need to move dry goods and floor stock items; all hot water installations are solar-powered; the greater part of the electricity used for illumination is produced by solar panels; and every single drop of rainwater from the vast roof is collected and recycled. Planned new offices will also be equipped with solar panels and other energy-saving mechanisms.

Tasting Notes
A wonderfully sunny style of Sauvignon Blanc, broad and quite tropical with delicate smokey notes, ripe citrus acidity and a richly-textured finish
Production
Domaine de Vedilhan (pronounced 'Domaine de Ved-ee-ohn') is the estate of the Fayet family based in the village of Moussan, close to Narbonne. Uniquely, a brook runs around the estate which provides much needed water in this very hot climate, giving the wines their freshness and appeal. Vines are managed using the 'lutte raisonnée' method and terroir is a combination of limestone, sand and sea shale, meaning the vines dig deep for their nutrients and thus produce excellent quality grapes. 50% of the production from this Domaine is used for Boutinot wines. Since 1999, our winemakers have been working closely with the Fayets on all aspects of the production, from when to harvest to the exact blend or style of wines.

Palate
The medium-bodied palate continues with more grapefruit, subtle passionfruit, and zingy tropical lemon.
Production
The rolling hills between the scattered medieval towns and villages of Gascony in south-west France are predominately white wine country. For many decades growers here have provided Boutinot with an excellent source of Colombard and Ugni Blanc, which together provide a pleasant mix of tropical and herbecaeous flavours. Vines are generally trained using the Guyot system and vigorous grape selection is used to capture both the fresh aromatics and provide the longevity needed to maintain the consistent flavour profile for which Cuvée Jean-Paul is known. On delivery to the cellar, the grapes are cooled then undergo maceration on skins for 10-15 hours before pneumatic pressing and cold settling to preserve the aromas. We then keep the wine on fine lees to retain maximum freshness before crafting into the final cuvée. To ensure freshness, we blend and bottle up to four times a year - an intricate process essential to maintaining stylistic continuity and quality, one which demands knowledge of how each component parcel will evolve.

Today, Boutinot’s French office has recently relocated to Macon, and has over 20 employees who take care of production across the whole of France, covering fresh whites and rosés from Gascony, mineral wines from Burgundy, and joyful varietal wines from Languedoc among others. We don’t use any single model to source our wines; instead, a combination of sources are used, from large-scale, high-quality co-ops to small, family growers and single domaines, as well as our own vineyards in Cairanne and Saint-Vérand. Drawing on the expertise of our four winemakers and a network of partner growers, we seek to deliver the highest quality-to-price ratio possible for every wine

2022 Vila Nova Vinho Verde Rosé

Producer
Casa de Vila Nova is owned by the Lencastre family, of aristocratic Portuguese lineage (one of their ancestors became the first Baron of Varzea do Douro in the 1800s). This land has been in their family since the 12th century - the ivy-clad tower that still remains from that time is now surrounded by Vila Nova (new house) that was built in the 1700s, and the property was gradually extended over the centuries.
The estate is near the town of Penafiel, close to the eastern border of Portugal's Vinho Verde wine region, around a 30-minute drive east from Oporto. In the late 1970s the family planted vines over 12 hectares - mainly local Portuguese varieties. In 2008 Bernardo Lencastre and his brothers took over the running of the property, revitalised the vineyards, and began making vinho verde and bottling their own wines - the first generation to do so. They now have around 42 hectares of vineyard.
Here, in the Entre-Douro-e-Minho sub-region of Sousa, their vineyards are influenced by winds from the Atlantic Ocean - creating the perfect climate to ripen varieties such as Avesso, Loureiro and Alvarinho.

2019 Mantlepiece Cinsault
Regular price £7.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Tasting Notes
Nose
This is a deep yet pretty Cinsault being generous of fruit yet full of life. The nose is alluringly aromatic with heady aromas of fresh damsons, plum sauce, hoisin and star anise.
Palate
The palate reflects these with its bright, fresh and gently textural notes that marry together with delicate finesse. From 35-40-year-old, unirrigated vines in Paarl, this old dame is remarkably light on her feet and says so much about why Boutinot has championed Cinsault from SA for over 10 years. This is just plain posh!
Production
Cinsault has bewilderingly been overlooked in the Cape for too long but is a grape variety Boutinot has proudly been championing for years - so it's great that this voice of the Cape's cool Atlantic vineyards is finally finding favour with wine drinkers. The 35-40 year old, dry-grown, Cinsault bush-vines are grown on Paarl’s deep sandy loams where only the fittest of the fit survive these harsh, dry growing conditions. Due to the age of the vines, yields are naturally restricted and very little crop control is required in these unirrigated vineyards. The climate is perfect for viticulture with the low rainfall in summer months, tempered by cool Atlantic afternoon breezes, and the cold winters allowing the vines to rest and build up reserves. All grapes are picked by hand at optimal phenolic ripeness (polyphenols are the source of wine's colour, flavour and mouthfeel), followed by fermentation using delestage, a process whereby the juice is racked off and pumped back over the cap, facilitating the extraction of colour and flavour. This process along with being stored in older 500lt French oak barrels to gently shape the wine further, oxygenates the wine which reduces tannin concentration and boosts esters, key compounds that allow the fruit characters to be expressed. Along with the Cinsault, we've added around 5% Franschhoek Cabernet Franc which releases subtle fragrant herbal notes, minerality and freshness, along with a tiny blob of Swartland Malbec for its smooth lushness. The result is a wine full of lovely juiciness in which ripe red fruit dominates.
Producer
What’s this then? The Strange Komanjie Unlimited, SKU, is a casual band of happy ferments. A circus tent of the Cape’s stranger grapes and blends. We will champion the unfashionable, experiment with the known and express the found before it gets lost. Mistakes are likely, fun certain. 2022 Pasquiers Grenache Noir, Pays d'Oc
Regular price £8.95 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%A textbook fruity southern French Grenache; rich and dark with no hard edges.
Tasting Notes
This Grenache Noir from the deeps south of France is steeped in texture and character. Rich black fruit and sweet spice on the nose with more intense berry fruit and liquorice on the palate.
Production Method
In the south western part of the Languedoc, Boutinot’s Guillaume Létang found this parcel of well tended 40 year-old Grenache Noir. Cordon trained (in an area where bush vines are more common) these old vines thrive on silt and sand, their roots buring deep into the soils in search of water. Fully ripened by the Mediterranean sun, once harvested the grapes are destemmed and macerated at cool temperatures prior to fermentation. To fully expresss the ripe black / red fruit flavours of this 100% Grenache Noir the wine was vinified without the use of oak.

Lautus De-alcoholised Chardonnay (less than 0.5% alc)
Regular price £9.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'% Non-alcoholic | Vegan friendly | Low in Calories
Tasting Notes
Light pale straw in colour, showcasing pure aromas of summer fruit and citrus, leaning more towards Kumquat and orange. Spicy undertones from light oaking. The fine tannin underpins the fresh acidity. To be enjoyed in its purist and natural form without the restrictions of alcohol.
Winemaking
Careful winemaking practices were followed to retain all the beautiful aromatics. Crushed, lightly pressed and settled overnight. Fermentation was done with a selected yeast strain at 14- 16°C. Left on lees for 2 months prior to racking to the second phase of production.
Producer
Reg Holder started his career with vintages in France, Australia and the USA before returning to South Africa. He then spent 11 years as the winemaker at both Neil Ellis and Delheim. In 2015, while his wife was pregnant with their first child, he started experimenting with de-alcoholised wine for her. When they were expecting their second, in 2017, Reg decided that he was going to move full time into the Lautus de-alcoholised project.
Reg uses his traditional winemaking expertise to craft an outstanding base wine. He then removes the alcohol using a state of the art piece of machinery before carbonating (the traditional Champagne method cannot be used as it will create alcohol in the bottle) the de-alcoholised wine.
He then uses a state of the art piece of machinery that combines centrifugal force and a vacuum in order to extract the alcohol while leaving the wines’ volatile flavour and aromatic essence intact.
So how do they do it?! Remove the alcohol?
The alcohol is removed via spinning cone technology at low temperature under vacuum. The initial phase is to first remove the flavour, and set aside. The alcohol is then removed and once completed the flavour is added back to the de-alcoholised wine. Because there is significant volume loss during this process, a portion of the alcohol water is then again put through the process to extract the water, and added back. This helps to fill out the palate and balance acidity. Normal winemaking practices are followed from here in preparation for bottling. Alc: < 0,5% RS: 26g/L TA: 6.2 PH: 3.3

A ripe, fresh palate packed with citrus fruit and hints of jasmine and white spice. A tight, focussed style of Viognier with subtle varietal flavours.

Grapes are sourced from the Worcester area, where a continental climate brings very cold winters that enable vines to rest before a vigorous summer. Here the vineyards need to be irrigated, but yields are controlled by suckering in November - this ensures the vine's energy is directed to the most important shoots and also to promote good air flow in the canopy. Given the high summer temperatures, the grapes are picked at a good maturity and ripeness using machine harvesters to ensure speed to cellar at cool temperature. Careful winemaking results in terrific varietal expression and freshness.

2022 False Bay Bush Vine Pinotage
Regular price £9.49 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Wild yeast fermentation, low yielding bush vines and ageing in large French oak foudre inform this richly-fruited, yet savoury and satisfying Pinotage.
Tasting Notes
Fresh, plummy aromas with savoury, smoky notes. The palate is ripe and rich with vibrant fruit, slightly rustic yet moreish tannins and a persistent finish.
Production
The grapes for False Bay Bush Vine Pinotage stem from a single vineyard of unirrigated bush vines in Stellenbosch. The attraction to this mature (planted in 1996), coastal, bush vine vineyard were the cooler temperatures and small, naturally balanced and concentrated berries. Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand harvested, fermented spontaneously with wild yeast and then raised in large wooden casks (or 'foudre' en Francais). The resulting wine therefore, is perhaps more 'Pino' than 'Tage'. No additions other than sulphur as a preservative. Grown, made and bottled in South Africa. Vegan friendly wine. False Bay - Real Wine, Coastal Vineyards, Sustainably Farmed, Hand Picked, Naturally Crafted, Wild Ferment, Cask Aged.
Producer
An independent company, owned by Waterkloof founder Paul Boutinot, False Bay Vineyards aims to make 'real' wine affordable. These are sustainable certified wines bottled in South Africa and naturally crafted from mature and often old vineyards that, crucially, are naturally in balance. This means that, unusually at the price, the grapes from these coastal gems can be transformed into wine with wild yeast and an absolute minimum of intervention.
False Bay Vineyards is proud to be a WWF (World Wildlife Fund) Biodiversity Champion and certified by WIETA (Wine and Agricultural Ethical Trade Association). All of their wines are Vegan friendly.

2022 Cape Heights Cabernet Sauvignon
Regular price £8.89 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%Wonderfully expressive Cabernet from the Cape's blowy Atlantic coast.
Tasting Notes
Nicely expressive Cabernet from the Western Cape with good concentration of cassis and red berry fruit. Taut and leafy but also brambly, ripe and succulent with ripe tannins.
Production
The grapes for this Cabernet Sauvignon are sourced from vineyards that border the warm Swartland/Wellington area and also the Breede Rivier Valley. The vast variety of soils gives the final wine an interesting complexity. As the vines are over 25+ years old, lower yields of 6-8 tonnes/ha help to deliver flavoursome, concentrated fruit, and the berries are picked when fully phenologically ripe. The grapes are destemmed and crushed, with a slow start to fermentation at a low-temperature 17C then gradually increasing after three days to 22 - 24C for full fermentation. Pump-over takes place twice daily to wet the cap and aerate the fermenting wine. Wine is fermented down to 5 g/litre residual sugar and pressed before being pumped back into stainless steel tanks. This ensures soft tannins and no-over extraction of any harsh tannins. Malolactic fermentation follows and the wine is kept on the lees until bottling.

Fresita Original Sparkling Wine with Strawberries (8% Alc) (200ml Single Serve)
Regular price £2.99 Save Liquid error (snippets/product-template line 117): Computation results in '-Infinity'%An adorable picnic-sized single-serve!
Tasting Notes
The unique combination of the best sparkling wine with carefully selected strawberries, created through the Charmat method delivers a natural, balanced and elegant taste.
Originating from Chile, Fresita features a distinct combination of the highest standard of sparkling wine and carefully chosen strawberries. Created using the Charmat method of winemaking, it delivers a balanced, elegant, refreshing, and natural taste, aroma, and flavour.
The term “Fresita” is of Spanish origin and means “strawberry.” Initially, when the fruit got discovered in Patagonia of Chile, people knew of its white variants. Later, Amédée-François Frézier presented them to the world in 1714. Eventually, the strawberries of red colour evolved, and now, very few knew that the white ones also existed. In recent times, however, both the Chilean strawberries get celebrated for their delicious fragrance, sweet taste, and size.
Creation
The creation of Fresita in 1992 was due to the motivation to deliver a unique beverage that appeals to people’s desire for a genuine experience. The wine has a blend combination of Sauvignon Blanc, Chardonnay, and Moscatel.
Each varietal gets fermented in separate chambers to create their unique still wines first. Then, they get blended, followed by a second fermentation process. This dual treatment helps attain an exceedingly dry base for the sparkling wine of Fresita.
At the final stage of the winemaking, freshly picked and intensely flavoured strawberries of the Patagonian variety get added to the product. It results in the deep, fruity, luscious, and smooth salmon pink colour of Fresita with strawberry pulp suspended or floating in it.
Fresita contains persistent bubbles and solely 8% alcohol, making it a drink that people with low alcoholic tolerance can enjoy. It offers a beverage that is full of the sweetness of strawberry with the appropriate amount of intensity. The sparkling wine provides a refreshing feel, especially when served and drunk chilled.
