Winemaking
Winemaker Casey Di Cesare likes to say that flavours are made in the vineyard. That’s why our grapes are left to hang on the vine to reach full maturity and flavor development before harvesting. Upon arrival at our estate winery, the grapes are crushed and fermented to dryness, resulting in zero residual sugar. Using proprietary technology, the alcohol is gently pulled from a portion of the wine. The result? A mindfully made wine that is zero sugar, 9% alcohol and 85 calories per serving (about 30% fewer calories than an average serving).

Tasting Notes
Nose
This complex and indulgent MCC shows rich secondary aromas with orange blossom and lemon zest on the nose.
Palate
On the palate there are hints of lime, accompanied by aromas of toasted bread and macadamias. The mousse is fine, elegant and ensures a rich, creamy and textured palate with an explosive acidity and lasting, elegant finish.
In the Cellar
The grapes were whole bunch pressed and only free run juice was used for the final blend. A Selected yeast was used for primary fermentation. A 20% portion of the Chardonnay was allowed to undergo malolactic fermentation. The wine was blended, bottled and underwent a secondary fermentation in the bottle. This was followed by bottle maturation of approximately 36 months. Only then it was disgorged, corked and labelled.

For the Sauvignon Blanc, we work with two families in two different locations for a blend with huge appeal. The first is the Martin Family who are nestled into the Andes Mountains in a western corner of Curico. Their vineyards sit around 500 metres above sea level (masl), a far higher altitude than the majority of Curico’s main valley which lies around 250masl. The higher altitude and proximity to the mountains means evening temperatures drop significantly, allowing Sauvignon Blanc grapes to retain crucial acidity as they ripen. This altitude also ensures there is minimal intervention in the vineyards ie. no chemical sprays or irrigation - only pure glacial streams.
Their old established vines planted on steep slopes means grapes can only be harvested by hand. Once the grapes are picked then crushed, cool fermentation is used to preserve the freshness and fruit aromas. We blend this wine from Curico with Sauvignon Blanc from the German Family in Cachapoal. Here, in a warmer location, the variety gains great aromatic expression and typically we see great varietal character thanks to the correct clones being used along with early harvesting. Wines from this warmer spot usually have a little more body, making the blend with the Martin Family wines a great combination of aromatics, fresh acidity and weight. Possibly the biggest strength of this blend is our ability to balance out warmer and cooler vintages with these two different profiles. The wine is settled in tank for a short period before being bottled early to preserve the wines youthful vibrancy.

2022 Emiliana Animalia (Orange Wine) Organic

Colour & Nose
Golden orange in colour and aromas of ripe stone fruits, figs and dried herbs on the nose.
Palate
Where as most Orange wines anonymise varietal, Animalia actually has a grassy Sauvignon tange beneath the Orange structure. Clever, tasty stuff from Emiliana.
Production
This Orange wine is made from 100% Sauvignon Blanc grapes from the Casablanca Valley where the vineyards are strongly influenced by the Pacific Ocean and the Humboldt Current. With high humidity rates, its average temperatures reach 25°C in summer and 14°C in winter. The grapes were destemmed and crushed, and left with their skins. They fermented in concrete tanks at approximately 18º C, soft punch downs obtained a subtle extraction. Once the fermentation was finished, the wine was aged in concrete eggs for five months with the skins. After that, it was prepared for bottling.

Voted by Wines of Chile as "Winery of the Year 2016", Emiliana is one of Chile's most exciting producers and pioneers in organic and biodynamic winemaking. Since 1998, this Chilean winery has been producing award-winning wines from almost 1,000 hectares of vineyards in prime sites including Casablanca, Maipo, Cachapoal, Colchagua and Bio Bio.
Its spectacular biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from across the world. Emiliana's innovative and natural-leaning wines are made with great care and attention and the results are inspiring.

2024 Peacock Wild Ferment Chenin Blanc

Tasting Notes
Nose
The nose is both savoury with stone fruits, pear, notes of the local fynbos and a distinct note of oregano.
Palate
On the palate it is delightful to find notes of wild honey often true to naturally fermented Chenin Blanc.
Production
The grapes for Peacock Wild Ferment Chenin Blanc are sourced from The Helderberg Ward on the coastal outreaches of Stellenbosch. Old bushvine vineyards (20 - 50 years old), planted in Chenin-friendly soils, have over time found their natural balance and it definitely shows in the wine. The Helderberg and Schapenberg are also known for the large expanses of indigenous flora (fynbos and proteas) and fauna such as caracal, bat-eared foxes, leopards and of course, peacocks.
In fact, four of South Africa's twenty WWF Biodiversity & Wine Initiative Champions (which includes Waterkloof amongst their number) are located on the Schapenberg and Helderberg alone. In addition to sourcing fruit from neighbouring vineyards, there is also a portion of wine from Waterkloof's biodynamic vineyard used in the Peacock Wild Ferment range.
Made by Waterkloof's talented young Cellarmaster Nadia Barnard. Balanced grapes are hand-harvested, then whole-bunch pressed in a horizontal basket press for only the finest juice. Fermentation takes place spontaneously with wild yeast in a combination of old 600litre barrels and concrete eggs. The wine then spends a minimum of 6 months on lees before bottling. No additions other than sulphur. Vegan friendly wine.

Nose
A good intensity aroma where citrus and tropical fruits are mixed, such as lime, grapefruit, pineapple and pear.
Palate
With vibrant acidity and medium body, it maintains the variety's own freshness, where citrus fruits reappear.
Viticulture
The harvest was carried out from March 28 to April 4, when the grape showed its greatest aromatic potential. The clusters were harvested overnight and then transported to the winery, preserving the quality and character of the variety.
Background
Head Winemaker Felipe Tosso joined Vina Ventisquero in 2000. After seriously considering alternate careers as a tennis pro and classical guitarist, he elected to enter the wine business, describing it as one of his big passions because its more than work its a lifestyle. Winemaking travels have taken him to Napa, Sonoma, Argentina, France, Spain, Italy, Australia, back to Concha Y Toro in Chile and then finally to Vina Ventisquero. In 2003, Felipe began a close collaboration with John Duval in the production of icon wines Pangea and Vertice, a partnership that continues to this day.

The Fedele is actually a blend of Catarratto, which gives some body, cream and some delicate pear and ripe melon flavours, whilst the Pinot Grigio brings some hints of peach and stoned fruit and an incredible freshness.
Vineyards & Winemaking
Grapes: 60% Catarratto 40% Pinot Grigio. Both grape varieties are grown in organic vineyards in the Trapani area. The two different grape varieties are vinified separately, temperature-controlled fermentations then blended and left on the fine lees until the end of the year.

Production
The vineyards, situated in the southern reaches of Troyes achieve greater ripeness which leads to a richer fruit and classic baked biscuit flavours mixed with characteristic toasty yeast overtones. Only the first, lightest pressings are used, as is usual for fine Champagne. Classic slow second fermentation in bottle followed by maturing on the lees for at least 18 months before being disgorged and released for sale.
Producer
The Gremillet estate was founded by Jean-Michel Gremillet in 1979 when he inherited a plot of vines from his mother, Lulu. Today, the house possesses over 40 hectares of vineyards and is situated in a small village 45 kilometres from Troyes - the historic capital of Champagne - and 180 kilometres south of Reims. The vines lie on steep, sun-drenched hillsides in Kimmeridgian clay-limestone soils. Pinot Noir is king here, and constitutes around 94% of Gremillet’s plantings, with the remainder dedicated to Chardonnay, ideal for creating a classic, baked biscuit, rich, fruit-flavoured Champagne.
A Note on Sustainability
This family-owned and run Champagne house is HVE 3 certified, and as much as possible it restricts its use of chemicals in the vineyards. One of its cuvées is certified organic by ECOCERT and hopefully, this is the start of a bigger process.

2021 Chateau Maucoil Chateauneuf-du-Pape Blanc

Tasting Notes
Intense and vinous on the nose, leading into a bright, mineral-inflected yet rich palate that is subtly floral and beautifully textured with a full, long finish.
Producer
Château Maucoil’s vineyards are primarily located in the sandy-soiled northwest of Châteauneuf-du-Pape appellation, but its white grape varieties are planted in Urgonian limestone soils close to the river in the southwest of the region.
Vineyards have been managed organically (certified in 2014) and yields are kept to around 25 hl/ha. Harvesting is by hand and grapes are sorted before vinification.
After a cold skin maceration and pressing, alcoholic fermentation is maintained at 18°C and malolactic fermentation is prevented in order to preserve the wine’s freshness and acidity. The wine is unfined and aged in vats to bring out the varietal aromas and body, synonymous with white wines from the southern Rhône.
Did you know?
Maucoil is one of the few Châteauneuf-du-Pape estates that has conserved all thirteen of this famous appellation's original grape varieties, and grapes must pass through three rigourous stages of manual sorting before being deemed of high enough quality to be made into wine.
The estate's old vines (the youngest are merely 40 years old; the oldest date back to 1895!)
Château Maucoil (pronounced “moh-kwahl”) originally served as a base for Roman legions who were attracted by the spring that runs through the property!

2023 Soldier’s Block Chardonnay

This vibrant Chardonnay exhibits lifted fruit character, bright tangerine fleshiness, textural mouthfeel, a bright palate and a long and foodie finish. The judicious blend of oaked Chardonnay adds palate weight and texture without overwhelming the fruit.
Production
Long-standing working relationships with some key growers enable us to source premium fruit, with the ultimate aim of making excellent quality Australian house wines with true style and character. Grapes are picked earlier than usual to ensure balance and freshness in the final wine. Harvesting took place in the early dawn hours when it’s still cool and calm which helps retain the rich characters within these grapes. Once in the cellar, they are gently crushed to maintain the bright, fresh flavours crucial to the clonal tang. Around 15% of the grapes are sourced from the cooler, sea breeze-influenced Langhorne Creek area. This portion is barrel-aged in French medium toast casks to obtain a more complex, textural and weighty style of wine. It is then added to the greater part of the blend which is fermented in temperature-controlled stainless steel to retain the fresh fruit characters.

"Soldiers block is a new (affordable) range to us – and the Chardonnay certainly under promises and over-delivers. I say underpromises as the label is pretty underwhelming and gives nothing away about the beauty of the wine within.
This is made from rich, ripe fruit from Victoria with a percentage matured in French oak which gives a creamy, more textural mouthful. Add to that incredible balance and juicy acidity and you have an overall great wine – a real crowd pleaser and one of our most popular whites which tells me our customers have great palates!" 2022 Smalltown Vineyards 'The Next Big Thing' Chardonnay

Tasting Notes
With the faintest whiff of biscuity oak this bright, tangy Barossa Chardonnay is an absolute delight. It has that classical Barossa charm, elegance, poise, tang and naggingly more-ish elusive something-or-other which makes one wonder why there isn't more Australian Chardonnay.
Production
Grapes are hand-harvested from an old block on the Binder family Barossa vineyards. Small batches of Chardonnay are picked and pressed through a tank press with some skin contact. 25% is fermented in French puncheons and American hogsheads for 6 months, aged on lees then blended with the 75% unoaked juice, settled, and bottled. Into the main Barossa blend, a small component of Eden Valley Chardonnay is blended and the whole sees a tiny bit of secondary use oak for some fine structure.

Smalltown Vineyards express many of the Barossa’s prized districts form Gomersal, Kalimna as well as the Eden Valley and beyond. We work with exceptional vineyards simply expressed using minimal intervention, basket press where relevant, natural ferments in open-top fermenters to best capture the Barossa’s magical flavours. We have a lot of fun with labels because, well because we can. It’s only wine after all…

Nose
Aromas of ripe white peach and blackcurrant leaf, with hints of super-ripe fruit and lime notes.
Palate
The palate has lots of refreshing citrus zest, nettle and grassy characters, lovely minerality and a slightly creamy, honeyed finish. Refreshing acidity and good balance.
Production
The grapes are sourced from seven different parcels of vines in the commune of Morogues, all planted in Kimmeridgian limestone-clay marl soil which imparts elegant mineral tones. The vineyards face south-west, south or south-east and gain the maximum benefit of the morning sun to fully ripen the grapes. The individual parcels of grapes are vinified separately to allow the fullest expression of their unique terroirs and each parcel adds a different dimension to the whole. The wines are left on their fine lees until bottling to enhance complex flavours and regularly stirred to gain richness.

Straddling the Loire appellations of Sancerre and Menetou-Salon, Domaine Pellé produces world-renowned, terroir-expressive wines from its family-owned vineyards. Fourth-generation winemaker Paul-Henry Pellé pays meticulous attention to viticulture and winemaking, ensuring that the pure varietal flavours and aromas of Sauvignon Blanc and Pinot Noir and the natural characteristics of the Kimmeridgian vineyards are expressed in your glass.
A Note on Sustainability
Domaine Henry Pellé began its sustainable approach to viticulture in 2007, by using no weed killers, chemical insecticides nor anti-rot products. The 10-hectare domaine is cultivated using methods that maintain natural balance and that work the soil in the traditional way, for example weeding, clearing and grape thinning by hand. This year, the company is taking a further leap towards sustainability, aiming to become carbon neutral and seeking to develop geothermal and solar panel projects. As of 2020, the domaine will be certified as organic by ECOCERT.

Originating from Chile, Fresita features a distinct combination of the highest standard of sparkling wine and carefully chosen strawberries. Created using the Charmat method of winemaking, it delivers a balanced, elegant, refreshing, and natural taste, aroma, and flavour.
The term “Fresita” is of Spanish origin and means “strawberry.” Initially, when the fruit got discovered in Patagonia of Chile, people knew of its white variants. Later, Amédée-François Frézier presented them to the world in 1714. Eventually, the strawberries of red colour evolved, and now, very few knew that the white ones also existed. In recent times, however, both the Chilean strawberries get celebrated for their delicious fragrance, sweet taste, and size.
Creation
The creation of Fresita in 1992 was due to the motivation to deliver a unique beverage that appeals to people’s desire for a genuine experience. The wine has a blend combination of Sauvignon Blanc, Chardonnay, and Moscatel.
Each varietal gets fermented in separate chambers to create their unique still wines first. Then, they get blended, followed by a second fermentation process. This dual treatment helps attain an exceedingly dry base for the sparkling wine of Fresita.
At the final stage of the winemaking, freshly picked and intensely flavoured strawberries of the Patagonian variety get added to the product. It results in the deep, fruity, luscious, and smooth salmon pink colour of Fresita with strawberry pulp suspended or floating in it.
Fresita contains persistent bubbles and solely 8% alcohol, making it a drink that people with low alcoholic tolerance can enjoy. It offers a beverage that is full of the sweetness of strawberry with the appropriate amount of intensity. The sparkling wine provides a refreshing feel, especially when served and drunk chilled.

Colour
Our Carricante is a pale straw yellow, with some hints of green.
Aroma
The elegant bouquet is a combination of peach, apple, citrus fruits and blossom.
Palate
The palate has a big structure, with excellent acidity, minerality and sapidity and these characteristics give Carricante a particularly long finish.
Viticulture
Our Carricante is cultivated at about 400 metres above sea level. As it is so prolific, it is essential to focus a lot of attention on training the vines – which we do using the Guillotmethod. Strict pruning is also absolutely key in order to limit production. Grapes are hand-picked in the early part of September.
Vinification
The grapes are harvested exclusively by hand towards the beginning of September. A careful destemming is followed by soft pressing of the grapes. The decantation of the must at low temperature lasts about 48 hours before the start of the fermentation carried out at 17-19 ° C for about 20 days. After fermentation, the wine is decanted and kept on fine lees for about 5 months with frequent battonages.

Aroma
The characterful bouquet is a little spicy and reminiscent of jasmine, aromatic herbs and nutmeg, with delicate touches of white peach.
Palate
On the palate, there is a strong mineral backbone, perfectly balanced with lively acidity. The finish is long and complex with delicious almond flavours.
Viticulture
Our Catarratto grapes are cultivated on slopes at around 400 metres above sea level. Grapes are hand-picked in mid-September in small baskets. Picking takes place in the cool early part of the morning in order to keep the grapes as fresh as possible.

The soft formed hills around Langenlois are an entrance to the Waldviertel. Loess is a sandy soil – brought to the region by winds ten thousand years ago from the Alpine regions. This limy soil gives the Grüner Veltliner its classical structure of elegance and its unique character.

SCHLOSS GOBELSBURG, a Cistercian monastic estate, is one of the oldest wineries in the Austrian Danube area with a documented history that dates back to 1171. All the vineyards are located on slopes and terraces around the valley of the river Kamp near the town of Langenlois and the village of Gobelsburg. Schloss Gobelsburg specialises in Grüner Veltliner and Riesling and produces authentic and noble wines from different single vineyards, villages, and regional appellations. The winery is a member of the association 'Österreichische Traditionsweingüter', which is working on a vineyard classification project for the Danube area.

Formed in 1973, Pierre Chainier is both a négociant and the owner of some 250 hectares of vines in the heart of Touraine, from which it sources classic Loire varieties. Its eight Touraine estates include Domaine de la Bruyère in the newly established appellation of Touraine-Chenonceaux. Conversely, Clos de Nouys, its 25 acre Vouvray estate, is one of the oldest in the appellation. Here, vines average 35 years of age in vineyards that were already listed amongst the best sites on geological maps dating from 1907.
Note on Sustainability
For both its négociant arm and its own vineyards, Pierre Chainier seamlessly blends the principles of reasoned agriculture with the most modern winemaking techniques. It encourages sustainable development and official certification for its growers, it uses sugar cane-derived biodegradable “corks”, and it has a comprehensive waste recycling programme.

"This one was labelled 'natural' not orange but still a decent colour extracted. With Sauv Blanc being the lead varietal - it’s certainly the more commercial of the two whites he produces. Equally magnificent but still difficult to recognise any particular fruit aromas or flavours - but again multi-layered, complex, and with great length - and again that saline finish. Just shades it to be my favourite of the two - but Di preferred last night. Definitely a winemaker to watch." January 2022

2017 Tohu Whenua Awa Single Vineyard Chardonnay

Vineyard

Vinification
The 2016/2017 growing season began with a frost-free spring and good early shoot growth. Warm still dry conditions in the late summer, unaffected by early autumn rains in other parts of the region. Warm and settled weather in the latter part of the harvest period allowed extra ripening time.
Winemaking
Hand-harvested grapes, gently whole-bunch pressed • unsettled juice then moved to old French oak barriques for fermentation. Fermentation with natural ‘wild’ yeasts, with a cultivated yeast added partway through fermentation to assist the wine to dryness . Post-fermentation, each barrel underwent twice-weekly batonage (yeast stirring). Malo-lactic fermentation occurred once the weather warmed in the spring. Individual barrel assessment, with only the best deemed exceptional enough to make the final blend.

Production
Chenin is the backbone grape varietal of South Africa – it’s the most profusely planted variety in our country and is closely associated to our wine-making identity. To capture the true sense of place and terroir, we’ve made this wine a 100% unoaked Chenin Blanc. Fermenting only in stainless steel ensures the freshness, character and liveliness of the wine is maintained. To tame some of this energy and add more complexity and depth to the final wine, I’ve kept it on its fine lees for approximately nine months. This also adds to the lush mouthfeel and keeps the wine fresher for longer.”

2023 The Cloud Factory Sauvignon Blanc

Tasting Notes
Perfumed with nettle & ripe tropical fruits which are also evident on the palate along with limey flavours and a rich minerality - classic Marlborough Sauvignon. The wine is sappy fresh, clean and delicious.
Production
Judiciously sourced from 3 vineyard sites between the Waihopai, Wairau and Awatere Valleys. Fruit for this wine comes from vineyards throughout Marlborough’s Wairau Valley. From the coastal vineyard of Rarangi (coastal pea gravels, sand and silts, cooler coastal site) up through the central (old river bed gravels with think fertile top soil) and southern valley vineyards (clay loams over silts and gravels, warm sheltered site ) to the Rapaura area vineyards (stoney river bed soils).
The vines are grown on the VSP trellis system to give optimal cropping to gain maximum flavour during the growing season. Grapes are picked and immediately pressed to tanks for clarification. The fruit was gently pressed, cold settled, racked and cool fermented with selected yeast strains to enhance the unique aromatics & flavours. Each individual parcel was then racked, before being blended together to create this generous full-textured style. The wine was then filtered, and bottled to retain & capture the remarkable freshness of Marlborough Sauvignon Blanc.
Producer
Boutinot's New Zealand wines are sourced from vineyards in each sub-regions of Marlborough - the Awatere, Waihopai and Wairau Valleys, as well as the breezier region of Waipara. These valleys have their own micro-climates and terroir which give a unique personality to the vineyards, grapes and finished wines.
Samantha Bailey brings her blending expertise and experienced palate to the fore in expressing the loveliest Boutinot wines from The Land of the Long White Cloud.

The Winery
Exton Park is a Hampshire sparkling wine producer with a 60-acre single vineyard planted on a south-facing slope in the South Downs National Park. Their first vines were planted in 2003, including Pinot Noir, Chardonnay and Pinot Meunier and their state-of-the-art winery was built in 2011. A luxurious, private event space overlooking the vineyard is also under construction and will be opening later this year. With a 60-acre single vineyard, a bespoke winery and a breath-taking promotional facility all on one estate, Exton Park will be able to offer guests an unrivalled English wine experience.
2021 marks the release of their Reserve Blend range. These are traditional method sparkling wines that challenge classic winemaking conventions. They do not rely on a base vintage like other English sparkling wine producers. Over 80% of each blend is composed from their extensive archive or reserve wines.
The number of reserves in each blend is reflected in the name of each wine. For example, Exton Park RB28 Blanc de Noirs is created from a blend of 28 wines. This unique approach has been pioneered by Head Winemaker Corinne Seeling to ensure consistency, quality and complexity with each bottling.

Production
Casa de Vila Nova is located in the sub region of Sousa, the Vinho Verde Demarcated Region, in the North of Portugal. The vinho verde vineyards are exposed to the Atlantic Ocean winds and influence. Soils, microclimate, grape varieties and the unique characteristics of the wine culture, distinguish it from all other wine regions of the world. The grapes are harvested by hand in 20 kg boxes that are quickly transported to the winery where they are destemmed and soft pressed and temperature-controlled fermentation.
Producer
Casa de Vila Nova is owned by the Lencastre family, of aristocratic Portuguese lineage (one of their ancestors became the first Baron of Varzea do Douro in the 1800s). This land has been in their family since the 12th century - the ivy clad tower that still remains from that time is now surrounded by Vila Nova (new house) that was built in the 1700s, and the property was gradually extended over the centuries.
The estate is near the town of Penafiel, close to the eastern border of Portugal's vinho verde wine region, around a 30 minute drive east from Oporto. In the late 1970s the family planted vines over 12 hectares - mainly local Portuguese varieties. In 2008 Bernardo Lencastre and his brothers took over the running of the property, revitalised the vineyards and began making vinho verde and bottling their own wines - the first generation to do so. They now have around 42 hectares of vineyard.
Here, in the Entre-Douro-e-Minho sub-region of Sousa, their vineyards are influenced by winds from the Atlantic Ocean - creating the perfect climate to ripen varieties such as Avesso, Loureiro and Alvarinho.

Nose
A honeyed and gently aromatic nose with a savoury, toasted fennel seed note.
Palate
The palate is a rich and ripe reflection of this warm vintage, balanced by smoky, grassy flavours typical of Sauvignon Blanc.
Production
The vineyards are planted on Kimmeridgian soil (fossilised clay-chalk, superb for low yields and mineral content) and face south-southwest, giving increased exposure to the sun. They are fertilised organically. Harvesting is done partly by hand and partly by machine, depending on the vintage. Vinification is old fashioned and hands-off. Fermentation is done by indigenous yeasts and is followed by naturally occurring malolactic fermentation. This helps to soften the wines by converting the harsher acids to more palatable ones. Most unusually for a producer of Loire Sauvignon Blanc, winemaker Gilles Maudry believes in allowing full malolactic fermentation to run its natural course. The wine remains on its fine lees for 15 months after harvest, intensifying and enriching the flavours to balance the incredible freshness.

Domaine de Maltaverne is one of the few producers in the Loire that allows full malolactic fermentation to run its natural course. The owner, Gilles Maudry, is a former biologist who returned to his family’s Tracy-sur-Loire estate in 1984 when his father retired. Now working with his son Matthieu, who finished his viticultural and oenological studies in 2015, Gilles is a firm believer in minimal intervention: as long as his vineyards produce healthy grapes, picked at optimum maturity and vinified with care, then the wine can be left to determine its own evolution. The beautiful label features an illustration of the fossilised ammonite shells found in the vineyard, sketched by an artistic wine lover following a tasting to represent what he visualised upon tasting this wonderful wine.

2023 Tohu Awatere Valley Sauvignon Blanc

The concentrated palate is layered with flavours of sweet juicy pineapple, pink grapefruit, fresh green apple and hints of black olive. With herbal notes and a zesty minerality, this wine leads to a pure, lively and focused dry finish that has both freshness and length.
Viticulture
Grapes for this wine are sourced from blocks located in the upper, mid, and lower areas of the Awatere Valley. The Awatere Valley is cooler, drier and windier overall than other sub-regions of Marlborough, with a longer and cooler growing season. These climatic factors combined with vineyards located on young, fertile river terraces result in distinctive wines with a mineral drive and fruit-forward flavours. The 2018/2019 growing season in the Awatere began with unsettled weather resulting in lower yields overall, however a warm and dry summer with perfect growing conditions. grapes were able to be picked at optimal ripeness over harvest resulting in a wine with outstanding aromatics, palate weight and texture.
Vinification
Select blocks from the Awatere Valley are harvested using modern machine harvesters allowing ultimate extraction of flavour and aroma compounds from the skins of the grapes. Once at the winery the grapes are pressed into stainless steel tanks for cold settling, before being gently racked and inoculated with select yeasts chosen to naturally enhance the aromatic and flavour profiles of the wine.
Fermentation is carried out at cool temperatures allowing the wine to retain its bright aromas; with each batch fermentation typically lasting around 21 days. After fermentation is complete the wines are left to settle on their yeast lees for a short period before being racked again into stainless steel tanks for maturation. Meticulous classification of each batch results in a final blend that truly captures the exceptional characteristics of the vineyards. Once blended the resulting wine is stabilised and filtered without the need for fining, ready for bottling in mid-July 2019.

2024 Tohu Awatere Valley Pinot Gris

Viticulture
The grapes from this wine are sourced from two vineyards located in the cool southern Awatere Valley region of Marlborough. The majority of the grapes come from a vineyard near the coastal planes of the Awatere, with a smaller portion of the grapes sourced from a vineyard located further inland on young fertile river terraces.
The 2018/2019 growing season in the Awatere began with some unsettled weather over the flowering period which resulted in lower yields throughout the vineyards. However, the warm and dry summer that followed provided a dream run for both the vineyard and winemaking teams. With no disease pressure in the vineyard and ideal weather over the harvest period, grapes were able to be picked at optimal ripeness, resulting in a wine with outstanding aromatics, palate weight and texture
Vinification
Grapes sourced from a number of prime sites in the Awatere Valley are gently pressed once at the winery to obtain beautifully clear free-run juice, with the harder pressings keep separate and allowed to oxidise and soften phenolics before being re-combined with the free-run. The juice is then settled and racked into stainless steel tanks for warming and inoculation with carefully selected yeasts.
Fermentation is carried out at cool temperatures of around 10-13°C to help preserve the fruity characters and lasts around 21 days until the balance of residual sugar and acidity/phenolics has reached the ideal point. Post-ferment the wine is held in tank and matured for a short period of time before being stabilised ready for bottling. With no additional finings judged necessary, this wine was ready for bottling in early July 2019.

2021 Tohu Awatere Valley Unoaked Chardonnay

Viticulture
The grapes for this wine were sourced solely from the Rothay vineyard located in the Marlborough’s Rapaura sub-region of the Wairau Valley. Trained using a spilt-canopy trellising system, the vines were managed throughout the growing season with practices including shoot thinning, trimming and leaf plucking, allowing for an open canopy and reduced disease pressure. The vineyard’s warm daytime temperatures and stony free-draining soils helped the grapes to ripen in a difficult season, with pristine, ripe fruit was harvested earlier than average on the 30th April 2018.
Vinification
Machine harvested and fully fermented and aged in temperature controlled stainless steel tanks, this wine has been created to allow the fresh complexities of the fruit to shine through without the need for any oak influence. After harvesting the grapes for this wine were transported a short distance to the winery before being gently pressed. Cold settled over 48 hours, the resulting clear juice was racked into tanks for inoculation with yeast carefully selected to retain fruit purity. After fermentation at reasonably cool temperatures, the wine then underwent secondary malo-lactic fermentation before being aged in tank. Lees stirring was employed to build texture and complexity while still retaining fruit freshness, before being filtered and bottled in February 2019 without the need for any fining.

Viticulture
Our Maraekakaho Vineyard is planted on an ancient river terrace that was formed by the Ngaruroro River which now flows around 60 meters below the vineyard. With its headwaters in the Kaweka Ranges to the west of Hawkes Bay, the river has created the landscapes through glacial melts, floods and droughts over the last few hundred thousand years. The old terraces that remain are made up of greywacke (a compressed sandstone) boulders and gravels from the ranges, and a topsoil borne of windblown loess, volcanic ash and humus created by ancient forests and vegetation.
The arrival of the New Year brought with it the long, hot, sunny summer days with moderate-cool nights for perfect ripening conditions, whilst preserving fresh acidity. Superb harvest climatic conditions provided the luxury of optimal picking decisions not hurried by the threat of rain. The result is an outstanding year for our Hawke’s Bay wines. Yields are slightly down, but with exceptional quality across all varieties. Full flavour and tannin ripeness in reds, with moderate alcohol levels. Acid retention and exciting flavour spectrums in whites.

Production
This wine is made from Gruner Veltliner grapes from vines (with an average age of 18 years) on the fine loess soils of the Breiter Rain, Sepp Moser's exceptional single vineyard in the Kremstal region. Average yields are only 5,000 kg/ha, which accounts for the wine's amazing concentration. 80% of the de-stemmed grapes were fermented in stainless steel and 20% in 500 litre Austrian oak barrels. 50% is aged in 500 litre Austrian oak barrels, and the other 50% matured in a big oak barrels, which have a gentle influence on the wine. Then they come together in a steal tank. 20% undergoes malolactic fermentation and is matured on the lees for 6 months. Unfiltered.

The Sepp Moser Estate was founded by the famous Austrian wine producing pioneer, Lenz Moser. Lenz Moser's son, Sepp Moser, began operating under his own name in 1987 and handed over the direction of this family-owned estate to his own son Nikolaus in the year 2000.
The Sepp Moser Estate comprises of 50 acres of vineyards in two prominent wine regions; Kremstal (22 ha) and Neusiedlersee (28 ha). In the Kremstal, Nikolaus produces an international range of varieties as well as the ever more important local varieties of Gruner Veltliner and Riesling. The reds are produced on the gravelly soils of the warm southern Neusiederslee village of Apetlon. All Sepp Moser wines have been organic (and all estate wines biodynamic) since 2007.
Sustainability
The Sepp Moser estate produces a wide range of wines every year thanks to its vineyards in two diverse regions. There is one main aim in the cellar: the quality of the grapes shall be brought with as little influence as possible to the bottle. The grapes in the Sepp Moser vineyards are harvested by hand and at the cellar of the Atrium House Nikolaus Moser emphasizes gentle vinification and tries to interfere as little as possible with the process so that each wine can develop its own individual style. The fermentation starts spontaneously, and the maturing of the wine takes place on its own.
In 2006, Nikolaus officially moved the estate to biodynamic viticulture – one of the first to do so in Austria – and became Demeter certified. 2009 saw the release of Sepp Moser’s first certified organic wines. Nikolaus is very keen to reduce the amount of copper and sulphur used in the vineyards, and this year saw a reduction of two thirds over what was sprayed previously. He composts all the estates' pomace and vine trimmings, and there is an ongoing effort to plant trees around the vineyards.
