Tasting Notes
A classic botrytis nose; rich in honey and sweet floral tones with hints of citrus marmalade. The palate is rich and smooth with similar sweet floral and honeyed apricot flavours but with a faintly citrus note in the finish which makes it very moreish.

Production
Grapes are sourced from vineyards within the Graves district of Bordeaux. Botrytis (noble rot) is allowed to affect the grapes, concentrating their sweetness and flavour. The grapes are hand-picked late in the vintage and, on average, it takes 3 passes through the vineyard to ensure that the maximum quantity of grapes has been beneficially affected by botrytis. The grapes are treated very carefully during pressing so as not to damage them and to maintain their delicate characteristics.
Producer
For over a decade Boutinot has been in partnership with leading Bordeaux négociant Ginestet, to offer high-quality wines from a selection of châteaux in key appellations as well as consistently fine, benchmark Bordeaux wines.
Sustainability
As both a négociant and a producer of its own wines, Maison Ginestet has long been convinced of the need to work the land in a viable manner and it places substantial emphasis on partnerships with sustainable agriculture-accredited winegrowing estates. Some growers are fully organic, and Ginestet is certified to bottle wines made from organically grown grapes.
In 2006, Maison Ginestet set up an international wine school at its Carignan-de-Bordeaux site. Through the Ginestet Wine Academy, Maison Ginestet shares with its commercial partners the expertise it has gained over more than a century of producing and marketing Bordeaux wines.

Nose
Delicately floral with citrus and light flinty aromas.
Palate
The palate is pure with green apple, refreshing citrus acidity, stony minerality and good length.

Production
The grapes originate from the steep and slatey soils of the Mosel, Saar and Ruwer. After careful picking and selection, the grapes are fermented in 1000L oak Fuder and stainless steel tanks before blending. The wine rests for a few months on its fine lees to add complexity.
Producer
Bischöfliche Weinguter Trier cultivates approximately 95 hectares of vineyard, among them some of the Mosel, Saar and Ruwer's most legendary sites. Almost 90% of production is Riesling, with grapes crushed and pressed at Scharzhof on the Saar and Duisburger Hoffman on the Ruwer.
Wines are then aged in either traditional fuder or stainless steel in their vast vaulted cellars in the heart of Trier, which date back to Roman times.

2021 Ventisquero 'Grey Glacier' Chardonnay

After seriously considering alternate careers as a tennis pro and classical guitarist, he elected to enter the wine business, describing it as “one of my big passions because it’s more than work – it’s a lifestyle.”
Tasting Notes
Complex and elegant, blend aromas of ripe tropical fruits such as pineapple, mango and papaya with soft mineral and citrus notes. The barrel brings soft notes of vanilla and nuts. Of good structure, it maintains the freshness from a crisp acidity giving a wide end of good persistence. In the aftertaste, you will feel the nuts and vanilla again.

Vinification
Initially, a cold maceration was carried out for a period between 12 to 14 hours. Throughout the process the wort was protected from contact with air. The fermentation was carried out slowly, maintaining a Constant control at low temperature between 13 and 16°C, which allowed to obtain a large number of aromas typical of the variety.
80% of the wine was fermented in French barrels with 10% new cask. The remaining 20% of the wine was fermented in stainless steel barrels to maintain a fruity component in the blend. Once the fermentation was finished, it was allowed to stand for 12 months on its lees, making smooth movements (bâtonnage) to maximize the contact and supply of fine lees to the wine and in this way increase the aromatic complexity.
Tosso’s winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval (ex-Penfolds Winemaker) in the production of icon wines Pangea and Vertice, a partnership that continues to this day.

Producer
The winery that today produces Luigi Bosca wines was founded in 1901 by Leoncio Arizu, a Spanish citizen from Navarra who settled in Mendoza in 1890. Located in the Vistalba valley, in the Luján de Cuyo region, an area that, due to its characteristics, achieved the first " Denomination of Controlled Origin "of America. Luigi Bosca launched the first Malbec DOC in Argentina and Latin America.
Winemaking
Manual harvest, bunch selection, stalking and manual berry selection, followed by pre-fermentation cold maceration at a temperature of 8°C. Fermentation takes place in small stainless steel barrels at a controlled temperature of 28°C using selected yeasts. After the alcoholic fermentation, part of the wine is aged for eight months in French oak barrels. Once it concludes, the wine is bottled by gently filtering it.

Vinification

2021 Castel del Lupo Pinot Nero ‘Della Quercia’ Organic

This spectacular Pinot captures all the vigour and character of the small plot of organically-grown 15 year old vines in the La Quercia vineyard where it is sourced. A correct and pure Pinot Noir with real soul and expression.
Nose
Pronounced, warm, ripe, black-fruited, spicy and complex aromas.
Palate
Lively acidity offsets the ripe wild plum and bramble fruit and the palate combines concentration, delicacy and structure.

Production
The Pinot Noir vines are organically-grown in a combination of chalk, clay and silt soils on the rolling hills of Oltrepo Pavese. They are Guyot-trained at approximately 250m altitude, south / south-east facing. The grapes are harvested by hand and undergo careful selection. The grapes are macerated on skins for 8-10 days, then undergo malolactic fermentation in stainless steel. The wine is bottled in spring.
Producer
Castel del Lupo, in the heart of Oltrepò Pavese, dates back centuries - and includes the eighteenth-century Palazzo Pegazzera. In 1974 three entrepreneurs took over this historic estate and began a regeneration process. Giovanni Doglio, whose father and grandfather were both Piemontese winemakers, has over 40 years of experience managing wineries. Recently joined by his daughter Federica, he has worked tirelessly to develop the estate. They have purchased more vineyards (to cover 100ha at around 300m altitude), planted new vines and built a new cellar. The vineyards are now certified organic. The winery's main focus is high-quality bottle-fermented sparkling wine, and much of the vineyard is planted with Pinot Noir for this purpose. However, these vines are also the source of fine still red wines.
A Note on Sustainability
A proportion of the cantina’s vineyards are in conversion from sustainable to organic cultivation and will be certified as organic from 2020.

Tasting Notes
The grapes for this Natural Zweigelt come from two particularly old vineyards in Ried Weisleiten on Vienna`s Nussberg. This bright, polished Zweigelt is quite dark and intense, with aromas of black cherries and plum fruit, as well as a subtle touch of herbs and spices. Fine texture and freshness on the palate with an engaging spiciness that leads to a fruity, cool finish.

In the Cellar
Zweigelt from old vines on the Nussberg forms the basis, maceration and longer storage on the skin (9 weeks) leads to an intense and dark berry fruit, as well as a lively tannin structure.
The wine is then not aged in wood, but in concrete eggs, which can breathe in the same way as wooden barrels, but do not bring those typical oak tones nor toasty aromas. Of course, the wine is neither fined, nor filtered, nor sulfurized, just as we do with the mash-fermented white wines of the NATURAL series. After about 6 months of storage, the wine is put together and bottled, and after several months of aging in the bottle, the NATURAL Zweigelt goes on sale in September immediately before the next harvest.

At 16 kms of Aix-en-Provence, on the road to the Luberon, the Coteaux d’Aix en Provence vineyard occupies 50 hectares in a single estate of 300 hectares. It is in the heart of a protected wildlife, between cypress trees, pines and holm oaks, that vines draw all their wealth to give quality wines. The grape varieties of the appellation (grenache, syrah, cabernet-sauvignon, cinsault, vermentino, sauvignon …) are settled on a homogeneous territory of clayey-limestone slopes on a hilly relief, favorable to viticulture, very representative of Provence » Our vineyards in Coteaux enjoy an excellent sunshine. Nevertheless, they do not suffer too much from the heat. Clay and limestone soils retain moisture. The rugged relief ensures good ventilation and the average altitude of the vineyard – 370 meters – gives us fresh nights even in summer. Finally, the mistral de Provence naturally cleanses the grapes. This brings a little respite to our plants which ripen with more regularity. Vintage
The 2022 Vintage in Waipara, North Canterbury was notable for the changeable weather, as was the case throughout several of the wine regions around New Zealand. On par with previous years, we did see a higher than average number of small rain events towards the end of the growing season. Our Pinot Gris this year is rich in the traditional flavours this Tiki Single Vineyard wine has become known for.T
Winemaking
The fruit was harvested at maximum flavour as determined by frequent tasting in the vineyard. It was then very gently pressed to avoid harsh phenolic extraction and the juice allowed to cold settle. The clear juice was fermented at low temperatures using yeasts renowned for their ability to enhance Pinot Gris aromas and to add complexity by the addition of fermentation esters. A small amount of residual sugar was left in the wine to complement the palate weight and structure.

On the palate, plum and ripe blackberry fruit flavours combine with ample acidity, minerality, and earthy notes. Tannins are smooth and supple as you would expect from an eight-year-old wine, and it is drinking beautifully

Production
Reservas are only produced in years of exceptional quality - and from the most select vineyards. The Tempranillo is sourced from La Pasada, and the Graciano from La Montesa vineyard. After a long maceration, the wine spends 12 months in 60% American and 40% French oak (both used and new), followed by 24 months in bottle.
Producer
Bodegas Ontañón is a 5th generation family-owned and run winery in Rioja Baja (now Rioja Oriental). Here Raquel, Rubén and Maria Pérez Cuevas continue their father Gabriel's work to develop Bodegas Ontañón into one of the most highly-regarded wineries in Rioja. Ontañón has vast swathes of vineyard in this part of Rioja. Whilst wine production in the region is typically very dependent on contracts with grape growers, the Pérez Cuevas family has seen fit to invest heavily in the purchase of its land and vines. Its 250ha is a testament to the importance it places on controlling grape quality.
The family's vineyards sit high in the Sierra Yerga mountains in the prestigious region surrounding Quel, defying misconceptions that Rioja Baja is one of the lesser sub-regions within Rioja. Many of their vineyards are planted at altitudes on a par with, or above, those in Rioja Alta and Alavesa; (La Pasada is their highest vineyard at 800m above sea level, planted in 1979 it is used for Reserva and Gran Reserva wines). The hot and dry Mediterranean climate allows for consistent ripening of the grapes with little disease and this has enabled them to pursue organic production across 57 hectares of vines.
Sustainability
Currently run by the fifth generation of the Pérez Cuevas family to carry on the tradition of grape growing in the southern part of Rioja, they take great pride in maintaining their vineyards in the most sustainable manner possible as it is their land that supports their family’s craft. As well as farming organically and producing a range of organic wines, Bodegas Ontañón employs a range of other sustainable processes.
These include controlled irrigation systems to reduce water usage and evaporation; planting vineyards in cooler, well-ventilated areas to reduce irrigation requirements and phytosanitary treatments; using plant/grass cover in vineyards to improve soil texture, to reduce tractor working hours and to lower carbon dioxide emissions; using environmentally friendly phytosanitary products that break down quickly and harmlessly; planting several hectares of pine forest near the vineyards in Ausejo and tidying and maintaining the oak forest near the vineyards in Quel. They are a carbon-neutral operation, meaning the facilities no longer emit CO2 to the atmosphere. The watering systems in the vineyards are supplied through solar power. It encourages its workers to carpool from its winery to its vineyards to reduce emissions.

History
In 2000, a group of winegrowers dreamed up what is today, Vina Almirante, a winery made up of 80 partners and families with 45 hectares. Located in Portas in the Umia Valley of Galicia, on the banks of the Chaín River, Vina Almirante sits in an enclave with its own geographical and meteorological conditions that largely mark the character of the vineyards. Portas is synonymous with history, origin and culture. In the 12th century, history reveals that King Ferdinand II of León donated the first known Albariño plantation to the Cistercian monks, the 'Paradisus' estate, in Santa María de Portas.
Vinification
A marriage of musts obtained by direct drawing off, balanced by grapes subjected to a process of cryomaceration. This method adds sumptuousness in the mouth and a notable aromatic complexity. Good balance of acidity and the natural persistence of the Albariño grape. Full destemming, partial cryomaceration, pneumatic pressing, static racking by cold decanting and then fermentation in stainless steel vats at 17ºC.

2020 Keith Tulloch Shiraz Viognier, Hunter Valley

Tasting Notes
A Rhône Valley style shows wonderful black fruit perfumes of super-ripe black-cherry with background hints of pretty white-flower jasmine. Fine French oak contributes with gentle vanilla and cinnamon spice. The palate is plush and velvety – the shiraz 95% shows as blackcurrant with dark berry richness and cassis adding a dense yet satiny gloss. Viognier 5% is about opulence with luxuriant polished softness with extra elements of flower and spice. Co-fermenting has gifted an extra degree of lift and length to the palate, combining the flavours for a great young drinking style.

Production
Vintage experience in the Rhône Valley during 1996 showed Keith Tulloch the magic of Viognier co-fermenting with Shiraz. The great reds of Côte Rotie are renowned for their small blended percentage of the white grape variety Viognier. Many of the beguilingly perfumed, silky textured, and finer tannin reds of the Rhône are made in this way, and this certainly contributes in part to their young-drinking charm. When blended, Viognier can stabilize and enhance the colour of shiraz, bringing a glaze or sheen to the wine. A silky texture rather than a taste with floral aromas, heighten the Shiraz characters. A Rhône Valley style, with the Shiraz co-fermented with 5% Viognier in open vats. Both varietal components are fully ripe when harvested late in the Vintage, producing bright richness of aroma and soft complexity to the palate. The wine is matured for 12 months in fine French oak barriques adding cedary complexity.

“I cannot remember being more impressed with an initial release of wines than those”, said James Halliday when he first tasted Keith Tulloch’s wines.
These thoughtful, hand-crafted wines hail from the Hunter Valley with a nod in part to the great Rhône Valley wines of Hermitage and Cote Rôtie. For those who may have tasted any legendary Hunter Shiraz wines of the 40s, 50s and 60s, tasting many of the modern Hunter wines can be a depressing experience but Keith Tulloch is very different, adding to that great legacy with a series of wines that uniquely capture the exotic spice and hedonistic pleasure of dense and rich Shiraz fruit. These are sensuous, subtle wines with the velvety texture of fine burgundy.
Sustainability
Keith Tulloch have attained the CLIMATE ACTIVE certification by the Australian Government. This means that the winery, vineyard and offices are certified carbon neutral as well as its wines (including glassware, boxes, shipping, bottling). This carbon neutral certification is one of the most rigorous in the world. Every emission created by the vineyard and the winemaking process has been reduced where possible; and where emissions are unavoidable the pollutants have been offset through carbon abatement so that the business and its products have zero net greenhouse gas emissions. Keith Tulloch is also a member of Sustainable Winegrowing Australia (previously known as Entwine) which requires wineries to report and reduce waste whilst promoting sustainable practices. A 65kw solar array has been installed, providing the vast majority of the estate’s power needs.
Keith Tulloch winery and vineyards are also officially sustainable under the Sustainable Winegrowing Australia certification which was developed by the Australian Wine Research Institute (AWRI).
In the vineyard Keith Tulloch engages in regenerative agriculture, minimising the use of chemical sprays and actively promoting soil health, life and biodiversity. It has started a program of revitalising native vegetation around the vineyard, which creates habitat for native insects, birds and animals which benefit the vineyard ecosystem. The business has eliminated single-use plastics and has instead moved onto biodegradable alternatives to prevent plastic waste. All Keith Tulloch wines have moved from heavy glass to lightweight eco glass, which considerably reduces greenhouse gas emissions from glass production and transport. The winery has enacted an array of water efficiency measures to eliminate water waste and to recycle waste water for use in the parks and gardens. The vineyard is now composted and fertilised only by organic fertiliser, re-using a product that would otherwise go to waste and reducing soil degradation and emissions from synthetic fertilisers.
The estate continues to uphold organic viticulture principles in the vineyard, and this is improving year-on-year. Investments in agricultural equipment in the next financial year will further reduce the use of some chemical sprays, however there is no plan at this point to certify these practices.

Producer
For over five centuries, Maison Antech has tamed the magical terroir of Limoux to make fine sparkling wines.
The secret of their character lies in the combination of Limoux's three terroirs, which form the backbone of the cuvées: freshness from the Pyrenees, vinousness from the ocean, and roundness from the Mediterranean. From these terroirs, Mauzac and other grapes are cultivated, each bringing their own complexity and purity to the wines. This Cuvee, named after Francoise, daughter of the family and a member of the sixth generation celebrates her strong character and the part she plays in guarding her heritage and shaping their future.
Production
Grapes are handpicked and go directly into the press. The first fermentation takes place in stainless steel vats. The various parcels are then blended and the wine goes into bottle for secondary fermentation, where it ages on the lees for at least 30 months. Finally, a dosage is added using reserve wine to balance the wine.

2019 Ventisquero 'Grey Glacier' Merlot

Tasting Notes
Colour
This wine is deep ruby in colour with violet hues at the rim.
Nose
Very intense nose predominated by red fruit, such as strawberries and subtle notes of ripe plums, intermingled with a touch of oak from the barrel-ageing and notes of chocolate which enhances the final complexity of the wine.
Palate
This is a full-bodied, boldly-structured wine, which fills the mouth thanks to its fine tannins. Smooth and persistent in the finish.

Vinification
A pre-fermentative maceration was carried out at low temperatures to extract more colour and aromas, then the must was fermented in stainless steel tanks at controlled temperatures of between 24°C and 26°C. 100% of this wine matured for 18 months in extra fine-grain French oak barrels, 33% of them first-use, then the wine was aged in the bottle for 8 months.
Winemaker
Tosso’s winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval (ex Penfolds) in the production of icon wines Pangea and Vertice, a partnership that continues to this day.

Nose
Gently aromatic with fresh apple scented fruit.
Palate
Flavours of apples and white flowers. A fine mousse and soft, creamy texture from extended lees aging. Elegant and well-balanced finish with a calming zing of acidity to refresh and entice.

Producer
Grapes are selected from vineyards with diverse soils - limestone, granite, gravel, marl and sandstone - which impart different characters and styles to the overall blend, and harvested by hand and machine, depending on site. This gently sparkling wine is made using the 'méthode traditionnelle' with a secondary fermentation in bottle and a dosage is approximately 9g/l. Cave de Turckheim looks to create a lightly sparkling style with a fine mousse and delicate fruit flavours. Its crémants are therefore aged on lees for longer than the appellation regulations require; for 24 months rather than 12 in this case.
Production
Widely regarded as one of the best co-operatives in the world, Cave de Turckheim lies at the mouth of the Munster Valley. Working closely with 180 partners, its vineyards span the full breadth of Alsatian terroir and grape varieties. Cave de Turckheim only produces wine from the grapes of its member growers, it is a récoltant not a négociant.
Substantial investment in the winery has enabled the team to vinify many parcels of grapes separately, offering Michel Lihrmann (senior winemaker for 25 years) the chance to highlight each wine's nuances in his signature dry, yet fruit forward, style.
Committed to producing the highest quality wines, growers are encouraged to keep yields low - for example, Cave de Turckheim voluntarily caps yields for its Grands Crus vineyards at 45hl/ha rather than the permitted 55hl/ha - and to pick the grapes by hand. This is part of a long term and innovative strategy of sustainability that includes developing the largest holdings of organic vineyards in Alsace, using natural alternatives to chemical treatments, and a green overview of all vineyard practices. Alongside some great organic wines, the extensive range runs from the excellent value Tradition wines right through to individual Grand Cru bottlings, plus fantastic Crémants d’Alsace and Vendange Tardive dessert wines.
Sustainability
An awareness of social and environmental concerns has always been high on the agenda for the Cave de Turckheim’s growers. They were among the first in France to practice integrated agriculture, an approach which combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification then went on to achieve the highest HVE Level 3 certification in 2019.
In 2008, a number of growers decided to commit to the rigorous standards of organic viticulture. As part of Alliance Alsace, approximately 70 hectares of vines are now cultivated organically, having obtained organic certification in 2011, with a further 30 hectares in transition. These vignerons have revived ancestral practices, tilling the soil and undertaking work that facilitates the elimination of weeds and the combat against the two major diseases: powdery mildew which is tackled with sulphur and mildew which is treated with copper sulphate. Natural fertilisers are also used (nettle, horsetail, comfrey and dandelion), fortifying the vines and increasing their natural resistance. Organic winegrowers meticulously observe their vines, enabling them to intervene in the right place and at the right time, rather than treating the plants systematically.
Turckheim’s commitment to the environment extends to the winery where it strives to conserve natural resources. Sorting waste for recycling, reducing its carbon footprint, using solar panels, and preventing pollution are just some examples of how environmental considerations are present in every aspect of its daily work. Committed to both the environment and its customers, Cave de Turckheim also plays an important role in the local economy.
To celebrate its 65th anniversary, Cave de Turckheim planted 65 trees in February 2022 to contribute to the reconstruction and maintenance of their vines and terroirs, as well as to the preservation and enhancement of wider landscapes. Local and ancient varieties were specially selected to contribute to the safeguarding of their genetic heritage.

It likes to be on well-drained soils so not good on flat landscapes. It likes warm days but more important, cold summer nights. It is so demanding that only a few Australian regions can aspire to produce a Pinot Noir of any pedigree...the Yarra Valley being one of them.

Producer
Soumah of the Yarra Valley is a producer of fine wines from the region. A hidden gem located down a country lane, in the dress circle of the cool Warramate foothills of Gruyere. Soumah set out to make wine with the charm of northern Italy but the provenance of the Yarra Valley. Situated an average of 120 meters above sea level, the vineyard is elevated above the valley floor. The ancient sandy-clay loams with broken sandstone shape the small yield and define the detail in these precise, focused expressions of Chardonnay and Pinot Noir.
Production Method
There are four clones of Pinot Noir on Hexham Vineyard and once combined they create a classic, cool climate style wine showing elegance and savoury spice. Fermentation is completed using indigenous yeasts followed by a lengthy maturation in premium French oak to add a layer of earthy complexity.

"More a savoury Pinot than a fruity one. There is good fruit but it’s dark and brooding and overlaid with a smoky oakiness - but it’s the savoury notes that shine through from start to finish. Nose
The Seasalter is wonderfully expressive on the nose and the palate with captivating notes of black current, stone fruit and green apple together with hints of fynbos and kelp, sea-breeze and a touch of oak.
Palate
Rich, layered and long, this subtly powerful blend is intense but not weighty: an elegant well-balanced wine showing typical Darling minerality, vibrant acidity and some leesy complexity before a saline finish.
In the cellar
30% of the Sauvignon Blanc was fermented and aged for 8 months in a 300-litre French Oak barrels. The remaining components were fermented in stainless steel tanks and left on the fine lees.

"It’s good, in fact, it’s very good and very moreish. On entry, it’s more like a Loire Sauv Blanc than a Marlborough SB - good acidity and with a flinty/mineral streak running through it - so I presume early picking cool climate terroir with maritime influence? The only thing that gives it away as Southern Hemisphere is a sweet, almost sherbet edge to the finish. Very well-balanced, elegant, classy, and moreish. It’s certainly got complexity and a few layers to delve into." January 2023.

2021 Tohu Awatere Valley Unoaked Chardonnay

Untouched by oak, this richly textured Marlborough Chardonnay displays aromas of ripe nectarine, melon and bright citrus underpinned by complex nutty butterscotch gained from both extended time on lees and malolactic fermentation.
Palate
On the palate fresh flavours of peach and tropical fruit are balanced with subtle creaminess and great length; leading to a smooth, fresh and focused finish.

Viticulture
The grapes for this wine were sourced solely from the Rothay vineyard located in the Marlborough’s Rapaura sub-region of the Wairau Valley. Trained using a spilt-canopy trellising system, the vines were managed throughout the growing season with practices including shoot thinning, trimming and leaf plucking, allowing for an open canopy and reduced disease pressure. The vineyard’s warm daytime temperatures and stony free-draining soils helped the grapes to ripen in a difficult season, with pristine, ripe fruit was harvested earlier than average on the 30th April 2018.
Vinification
Machine harvested and fully fermented and aged in temperature controlled stainless steel tanks, this wine has been created to allow the fresh complexities of the fruit to shine through without the need for any oak influence. After harvesting the grapes for this wine were transported a short distance to the winery before being gently pressed. Cold settled over 48 hours, the resulting clear juice was racked into tanks for inoculation with yeast carefully selected to retain fruit purity. After fermentation at reasonably cool temperatures, the wine then underwent secondary malo-lactic fermentation before being aged in tank. Lees stirring was employed to build texture and complexity while still retaining fruit freshness, before being filtered and bottled in February 2019 without the need for any fining.

Nose
Bright ruby to dark purple in colour, it promises plenty of power.The nose is complex with powerful aromas of blackberry and blueberry with, rose, rosemary, violets and floral notes as well as a hint of spice.
Palate
The palate is nicely concentrated and with fine tannis. The flavours of blueberry, plum and blackberry are big, with hints of bittersweet cocoa and a subtle stimulating flavour of mint and violet, dark cherry, blackberry, red plum, earth, espresso, tobacco, dark chocolate, black pepper, black tea, violet. Very complex.

Producer
Owner & winemaker, Rosalia Molina, makes organic wines in one of Spain's highest altitude wineries. Her mission is to make wines that express the typicity of DO Manchuela: the vineyard, the altitude and the varieties planted.
This is a climate on the edge of what is possible: at 1,100 metres above sea level, the grapes experience a large diurnal range that encourages even ripening and helps to retain natural acidity. Rosalia's vineyards are certified organic, she uses only natural fertilisers, promoting biodiversity by welcoming chickens, sheep and pigs from local farms to roam the vineyards freely. Grapes are hand harvested and vinified as naturally as possible with native yeasts and little other intervention. The wines are then aged in clay amphora and some in French oak to give texture and complexity.
Winemaking
Never harvested before the 12th October and always by hand. The colour is extracted in 6000 litre inox tank. Skin contact for 2 to 3 weeks at a controlled temperature before an alcoholic fermentation which is spontaneous, with gentle pumping over for 5 weeks. Pressed directly to 3rd use, 225 Litre French oak barrels, where the malolactic fermentation takes place, also in a natural and spontaneous way for about 4 months. Aged for 4 months in 50% oak barrel and 50% in clay amphoras. Stabilisation is also natural and during the coldest months, temperatures can go to minus 15º C.

Colour
This wine is a luminous golden yellow, it is complex, with a viognier signature.
Nose
Apricot first dominates and evolves towards green apple and sweet almond. Ripe mango and floral rose hints give it an elegant and exotic character.
Palate
The initial freshness is followed by harmonious smoothness and elegance. The wine has a good aromatic complexity, with long lasting citrus and white peach aromas.

Vinification
The grapes are harvested by hand at maturity early in the morning. . After a strict cold settling (10-12°C), Grenache is vinified with the aim to extract most of their freshness (very low fermentation temperatures, numerous rackings …). The cuvée is aged on fine lees to bring smoothness and elegance, which are in perfect harmony with the aromatic freshness.
History
Since 1880, five generations of the Brotte family have been making wines with passion and authenticity. The fruit for this wine comes from selected small wine producers in the Rhône Valley, all of whom have been partners of Maison Brotte for several decades. The vines are planted on a very beautiful clay-silt terroir and which benefit from a lot of sunshine. The hot and dry climate therefore favours the ripening of the grapes and the good health of the vineyard.

Winemaking Notes
The 2021 vintage saw a late harvest with great quality fruit. All grapes were taken directly to press as whole clusters, gently pressed into tanks, cold-settled, racked as clean juice, and fermented over a two-month period at very cool temperatures. Once primary fermentation was completed, select lots ofthe wine went through a complete secondary fermentation to add a rich, buttery component.

2017 Cosme Palacio Crianza

Intense deep red colour with purple hues
Nose
Intense aromas, coffee, leather and spice and a firm concentration of black fruit sit alongside hints of ripe red fruit and sweet spiced sensations over a background of vanilla and eucalyptus.
Palate
A flavoursome wine - fruit forward with sweet tannins and a lovely long finish. An energetic wine brimming with personality, it fills the mouth with fruity flavours, wrapped in silky tannins to give a delicate, elegant, and mouth-watering wine. Persistent, with a long, wide and balanced finish.

Producer
Palacio is known as a pioneer winery for introducing the bases of modern wine to the D.O.Ca. Rioja. It is run by Cosme Palacio Bermejillo, an entrepreneur who took over the family winery in 1894 to make it the most advanced in Rioja Alavesa. He is still working today with his philosophy that tradition and modernity go hand in hand.
The Cosme Palacio Crianza grapes come from old vines of over 40 years old that are planted in clay-calcareous soils at an altitude of over 600 metres above sea level. The grapes are manually collected in 15 kg boxes and the fruit is selected in the vineyard.
Once the Cosme Palacio Crianza grapes reach the winery, they are destemmed but not crushed, and then undergo a long maceration. It then ferments in stainless steel tanks with automatic temperature control, pump overs and micro-oxygenation. Malolactic fermentation takes place in French oak barrels. Aging happens over 12 months in new 225-litre French oak barrels. The wine is then refined in the bottle for a minimum of 12 months before it is launched on the market.
Cosme Palacio Crianza is a red wine from the highest altitude vineyards in the winery. This is reflected in the wine’s good concentration and acidity.

Tasting Notes
A Pinot Noir with a bouquet of ripe strawberry, cedar leaf and Cyprus with a palate of sour cherry and Turkish delight. Elegant white meat dishes and warm salads pair well with this wine. Serve slightly chilled. This wine will benefit from decanting. 
Winemaking Philosophy
When showcasing this wine amongst some of the top winemakers in South Africa, a comment emerged from the discussion: Baleia will have to re-write the Pinot Noir book with that terroir. Working with such extreme minerality, wind and hard, limestone-rich soils require a refined approach. This is a journey of discovery.
Inoculated with selected yeast strains from Burgundy, France. Primary fermentation in open fermenters with manual punch downs at 22-28 °C. After 8 days of skin contact; pressed directly to Foudre, 3rd fill, and 1 new 300L French oak barrel where malolactic fermentation completes naturally. Matured for 10 months in French oak.
Vineyard Philosophy
Baleia believes that living soils = strong roots = healthy vines = perfectly ripened fruit. They believe that through science and meticulous farming with attention to detail, they can produce grapes that truly reflect the terroir in which they are grown.
Vintage Notes
The 2022 Vintage was characterised by heavy winter rains and a wet Spring which resulted in optimum reserve build-up. A drier flowering and ripening period ensured for a decent crop size.

Thanks to expressive fruit – but without excessive concentration – Château Bonnet's red wine is unquestionably charming. In fact, it is a benchmark in Bordeaux. Tasting Notes
Soft citrus and mineral notes are followed by riper citrus on the palate, with good body and some chalky textural elements coming through. Very moreish on the finish with refreshing acidity to the end.

Method of Production
Produced from grapes grown on clay-limestone and Kimmeridgian Portlandian soils, Aligoté is an early-ripening and high-acid grape variety. Traditional winemaking methods are employed to produce a fresh and delicately fragrant white.
Producer
Energetic and charismatic, Hérve Félix has a small estate where he passionately produces a range of artisan wines. Founded by his ancestors in 1690, the estate remained in its 11 hectare form for three hundred years. In 1991, new plots of vines were purchased and the family now owns a total of 32 hectares mainly in Saint Bris Le Vineux, 8km south of Auxerre and 16km west of Chablis. A series of further investments in cellar equipment over the subsequent years has shown that, in winemaking, tradition does not exclude dynamism or modernism.
